The thermal-death times of Listeria monocytogenes were determined in inoculated restructured goat steak at 60℃, 65℃, and 70℃ of sous-vide temperatures. D-values of L. monocytogenes in inoculated restructured goat steak ranged from 7.27 min at 60℃ to 0.46 min at 70℃. Times need to yield at least a 6 log reduction of L. monocytogenes at their temperatures for this product were 47, 12, and 3 min, respectively. After sous-vide, all microbial counts in non-inoculated samples were not detectable, except the aerobic and anaerobic mesophilie and lactic acid bacteria counts were lower than 2 Log CFU/g. For sous-vided and grilled sous-vided samples, sous-vide loss and surface shrinkage were the lowest in samples sous-vided at 60℃ for 47 min (p<0.05). These samples demonstrated the lowest CIE L*, shear force, hardness, gumminess and chewiness and the highest CIE a* and hue angle (p<0.05). Therefore, sous-vide at 60℃ for 47 min provided convenient ready-to-cook restructured goat steak for microbiology safety and optimization of physicochemical quality.
The objective of this study was to investigate the relationship between muscle fiber characteristics and fatty acid composition of four major muscles in Korean native black goat (KNBG). Longissimus lumborum (LL), psoas major (PM), semimembranosus (SM), and gluteus medius (GM) were obtained from five male KNBGs of 36 mon of age and subjected to histochemical analysis and to determine fatty acid composition and meat quality traits. There were significant (p<0.05) differences in fiber number percentage (FNP) and fiber area percentage (FAP) of fiber types among these four muscles. PM had the highest FNP of type I and the lowest FNP of type IIB, while SM had the highest FNP of type IIB. The highest fat content was observed in LL while SM had the lowest fat content. The proportions of SFA and MUFA were significantly (p<0.05) different among four muscles due to differences in the majority of fatty acids such as oleic (C18:1) and palmitic (C16:0) acids. The PUFA/SFA ratio was significantly (p<0.05) different among four muscles, and the highest PUFA/SFA ratio was observed in PM. Results suggested that LL and PM might be healthful because of higher desirable fatty acid value and PUFA/SFA ratio, respectively. Also, data showed that correlations between muscle fiber types and fatty acids proportion of goat muscles were reversed with those of cattle muscles.
The primary aim of this study was to evaluate the effect of feeding alfalfa: Concentrate at different ratios (8:2 or 2:8) to Korean native black goats (KNBG) for 90 days on meat quality and bioactive compound content. Feeding KNBG alfalfa and concentrate at different ratios did not impact meat pH, color, microorganism composition, volatile basic nitrogen levels, or lipid oxidation. The low alfalfa (KLA) group exhibited increased oleic acid and monosaturated fatty acid levels, both of which impact the palatability traits of meat. The abundance of bioactive compounds increased in the loin meat of the KLA group, leading to an increase in antioxidant activities. Our results suggest that feeding alfalfa and concentrate at a 2:8 ratio to KNBG can increase taste-related fatty acids and bioactive compounds in loin meat, relative to that achieved by feeding at an 8:2 ratio. Further investigation is required to evaluate the quality and the metabolites of bioactive compounds in KNBG meat and the effect of the different dietary ratios of forage and concentrate.
The objective of the study was to determine the effect of Acacia karroo supplementation on growth, ultimate pH, colour and cooking losses of meat from indigenous Xhosa lop-eared goats. Eighteen castrated 4-month-old kids were used in the study until slaughter. The kids were subdivided in two treatment groups A. karroo supplemented (AK) and non-supplemented (NS). The supplemented goats were given 200 g per head per d of fresh A. karroo leaves. The kids were slaughtered on d 60 and sample cuttings for meat quality assessment were taken from the Longistimus dorsi muscle. The supplemented kids had higher (p<0.05) growth rates than the non-supplemented ones. The meat from the A. karroo supplemented goats had lower (p<0.05) ultimate pH and cooking loss than the meat from the non-supplemented goats. Acacia karroo supplemented goats produced higher (p<0.05) $b^*$ (yellowness) value, but supplementation had no significant effect on $L^*$ (lightness) and $a^*$ (redness) of the meat. Therefore, A. karroo supplementation improved growth performance and the quality of meat from goats.

