Evaluation of Grain Zinc and Iron Contents of Wheat Germplasm

  • Wheat is the staple food crop in the word, but wheat products have a low bioavailability of iron and zinc. So in the developing world, where wheat is a staple food, it suffers from micronutrients deficiency. This study was conducted to generate wheat varieties with enhanced grain Zn and Fe contents. Sixty wheat resource were cultivated over 2 years (2019-2021) in the field of NICS, Jeonju, Republic of Korea, to identify agronomic traits. Wheat grains were ground using grinder and analyzed whole wheat flour protein contents and Fe and Zn contents using ICP-OES. The average contents of Zn and Fe grain were 4.6 mg/100g (2.4~8.8 mg/100g) and 4.5 mg/100g (2.4~7.9 mg/100g), respectively. The contents of Fe and Zn in the wheat grain had a positive correlation with the protein content of whole wheat flour, but there was no correlation with heading date (4.22~5.27) and the thousand kernel weight (21.3~57.5 g). Although there was year variation, six resources with high contents of Fe (>5.2 mg/100 g) and Zn (>5.3 mg/100 g) grain in 2 years were selected. These results provide information for selecting breeding materials for biofortified wheat, and further studies on germplasms genetic variations and bioavailability are needed.

한국산과 미국산 소맥의 가공적성 비교 (Comparison of End-product Potentialities of Korean and American Wheats)

  • 국산 소맥의 제분성(製粉性), 이화학적(理化學的) 특성(特性), 리올로지 성질, 제품적성(製品適性)을 미국산 소맥과 비교 검토하였다. 공시품종(品種)의 제분률(製粉率)은 한국산이 71.1%, 미국산이 71.6%로서 비슷하였으며, 한국산 3개 품종(品種)의 AWRC는 평균 61.8%로서 경연질(硬軟質) 소맥의 분류기준인 60%를 상회하는 선에 있었다. 한국산 소맥의 쿠키직경(直徑)은 $8.5{\sim}8.9cm$로서 비교적 좋은 cookie spread를 보였으며 top grain score도 우수하였다. Sponge cake의 부피는 $975{\sim}1,175cc$로서 표준분(標準粉)에 비하여 약 $4{\sim}20%$의 차이가 있었으나 제품(製品)의 평점은 도리어 미국산 소맥보다 높았다. 특히 원광은 쿠키 및 스폰지케익의 적성(適性)이 우수한 품종(品種)으로 선발되었다. 빵의 부피는 $924{\sim}l,055cc$의 범위로서 영광이 1,020cc로 제(製)빵용 표준분을 제외한 공시 품종(品種) 중 제(製)빵적성(適性)이 가장 우수하였으며, 제(製)빵을 위한 제(製)빵용 표준분(標準粉)에 대한 국산 소맥분의 적정혼합비율(適正混合比率)은 30%이었다.

국내산 밀 브랜드 "참들락"의 품질 특성 (Flour and End-Use Quality of "Charmdlerak" Wheat, A Korean Wheat)

  • 본 연구에서는 농촌진흥청에서 생산 관리를 통하여 새롭게 만들어낸 국내산 밀 최고급 밀 브랜드인 "참들락" 밀가루의 원맥, 밀가루 및 가공제품 특성을 비교하였다. 참들락 밀가루 생산을 위한 원맥 생산은 광주광역시 82개 농가에서 생산된 원맥을 선별하여 이용하였다. 참들락 원맥은 다목적용 밀가루에 가장 많이 이용되는 미국산 수입 원맥인 HRWW와 원맥과 밀가루 특성을 비교한 결과 단백질 함량이 약간 높았지만 회분이나 색깔등 대부분의 특성은 비슷하였다. (주)삼양밀맥스에서 산업용 제분기로 제분하여 생산된 참들락 밀가루를 시판되는 다목적용 밀가루와 국수 및 빵 적성을 평가한 결과 대등한 결과를 나타내었다. 이러한 결과는 철저한 생산관리 및 수확 후 관리로 생산된 참들락 맥은 가정에서 가장 많이 소비되는 다목적용 밀가루와 대등한 품질을 나타낸다는 것을 의미한다고 할 수 있다.

