한국산 멸치젓의 휘발성 향기성분에 관한 연구 (Volatile Flavor Components in Korean Salt-Fermented Anchovy)

  • 한국산 멸치젓의 휘발성 성분을 SDE/GC/MSD로 분석한 결과 총 73개의 화합물이 검출되었으며 aldehyde류(17종), ketone류(10종), alcohol류(12종), N-함유 화합물류(8종), ester류(7종), S-함유 화합물류(5종), furan류(5종) 및 alkane류를 포함한 9종의 기타화합물로 구성되어 있었다. 이중 58종의 화합물은 표준품과의 Rl로서 동정되었으며 나머지는 database에 의한 PBM search로서 잠정적으로 동정되었다. 함량면에서는 aldehyde류가 가장 많았고 다으으로 alcohol류, furan류, ester류, ketone류 순이였다. 특히 3-methylbutanal, 1-penten-3-ol, ehtylacetate, 2-ethylfuran 등의 화합물의 함량이 많았다.

Aroma Components of Chicory (Cichorium intybus L.) Te and Its Model System

  • Aroma components of tea processed from Korean chicory roots were isolated and identified. The model system of amino-carbonyl reaction was carried out to study the formation mechanism of aroma compounds of chicory tea during manufacturing process. The concentration extracts from chicory tea and model system were analyzed and identified by gas chromatography(GC) and GC-mass spectrometry. Twenty-nine compounds, including pyrazines, furans, acids, alcohols, pyrroles and lactones were isolated and identified in chicory tea. The main compounds were pyrazines including methyl pyrazine, 2,5-dimethyl pyrazine, 2, 6-dimethyl pyrazine, 2-ethyl-6-methyl pyrazine, 2-ethyl-3-methyl pyrazine, thrimethyl pyrazine, 3-ethyl-2-5-dimenthyl pyrazine, 5-ethyl-2-3-dimenthyl pyrazine, and 2-acetyl-3-methy pyrazine and pyrroles including acethl pyrrole and formlyl pyrrole ; and furans including furfural , acetyl furan, 5-methyl furan, 5-methyl furfuralm, and furfuryl alcohol. These pyrazine compounds of a roasted and nutty aroma may be important contributors to the flavor of chicory tea. The aroma concentrate of model system also had a roasted and nutty aroma and the main compounds were methyl pyrazine, 2, 5-dimetyl pyrazine, 2, 6-dimethyl pyrazine and trimethyl pyrazine.

Formation of Pyro-products by the Pyrolysis of Monobromophenols

  • Thermal behavior of bromphenols was investigated by direct pyrolysis at high temperature. The thermal degradation products formed by the pyrolysis of mono-bromophenols (o-, m-, and p-) were identified by gas chromatography-mass spectrometry. During the pyrolysis reactions, several kinds of dioxins and furans were produced, and the relative ratio of pyro-products was dependent on the substituted position of bromine in phenolic structure due to the effect of symmetry and steric hindrance. The formation of dioxins can be explained by the phenoxy radical addition and Br atom elimination at an ortho-carbon site on phenolic structure. On the other hand, the formation of furans can be explained by the ortho-ortho carbon coupling of phenoxy radicals at unsubstituted sites to form o, o'-dihydroxydiphenyl intermediate via its keto-tautomer, followed by $H_2O$ elimination. The pyrolysis temperature has also a substantial effect on the dimerized products quantities but little effect on the type of pyro-products. Moreover, the formation mechanism of pyro-products was suggested on the basis of products identified.

Headspace Volatile Compounds of Steamed Liriopis Tuber Tea Affected by Steaming Frequency

  • Flavor quality of Liriopis tuber tea that was made using a steaming process was studied by measuring changes in headspace volatile compounds. Headspace volatile compounds of the prepared samples were isolated, separated and identified by the combined system of purge & trap, automatic thermal desorber, gas chromatography, and mass selective detector. As steaming frequencies were increased, the area percent of aldehydes decreased from 32.01% to 3.39% at 1 and 9 steaming frequency times, respectively. However, furans and ketones increased from 18.67% to 33.86% and from 9.60% to 17.40% at 1 and 9 times, respectively. The savory flavor of Liriopis tuber tea was due to a decrease in aldehydes contributing a fresh flavor at the 1st steaming process and newly generated furans from nonenzymatic browning with repeated steaming frequencies. These results will provide basic information for quality control of the newly developed Liriopis tuber tea.

  • The chlorinated dioxins and furans have attracted considerable scientific and public concern because of their environmental persistence and super-toxicity through the foodchain. Recent dioxin scandals in several military bases have also contributed to a higher awareness on the side of food consumers as well as foodwaste combustion. However, there is continuing uncertainty over the relative importance of different sources of dioxins and furans to the soil environment. In difference to those awareness there is a main influence of potential soil contamination on the dioxin contents in groundwater. It is, therefore, important to provide a sound scientific framework and basis by which to evaluate the significance of the presence of dioxin in soils. Consequently, we have to identify the characteristics and nature of dioxin released into the soil environment, especially in agricultural aspect.

