The purpose of this study was to investigate types of well-being oriented consumption values that lead to well-being food consumption behaviors, as well as to identify the variables influence well-being food consumption. A survey of 579 women aged 20 or more was conducted through azoomma.com, an online portal site. The findings of the study were as follows: The level of well-being food consumption was above the mid-value for all categories, with the exception of food with added ingredients. In addttion, multiple regression analysis indicated that approximately 22.7% of the environmentally friendly foods consumed were chosen based on emotional value, degree of price perception and educational level. Conversely, 20.8% of the confectionaeries consumed were chosen based on emotional value, age, degree of price perception, average monthly income, and functional value. When food with added ingredients were considered 16.6% of those were chosen based on emotional value, social value, and degree of price perception. Finally, 29.3% of cereals and fish consumed were chosen based on emotional value, degree of family's health, and social value.
In order to develop of health-oriented convenience foods for rice consumption, functional Misutkaru drink was made by adding several medicinal herbs extracts to fundamental Misutkaru based cereal powder(rice, barley and soybean). Fundamental Misutkaru drink was prepared with the ratio of cereal mixed rice(5g), barley(5g) and soybean(5g) on water (100 mL) and several medicinal herbs extracts. Liriopis Tuber(50%), Omija(15%), Ginseng(10%) and Jujube(25%) were mixed to fundamental Misutkaru as functional Misutkaru. And then it was extracted to added water of 10times during 36hrs at 75$^{\circ}C$. For instant Misutkaru drink of health-oriented convenience foods, mixture of them was made with fundamental Misutkaru drink(80%), extract of several medicinal herbs(20%), and it's sensory score was high. Autoclaved functional Misutkaru drink for long storage period was changed rheological type badly. Overall acceptability and storage period of nonautoclaved functional Misutkaru drink to added extract of several medicinal herbs was higher than fundamental Misutkaru drink.
This study was conducted to identify factors influencing Health/Functional Foods (HFFs) consumption for women in their 20's based on social cognitive theory. A total of 295 subjects participated in this study and were divided into two groups based on the experience of HFF use. This study compared their personal, environmental and behavioral factors which influence the consumption of HFFs. With regard to personal factors, the expected effectiveness for HFFs was higher in the user group than the nonuser group. For the environmental factors, the subjects' use of HFFs was critically affected by the use of HFFs regarding the family members. In terms of behavioral factors, there were no significant differences between the two groups. For the user group, it was observed that their use of HFFs was closely related to when their interests for health was high and the family's use of HFF was high. On the other hands, for the nonuser group, there were less people around them using HFFs than the user group and they did not feel that HFFs were necessary. Since non-experts including parents and close acquaintances critically affected the HFF ingestion of the subjects, it is essential to educate all citizens as well as HFFs consumers about HFFs information.
This study was done to analyze the consumption patterns of health functional food (HFF) as well as to perform needs assessment for the development of web-contents on HFF according to age of adults. The subjects were 238 male and female adults, divided into 4 groups by their age. This study collected all information by self-administrated questionnaires. The awareness on HFF was high in the older adults. The younger adults showed more negative responses to reliability and safety on HFF. The main reason for the consumption of HFF was to supplement nutrients and to prevent diseases. The main types of HFF consumed by adults were nutritional supplementary food, red ginseng products, and glucosamine products. There was higher consumption of nutritional supplementary food in the younger adults and glucosamine products in the older adults. Internet users had low level of satisfaction, with tendency to complain poor contents, reliability, difficulties in searching as problems of the pre-existing HFF websites. As useful methods for provision of information on HFF, most adults wanted general information, articles written by experts and videos. They also wanted to know the safety and side effects of HFF. Requirement of contents composition were various in-depth information, clear indication of citation, fresh updated data while that of display composition was easily-findable, uncomplicated, allowing mutual exchange of communication through bulletin board. These results can be used as basic data that reflect the consumer's needs for developing HFF web-contents according to age of adults.
To enjoy a healthy life, it is important to have a well-balanced diet. However, in today's society, there is an increase in the consumption of preprocessed foods and frequency of eating out. Also the western diet, which is becoming move popular worldwide, contains relatively high levels of protein and fat, and a low amount of fiber, Furthermore, the increased availability of favorite foods has created a condition were the individual diet is less variable. With these conditions, it is difficult to maintain a diet that is nutritionally balanced. With these unbalanced diets, which are difficult to change, there has been an increase in adult disease and health problems, such as colon and breast cancer, It is speculated that metabolites for carcinogens are produced from diet components and that intestinal bacteria contribute to the production of these metabolites. Therefore, it is necessary to evaluate the relationships between health, diet, and intestinal microflora. Soybean oligosaccharide is composed of water-soluble saccharides that have been extracted from soybean whey, a by-product from the production of soy protein. This is mainly a mixture of mono-, di-, tri-, and tetrasac-charides, with the principle components being the oligosaccharide raffinose and stachyose. When consumed by humans, the oligosaccharides cannot be digested in the human duodenal and small intestinal mucosa, and these are selectively utilized by beneficial bifidobacteria in intestines. The results of acute and subacute toxicity tests, soy-bean oligosaccharides were nonpoisonous. Soybean oligosaccharides promote the growth of indigenous bifido-bacteria in the colon which by their antagonistic effects, suppress the activity of putrefactive bacteria. Also, they reduce toxic metabolites, detrimental enzymes and plasma lipid, and increase in the frequency of bowel evacuation and fecal quantities. Consequently, soybean oligosaccharides as functional foods components have potential roles in the prevention and medical treatment of chronic adult diseases. The study of processing property and physiological function of soybean oligosacchavides and development of high oligosaccharide variety allow the creation of new and exciting foodstuffs that aye functional healthy.