석탄병의 재료배합비에 따른 Texture 특성 (Texture Chracteristics of Seoktanbyung as Affected by Ingredients)

  • The objective of this study was to evaluate the effect of the Seoktanbyung, when the ingredients were changed in a variety aspects; the amount of sweetpersimon flour to rice flour, and the amont of water and several kinds of sweeteners as sugar, syrup and honey. The evaluation of these resul were as followings: 1. The standard recipes of Segktanbyung were that the ratio of 30% of sweetpersimon flour was added to ingredients for it. In case of group of sugar added, 30 g of sugar and 90 ml of water were added, in case of group of syrup added, 40 ml of syrup and 60 ml of water, and in cage of group of honey added, 40 ml of honey and 60 ml of water were added. 2. According to the sensory evaluation, the color, flavor, softness, overall quality of Seoktanbyung were the most excellent the ratio of sweetpersimon flour 30%. The grain was gradually coarsen accrording to incremont of sweetpersimon flour added, but chewiness was gradually diminished. The moistness increase according to increment of sweeteners, sweetness was felt heavily according to gradual increment of sweetpersimon flour and sweeteners. 3. According to Instron evaluation, the hardness, gumminess, adhesiveness and chewiness of Seoktanbyung were shown to significant differences, however, the cohesiveness and springiness of it were not shown to significant differences. 4. The evaluation of colors which were shown that as more sweetpersimon flour was added, lightness was diminished, and ${\Delta}E$ which represents total difference in colors was incresed. 5. The content of moisture in Seoktanbyung is such as; 42.96% in sugar added, 38.73% in syrup added, 37.43% in honey added.

In-vitro 전분 소화 모델에서 백미와 현미 가루의 물성학적 특성 분석 (Rheological Behaviors of White and Brown Rice Flours During In-vitro Simulation of Starch Digestion)

  • The in-vitro starch digestibility of white and brown rice flours was continuously characterized from a rheological point of view. Specifically, the in-vitro viscosities of the rice digesta samples were monitored under simulated oral, gastric, and intestinal conditions. A trend of decreasing viscosities in all the digesta samples was observed during the in-vitro digestion. After cooking, the brown rice sample exhibited lower viscosity than that of the white rice flour due to the presence of more non-starch components. A similar tendency was observed during the simulated oral and gastric digestions. However, the viscosity crossover between the white and brown rice samples was observed during intestinal digestion. In addition, the amount of glucose released from the brown rice flour was significantly lower than that from the white rice flour. Thus, the slower rate of starch hydrolysis in the brown rice flour could be related to its in-vitro rheological behaviors.

찰흑미분을 첨가한 식빵의 물성학적 및 관능적 특성 연구 (A Study on the Rheological and Sensory Properties of Bread Added Waxy Black Rice Flour)

  • The physiological and sensory properties of breads made from waxy black rice flour (WBRF) and wheat flour were investigated. The waxy black rice bread was manufactured with 10, 20, 30, or 40% waxy black rice flour(w/w). The bread volume decreased from 2,096.7 mL to 1,703.4 mL as the WBRF content increased from 0% to 40%. The lightness(L-values) decreased with increasing WBRF concentrations, and the redness value(a-values) increased. The yellowness(b-values) slightly decreased with increasing WBRF content. The textural characteristics of the bread c겨mb were influenced by additions of WBRF. The breads containing WBRF had decreases in hardness for the 10% and 20% WBRF groups, whereas increases in hardness were shown with the 40% addition of WBRF. The springiness decreased with increasing WBRF content. The gumminess and chewiness of the waxy black rice bread decreased at the 10% and 20% additions. In the sensory evaluation, sensory scores decreased with increasing WBRF content for the appearance, external color, crumb color and grain of the waxy black rice bread. Overall acceptability for the 10% and 20% WBRF additions did not differ significantly from the score of the control group.

백미와 현미 쌀빵의 특성 비교 (Comparison of Some Characteristics Relevant to Rice Bread Processing between Brown and Milled Rice)

  • 벼 8품종의 현미와 백미로 쌀빵을 제조하여 쌀빵가공성에 대한 벼 품종간 및 현 백미간 비교를 실시하고 관련특성간 상관관계를 살펴 보았다. 벼 품종간에는 제빵성의 차이가 있으나 현미와 백미간에는 유의한 차이가 없었다. 그러나 품종에 따라서는 현미와 백미간에 쌀빵특성의 현저한 차이를 나타내었다. 찰벼 품종인 한강찰벼는 백미로는 쌀빵의 제조가 불가능하였으나 현미로는 다른 어떤 품종 보다도 제빵성이 우수한 결과를 얻었다. 메벼 품종들 중에서는 AC 27, IR 44, 수원조가 백미의 제빵성이 우수하였고, 이 세 품종을 제외하고는 모두 백미보다 현미로 쌀빵을 만들 경우 가공특성이 좋은 경향이 있었다. 쌀의 일반성분 및 쌀빵의 제 특성 간의 상관성을 현미와 백미에 대해 별도로 살펴보면, 현미의 경우에는 부피 증가율이 큰 쌀빵 반죽일수록 푹신한 감이 있는 쌀빵 제조가 가능하였고, 촉촉한 쌀빵일수록 부드럽고 응집성이 높은 경향이었다. 백미의 경우에는 단백질 함량이 낮을수록 촉촉한 느낌의 쌀빵이 되는 경향이었으며, 지질함량이 높을수록 기공의 크기가 작고 균일하며 탄력성이 적은 쌀빵이 제조되는 경향이 있었다 또한 쌀빵 성형이 양호할수록 경도 및 씹힘성이 낮은 부드러운 빵이되는 경향이었으며, 기공의 크기가 균일할수록 기공의 크기가 작으면서 푹신한 감이나 탄력성이 낮은 빵이 되는 경향이었다.