오미자첨가 양파 발효 음료의 향미 특성 (Flavor Characteristics of Omija (Schisandra chinensis Baillion) Added Onion Fermented Beverage)

  • 본 연구는 오미자첨가 양파발효 음료의 휘발성 향기 성분을 분석하여 양파발효 음료 개발의 산업화를 위한 자료를 제시하고자 하였다. 오미자첨가 양파발효 음료의 휘발성 향기성분 분석 결과 테르펜 유도체 화합물류 4종, 에스테르류 9종, 방향족 화합물류 5종, 알코올류 6종, 케톤류 7종, 알데하이드류 3종, 산류 11종, 함황화합물류 1종, 퓨란류 8종, 기타 1종 등 총 55종의 화합물이 동정 되었다. 전체적인 향기 성분의 함량은 산류가 37.8%, 퓨란류 29.0%로 높은 함량으로 나타났다. 산류 화합물에서는 양파의 초산발효를 통해 획득된 acetic acid 및 octanoic acid의 함량이 높게 나타났다. 퓨란류에서는 사과 농축액과 황설탕에서 기인된 woody향의 furfural 및 캐러맬 향의 5-(hydroxymethyl)furfural이 높게 나타났다. 또한 발효음료의 양파향에 영향을 줄 것으로 판단되는 2,5-dimethyl thiophene 함황화합물이 검출되었다.

양파추출농축액(오니웰TM)의 저장 중 휘발성 향기성분 변화 (Changes of Volatile Compounds in Concentrated Onion Extracts (ONIWELLTM) during Storage)

  • 양파추출농축액(오니웰$^{TM}$)의 저장 유통과정 중 품질유지를 위한 척도로서 관능적요소 중 가장 중요한 휘발성 향기성분을 저장기간($30^{\circ}C$, 150일) 동안 분석하였다. 총 23종의 휘발성화합물이 동정되었는데, 이는 함황 화합물류 9종, 카르보닐 화합물류 5종, 퓨란류 4종, 방향족 화합물류 2종 및 기타 화합물류 3종이었다. 함황 화합물류는 전체함량의 80.3~62.6%로 중요한 향기성분임을 알 수 있었다. 이 중 dimethyl trisulfide가 50.1~42.1% 범위로 함황 화합물류 중에서 가장 높은 함량을 차지하였다. 총 함황 화합물류의 함량은 저장기간과 함께 증가하였는데, 특히 신선한 양파향의 dimethyl disulfide와 마늘향의 methyl propyl disulfide 함량이 유의적으로 증가하였다(p<0.05). 가열반응에 의해 생성된 4종의 퓨란류(furfural, 2-acetylfuran, 5-methyl-2-furfural, furfurylalcohol)가 동정되었는데, 함량면에서 함황 화합물 다음으로 많았다(14.2~12.9%). 이 중 furfural이 전체 퓨란류의 61.9~49.4%를 차지하였고, 저장기간과 함께 유의적으로 증가하였다. 카르보닐 화합물에서는 알데히드류가 4종, 케톤 1종으로 총 5종이 검출되었다. 함량면에서는 6.2~4.8% 범위로 퓨란류 다음으로 많았으며, 가열에 의한 지방산화 분해에 의해 생성된 화합물로 동정되었다. 따라서 이들 가열반응에 의해 유도된 퓨란류나 알데히드류가 양파 특유의 함황 화합물과 함께 양파추출농축액(오니웰$^{TM}$)의 풍미에 기여할 것으로 추정되었다.

600°C에서 제지류 소각시 발생하는 휘발성 유기화합물 농도분석 연구 (Analysis of Volatile Organic Compounds Produced from Incineration of Papers at 600°C)

