Quality Characteristics of Sugar Free Fruit-Vegetable Jam containing Calcium (칼슘을 첨가한 무설탕 과일 채소잼의 품질특성)

  • To decrease excessive sugar intake, and increase vegetable and calcium intake, we manufactured sugar free fruit-vegetable jam containing calcium and fructo-oligosaccharide to substitute for sucrose. We evaluated jam for physico-chemical and sensory properties. When the amount of apple was replaced with the amount of kale, $^{\circ}brix$ decreased, whereas there were no significant changes in pH. As the amount of kale increased, lightness and yellowness increased. However redness did not show trend to increase or decrease. In the texture profile analysis, hardness, springiness, cohesiveness, gumminess and chewiness significantly decreased with increased amount of kale, but adhesiveness gradually increased. The sensory parameters including taste, flavor, color, spreadability and overall acceptance of jam added 10.0~12.0% amount of kale were the highest acceptance. As the amount of kale added in the jam, sensory properties decreased. In general, when sugar free fruit-vegetable jam was manufactured, apple and kale ratio of 3:1 or 4:1 was considered appropriate.

Characteristics of Fermented Fruit and Vegetable Mixed Broth Using by Bacteriocin-producing Lactic Acid Bacteria and Yeast (박테리오신 생성 젖산균과 효모를 이용한 과채발효액의 특성)

  • A mixed culture of bacteriocin-producing lactic acid bacteria and yeast was used to prepare unique fermented fruit and vegetable beverage which contains bacteriocin. Fruit and vegetable broth fermented by Lactococcus lactis 11454 showed inhibitory activity against foodborne pathogens such as Listeria monocytogens and Staphylococcus aureus, and Streptococcus mutans which is a major causative agent for dental caries. Bacteriocin was detected at the end of fermentation of fruit and vegetables and its antimicrobial activity was stable for 5 weeks during storage at $4^{\circ}C$. These results suggest that the presence of bacteriocin in beverages during fermentation and storage will provide a safeguard against foodborne pathogens and spoilage bacteria. To improve flavor of the fermented broth, post-fermentation of the fermented broth was carried out at $4^{\circ}C$ by using yeast isolated from raw material mixture. Total acidity of the post-fermented broth was slightly decreased, but significant increase in the concentration of succinic acid was observed in the post-fermented broth. It was also observed that bitter and disagreeable taste compounds such as phthalates were decreased, and mild acidic and fruity flavor esters and alcohols were increased by the post-fermentation of the fermented broth with yeast.

Effect of Environment on Plant Growth of Oriental Melon in South-North Directed Ridges under East-West Oriented Vinyl house ($\cdot$서동 하우스내 이랑위치별 환경과 참외 생육)

  • This experiment was carried out to investigate the effect of ridge direction (south-north) on temperature and light intensity on early growth of oriental melon under east-west oriented vinyl house cultivation. The air-temperature of minimum between north and south-ridge in the tunnel of vinyl house was $12.5^[\circ}C\;and\;11.3^{\circ}C$ and that of maximum between north and south-ridge was $36.7^{\circ}C\;and\;34.7^{\circ}C$, respectively. The minimum and maximum air-temperature of north-ridge in the tunnel of vinyl house on Feb. 15 were $12^{\circ}C\;and\;2.0^{\circ}C$ higher than those of south-ridge, respectively. The intensity of daylight between south and north-ridge was similar during 9:00-10:30 a.m., that of south-ridge was higher than north-ridge during 10:30-11:30 a.m. and that of north-ridge was higher than south-ridge during 11:30-17:30. The plant growth after 55 days of planting on the north-ridge was prominent cultivation compared to south-ridge. The female flowering and first harvesting day were earlier in north-ridge than in south ridge. The marketable fruits rate and yields (kg/10a) were $6.7\%$ and 218kg higher in north-ridge cultivation than south-ridge, respectively. Differences of marketable fruit rate and yield (kg/10a) in each ridge were significant.

  • A new powdery mildew resistant squash (Cucurbita moschata Duch.) 'Miso' was bred from a cross between powdery mildew resistant true variety 'Sangol' and powdery mildew susceptible inbred line 'Seoulmadi' at National Institute of Horticultural & Herbal Science (NIHHS). The 'Miso' variety was vigorous and highly resistant to powdery mildew. It showed white green fruit color. The variety yielded 21.3MT/ha which is 52% more than control variety.

Influence of Atmospheric Vapor Pressure Deficit on Fruit Fermentation of Oriental Melon(Cucumis melo L. var makuwa Makino) (대기 증기압차가 참외 발효과 발생에 미치는 영향)

  • Although the relationship between fermentation and factors such as soil water, redox potential, rootstocks and climatic conditions has been reported, its mechanism of fermentation is still not clear. Transpirations of leaf and fruit at different climatic conditions, influence of soil water potential and atmospheric vapor pressure deficit (VPD) on fermentation were evaluated. Transpiration rate decreased with decreasing soil temperature and soil water potential. Low VPD conditions which occurred during low air temperature and high humidity also decreased transipration rate. These data exhibit that fruit water balance affected by various factors relate to transpiration. Our results also indicate that high hydraulic conductance of root, high soil water potential and low VPD condition exert a significant effect on fermention of oriental melon and so called "water filled fruit".

