Leaf Blight of Sweet Persimmon Tree in the Field and Fruit Rot in the Storage Caused by Pestalotia diospyri (Pestalotia diospyri에 의한 생육중의 단감 잎마름병과 저장중 과일 부패병)

  • Leaf blight and fruit rot of sweet persimmon (cv. Fuyu) caused by Pestalotia diospyri were observed during the growing season and postharvest such as storage and transport, respectively. Typical symptoms on leaves developed with small brown spots and were later reddish brown colors. In the storage fruit, the white mycelial mats formed between fruit and calyx. The pathogenic fungus was isolated from infected fruits and cultured on potato dextrose agar (PDA). Colony color of the fungus was white at first on PDA. Conidia were ovoid or fusiform, 5 cells, middle 3 cells were olive, upper and lower 2 cells were colorless, and their size were $16{\sim}22\;{\times}\;6{\sim}8\;{\mu}m$. They had were $2{\sim}3$ appendage at basal cell and size $9{\sim}18\;{\mu}m$. Based on the cultural and mycological characteristics and pathogenicity test on host plants and fruits, the fungus was identified as Pestalotia diospyri Syd.&P. Syd. This is the first report on the leaf blight and fruit rot of sweet persimmon caused by Pestalotia diospyri in Korea.

Occurrence of Fruit Rot of Watermelon (Citrullus lanatus) Caused by Sclerotium rolfsii (Sclerotium rolfsii에 의한 수박 흰비단병 발생)

  • The fruit rot of watermelon (Citrullus lanatus) occurred sporadically in the farmers field at Chojeondong, Jinju city, Korea, in 2007. The typical symptom was water-soaked, brown on the fruit, and than infected fruits were mostly rotted. White mycelial mats were spread over lesions, and then sclerotia were formed on fruit and near soil line. The sclerotia were globoid in shape, $1{\sim}3\;mm$ in size and white to brown in color. The optimum temperature for mycelial growth and sclerotia formation on PDA was $30^{\circ}C$ and the hyphal width was $4{\sim}8{\mu}m$. The typical clamp connections were observed in the hyphae of the fungus. On the basis of mycological characteristics and pathogenicity to host plants, this fungus was identified as Sclerotium rolfsii. This is the first report on the fruit rot of watermelon by S. rolfsii in Korea.

Effects of Soil Textures by Soil Addition on the Growth and Quality of Oriental Melon (Cucumis melo L. var. makuwa Mak.) under Protected Cultivation (객토시 토성이 시설참외의 생육과 품질에 미치는 영향)

  • This study was conducted to investigate the effects of soil amendment with different characteristics on plant growth, fruit yield and quality of oriental melon for continuous cropping under protected cultivation. Humus layers in arable soil was disturbed because soil amendment from hillside to oriental melon field was continued to resolve problems for continuous cropping. Water potential and hardness of soil was decreased in sandy loam with lower clay contents compared with loam and silty clay. Leaf length and area, fresh and dry weight of plant at earlier growing stage were higher, but chlorophyll contents of leaves were dropped in sandy loam compared with silty clay soil. Fruit size and weight was higher in sandy loam, but soluble solid and color of fruit were increased in silty clay. Marketable and unmarketable yield and quantity of fermented fruit were the highest in sandy loam. Hardness and weight of fruit were decreased by longer storage period and soluble solids of fruit was peaked at 5 day after storage, but decreased by prolonged continued storage. Because of these results, soil characteristics of amendment to oriental melon field should be considered as an important factor for quality and yield of oriental melon.

Effects of the Sarcodon aspratus on the Physicochemical and Sensory Properties of Cooked Beef (능이버섯 첨가가 우육의 물리화학적 및 관능적 특성에 미치는 영향)

