Studies on Composition of Dietary Fiber in Vegetables (한국인 상용 채소류의 식이섬유 조성에 관한 연구)

  • The distinctive physiological effect of dietary fiber in the body were studied according to contents and characteristics of each fiber component. In the present study, the composition of fiber in vegetables was investigated, and the effect of heat treatments on fiber content was studied. Contents of total pectin were 0.89~2.75 g/100 g on dry weight basis, with most contents from 1~2 g/100 g. The hot water soluble pectin (HWSP) content of vegetables ranged from 0.33~0.98 g/100 g, sodium hexametaphosphate soluble pectin (HXSP), from 0.29~0.81 g/100 g and HCl soluble pectin(HCLSP), from 0.30~1.40 g/100 g. HCLSP showed the greatest variation according to the type of vegetables. Every vegetable types showed similar contents of these three pectic fractions. Fiber contents of vegetables ranged from 8.8~23.8% for cellulose, 0.6~10.6% for hemicellulose, 1.0~5.2% for lignin, 10.9~25.4% for acid detergent fiber (ADF) and 11.8~31.9% for neutral detergent fiber (NDF) on dry weight basis. Especially, peppers showed higher contents of NDF than the other vegetables. It was found that a great portion of NDF, which is total insoluble dietary fiber, was composed of cellulose since cellulose constituted 63% of NDF. Heat treatment reduced total pectin content in all vegetables regardless of the heating methods and the greatest reduction was observed upon boiling. HWSP content increased, whereas HXSP and HCLSP contents decreased. Heat treatment increased the NDF, ADF and cellulose contents, and most changes were due to changes in cellulose content. The values of hemicellulose and lignin showed irregular pattern upon heating. Contents of total dietary fiber (TDF) were 1.20~7.11% on fresh weight basis. Garlic, edible burdock and pepper leaf showed higher contents of TDF than other vegetables. It was found that a great portion of TDF was composed of insoluble dietary fiber.

  • Sweet corns are enjoyed worldwide as processed products and fresh ears. Types of sweet corn are based on the gene(s) involved. The oldest sweet corn type has a gene called "sugary (su)". Sugary-based sweet corn was typically named "sweet corn". With its relatively short shelf life and the discovery of a complementary gene, "sugary enhanced (se)", the sweet corn (su only) was rapidly replaced with another type of sweet corns, sugary enhanced sweet corn, which has recessive homozygous su/su, se/se genotype. With the incorporation of se/se genotype into existing su/su genotype, sugary enhanced sweet corn has better shelf life and increased sweetness while maintaining its creamy texture due to high level of water soluble polysaccharide, phytoglycogen. Super sweet corn as the name implies has higher level of sweetness and better shelf life than sugary enhanced sweet corn due to "shrunken2 (sh2)" gene although there's no creamy texture of su-based sweet corns. Distinction between sh2/sh2 and su/su genotypes in seeds is phenotypically possible. The Involvement of se/se genotype under su/su genotype, however, is visually impossible. The genotype sh2/sh2 is also phenotypically epistatic to su/su genotype when both genotypes are present in an individual, meaning the seed shape for double recessive sh2/sh2 su/su genotype is much the same as sh2/sh2 +/+ genotype. Hence, identifying the double and triple recessive homozygous genotypes from su, se and sh2 genes involves a testcross to single recessive genotype, chemical analysis or DNA-based marker development. For these reasons, sweetcorn breeders were hastened to put them together into one cultivar. This, however, appears to be no longer the case. Sweet corn companies began to sell their sweet corn hybrids with different combinations of abovementioned three genes under a few different trademarks or genetic codes, i.g. Sweet $Breed^{TM}$, Sweet $Gene^{TM}$, Synergistic corn, Augmented Supersweet corn. A total of 49 commercial sweet corn F1 hybrids with B73 as a check were genotyped using DNA-based markers. The genotype of field corn inbred B73 was +/+ +/+ +/+ for su, se and sh2 as expected. All twelve sugary enhanced sweet corn hybrids had the genotype of su/su se/se +/+. Of sixteen synergistic hybrids, thirteen cultivars had su/su se/se sh2/+ genotype while the genotype of two hybrids and the remaining one hybrid was su/su se/+ sh2/+, and su/su +/+ sh2/+, respectively. The synergistic hybrids all were recessive homozygous for su gene and heterozygous for sh2 gene. Among the fifteen augmented supersweet hybrids, only one hybrid was triple recessive homozygous (su/su se/se sh2/sh2). All the other hybrids had su/su se/+ sh2/sh2 for one hybrid, su/su +/+ sh2/sh2 for three hybrids, su/+ se/se sh2/sh2 for three hybrids, su/+ se/+ sh2/sh2 for four hybrids, and su/+ +/+ sh2/sh2 for three hybrids, respectively. What was believed to be a classic super sweet corn hybrids also had various genotypic combination. There were only two hybrids that turned out to be single recessive sh2 homozygous (+/+ +/+ sh2/sh2) while all the other five hybrids could be classified as one of augmented supersweet genotypes. Implication of the results for extension service and sweet corn breeding will be discussed.