  • 본 연구는 제지류를 소각 처리할 때 발생하는 각종 휘발성 유기화합물에 대한 배출농도를 분석하였다. 실험대상으로는 일상생활에서 다양한 용도로 사용되는 제지류를 A4용지류 (A4 새종이, A4 잉크젯, A4레이져), 신문용지류 (콩기름 신문, 일반 신문), 포장용 Box지, 서류봉투류, 일회용 종이컵류, 화장지류로 분류하였고, 분류된 제지류의 수분함량과 소각시 발생하는 휘발성 유기화합물농도와 소각 재 함량을 분석하였다. 제지류 소각시 발생되는 휘발성 유기화합물을 Furan계, Aldehyde계, Aromatic계, Aliphatic Alkene계, Aliphatic Alkane계, Chlorine계, Ketone계로 분류할 때 가장 많이 발생하는 VOCs로는 Furan계로서 전체 배출농도의 57.4%였고, 그 다음으로 Aromatic계 (22.8%), Aliphatic Alkene계 (14.9%)의 순으로 놀은 평균농도를 나타냈다. 발생되는 휘발성 유기화합물 중 이중 결합을 포함하는 화합물 (Aromatic계, Aliphatic Alkene계, Ketone 및 Aldehyde계)틀의 상대적인 배출비중은 전체 배출농도에 대해 약 40.8%로써, 제지류의 소각에서 발생되는 휘발성 유기화합물의 40% 이상이 대기 중의 오존, 광화적 산화물 및 스모그의 전구체로써 작용할 수도 있을 것이다. 연구 사용된 전체 혼합 제지류 소각시 휘발성 유기화합물중 대표적인 발암성 물질인 Benzene, dichlorornethane, chloroform도 각각 60.5 ug/g, 0.8 ug/g 및 0.1 ug/g 정도 발생될 수 있음을 볼 수 있었다. 따라서, 소형 소각로에서의 제지류의 소각시 상당량의 발암성물질도 배출되므로, 소형 소각로에서도 적절한 VOCs의 제어장치가 꼭 필요한 것으로 판단된다. 본 연구에서 사용된 10가지의 제지류가 가지고 있는 평균 수분함량은 7.2% 정도로써 일반적인 도시폐기물의 제지류 수분함량 (4.5~10%)에 속하는 결과를 보였으며, 평균 9.0 %의 소각잔재 (BottomAsh) 함유량을 보였다. 이러한 결과는 제지류를 소형 소각로에서 소각시 유해 휘발성유기화합물의 발생에도 불구하고, 적절한 대기오염 방지시설을 설치한다면 소각처리가 폐기물 부피감소 측면으로는 상당한 경제적 타당성을 가지고 있음을 암시한다.

지방종류에 따른 Hamburg Patty의 이화학적 특성에 관한 연구 (Study on the Physicochemical Characteristics of Hamburg Patties with Different Lipid Sources)

  • This study was carried out to evaluate the different physicochemical properties of various lipid sources in beef patties during storage for 6 months. Four groups of samples were made of beef meat patties with 22% of tallow, lard, chicken fat and 20% of palm oil. On the analysis result of physicochemical compositions, the patty has its own fatty acids composition and characteristic different from other lipids. Patty with chicken fat has the highest percentage of unsaturated fatty acid composition of 61.0% compared to the other groups of patties. Beef patty with chicken fat has 18.8% of poly unsaturated fatty acid(USFA) and beef patty with beef lipid has 1.5% of poly USFA which is the least percentage among the others. SFA/USFA ratio of beef patty with chicken lipid was 0.5 which was the least value. The composition of PUFA in beef patty with lard increased to 10.0% from 1.9% over initial value after storage for 6 months. On the contrary, the composition of PUFA in beef patty with chicken fat decreased to 9.2% from 18.8% over initial value after 6 months. Volatile free fatty acids of beef patties were evaluated with four kinds of lipid sources. Formic acid was the most as of 59$\mu\textrm{g}$/g in beef patty with tallow, acetic acid was 15$\mu\textrm{g}$/g, and heptanoic acid was 10$\mu\textrm{g}$/g at starting time of storage. However, propionic acid, butyric acid, valeric acid and caproic acid were not detected. After 6 months, formic acid decreased from 59$\mu\textrm{g}$/g to 7$\mu\textrm{g}$/g in the patty with tallow, from 12$\mu\textrm{g}$/g to non-detect level in the patty with palm oil, but two the others patties slightly increased. Volatile compounds in meat patties were reported nearly 1000 kinds of chemical compounds. Beef patty with tallow has aldehydes 5.3, alcohol 1.3, hydrocarbon 0.8, ketones 0.2, ester 0.1, furans 0.1, acid 0.04, sulfur 0.03 in peak area at starting and increased to aldehydes 8.5, alcohol 2.1, ketones 0.5, ester 1.0, furans 1.5 in peak area during the storage. But only furans was not detected after 6 months of storage. From starting to 6 months, aldehydes increased 2∼10 times, alcohol increased 2∼3 times, acids 4∼50 times and ester 9∼20 times in beef patties with pork lipid, chicken lipid and palm oil. Some volatile compounds such as alcohol, aldehydes and acids in all kinds of patties significantly increased after 6 months of storage. These increases cause oxidative rancidity taste in meat patties. These results showed that selt-life of meat patties with 4 different lipids were not over 6 months even though they were stored at -20$^{circ}C$. Therefore, they should be classified as off-grade because of oxidative rancidity. Although beef patties with tallow are currently common type, the possibility for new type of hamburg patty can be developed by applying different lipids. Finally, we found out new type of beef patty added with lard, which has the best taste and quality compared to the other common types.

  • 월남전 고엽제 피해와 도시 폐기물 소각로 문제로 일반에게 알려진 다이옥신(Dioxins and Furans)은 기존의 연구결과 토양, 호수와 강의 바닥, 대기, 수계생물, 동식물 및 인체조직 등 거의 모든 자연환경에 존재하는 것으로 밝혀졌다. 특히 도시의 대기는 도시 폐기물 소각로나 자동차 등 화것 연료의 연소에 의해 배출되는 다이옥신, PCBs, PAH 등 많은 오염 물질을 함유하고 있는데 이 중 독성이 가장 높은 물질이 다이옥신이다.(중략)
