유황화합물질이 조리시 야채류중의 Vitamin C 함량에 미치는 영향에 대하여 (A Study on the Influence of Sulphur-compound to Vitamin C in the different Vegetable during Cooking)

  • In order to study the influence of sulphur-compound on the vitamin C contents of different vegetables-i.e. Korean green pepper, leaf, Bilum, leaf, Soybean sprouts, Mung bean sprouts, Cucumber-the garlic powder and minced garlic were used while the vegetables were cooked. The results garlic juice during scaling the vegetables the vitamin C contents of them were higher as much as 9.2~12.7% 2. When the scaled vegetables were seasoned the vitamin C contents were higher as much as 8.9~`17.5% by adding garlic powder and 7.3~14.9% by adding minced garlic. 3. Vitamin C loss of the cooked vegetables with room condition for 30 min, was higher as much as 15.2~34.5% compared to just cooking. 4. Vitamin C contents of vegetables after 30 min from cooking, compared to just cooking were higher of vegetables after 30 min from cooking, compared to just cooking were higher as much as shown below. 1) ~13.3% by adding garlic powder. 2) 4.0~9.3% by adding minced garlic.

토장국의 문헌적 분석 고찰 (A bibliographical Study on the Tojangguk in Korea)

  • The Guk had lessened to use Gang, Whak, Tang. The Guk was classified into cooking method as a soup stock, the used main substances, and the temperature of the Guk. According to the soup stock were divided clear soup, Tojangguk, and Gooumguk. Another classification of Guk by main substances were Yuktang (meat soup), Otang (fish soup), bongtang (poultry soup), Shotang (vegetable soup), Japtang (vary substance soup) and Yonpotang (soybean-curd soup), and by the temperature of the Guk were divided Doounguk (warm soup) and Naengguk (cold soup). In the thesis, according to the kinds of Tojangguk, the reference frequency to them, the adding foods in them, and the variety cooking method in the Tojangguk were analyzed by the cook books published from 1700 to 1988 in Korea. 1. There were 29 kinds of Tojangguk. 2. The main substances of Tojangguk were meat, poultry, fish, shellfish, vegetable, mushrooms and seasonings. 3. The Tojangguk was boiled with the rice water and fermented soybean paste and fermented soybean-pepper powder paste. For the development of taste were added beef, shellfish, dried anchovy, dried small prawn, and soup stock of beef bones in winter. Seasoning substances were green onion, garlic, black pepper, sesame powder and oil.

김치 발효중 대장균군의 소장과 억제에 관한 연구 (Presence and Control of Coliform Bacteria in Kimchi)

  • 김치 발효중 대장균군의 잔존 현상을 확인하였고 대장균군을 가식 기간에서도 조기에 사멸시킬 수 있는 방법을 모색하였으며 동시에 nisin의 김치 발효에서의 역할을 평가하였다. 대장균(E. coli B34)을 김치 제조시 $10^6\;CFU/g$이 되도록 접종하였을 때 pH, 산도의 변화, 총균수, 총젖산균수, Leuconostoc속 젖산균의 수 등에 차이가 거의 없었다. AITC 그 자체나 AITC를 생성하게 하는 고추냉이, 그리고 김치제조시 정상적으로 첨가하는 마늘이 대장균군에 대한 조기사멸효과가 있었는데, 마늘은 2.0% 이상, AITC는 50ppm이상, 고추냉이가루 0.4%이상에서 대장균군의 사멸효과가 좋게 나타났으나, nisin의 경우는 $100{\sim}2000\;I.U./g$에서 대장균군이 대조구보다 더 오랫동안 잔존하였으며 김치의 저장성 연장효과는 미미하였다. MMTSOO나 겨자가루는 대장균군 조기사멸효과가 나타나지 않았다. 김치 재료로 쓰이는 원료중에서 절인 배추에는 $10^4$, 깐마늘에는 $10^2{\sim}10^5$, 고춧가루에는 $10^4{\sim}10^5$, 생강에는 $10^7$, 그리고 파에는 $10^3{\sim}10^5\;CFU/g$의 대장균군이 존재하였다. 통마늘과 공장생산 고춧가루에는 대장균군이 검출되지 않았다.

고추, 오이 및 사과 재배 중 살균제 Thiophanate-methyl 살포 시 농작업자의 노출 및 위해 평가 (Risk Assessment of Agricultural Worker's Exposure to Fungicide Thiophanate-methyl during Treatment in Green Pepper, Cucumber and Apple Fields)