Effect of Various Composition of Nutrient Solution on Growth and Yield of Strawberry 'Maehyang' in Coir Substatrate Hydroponics (다양한 배양액 조성이 코이어 수경재배 딸기 '매향'의 생육과 수량에 미치는 영향)

  • This study aimed to investigate the nutrient solution developed by based on nutrient-water absorption rate of strawberry 'Maehyang' by comparing growth and yield for 8 months with 5 kinds of nutrient solution with different ion composition. Strawberry plants were planted at elevated bed and supplied with five kinds of nutrient solutions (RDA), Yamazaki, PBG, University of Seoul (UOS) and NewUOS from one month onwards. Five types of nutrient solution were supplied to the strawberry plants associated with EC $1.0dS{\cdot}m^{-1}$, pH 6.0, $150{\sim}300mL{\cdot}plant^{-1}$ per day. At 60 days after planting, leaf width and leaf petiole of the strawberry plants showed significant differences among nutrient solution types and photosynthesis was higher in RDA and NewUOS nutrient solution and lower in PBG nutrient solution. The EC of the drainage on vegetative growth stage was $0.7{\sim}0.8dS{\cdot}m^{-1}$, which is lower than the supplied EC level, and to $1.0-1.2dS{\cdot}m^{-1}$, afterwards. The pH of the drainage was higher in Yamzaki solution as 6.2~6.8, while the pH of the UOS nutrient solution was lower in 5.1~5.2. Nitrate content was most absorbed in vegetative growth stage and after flower clusters development. The potassium uptake was highest at the NewUOS followed by UOS and Yamazaki nutrient solution. At six months after -planting fresh weight and dry weight of shoot and root were higher in UOS and NewUOS nutrient solution than other nutrient solutions, and the dry matter ratio was lower at 43.5% in Yamazaki nutrient solution and 30.6% in NewUOS nutrient solution than other solutions. Length, width, weight, and sugar content of the strawberries harvested from December to February were unaffected by treatment, but yield was higher in NewUOS nutrient solution due to increasing fruit number and average weight. From March to May, number of fruit was higher in Yamazaki nutrient solution. In conclusion, there was no difference in the growth of 'Maehyang' when 5 nutrient solutions were grown under hydroponics. But in order to improve the marketability, the NewUOS nutrient solution is appropriate to use from planting to February and it is suitable to use Yamazaki nutrient solution after March when temperature is high and the amount of fruit set per inflorescence.

The Influence of Food Habits on Body Stature of Children (어린이의 식습관(食習慣)이 체위(體位)에 미치는 영향(影響)에 관한 연구(硏究))

