Quality Characteristics of Convenient Chicken Porridge Made with Fresh Ginseng Powder (수삼가루를 첨가한 간편식 닭죽의 품질 특성)

  • This study investigated the quality characteristics of convenient chicken porridge prepared with fresh ginseng powder (FGP). The porridge made with the addition of FGP showed significantly higher or similar pH at 5.99-6.13 compared to porridge made without adding FGP. The convenient chicken porridge with FGP had lower viscosity and higher spreadability than the control group (p<0.05). This porridge exhibited higher lightness (L) and yellowness (b) values but a lower redness (a) value than the control group (p<0.05). The porridge made with the addition of 0.4% blanched FGP (BG0.4) displayed higher total polyphenol content, 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging activities than the other types of chicken porridge (all p<0.05). The porridge with the addition of FGP showed weaker "rice grain size", "glossiness", "appearance cohesiveness", "cooked rice aroma", "sweet taste", "texture cohesiveness", "thickness", and "stickiness" than the control group (all p<0.05). The appearance and flavor acceptance were significantly higher or similar for the porridge samples made with the addition of 0.2% non-blanched FGP (NBG0.2) and 0.4% non-blanched FGP (NBG0.4) when compared with those of the control group.

  • To investigate stability for the quality of selected ginseng products, their sorption properties were clarified in red ginseng extract(RGEP), and red ginseng extract powder(RGEP), and red ginseng extract tea(RGET). Simultaneously, the BET monolayer value of each product was determined in order to inquire out the possibility of establishment as a criterion for the optimum moisture content of the ginseng products. Based on the BET monolayer moisture level of spray dried RGEP which ranged from 4.08 to 4.65%, it would be desirable to establish the optimum moisture content of the products at 4.4${\pm}$0.3%. This is 1.3 to 1.9% lower than the criter on, "less than 6.0%". The optimum moisture level for RGET of which monolayer value ranged 0.93 to 1.37% would be 1.2${\pm}$0.17%. In this case, the maximum permissible limit of moisture content could presumably be raised up to 1.37% in place of current criterion, "less than l.2%". From the results of a study on the growth of molds, the optimum moisture content for RGE assumed to be extended up to 40.0${\pm}$1.07 despite 36.0${\pm}$1.0% of the present criterion. On the other hand, a storage study under the maltreated condition, $48{\pm}2^{\circ}C$ 75%RH, was also carried out in order to make it clear whether the BET monolayer values were able to be used as indices for optimum moisture level of the products. In all samples tested adsorption occurred at even higher levels of moisture than the monolayer values. However, since there are many other possible factors affecting the quality of products the optimum moisture content is preferable to be reduced to the monolayer value. As a result, it was proved that the optimum level of moisture for both RGEP and RGET could be established by the monolayer values.

Effects of Fresh Ginseng Size and Shape on Quality of Black Ginseng (원료삼 크기와 형태가 흑삼의 품질에 미치는 영향)

  • Current study was performed to investigate the effect of morphological properties of black ginseng such as size and shape on the quality of black ginseng. The raw ginsengs were separated based on size (medium, large, and extra-large) and shape (straight ginseng, fibrous root ginseng). Subsequently, the raw ginsengs were steamed at $95^{\circ}C$ for 3 h and dried in the presence of heated air at $50^{\circ}C$ for 30 h. This process was repeated nine times for black ginseng production. The physiochemical properties such as the content of acidic polysaccharides, ginsenosides, and antioxidative activity were evaluated. Although minor difference in physiochemical properties such as acidic polysaccharide content in raw ginseng was observed, no statistical difference in the content of acidic polysaccharides, total phenols, and ginsenosides was observed during final black ginseng production based on size classification. The minor ginsenosides in fibrous root black ginseng, such as Rk3, Rh4, Rg3, Rk1, and Rg5 were higher in content than straight black ginseng. However, no correlation between the shape of ginseng and total phenol content and antioxidative activity was observed. Therefore, present results demonstrate that the difference in ginseng size in same-age and -production area does not affect the quality of black ginseng. Furthermore, difference in ginseng shape does not influence the overall quality of black ginseng. It is hypothesized that this study would be considered as supportive data for the production of high-quality black ginseng.

Matrix metalloproteinase-13 downregulation and potential cartilage protective action of the Korean Red Ginseng preparation

  • Background: The present study was designed to prepare and find the optimum active preparation or fraction from Korea Red Ginseng inhibiting matrix metalloproteinase-13 (MMP-13) expression, because MMP-13 is a pivotal enzyme to degrade the collagen matrix of the joint cartilage. Methods: From total red ginseng ethanol extract, n-BuOH fraction (total ginsenoside-enriched fraction), ginsenoside diol-type-enriched fraction (GDF), and ginsenoside triol-type-enriched fraction (GTF) were prepared, and ginsenoside diol type-/F4-enriched fraction (GDF/F4) was obtained from Panax ginseng leaf extract. Results: The n-BuOH fraction, GDF, and GDF/F4 clearly inhibited MMP-13 expression compared to interleukin-$1{\beta}$-treated SW1353 cells (human chondrosarcoma), whereas the total extract and ginsenoside diol-type-enriched fraction did not. In particular, GDF/F4, the most effective inhibitor, blocked the activation of p38 mitogen-activated protein kinase (p38 MAPK), c-Jun-activated protein kinase (JNK), and signal transducer and activator of transcription-1/2 (STAT-1/2) among the signal transcription pathways involved. Further, GDF/F4 also inhibited the glycosaminoglycan release from interleukin-$1{\alpha}$-treated rabbit cartilage culture (30.6% inhibition at $30{\mu}g/mL$). Conclusion: Some preparations from Korean Red Ginseng and ginseng leaves, particularly GDF/F4, may possess the protective activity against cartilage degradation in joint disorders, and may have potential as new therapeutic agents.