  • 본 연구에서는 고추, 오이 및 사과 포장에서 thiophanate-methyl 수화제 살포액 조제 시와 동력분무기를 통한 농약 살포 시 농작업자의 노출 및 위해 평가를 수행하였다. 패치, 장갑, 양말, 마스크를 통한 피부노출 측정법과 공기펌프와 고체흡착관을 이용한 호흡노출 측정법을 사용하였으며, 시험 전에 유효성을 모두 검증하였다. 살포액 조제 시, 피부 노출량은 $24.0{\pm}6.7mg$ (고추), $4.5{\pm}1.5mg$ (오이) 및 $18.5{\pm}0.6mg$ (사과)이었으며, 조제액 농약 유효함량 대비 평균 피부 노출수준은 0.007% (고추), 0.001% (오이) 및 0.005% (사과)수준이었다. 조제 시 주요 노출부위는 손으로 전체노출의 78-92%이었다. 농약살포 시, 작업자의 노출량은 $84.9{\pm}14.0mg$ (고추), $34.0{\pm}20.8mg$ (오이) 및 $30.7{\pm}9.1mg$ (사과)으로, 살포된 유효성분 함량 대비 평균 노출비율은 0.024% (고추), 0.016% (오이) 및 0.013% (사과)이었다. 사과포장에서 작업자의 주요 노출부위는 손이었지만 나머지 포장의 경우 주로 허벅지와 정강이에서 노출이 발생하였다. 호흡노출량은 살포액 조제 시 $1.5{\pm}2.2{\mu}g$ (고추), $52.7{\pm}48.9{\mu}g$ (오이) 및 $4.0{\pm}4.9{\mu}g$ (사과)이었던 반면, 농약살포 시 $0.2{\pm}0.1{\mu}g$ (고추), $23.2{\pm}12.4{\mu}g$ (오이) 및 $0.4{\pm}0.6{\mu}g$ (사과)이었다. 피부노출을 결정하는 주요 요인이 작물과의 접촉빈도, 잎 밀도, 살포 습관, 작업 형태, 작업 환경인 반면, 호흡노출의 경우 작업 환경, 특히 바람으로 판단되었다. 위해 평가 결과, 모든 경우에서 안전역이 1이상으로 위해 가능성은 낮았지만, 고추포장에서 농약을 살포할 경우 안전역이 1에 근접하였다.

한국 음식과 일본 음식의 조미료 사용법 비교 (The Differences Between Korean and Japanese Ways of Seasonings)

  • In this paper, the differences between Korean and Japanese ways of seasonings are studied. The main results are summarized as follows: (1) Shouyu and Miso which are Japanese equivalents of soy sauce and bean paste of Korean foods are used in variety of different seasonings with some other ingredients while Korean counter parts are used only to add salty tastes. (2) Shouyu and Miso lose their flavors after considerable time of heating, while Korean soy sauce and bean pastes increase their tastes after heating. (3) Mirin adds sweety taste and glaze and Sake makes food soft or hard according to the moment of being added during cooking. (4) In Korean foods soy sauce, bean paste and red pepper paste are on the basis of tastes, Dashi is used in almost every Japanese food. (5) Seasoned vegetables of Korean food are prepared only with spices of green onion, garlic and sesame oil while seasoned fishes or vegetables are mixed with Shoyu or salt and vinegar in Japanese food. (6) In making Zorim, Korean traditional sauces are added from the beginning of heating. But in making Nimono, sugar, salt, vinegar, Shoyu and artificial taste are added in order during heating. (7) In grilling, main food for grilling in Korea is meat, which is prepared with a variety of spices such as soy sauce or/and red pepper pastes, garlic, green onion, sesame oil, sesame powder, pepper and sugar while mainly fishes are grilled with salt, occasionally with Shoyu or Miso in Japanese food. (8) Pan frying fishes are taken with soy sauce with vinegar in Korea but Tepura are eaten with Tentsuyu in Japan.

배추김치의 숙성중 부재료와 젖산균에 따른 Carotene 의 함량변화 (Changes in Carotene Content of Chinese Cabbage Kimchi Containing Various Submaterials and Lactic Acid Bacteria during Fermentation)

  • the Chinese cabbage kimchi was fermented with the various submaterials such as hot pep-per garlic ginger leek green onion fermented anchovy juice and sugar according to the average contents of each submaterial described in the 39 kinds of references. And then the effects of each submaterial and lactic acid bacteria such as L. brevis. Leu. mesenteroides. P cerevisiae and L. plantarum on the content of carotenes were investigated, The major carotene in kimchi was $\beta$-carotene. And also $\delta$-carotene and $\alpha$-carotene were detected. Contents of $\beta$-carotene and total carotene were high in the kimchi containing leek red pepper powder green onion and fermented anchovy juice as a submaterial. But the kimchi containing or omitting the other submaterials were litter affected to the contents of carotene. Contents of $\beta$-carotene and total carotene were high in kimchi fermented with Leu. msenteroides L. brevis and P. cerevi-siae as a starter but was low with L plasntarum.

우육지방질의 변화에 미치는 불고기 조미료의 항산화작용에 관한 연구 (Antioxidative Effect of Seasoning on the Lipid Oxidation of BULGOGI Cooked Meat)

  • The study was observed that anti oxidation effect of each and mutual relation on BULGOGI seasoning in Fore shank and Ribs. Each antioxidation effect were appeared to higher in suger, pear juice, soya souce, clean wine, sesamed oil, green onion, toeasted sesamed powder, black pepper, garlic im seasoned immidiately. Soya souce was revealed to higher effect anti oxidation in storaged beef among 30 minuit after seasoned. In storaged sample among 9 hour after seasoned was showed to higher effect in soya souce & galic. Mutual relation of two seasoning in BULGOGI seasoning were revealed to higher effect in mixture of green onion & galic.