  • The Purpose of this study was to determine every possible correlation between food habits and body statures of primary school children, aged ten years old. This study was conducted from July to October of 1975. In July, prepared questionaires concerning life style, anthropometry, food preference, and food behavior were distributed through school teachers to 425 children; 219 boys and 206 girls, in the 5th grade of three elementary schools in the city of Seoul. Then, in October, when subjects had been classified into underweight/obese by statistical analysis, mothers of obese or underweight children were interviewed by the authors to determine weaning history, daily food consumption of their children, and opinions of various snacks for children. Analysis of results in terms of correlation coefficient, chisquare test and percentage calculations, are as follows: 1. Food habits 1) Food $preference{\cdots}{\cdots}A$ varying number of foods were selected from 60 items were accepted. It was found that the food which children liked best was fruit and snacks were popular one. Lowest ranking among LIKED foods were from strongly flavored vegetables and organ meat. In general, girls had more food dislikes than did boys. Selected as liked foods were fruits, rice noodle soup, biscuits, and peanuts. Disliked foods were liver, green onions, onions, green pepper, mushrooms, oysters, shellfish, and pork. Items which children never ate before were liver, mushrooms, fish cake, boiled rice mixed with sorghum, mayonnaise, and fresh water firsh. Reasons which children gave for dislike were undesirable flavor and odor. 2) Food $behavior{\cdots}{\cdots}It$ was found that boys liked sweet and salty flavors more than did the girls who more often liked sour flavor. The majority of children enjoyed evening meals more than lunch and breakfast. A number of children skipped breakfast because of lack of appetite or lack of time before going to school. Snacks were the most popular food, especially among girls. Their snacking habits were formed by the encouragement of the mother, and the relieve boredom. Educational backgrounds of mothers and family economical levels of children were remarkable correlated with mothers' attitudes toward feeding of children. There were several interesting findings relating body stature to some other responses; such as that the obese child has a small number of brothers, higher birth order, higher educated mothers and higher family cultural background. It was also discovered that food perference, except for fat and oil group foods was not related to body stature. Sweet taste was liked best and pepperly taste was mostly disliked. Sour taste was popular in the group of underweight. Underweight children were more finicky, disliked snacking, and didn't get much attention from their mothers. 3) Correlation between body stature and nutrition during their infancy. The majority of children, both from obese and underweight, were breast fed as infant. Twenty five per cent of obese children and 17.4 per cent of underwight children started weaning at $1{\sim}6$ months old. The most popular supplemental food of weaning was cereal gruel for the obese group, while boiled white rice and cereal gruel were most common for the underweight group. Highly significant relationships were found between stature of parents and their children. In the obese group 47.8 per cent of fathers and 45.9 per cent of mothers were overweight; however, none of the fathers and only one mother was found to be underweight. In daily food consumption patterns, meals consisting of bread or noodle were popular in the obese group but disliked by the underweight group. The study found clear contrast in that the obese group liked meat and fish while the underweight group liked fruits and vegetables, especially kimchee. The obese children desired to eat cereal foods, milk and milk products, and fat foods while the underweight group desired to eat fruits and vegetables. Frequency of snacks per day was much greater in the obese group. Foods which mothers believed to be good for the health were carrots, cucumbers, fruits, milk, potatoes, sweet potatoes, and breads, while sweet foods such as candies, drinks. chocolate were considered not good for the teeth. Watching television was not significantly related to statures of children. Most significant relationships were found beween frequencies of family guest meals/and eating-out, and children's statures. Nutritional problems which have been considered for the malnourished children in addition to those of children who have a tendency toward obesity, must be taken into consideration in the development of proper nutrition education through the channels of regular school teaching and teaching by parents in the homes. Korean standards of anthropometric measurements for children should be revised, current measurements show much higher figures than present Korean standards.

Effect of Reused Cocopeat Substrate on Growth and Yield of Summer-cultivated Paprika in EC-based Recycling Hydroponic Cultivation (EC기준 순환식 수경재배에서 코크피트배지 재사용이 여름작형 파프리카의 생육 및 수량에 미치는 영향)

  • This experiment was carried out to analyze the effects of substrate reuse on the growth and yield of summer paprika in cyclic hydroponics. The test group was divided into a new coco slab, one year reused coco slab two year reused coco slab based on 30% nutrient solution reuse, and was performed from April 18 to November 31, 2016 for 30 weeks. As a result, plant height of early growth was that the 2 year reused slab was longer than the new slab but the final growth period was 56.58 cm shorter. First group flower position was that reused slab was shorter by 2.92 cm than the new slab and the second group flower position was 0.31 cm long. The relative internode length of early growth, when the reused slab was used, the imbalance in the late growth stage was increased compared with the use of the new slab. The number of growth nodes in the 1 and 2 year reused slab was the smallest with 27.4 nodes. However, the number of harvested nodes did not show the difference in the test group, and the ratio of harvested that the 2 year reused slab was the highest at 26.8%. The ratio of unmarketable fruit tended to increase as the growth progressed. Fresh weight was 227.7g for new slab, 219.2g for 2 year reused slab and 21.2g for 1 year reused slab. The dry weight of the new slab increased with the reuse of the slab. It was 17.13g for new slab, 18.26g for 1 year reused, and 19.28g for 2 year reused. The average water content of the entire growth period was smaller as the slab was reused, and the 1 year reused slab was about 20g less than the 2 year reused slab. This trend was steadily occurring throughout the entire growing season. Especially, the reused slab for 1 year was less than 60g after 3 groups compared to other test groups. In conclusion, If will control seriously occurrence of unmarketable fruits by weakening after medium growth in summer-cultivated paprika in EC-based recycling hydroponic cultivation with reused cocopeat substrate, It is not what I have to worry that decrease of the yield and deterioration of the quality due to the change of physical and chemical properties of the slab and the pathogenic bacteria infection.