Anti-Diabetic Effect of Black Ginseng in C57BLKS/J-$db/db$ Mice (C57BLKS/J-$db/db$ 마우스에서 흑삼의 항당뇨 효과)

  • 본 연구는 흑삼의 항당뇨 효과를 알아보고자 4그룹(정상군, 당뇨 쥐, 당뇨 쥐에게 백삼을 투여한 군, 당뇨 쥐에게 흑삼을 투여한 군)으로 나누어 6주간 실시하였다. 6주 후 식품섭취량, 체중 증가량을 비교하였는데, 식품섭취량, 체중 증가량에는 그룹 간에 유의적인 차이가 나타나지 않았으나, OGTT(oral glucose tolerance test)와 IPITT(intraperitoneal insulin tolerance test) 경우는 흑삼 투여군에서 긍정적인 결과를 나타내었다. 또한 혈청 포도당과 인슐린농도에 미친 영향을 비교, 분석한 결과, 흑삼 투여군에서 공복 시 혈당, 혈청 포도당, 인슐린 농도가 유의적으로 감소하였다. 이 결과를 미루어 볼 때 흑삼이 백삼에 비해 당뇨를 치료하는데 더 효과적일 것으로 판단된다.

Improving Method of Pre-treatment for Detection Benzo($a$)pyrene Contents in Concentrates (농축물의 Benzo($a$)pyrene 함량 측정을 위한 전처리 방법의 개선)

  • I assessed the B($a$)P content from the Ginseng extract, Red ginseng extract, and Ssangwha extract which have high viscosities. It wasn't easy to extract oil from these samples, consequently measuring of B($a$)P was difficult. In order to know the exact detecting contents, I injected standard material of B($a$)P to the above extractions and pre-treated for measurement but it was also difficult to measure of contents exactly. To improve of detecting method, I removed mucinous materials using a 85% phosphoric acid solution or 10% citric acid solution and then processed continuously with $60^{\circ}C$ hot water. The analysis revealed that extracting the samples contained B($a$)P determined the rate of each 70%, 55%, 67% could increase. As a result the detecting method of B($a$)P contents could be improved.

A Study on the Gaesung's Food Culture of the Late 19th Century in the Novel Mimang (소설 "미망" 속 19세기말 개성의 음식문화)

  • In this study, we attempted to understand the cultural characteristics of Korean food based on a traditional understanding of a Korean novel. To achieve this, food characteristics related to "Gaesung's foods" were analyzed in the representative Korean literary work Mimang. Mimang is a novel, from the latter era of the Chosun Dynasty to the Korean War in the Gaesung area. From that novel, it was discovered that first daily foods in the Gaesung area of the 19th century were various stored fermented foods. The second was the devotion of Gaesung food's cooking process and formal attire. The third was reflected in the economic abundance and the splendor of Gaesung food courts. The fourth was a modern public restaurant in Gaesung, an economic and commercial city. Another historically significant food found in Mimang was Gaesung ginseng.

  • Toxohormone-L is a lipolytic factor, found in ascites fluid of sarcoma 180-bearing mice and of patients with hepatoma A substance that inhibited the lipolytic action of Toxohormoue-L was isolated and purified from Korean red ginseng powder. This substance had a pectin-like $\alpha$-1,4-polygalacturonan backbone with some acetoxyl groups, and so was an acidic polysaccharide It inhibited Toxohormone-L Induced liploysis in a dose dependent manner at concentrations higher than 10 Ug/ml. Purified acidic Polysaccharide yield(PG4-3 and PG4-4 fraction) was about 0.03%. And also pectic acid that inhibited the lipolytic action of Toxohormone-L.

Proximate, Saponin and Amino Acid Compositions in Camellia (Camellia japonica L.) Seeds and Defatted Camellia Seeds (동백종실(Camellia japonica L.)과 유박의 일반성분, 사포닌 및 아미노산 조성)

  • To furnish basic data for the utilizatin of camellia(Camellia japonica L.) seeds as a raw material of industrial products, major chemical components of camellia and defatted camellia seeds were investigated. The moisture, crude ash, crude fat and crude protein contents of camellia seeds were 4.06%, 1.83%, 65.75% and 8.44%, respectively. Defatted camellia seeds indicates that it contains 10.31% moisture, 5.28% crude ash and 17.49% crude protein while no crude fat was detected. The curde ginseng saponin, crude saikosaponin and red ginseng saponin contents of camellia seeds were 108.0mg%, 0.4mg% and 40.3mg%, respectively. Total amino acid contents of camellia seeds and defatted camellia seeds were 7,851mg% and 13,002mg%, respectively, and the major amino acids were glutamic acid, arginine, aspartic acid and leucine. The ratio of essential/total amino acid of camellia seeds was 0.29.