연질밀의 품종별 이화학적 특성 및 제품의 제조적성 (Physicochemical Properties and the Product Potentiality of Soft Wheats)

  • 연질밀인 soft white winter(SWW) 밀과 club 밀 각각 6품종을 공시재료로 하여 종실의 이화학적 품질특성, 제분특성, 호화특성, mixograph 특성 및 제품특성으로 sugar-snap 쿠키와 스펀지 케이크의 제조특성을 측정하고 이들 특성간의 상관관계를 검토하였다. Single Kernel Characterization System(SKCS)에 의한 종실의 경도, 무게 및 크기는 SWW밀과 club 밀의 평균간의 유의성은 적었으나 품종간에는 차이가 비교적 컸다. Straight-grade flour yield, break flour yield, 회분 함량 및 제분평점 등의 제분특성은 SWW 밀과 club 밀 간에 차이가 없었다. Straight-grade flour yield와 break flour yield는 고도의 정의 상관(r = 0.805**)이 있었다. SWW 밀과 club 밀의 Rapid Visco Analyze(RVA) 최고점도와 팽창부피는 유의적인 차이가 없었으며 품종간의 변이도 적었다. RVA 최고점도와 팽창부피는 고도의 정의 상관(r = 0.662**)이 있었다. Mixograph 흡수율은 SWW 밀이 club 밀보다 다소 높았으나 mixograph type은 2M 이하로서 전형적인 연질의 특성을 보였다. Club 밀의 쿠키 직경과 쿠키 top grain score는 SWW 밀보다 좋았으나 통계적인 유의성은 없었다. 스펀지 케이크의 부피는 SWW 밀보다 club 밀이 높았으나 케이크 score는 club 밀이 높은 경향을 보였다. 쿠키 직경과 스펀지 케이크의 부피는 고도의 정의 상관(r = 0.745**)이 있었다.

Classification of 31 Korean Wheat (Triticum aestivum L.) Cultivars Based on the Chemical Compositions

  • Whole grain wheat flour (WGWF) is the entire grain (bran, endosperm, and germ) milled to make flour. The WGWF of 31 Korean wheat (Triticum aestivum L.) cultivars were analyzed for the chemical compositions, and classified into groups by hierarchical cluster analysis (HCL). The average composition values showed a substantial variation among wheat varieties due to different wheat varieties. Wheat cv. Shinmichal1 (waxy wheat) had the highest ash, lipid, and total dietary fiber contents of 1.76, 3.14, and 15.49 g/100 g, respectively. Using HCL efficiently classified wheat cultivars into 7 clusters. Namhae, Sukang, Gobun, and Joeun contained higher protein values (12.88%) and dietary fiber (13.74 %). Regarding multi-trait crop breeding, the variation in chemical compositions found between the clusters might be attributed to wheat genotypes, which was an important factor in accumulating those chemicals in wheat grains. Thus, once wheat cultivars with agronomic characteristics were identified, those properties might be included in the breeding process to develop a new variety of wheat with the trait.

흰찰쌀보릿가루의 첨가가 약과의 품질특성에 미치는 영향 (Effects of Adding Glutinous Barley Flour on Quality Characteristics of Yakgwa)

  • This study was undertaken to examine the quality characteristics of glutinous barley flour (GBF) Yakgwa produced by air frying. To achieve this, the pH of the dough as well as expansion ratio, color, texture, and sensory evaluation of Yakgwa were measured. The pH of the Yakgwa dough significantly decreases with increasing amount of GBF, over the range 5.35-5.45. Lightness (L), redness (a), and yellowness (b) also decrease with increasing amount of GBF. Furthermore, significant decrease was observed in the hardness, proportionate to the ratio of GBF added (p<0.001). Generic descriptive sensory evaluation results reveal that samples with high ratio of GBF show increased grain aroma, burnt aroma, grain flavor, nutty flavor, astringency, chalky taste, and hardness. The acceptance test determined the GBF-20 sample group to be high in flavor and texture (p<0.05). Therefore, it would be appropriate to apply to 20% GBF for alternative and the addition of GBF would be considered to have positive effects on the quality characteristics of Yakgwa using air fryer.