Egg Development and Larvae of the Rose Bitterling Rhodeus ocellatus (KNER) (흰줄납줄개의 난발생과 부화자어)

  • The rose bitterling, Rhodeus ocellatus (KNER) is commonly distributed in the fresh waters of Korea and Japan. On January 15, February 15, and March 18 in 1984, mature adults of rose bitterling were caught in the watercourse of Maeri, Kimhae, South Korea. The authors fertilized the eggs employing dry method in the laboratory on May 7, 16 and 25 in 1984. Hatched larvae were reared in small aquariums at $17{\sim}25.5^{\circ}C$ (average around $21.2^{\circ}C$). Mollusks, Anodonta woodiana in the gill chamber of which, rose bitterling lay eggs were caught in order to study natural spawning of the rose bitterling in the same watercourse. The eggs of this species are not adhesive and demersal. The size of the eggs varies from 2.54 to 2.75mm in long diameter and 1.45 to 1.65mm in short diameter. The eggs are cylindrical in form when they are extruded from ovipositor, immediately after entering water, but they acquire their distinctive form of a greatly elongated pear. Hatching took place in ca. 39 hours after fertilization. The newly hatched larvae were $2.65{\sim}2.70mm$ in total length possessing yolk sac and 13-14 myotomes. Thirteen days after hatching, the prelarvae attained 6.5 mm in total length, and the first melanophores appeared on the head, and the anterior part and sides of the yolk sac. One month after hatching, the postlarvae attained 8.5mm. in total length and emerged from the gills of the mollusks. Then the yolk sac was completely resorbed. Two months after hatching, the rose bitterling attained 14.4mm in total length, and entered the fingerling period of life. All the rays already present were the D. III, 11-12, A. III, 11-12, P. 10, V. 7. and a distinguishing, feature is the presence of a black pigment spot in the lobe of the dorsal fin.

Studies on Lipids in Fresh-Water Fishes 6. Comparison of Lipid Components between Wild and Cultured Snakehead, Channa argus (담수어의 지질에 관한 연구 6. 천연 및 양식 가물치의 지질성분 비교)

  • This study was designed to compare the lipid components between wild and cultured snakehead, Channa argus. The lipid components of cultured snakehead were analyzed and compared with that of wild snakehead. In both edible portion and viscera, the lipid content in cultured, snakehead was higher than that in wild one. In the fatty acid composition of neutral lipid in edible portion, percentages of $C_{14:0},\;C_{16:0},\;C_{18:1},\;C_{20:5},\;C_{22:5}\;and\;C_{22:6}$ in cultured snakehead were higher than those in wild one, while percentages of $C_{18:0},\;C_{16:1},\;C_{18:2},\;C_{18:3},\;C_{20:4}\;and\;C_{22:4}$ lower. In the case of phospholipid in edible portion, percentages of $C_{16:0},\;C_{18:1}\;and\;C_{22:6}$ in cultured snakehead were higher than those in wild one, while percentages of $C_{16:1},\;C_{18:2},\;C_{18:3},\;C_{20:4},\;C_{22:4}\;and\;C_{22:5}$ lower. The unsaturation (TUFA/TSFA) and w3 highly unsaturated fatty acid content (w3 HUFA) of neutral lipid in cultured snakehead were higher than those in wild one, while those of phospholipid lower. The essential fatty acid contents (TEFA) of both neutral and phospholipids in wild snakehead were higher than those in cultured one. In the ratio (A/B) of fatty- acid content (A) in cultured snakehead to that (B) in diet, the A/B ratios of $C_{18:2\;w6},\;C_{18:3\;w3},\;C_{20:5\;w3}\;and\;C_{22:6\;w3}$ were 0.3 to 2.5 times, and it is considered to be related to the biosynthesis of polyenoic acids and growth rate of cultured snakehead.