  • An instrumental analysis of cooked beef was carried out along with sensory evaluation to find out the effect of Sarcodon aspratus on the physicochemical and sensory characteristics in comparision with kiwi fruit and pear. Transmission electron microscopy showed the muscle fiber started to be degraded when treated with Sarcodon aspratus(1,000unit) for 10 min at $25^{\circ}C$. No distinct sarcomere, A-band, and Z-line was observed when treated with Sarcodon aspratus for 60 min at same condition. The moisture content of cooked beef was increased in proportion to the increment of Sarcodon aspratus, kiwi fruit and pear. In the texture, shear force of cooked beef was decreased with the increment of Sarcodon aspratus, kiwi fruit and pear. In terms of color, L-value was decreased by addition of Sarcodon aspratus, whereas L-value was increased by addition of kiwi fruit and pear in dose-dependent manners. a-value and b-value was decreased with the increment of Sarcodon aspratus, kiwi fruit and pear. There were significant differences (p<0.05) in the sensory characteristics of the samples in which control was most preferred in taste and flavor. As the content of Sarcodon aspratus, kiwi fruit and pear was increased, the score of juiciness and tenderness was increased. In the overall acceptance, score of 0.05~0.1% Sarcodon aspratus and 10% pear was not different from that of control. Therefore, it can be concluded that 0.05~0.1% addition of Sarcodon aspratus might be desirable for the improvement of texture and juiciness of cooked beef.

DEVELOPMENT OF AN INTEGRATED GRADER FOR APPLES

  • An integrated grader which measures soluble solid content, color and weight of fresh apples was developed by NAMRI. The prototype grader consists of the near infrared spectroscopy and machine vision system. Image processing system and an algorithm to evaluate color were developed to speed up the color evaluation of apples. To avoid the light glare and specular reflection, an half-spherical illumination chamber was designed and fabricated to detect the color images of spherical-shaped apples more precisely. A color revision model based on neural network was developed. Near-infrared(NIR) spectroscopy system using NIR reflectance method developed by Lee et al(1998) of NAMRI was used to evaluate soluble solid content. In order to observe the performance of the grader, tests were conducted on conditions that there are 3 classes in weight sorting, 4 classes in combination of color and soluble solid content, and thus 12 classes in combined sorting. The average accuracy in weight, color and soluble solid content is more than about 90 % with the capacity of 3 fruits per second.

Comparative study of worksite food service between white and Blue color Groups in Seoul and kyunggi-Do (서울과 경기지역의 사무직과 육체적 노동직 급식간의 영양공급량 비교 연구)

  • This study was conducted to investigate the dietary and nutritional status supplied by group feeding for blue color and white color in Seoul and Kyunggi area. The results are summarized as follows : 1. Blue color and white color of the average food supply per person per day was 1370.0g. Blue color of the total fool supply was consisted of 35.1% grain, 44.1% vegetables. White color of the total fool supply was consisted of 31.8% grain, 44.0% vegetable. The amount of milk product, fruit and fat supply were very small. 2. Blue color and white color of the ratio of main dish and side dish supplied was 69 : 31, 60.0 : 39.7. 3. Main dish all is rice. Side dish ard kinds of soupes and Jigeai Johngol in the two groups. In the kind of side dish white color much more than blue color. Dessert are scarcely supplied in the two groups. 4. The mean daily supplies of energy and 9 nutrients were above the level of the R.D.A. Blue color and white color of the mean daily amount of energy supply was 2653.0㎉ 3022.6㎉. Blue color and white color of the ratio of carbohydrate, protein, and fat supplied was 68.4%, 18.6%, 13.1%, and 62.1%, 20.9%, 17.0%. 5. Blue color and white color of the average feeding cost amounts to 460won, 812won per meal. 6. Blue color; There were high correlations in supply amoung energy, protein, fat. Carbohydrate, calcium, iron, riboflavin, niacin. White color; There were high correlation in supply amoung energy, protein, carbohydrate, calcium, iron, thiamin, riboflavin, niacin, vit-C.

Antimicrobial Activity of Thinned Strawberry Fruits at Different Maturation Stages

  • Among the phenolic compounds that is generally present in strawberry fruits, five simple phenolics, three flavonoids, and a stilbene were tested for their antimicrobial activity against seven fungi and one oomycete. trans-Cinnamic acid showed strong antimicrobial activity, and the antimicrobial effect of the simple phenolics decreased with an increase in the number of hydroxyl groups. Phytophthora capsici was the most susceptible to the phenolic compounds tested in this study. trans-Cinnamic acid, p-hydroxybenzoic acid, and kaempferol were mainly detected in 'Seolhyang' strawberry fruits, and the total phenolic contents of the fruits decreased during their development. Extracts of the green (1-10% red color) and red (above 90% red color) strawberry fruits reduced the mycelial growth and zoospore germination rate of P. capsici, and the extract of red strawberry fruit showed strong antimicrobial activity against the zoospore germination of P. capsici. These results indicate that strawberry fruits contain antimicrobial phenolic compounds and that strawberry fruit extract can be used as a natural fungistat.