Jeju Sasa borealis (S. borealis) is indigenous to the Halla Mountain area of Jeju Island, Republic of Korea. However, its dominance has retarded the development of other plant species and lowered biodiversity in this region. The aim of this study was to determine whether S. borealis silage (SS) supplementation affects the chemical composition and antioxidant activity in the fresh meat of Korean native goats (Capra hircus coreanae). The experiment was conducted on 12 Korean native goats at the finisher stage. The feeding groups were the Control (total mixed ration, TMR) and the Treatment (80% TMR + 20% SS). The animals were adapted for two weeks and then subjected to a six-month breeding experiment. Meat samples were excised from the neck, loin, rib, front leg, and hind leg of the slaughtered animals. The meat derived from the treatment group contained more taurine and anserine than that derived from the control group. Both groups did not significantly differ in terms of ω-6/ω-3 fatty acid ratio. The loin and front leg of the treatment group contained significantly higher vitamin E levels than those of the control group. DPPH, ABTS, and FRAP analyses disclosed that the loin and front leg had significantly higher antioxidant activity (p<0.05) than the other parts. Moreover, the loin and front leg cuts of the treatment group had higher antioxidant activity than those of the control group. The present study demonstrated that S. borealis supplementation could effectively improve Korean native goat meat quality.

On-farm experiments were carried out in dryland farming in Bali for 48 weeks to study the effect of flock size on the growth and carcass characteristics of cross-bred goat fed gliricidia-supplemented diet. Eighty four bucks with average live weight of 15.87 kg were allocated in a completely randomized block design arrangement, consisted of three treatments and four blocks. The treatments were $3goats/2.7m^2$ (A), $6goats/5.4m^2$ (B) and $12goats/10.8m^2$ (C), while the floor density was the same ($0.9m^2$ per goat). Feed consumed by goat B was similar (p > 0.10), while feed consumed by goat C was lower (p < 0.10) than goat A. Live weight gain of goat B and C were lower (p<0.05) than goat A. FCR of goat B was higher (p < 0.10) than goat A, while FCR of goat C was similar (p > 0.10) with goat A. Goat B has heavier (p < 0.10) head and digestive tract, while goat C has heavier (p<0.10) hindlegs and digestive tract than goat A. Goat B has lighter (p < 0.10) shoulder, while goat C has lighter shoulder and heavier legs (p < 0.10) than goat A. The carcass quality (measured in terms of loin eye muscle area, meat, bone and fat portions) were not affected (p > 0.05) by the flock sizes.
본 연구는 도매상에서 판매하고 있는 염소육의 영양학적 및 미생물학적 품질을 평가하기 위하여 수행하였다. 시료는 1년생, 2년생, 3년생 염소육을 대상으로 수행하였으며, 각 연령별에서 3마리씩 4부분의 다른 부위(어깨, 목, 허리, 다리)를 선정하여 총 36점을 대상으로 본 실험을 수행하였다. 염소육의 품질을 평가하기 위하여 각 시료의 외형, 색, 냄새, 육즙, 일반조성분, pH, 총균수, 대장균군과 효모수를 측정하였다. 각 부위별 염소육의 pH는 평균적으로 5.647-5.692로 나타내어 각 부위별 염소육의 pH는 유의적 차이가 나타나지 않은 반면 연령별 염소육의 pH는 5.585-5.743로 유의적 차이(p < 0.01)를 나타냈다. 각 연령별 염소육의 육즙함량은 32.24-42.10%로 유의적인 차이(p < 0.01)를 나타내었으며, 마블링은 다른 부위보다 목살부위에서 더 명확하게 확인할 수 있었다. 염소육의 단백질 함량은 20.78-27.71%의 결과로 유의적 차이(p < 0.01)를 나타내었고, 다리부위는 다른 부위에 비하여 높은 단백질 함량을 나타내었으며 각 부위별 염소육의 지방 함량은 2.657-11.469%로 유의적인 차이(P < 0.01)를 나타냈다. 염소육의 수분함량은 69.20-73.31%, 1년생 염소육의 회분함량은 0.989 $\pm$ 0.129%로 다른 연령대의 염소육보다 높은 것으로 나타났으며 이 결과 또한 유의적인 차이(P < 0.01)를 나타내었다. 칼슘의 함량은 유의적인 차이를 나타내지 않은 반면 1년생 염소육의 인의 함량은 0.149 $\pm$ 0.0251%로 다른 년생의 염소고기에 비하여 높은 것으로 나타냈다. 연령별 염소육의 총균수 수준은 5.05-5.15 log cfu/g으로써 유의적 차이를 나타내지 않은 반면 각 부위별 염소육의 대장균군의 오염수준은 2.56-3.05 log cfu/g으로 유의적인 차이(P < 0.01)를 나타냈다. 연령별 염소육 또한 대장균군 오염수준은 2.79-2.84 log cfu/g으로써 유의적인 차이(P < 0.05)를 나타냈으며 1년생 염소육의 대장균 오염 수준은 다른 연령의 염소육에 비해 높은 것으로 나타났다. 효모의 오염수준 또한 각 부위별(P < 0.01), 연령별(P < 0.05)로 유의적인 차이를 나타내었다. 결론적으로 염소육의 영양학적, 미생물학적 품질은 염소의 연령과 판매 부위에직접적인 영향을 받는 것으로 사료된다.