Effects of Dietary Biotite Powder on Physico-chemical Characteristics of Pork (흑운모 분말 급여 돈육의 이화학적 특성)

  • This study was carried out to analyze the physico-chemical characteristics of the loin from pigs fed biotite. Control was fed diet for piglets and growing pigs, and treatments were fed diet supplemented 1.25% and 1.75% biotite to piglet diet and to growing pigs, respectively. Ratio of carcass grade A was shown as 27.8% and 50% in control group and treatment, respectively. And that of carcass grade A and B was appeared as 52.8% in control and 80% in treatment. The control group showed higher value of water and protein content than treatment. However, fat and ash content of treatment were higher than those of control. Treatment showed lower value than control in shear force and cooking loss, and was higher than control in pH value(p<0.05). L*, a* and b* value of control in meat color were lower than those of treatments. Treatments group was shown lower value than control group in textural gumminess and brittleness. In the sensory test of fresh meat, there was no significant difference between control and treatment group. However, intramuscular fat content and overall acceptability of control were more or less lower than its of treatment. In cooked meat, the meat color of control was lower than those of treatments. Control group was shown higher saturated fatty acid value than treatment group. However, the poly unsaturated fatty acid, essential fatty acid, and the ratio of unsaturated fatty acid/saturated fatty acid and essential fatty acid/saturated fatty acid were low.

An epidemiological study of metagonimiasis along the upper reaches of the Namhan River (남한강 상류의 Metagonimus 유행에 대한 연구)

  • An epidemiological study of Metogonimus infection was undertaken along the upper reaches of the Nmhn River, with special consideration on the species (type) of the worms collected from humans. Eggs of Metogonimus spp. were detected from 15 (9.7%) of 154 people examined in Umsong-gun, and from each Infected person (5 cases) 6.015- 24,060 worms (mean 13,2331 were recovered after treatment with praziquantel (10 mg/kg). Eggs were also detected from 37 (48.1% of 77 people In Yongwol-gun, from whom (27 casesl 1-4,965 worms (mean 1,2151 were collected. The worm from Umsong-gun consisted of both Metagonimus Miyata type and Metagonimus takohashii, whereas those from Yongwol-gun consisted of only Metqsonimus Miyata type. When the uterine eggs of the two kinds and M. yokogawoi (obtained from people In Tamjin River basin) were morphologically compared, it was suggested that the egg size should be a good Indicator for discrlmination of the species or type. The source of human Infection was proved to be fresh water fleshes: 49 of 52 Znsco plntvpus examined, 6 of 8 Hemibcrbus loniroskis, 13 of 15 Pseunogobio esuinl:, 4 of 6 Odontobutis obscura intemfptn, and 17 of 18 Corqssiw carassiw were found Infected with Metosonimw metacercariae. From the results, it is concluded that the upper reaches of the Namhan River are endemic foci of Metogonimn Miyata type and M. takahashii.

  • The experiments on the ecological characteristics of the suspensible green algae and the algae causing soil-flakes and shier chemical control were conducted in 1992. The unicellular green algae which were dominated by Chlamydomonas sp. largely occurred when phosphorus was applied, but which were reduced by nitrogen application. The filamentous green algae which were dominated by Klebsormidium sp. largely occurred when phosphorus was applied, and which much more increased when nitrogen or potassium was combined with phosphorus. The suspensible green algae which were dominated by Klebsormidium sp. were controlled by 60-70% when simazine 10g ai/10a and propanil 105g ai/10a were applied. The dark blue soil-flakes largely occurred at nitrogen application, and which much more increased when nitrogen was combined with phosphorus. The dark brown soil-flakes largely occurred at phosphorus application, but no more increased even if nitrogen or potassium was combined with phosphorus. The dark blue soil-flakes which were dominated by Oscillatoria sp. much more increased at the temperature conditions of $18^{\circ}C$ compared with $24^{\circ}C$ and $29^{\circ}C$. The applications of bensulfuron/mefenacet/dymron, piperophos/dimethametryn and bensulfuron/dimepiperate controlled 70-90% of the dark blue soil-flakes.