Various types of functional foods for health (FFH) are popularly used among adolescents. We surveyed 858 students, $15.0 \pm$ 1.6 (14-18) years of age, attending general junior or senior high schools in Korea for FFH use and significant variables for their FFH use including demographic characteristics, food consumption frequency and nutritional beliefs. The use prevalence of FFH was $47.8\%$, and among all types of FFH, nutritional supplements were taken most frequently, followed by red ginseng products > enzyme containing products > plant extract-fermented products. FFH use was higher in older aged-group, subjects lived in small or middle city, and those from families with a high socioeconomic status in comparison to each corresponding group. Health concern on offsprings by parents and usage ratio of FFH by family was higher in users than in nonusers of FFH. Total score of dietary assessment was higher in users than in nonusers of FFH, and users had a more positive view concerning the potential health benefit of FFH than did nonusers. Most users of FFH took FFH when they were healthy ($50.7\%$) , and they did not feel special effects through the FFH use ($57.1\%$) . Most users of FFH got the information on FFH through family and relatives ($61.5\%$) , and most of them purchased FFH at pharmacy or oriental medicine clinics ($55.1\%$) . FFH users preferred vitamin C-and Ca-supplements most among the vitamin mineral supplements belonged to FFH. Given the widespread use of FFH by adolescents, the reasonable use of these products for the contribution to their overall health and well-being is a subject that is emphasized in nutrition education for them. This study was conducted to propose residue limits of organophosphorus pesticides in functional foods produced from peels of citrus fruits. For these, not only reduction factors of pesticides in cooking and processing were estimated, but factors needed in order to produce residue limits were identified and their application method was devised. The results were as follows: (1) reduction factors appeared as 0.09-1.60 by different processings of various foods, (2) residue limits of pesticides on dietary fiber and bioflavonoid products could be computed from maximum residue limit of pesticides on the raw agricultural produce, reduction factors, and the anticipated amount of consumption of the functional foods. (3) residue limits of 18 organophosphorus pesticides were proposed in the range of 0.01-3.0mg/Kg on the dietary fiber product and 0.1-80mg/Kg on the bioflavonoid product from citrus fruit peels.
Functional food for prevention of chronic diseases is one of this century's key global challenges. Cancer is not only the first or second leading cause of death in China and other countries across the world, but also has diet as one of the most important modifiable risk factors. Major dietary factors now known to promote cancer development are polished grain foods and low intake of fresh vegetables, with general importance for an unhealthy lifestyle and obesity. The strategies of cancer prevention in human being are increased consumption of functional foods like whole grains (brown rice, barley, and buckwheat) and by-products, as well some vegetables (bitter melon, garlic, onions, broccoli, and cabbage) and mushrooms (boletes and Tricholoma matsutake). In addition some beverages (green tea and coffee) may be protective. Southwest China (especially Yunnan Province) is a geographical area where functional crop production is closely related to the origins of human evolution with implications for anticancer influence.

This study attempted to examine the subjectivity of consumers of the MZ generation in their 20s on health functional foods, which have recently emerged as hot consumption items. A study was conducted using the Q methodology to examine the characteristics, meanings, and values of the younger generation in the health functional food market represented by red ginseng, vitamins, and probiotics. Using the QUANL analysis program, a total of 37 Q samples and 30 P samples were used in the study, and three types with unique tendencies were found. The first type discovered through this was named "YubiMuhwan(Forewarned, forearmed; 有備無患)", the second type was "Bansinbanui(half confident; 半信半疑)", and the third type was called "Silsagushi(empirical tradition; 實事求是)". Reflecting these attributes, various strategic ideas were presented for the classification of new characteristics and consumers in the health functional food market and promotion of sales.
Food consumption trends in Korea are becoming more health-oriented, and consumers have become interested in high-quality foods that are also beneficial to health. The goals of this study are to examine consumers' impressions of black garlic and to investigate the preferred optimal attribute combinations related to black garlic. To do this, a survey of 352 consumers was used to analyze the current status of consumer purchases of black garlic. A conjoint analysis was conducted to analyze certain aspects of consumer preferences, such as price, health functional food certification status, processing type, and taste. Consumers' purchase experiences with black garlic were relatively few, but those with purchase experience reported that they consumed it mainly for their health. The results show that consumers are not satisfied with the taste and flavor of black garlic despite their perceiving it as a beneficial food for health. Despite the fact that consumers' purchase intentions were found to be low, it can greatly increase if improvements in price, flavor, and taste can be realized and if offering substantial benefits. The results of the conjoint analysis of the preference attributes of black garlic products are as follows. Consumers considered price among the four attributes as most important. The taste of black garlic and the processing style were similar in terms of importance, and health functional food certification was less important. Finally, the results suggest that continuous improvements in price and flavor are needed to spread the consumption of black garlic.
