  • This experimental work was conducted in order to find out the optimum time of harvest of Japonica-type(Akibare) and Indica-type(Tong-il) rice variety for three harvesting systems by investigating the harvestirg losses and milling quality. The study was also concerned atout the nature and amount of grain losses incurred during the each sequence of post-harvest technologies, and based on these results, a modification of existing systems giving a minimum grain loss was attempted. Binder, combine, and traditional harvesting systems were tested in this study and five grain moisture levels were disposed according to the decrease of grain moisture. The results are summarized as follows: 1. The total losses of Akibare variety were ranged from 1.1 to 1.5 per cent for the traditional harvesting system, 2.1 to 4.8 percent for the harvesting system by use of binder, and 2.8 to 4.3 percent for the harvesting system by use of combine as the grain moisture content was reduced from 24 to 15 per cent. Milling recovery of the harvesting system by use of binder, 74.8~ 75.7 percent, was a little higher as it was compared to that of traditional harvesting system, 74. 3~75. 0 percent, and that of the harvesting system by use of combine, 73.8~ 75.0 per cent. Head rice recovery of mechanically dried paddy samples was higher than that of sun-dried paddy samples. 2. The total losses of Tong-il variety were ranged from 3.8 to 5.0 per cent for the traditional harvesting system, 5.2 to 10.0 percent for the system by use of binder, and 3.0 to 5.0 perent for the system by use of combine as the grain moisture was reduced from 28 to 16 percent.

  • To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively. Children with food number consumed and intake frequency of above 6 and 4 in the grain group or above 6 and 6 in the meat group or above 4 and 8 on the

  • Puroindoline alleles, grain characteristics, milling performances and physical properties of flour of 22 Korean wheat cultivars were evaluated to determine the influence of puroindolines genotypes on grain and flour characteristics and to provide useful information for improving milling and end-use quality in Korean wheat breeding programs. Nine Korean wheat cultivars carried with Pina-D1a/Pinb-D1a, 11 cultivars had Pina-D1a/Pinb-D1b and 2 cultivars were Pina-D1b/Pinb-D1a. Korean wheats carrying with Pina-D1a/Pinb-D1a genotypes showed lower test weight and thousand kernel weight, area and roundness of grain and hardness index in grain characteristics, lower flour yield and higher proportion of break flour in milling performances and lower average particle size of flour, ash and damaged starch content, water retention capacity, yellowness-blueness and higher lightness of flour than wheats with Pina-D1a/Pinb-D1b or Pina-D1b/Pina-D1a genotypes. Pina-D1a/Pinb-D1b genotypes showed lower 1000-kernel weight, grain area, higher average of particle size of flour, higher ash and damaged starch content than Pina-D1b/Pina-D1a genotypes. There was no difference in hardness index of grain, milling performances, flour color between Pina-D1a/Pinb-D1b and Pina-D1b/Pina-D1a genotypes. These results could present the information to improve milling quality and physical properties of flour in Korean wheat breeding programs.

  • This study was carried out to investigate the change yield and grain quality in rice caused by damages of brown planthopper (Bph) on major agronomic traits at the ripening stage. A major agronomic traits such as culm length, panicle length, number of panicle and number of grain per panicles was no-significant difference compared hopperburn area (HBA) and moderately damaged area (MDA) by brown planthopper with non-damaged area (NDA). but, the ripeing ratio and yield in HBA and MDA was significantly decreased. The perfect rice of brown rice in HBA and MDA was also lowered than the NDA and the immatured grain among imperfect rice in damaged area by BPH was significantly increased than in the NDA. Among the traits related with palatability of cooked rice, the amylose content was not affected by damage of brown planthopper, whereas, the protein content was significantly increased in the HBA and MDA. additionally, Peak viscosity in HBA and MDA is lower than the NDA, and setback was increased. In most cases, there was negative on yield and grain quality by the damage of brown planthopper at the ripening stage. Thus, the rice product harvested in damaged area should be separated with that in non damaged area for grain market quality of milled rice.