Isolation and Identification of Weissella kimchii from Green Onion by Cell Protein Pattern Analysis

  • This study was conducted to investigate the potential origin of Weissella species, which were found in ingredients of kimchi, such as salted Chinese cabbage, radish, green onion, red pepper powder, pickled shrimps, garlic, and ginger. Ten strains of Weissella species (Weissella thailandensis, W. kimchii, W. koreensis, W. minor, W. halotolerans, W. hellenica, W. kandleri, W. confusa, W. viridescens, and W. paramesenteroides) and lactic acid bacteria isolated from ingredients of kimchi were analyzed by SDS-PAGE of whole-cell proteins. Several strains with patterns identical to those of Weissella kimchii were isolated from green onion. On the basis of biochemical characteristics and 16S rDNA sequence comparisons, these strains were identified as Weissella kimchii, suggesting green onion as a major origin of Weissella kimchii found in kimchi.

배추김치 부재료 혼합의 모델화와 품질 (Studies on Modelization of Subingredients of Chinese-Cabbage Kimchi)

  • This study was conducted to ivestigate the quality of modeled chinese-cabbage Kimchi. The mutual action of sub-ingredients and optimum mixing conditions were examined by analyses of pH, acidity, content of vitamins, carotenes, number of total microorganism, and Lactobacilli, the activities of softening related to enzymes (polygalacturonase and ${\beta}$-galactosidase), and sensory quality during fermentation. The result about the mutual action of red pepler powder and garlic showed that the pH was decresed as concentration of garlic was higher and that of red peppler powder became lower. Kimchi had unpleasant taste and undesirable odor when the adding ratio of the peper powder and garlic was unbalanced. As the concentration of garlic became higher, the content of vitamin C in Kimchi tissue decreased while that of vitamin C in Kimchi juice increased. The contents of vitamin B1, B2 and carotene increased as the concentration of garlic became lower. The optimum mixing ratio of red pepper powder and garlic evaluated by overall eating quality was 4.66% and 3.45%, respectively. The result about the mutual action of ginger and green onion was that pH became higher as the concentration of ginger was 1.84% and that of green onion was 5.96%. The intensity of fresh taste and odor became stronger as the concentration of ginger increaed to 2.76% and that of green onion decreased to 2.98%. The balance of sour, salty and hot taste became better as the concentration of ginger increased and that of green onion decreased. The optimum mixing condition evaluated by overall eating quality was 2.94% in ginger + 2.78% in green onion. The contents of vitamin B1, B2 and C were high in this condition. The result about the mutual action of leek and salted anchovy juice was that pH became lower as the concentration of leek increased and that of salted anchovy juice decreased. Sour, hot and sweet tastes were good in the condition of leek 12%, salted anchovy juice 4.69%. Palatable, fresh taste and odor became weaker when the one of both sub-ingredients was too much little. The optimum mixing condition evaluated by overall easting quality was 9.76% in leek + 7.32% in salted anchovy juice. The contents of vitamin B1, B2, C and carotene were high in this condition and other sensory qualities were good. The result about the mutual action of salt and sugar was that pH became lower as the concentration of sugar became higher and that of salt became lower. The sweet taste was reduced of hot taste than salty taste. Palatable and fresh tastes were desirable when Kimchi fermented with less salt and more sugar. The optimum mixing condition evaluated by overall eating quality was 3.29% in sugar + 4.80% in salt. The contents of vitamin B1, B1, C and carotene were high in this condition. The result of model Kimchi fermented at 20$^{\circ}C$ was that the number of Lactobacilli in model Kimchi was higher than that of in control Kimchi. The fermentation period was extended under pH 4.0 and the contents of vitamin B1, B1,C and carotene were high through the whole edible period. The activity of polygalacturonase was low, but that of ${\beta}$-galactosidase was high during fermentation.

Metabolic Pathways Associated with Kimchi, a Traditional Korean Food, Based on In Silico Modeling of Published Data

  • Kimchi is a traditional Korean food prepared by fermenting vegetables, such as Chinese cabbage and radishes, which are seasoned with various ingredients, including red pepper powder, garlic, ginger, green onion, fermented seafood (Jeotgal), and salt. The various unique microorganisms and bioactive components in kimchi show antioxidant activity and have been associated with an enhanced immune response, as well as anti-cancer and anti-diabetic effects. Red pepper inhibits decay due to microorganisms and prevents food from spoiling. The vast amount of biological information generated by academic and industrial research groups is reflected in a rapidly growing body of scientific literature and expanding data resources. However, the genome, biological pathway, and related disease data are insufficient to explain the health benefits of kimchi because of the varied and heterogeneous data types. Therefore, we have constructed an appropriate semantic data model based on an integrated food knowledge database and analyzed the functional and biological processes associated with kimchi in silico. This complex semantic network of several entities and connections was generalized to answer complex questions, and we demonstrated how specific disease pathways are related to kimchi consumption.