재래흑염소를 각 처리구별로 8두씩 배치하여 총 32두(4처리$\times$8두)를 대상으로 대조구(생후 5개월령의 비거세구)와 3개 처리구(T1구: 7개월령 거세구, T2구: 5개월령 거세구, T3구: 3개월령 거세구)로 구분 배치하여 총 410일간 시험한 결과는 다음과 같다. 비육 전기간(410일간) 동안의 총 증체량은 T2구(28.4 kg)으로 가장 높았으며, 일당증체량에서도 비슷한 경향을 보였다. 총 사료섭취량는 T3구가 410.82 kg으로 가장 낮았고, 사료요구율은 T2가 16.39로 사료효율성이 가장 좋게 나타났다. 흑염소 육의 가열감량과 드롭로스는 대조구가 각각 35.53%와 2.08로 가장 높았고(p<0.05), 총 콜레스테롤함량은 시험구가 대조 구 보다 더 높았다(p<0.05). 또한 관능검사의 다즙성, 연도, 향미, 조직감, 염소 특이취 및 종합평가에서도 전반적으로 처리구가 대조구보다 낮아 더 좋은 관능검사 결과를 보였으며(p<0.05), 그 중에서도 T2구(3.61점)가 가장 좋았다(p<0.05). 육색에서 명도(L)값과 Hue값은 대조구가 가장 낮았고, 적색도(a)값은 T3구, 황색도(b)와 Chroma는 T2구가 가장 높게 나타났다. 지방산 조성에서 oleic acid은 T2구가 53.76%으로 나타났고, 단일불포화지방산 함량(MUFA)은 T1구와 T2구가 가장 높았다(p<0.05). 따라서 MUFA/SFA의 비율은 T1구와 T2구가 대조구보다 더 높았다(p<0.05). 이상의 결과를 종합해볼 때, 고품질 흑염소육 생산을 위해서는 생후 5개월령의 거세가 생산성과 육질개선에서 가장 유리할 것으로 판단된다.
거세 재래흑염소를 각 처리구별로 8두씩 배치하여 총24두(3처리$\times$8두)를 대상으로 대조구(무첨가)와 시험구인 T1구(한방제재 1%첨가)와 T2구(한방제재 2% 첨가)로 구분 배치하여 총 500일간 비육 시험한 결과는 다음과 같다. 비육 전기간(500일간) 동안의 총 증체량과 일당증체량은 T2가 28.30 kg과 0.057 kg으로 타 처리구보다 가장 높았다. 총 사료섭취량에서도 T2구가 519.20 kg으로 크게 높았으며, 사료요구율은 18.35으로 사료효율성이 가장 좋게 나타났다. 도체율은 T1구가51.10%로 가장 높았고(p<0.05), 흑염소 등심육의 가열감량과 드롭로스는 대조구가 시험구보다 크게 높았다(p<0.05). 콜레스테롤 함량은 시험구가 대조구보다 더 높은 경향이었지만 통계적인 유의차는 없었다(p>0.05). 또한 관능검사의 연도, 향미, 조직감 및 염소 특이취는 시험구가 대조구보다 크게 낮아져 (p<0.05), 종합적인 관능평가에서는 시험구(3.71점, 3.90점)가 대조구(4.82점)보다 더 좋게 되었다(p<0.05). 지방산 조성의 단가불포화지방산(MUFA)/포화지방산(SFA)과 불포화 지방산(UFA)/포화지방산(SFA)의 비율에서는 시험구가 대조구보다 더 높은 경향이었으나 통계적인 유의차는 없었다.