  • The relationship between grain yield. protein content and sedimentation value in wheat were studied using 9 varieties cultivated at 8 locations in Korea. The grain yields of wheat varied widely, according to varieties and locations. Negative correlations between grain yield and protein content, and grain yield and sedimentation value were observed, while a positive correlation between protein content and sedimentation value was observed. Specific sedimentation values of soft wheats were below 4, while those of hard wheats were above 5. The intermediate varieties had sedimentation values of 4-5. This showed that specific sedimentation values could be used as a criterion in the classification of wheat quality.

  • The grain quality of imported steamed-rice was investigated to improve the competitiveness of domestic .ice (Oryza sativa L.) in low price market. Eight samples of imported steamed-rice were collected during 2004 and 2005, and they were examined in appearances, physicochemical, pasting, cooking qualities and palatability. In the appearance of grain, there were many cracks, which were easily classified, on the surface of steamed-rice. And they had high protein contents, low moisture contents and very low glossiness. We could certain that there was often decolorization process after boiling according to the wide range of whiteness in steamed-rice samples. Amylograms and thermo-grams of the steamed-rice represented that they were at-ready gelatinized. Thus, we could concluded that the steamed-rice absorbed water with meager endothermic reaction and eluted more soluble solid with many breaks of the grain than milled rice during cooking process. From the sensory preference evaluation, the steamed-rice had the lowest scores among milled rice, long stored rice, and broken rice samples on all evaluation items.

  • In order to study the effect of gamma-ray on the storage stability and quality of polished wheat, the grain was irradiated at $50{\sim}1000$ krad levels and quality assessment was made for three-month storage period. The results are summarized as follows: 1) Growth of molds was apparent at equilibrium moisture content above 14.8% of the grain, but their growth was retarded at 250 krad level. 2) Irradiation at 250 krad level had no adverse effect on fat acidity, reducing sugar content and color of the grain. 3) Irradiation of the grain caused the increase of degree of gelatinization and the decrease of viscosity. 4) Irradiation at 250 krad level brought about higher digestibility of the grain but had no effect on the rate of retrogradation.

  • Effects of nitrogen top-dressing method on quality of barley were evaluted over amount of 2 and 4 kg per 10a on volcanic ash soil in Japan under regrowth stage, productive tiller stage and heading stage. 55% milling time was longer by the amount of top- dressing, but that was not influenced by the times of top-dressing. And glassiness, whiteness, hardness and 8 minute- millng rate were not influenced by times and amounts of top-dressing. Crude protein rate of grain was increased by amount of nitrogen top-dressing, but that did not correlated with time of nitrogen top-dressing. Crude protein rate of grain was positively correlated with 55% milling time. But that did not correlated with whiteness of 8 minute-milled grain. 8 minute-milling rate was negatively correlated with whiteness of 8 minute-milled grain. There was no visible difference of protein matrix with scanning electron microscope in different nitrogen levels.

  • Twenty yearling lambs of Southeast Nigeria dwarf, liveweight ($18{\pm}1.9 kg$) were grouped into 5 treatments. Dry brewer's grain was substituted for maize offal in the experiment diets namely A to E at 0%, 15%, 30%, 45% and 60% respectively, as supplement to low quality, dry season cassava leaf top and Andropogan gayanus hay at 1:1 ratio that lasted for 56 days. After which 5 of the lambs (average bodyweight=$24.3{\pm}1.5kg$) were transferred to metabolism crates to determine the digestibility and nitrogen/protein balance studies. While the mean group intakes were (945.9, 996.1, 1,040.5, 1,148.5 and 1,037.7 g conc. DM/day), the growth rates were (115.1, 124.1, 152.5, 168.5 and 123.1 g liveweight gain/day), respectively. There was a recorded decline in both intake (p>0.05) and growth rate (p<0.05) as the level of dry brewer's grain was increased beyond 45% of the supplement. Similar trend was observed on the protein and organic matter efficiency ratios (p>0.05) together with the organic matter intake. The urine nitrogen output was also significant (p>0.05). The work further revealed that, at a certain critical level of intake, dry brewer's grain is able to support growth rates measurable to or better than those noted when feeding maize offal to lambs, and went on to prove dry brewer's grain as an attractive supplementary feed for the drier months of the year, in the Southeast of Nigeria.