Soft Rot of Eggplant (Solanum melongena) Caused by Choanephora cucurbitarum in Korea

  • In April 2002 and 2003, soft rot on fruit of eggplant (Solanum melongena) caused by Choanephora cucurbitarum was observed in the experimental fields at Gyeongnam Agricultural Research and Extension Services in Korea. The disease began with water-soaking and dark-green lesions, and then the infected tissues were rapidly rotten. Sporangium was subglobose in shape and sized $40{\sim}130\;{\mu}m$. Monosporous sporangiola were elliptic, fusiform or ovoid, brown in color, and measured as $12{\sim}20\;{\times}\;6{\sim}14\;{\mu}m$. Sporangiospores having three or more appendages were elliptic, fusiform or ovoid in shape, dark brown or brown in color, and sized $14{\sim}20\;{\times}7{\sim}16\;{\mu}m$. The fungus grew well on potato dextrose agar between 15 and $40^{\circ}C$ and its optimum growth temperature was $30^{\circ}C$. Based on morphological characteristics, the causal fungus of the fruit soft rot of eggplant was identified as C. cucurbitarum. This is the first report on the soft rot of S. melongena caused by C. cucurbitarum in Korea.

Quality Characteristics of Cookies Prepared with Ulleung-Maesil (Prunus mume fruit) Powder (울릉매실 분말 첨가 쿠키의 품질 특성)

  • Quality characteristics effects of adding four different amounts (0%, 1%, 2%, 3%) of Ulleung-Maesil (Prunus mume fruit) powder cookie doughs were examined. pH, water content & bulk density of dough, spread factor, color value, hardness and consumer acceptability of maesil cookies were measured. The pH and water content of freezedried Ulleung-Maesil powder were 2.01 and 6.26%, respectively, while the L, a, b values were 76.14, -1.66 and 28.65, respectively. Although bulk density of the 3% powder group of cookie dough was the highest, its pH value was the lowest compared to the other groups (p < 0.05). Spread factor of the 3% group showed the lowest value among all groups (p < 0.05). Hardness of the control group (i.e, 0%) was significantly higher than the 1%, 2%, 3% groups (p < 0.05), which showed no significant difference among themselves. The ${\Delta}E$ value of cookies increased significantly with increasing Maesil powder content (p < 0.05). The consumer acceptability scores for control and 1% Maesil cookie groups ranked significantly higher than the 2% and 3% groups in overall acceptability, taste, flavor and texture (p < 0.05). In conclusion, our study suggests that small amounts of Ulleung-maesil can add positive attributes to cookies.

Growth Control of Upper Part in 'Fuji'/M.9 Apple Tree Canopy by Cutting Time of Trunk and Plant Growth Regulators (주간 절단시기 및 생장조절제를 이용한 '후지'/M9 사과나무 수관 상단부 생장조절)

  • BACKGROUND: The vigorous shoot growth in upper part of apple tree canopy leads to poor fruit quality and flower bud formation in lower part of canopy. So, this study was conducted to develop the proper control method about the shoot growth in upper part of apple tree canopy. METHODS AND RESULTS: Trunks of 'Fuji'/M9 apple trees were cut (back pruned) to 2.5 m in tree height on 11 February (dormant) or 12 April (full bloom). Naphthalene acetic acid (NAA) was applied at 2.0% to cut surface when trunk was pruned. Prohexadione-calcium (Pro-Ca) was sprayed at 250 mg/L above 2.0 m in tree height at 23 April (petal fall). The NAA or Pro-Ca application after trunk was pruned at dormant (TR-2 and TR-3) significantly reduced shoot growth in upper part of canopy compared with the control (tree was only pruned at dormant, TR-1), but the percent of shoots showing the secondary growth of TR-3 was higher over 2 times than that of TR-2. The reduction of shoot growth in upper part of canopy by TR-2 and TR-3 increased the fruit red color from the lower part in the treating year and blooming of the lower part in the following year. CONCLUSION: Applying 2.0% NAA to cut surface of pruned apple trunk at dormant was the most effective way for stabilization of the tree vigor in upper part of the canopy in a high density apple orchard.