Effect of Double Layer Nonwoven Fabrics on the Growth, Quality and Yield of Oriental Melon(Cucumis melo L. var. makuwa Mak.) under Vinyl House (보온부직포 이중피복이 참외의 생육, 품질 및 수량에 미치는 영향)

  • The use of blankets to preserve heat in oriental melon cultivation is a common practise without artificial heating and warming systems. Efficiency of blanket decreased with annually usage. This experiment was conducted to investigate the effect of double layer nonwoven fabrics on heat conservation, plant growth, fruit quality and yield of oriental melon in greenhouse. The results were compared among the non-woven fabrics of 9+3, 6+6, 6+3 and 12 ounce from transplanting to April 20, 2001, 2002. Night temperature within tunnel was high at 9+3, 6+6, 6+3 and 12 ounce in order. In plant growth, stem length, leaf numbers and exudate, under double layer nonwoven fabrics were better than single layer blanket of 12 ounce especially, 9+3 double layer blanket was the best. Fruit weight, flesh thickness, soluble solid and marketable yield rate remained same in all treatments. Fermented fruit rate was the highest in 12 ounce as $32.9\%,\;19.6\%\;under\;9+3,\;17.1\%\;under\;6+6,\;16.6\%$ under 6+3 double layer nonwoven fabric, respectively. Compared to 2,260kg yield per 10a of 12 ounce single layer nonwoven fabrics, $7\%$ was increased under 9+3 but $3\%\;and\;13\%$ were decreased under 6+6 and 6+3 double layer nonwoven fabrics, respectively. Compared to income, 4,499-thousand-won per 10a, of 12 ounce single layer blanket, $13\%\;and\;3$ were increased under 9+3 and 6+6 double layer nonwoven fabrics, respectively. Whereas, $10\%$ decreased under 6+3 double layer nonwoven fabrics. From this results it is evident that 9+3 double layer nonwoven fabrics was the best for thermokeeping, fruit quality, and was most economic under non heating system.

A Study on the Microbiological Quality of Vegetables in Relation to the Sanitization Method Used and Vegetable Types (채소군별 미생물학적 안전성 확보를 위한 적정 소독방법)

  • In this study the microbiological quality of vegetables was evaluated in relation to the sanitization methods used and vegetable types which consisted of raw food ingredients used in foodservice operations. We analyzed the microbial quantities on lettuce and spinach, which were used as leaf vegetables and cucumber and tomato, which were used as fruit vegetables according to various disinfection methods using different chlorine concentration(50 ppm, 100 ppm, 200 ppm) and exposure time(5 min, 10 min) over 5 days. When the effects of the disinfection methods on microbial qualities and sensory evaluation were analyzed, the following results were obtained. First, in the leaf vegetables, disinfection with a chlorine concentration of 200 ppm for a 5 minutes exposure time was needed to control microbial growth. Second, fruit vegetables sterilized with tap water had reduced microbial qualities after an extended amount of time relative to chlorine disinfection, that is, disinfection with a chlorine concentration of 50 ppm for 5 minutes exposure time was desirable.

A Review of End-effector for Fruit and Vegetable Harvesting Robot (과채류 수확을 위한 로봇 엔드이펙터 리뷰)

  • Fruit and vegetable harvesting robots have been widely studied and developed in recent years to reduce the cost of harvesting tasks such as labor and time. However, harvesting robots have many challenges due to the difficulty and uncertainty of task. In this paper, we characterize the crop environment related to the harvesting robot and analyzes state-of-the-art of the harvesting robot especially, in the viewpoint of robotic end-effector. The end-effector, an one of most important element of the harvesting robot, was classified into gripper and harvesting module, which were reviewed in more detail. Performance measures for the evaluation of harvesting robot such as test, detachment success, harvest success, and cycle time were also introduced. Furthermore, we discuss the current limitations of the harvesting robot and challenges and directions for future research.

Antimicrobial activity of vegetable and fruit juices on the scalp bacteria

  • Twenty bacterial strains were isolated and identified from human scalps. These strains were identified as 14 Bacillus megaterium, 1 Bacillus subtilis, 3 Staphylococcus aureus and 2 Staphylococcus saprophyticus. Two genuses are Gram-positive. In order to search for antimicrobial substances from natural plants, eighteen plant materials being made of perilla leaf as well as spices including garlic and ginger were used. The effects of these vegetable and fruit juices on the growth of scalp bacterial strains were investigated. Garlic and lemon juices showed antimicrobial activities on the growth of twenty bacterial strains belonging to 4 kinds of species. Onion, spring onion and leek juices inhibited the growth of only one bacterial strains Bacillus megeterium MS13.

A Survey for Plant-Parasitic Nematodes Associated with Strawberry (Fragaria ananassa Duch.) Crop in Korea

  • A survey was conducted during February-March 2003 to determine the occurrence and population density of plant-parasitic nematodes in strawberry (Fragaria ananassa) fields, cultivated under plastic houses in major strawberry growing regions of Gyeongbuk and Chonbuk provinces, Korea. The survey revealed presence of eleven species of plant-parasitic nematodes viz., Aphelenchoides fragariae, Criconemoides morgensis, Ditylenchus dipsaci, Helicotylenchus dihystera, Hirschmanniella imamuri, Meloidogyne arenaria, M. incognita, Pratylenchus penetrans, Psilenchus hilarulus, Tylenchorhynchus claytoni and Xiphinema sp. Frequency and density of each species were highly variable from field to field and within the field. Plant growth was not uniform in the surveyed fields under plastic houses; stunted growth, chlorotic leaves, small curled or crinkled leaves, deformed buds and flowers and wilted plants with fewer fruits were observed in patches.
