Effect of Several Factors on the Characteristics of Six-Vegetable and Fruit Juice (혼합과채쥬스 특성에 미치는 여러 인자의 영향)

  • Preparative conditions and characteristics of six-vegetable and fruit juice were studied for the effects of mixing ratio, heat treatment and addition of sugar, salt and organic acid. The vegetables and fruit used were carrot(Ct), cabbage(Cg), pear(Pr), cucumber(Cr), celery(Cy) and dongchimi(Di). From the sensory results of mixing ratio of three of binary mixtures of Cg-Pr(1:3):Ct-Di(1:4):Cr-Cy(3:1), two ratios of 5.0:2.5:2.5(V-6A) and 6.0:2.0:2.0(V-6B) were suggested optimal for six-vegetable and fruit juice. Addition of 2% sucrose and 0.3% NaCl improved the preference significantly. The pH 4.0 for V-6A and pH 3.5 for V-6B were more prefered when pH was adjusted by citric acid. Heating the juice at $100^{\circ}C$ for 100 minutes slightly decreased pH and increased the acidity. Total solids and viscosity were also decreased by heating. All of those changes were more significant in V-6B than V-6A, probably due to lower pH. Heating the juice resulted in a slight decrease in L value and an increase in a and b values. Heating at $100^{\circ}C$ caused an increase in moldy flavor and a decrease in fresh vegetable flavor while heating at $80^{\circ}C$ for 20 minutes changed them little.

The Development of a Simple Evaluation Questionnaire for Screening the Overweight-type Dietary Pattern in 30 to 49 Year Old Adults (한국 장년 성인의 과체중 예방을 위한 식생활 간이평가표 개발)

  • A study was performed to develop as a screening tool the Simple Evaluation Questionnaire for Screening the Over-weight-type Dietary Pattern in 30 to 49 Year Old Adults. We used the data from the 30 to 49 year old subjects who participated in the three surveys - the health behavior survey, the dietary habit survey and the food intake survey - as the National Health and Nutrition Survey 1998. The 3,598 adults were classified into to two body fatness groups of normal (including underweight) and overweight (including obese) on the basis of their relative body weight (RBW) When comparing variables between the two groups, significant differences were found in gender, education, job, employment status, perceived health status, sadness / depression state, stress level, age, number of diseases, age when overweightedness started, maximum body weight, sleep length, drinking pattern (yes/no) , amount of alcoholic drinks, frequency of intoxication or drunkeness, amount of alcoholic drinks when drunk, intensity of exercise, frequency of exercise, exercise duration, skipped meals, small meals and drug supplements. In terms of food intake, there were significant differences in the daily food intake in terms of breakfast, dinner, daily kimchi and dairy products. In terms of mealtimes, we found differences in the amount of cooked rice at breakfast, kimchi at lunch, soup / kuk at dinner, fresh vegetables for snacks, fried foods for snacks between breakfast and lunch, and fruits /juices for snacks between lunch and dinner. After developing questions with indicators and analyzing the indicators by logistic regression analysis three times, we chose 10 questions for a simple evaluation of dietary patterns for the overweight-type category in order to give one point each. Among them we selected two questions to add one additional point and one question to add two additional points. The average scores of the overweight and normal groups, as shown by the developed questionnaire, were $5.97 \pm 2.36 \pm 7.36 \pm 2.21$, respectively. A score of seven points was selected as the cut-off point. We examined the sensitivity, specificity and positive predictive value of the questionnaire to the results of 67%, 59% and 62%, respectively.

Effects of Combined Treatment of Clove Bud Essential Oil and Mild Heat on Inactivation of Escherichia coli O157:H7 Inoculated onto Red Oak Leaves (Clove Bud Essential Oil과 Mild Heat 병합처리에 의한 Red Oak Leaf에 접종된 Escherichia coli O157:H7 제어 효과)

  • This study was performed to evaluate the effects of combined treatment of clove bud essential oil (CBEO) and mild heat (MH) on inactivation of Escherichia coli O157:H7 inoculated onto red oak leaves. Combined treatment of 0.2% CBEO with MH at $50^{\circ}C$ exhibited the highest inhibitory effect against E. coli O157:H7 among treatments, resulting in 1.45 log reduction compared with water washing treatment. In addition, inhibitory effect of the combined treatment was maintained during storage of red oak leaves at $4^{\circ}C$ for 9 days, showing 1.67~2.25 log reductions compared with non-treated samples. Thus, these results indicate that combined treatment with CBEO/MH can be used to ensure the microbiological safety of fresh leaf vegetables such as red oak leaves during storage.

Relation between Vitamin A and $\beta$-Carotene Intakes and Serum Total Carotenoids Levels in Smoking College Students (흡연대학새의 비타민 A와 $\beta$-Carotene 섭취량 및 혈청 총 Carotenoids 수준과이 관계)

  • The aim of this study was to assess the association between total vitamin A, retinol and carotene intakes and serum concentration of total carotenoids in Korean male smokers and nonsmokers. Food frequency and nutrient intakes of 64 healthy college students were estimated by the 24 hour recall method and food frequency questionnaire and analyzed by smoking status. Serum total cartenoids and lipid profiles were measured in 28 smokers and 36 nonsmokers. The mean total vitamin A, retinol and carotene intakes of smokers were not significantly different from nonsmokers. However, carotene intakes of the smokers who have smoked more than 5 packyears were significantly lower than those of nonsmokers. Smokers consumed green yellow leafy vegetables more often(P=0.005) and fresh fruits less often(P=0.017) than nonsmokers. The serum total carotenoids of smokers consuming the same amount of retinol and carotene as nonsmokers, 1.79 g/ml, were 17% lower than nonsmokers, 2.15 g/ml(P<0.05). The lipid profiles including total cholesterol, LDL cholesterol, VLDL cholesterol and triglycerides of smokers were not significantly different from nonsmokers, however, the concentration of HDL cholesterol of smokers were significantly higher than that of nonsmokers. The serum carotenoids concentration was positively associated with fruit consumption frequency in smokers, and also was positively associated with green yellow leafy vegetable consumption frequency in non smokers. There were no correlations between dietary and serum carotenoids for smokers as well as nonsmokers. It was concluded that smoking could be inversely related to the serum concentration of carotenoids at constant carotene intakes and smokers might require more carotene to reach the same concentration comparable to nonsmokers.

  • Glucosinolates, containing indole glucosinates in Chinese cabbage, cabbage, radish and kale were analyzed as 6, 5, 5 and 2 types of glucosinolates, respectively, Four types of glucosinolates from mustard was identified, but indole glucosinolates were not detectable. In Chinese cabbage, the content of glucosinolates showed higher amount in the bottom, stalk and leaf part in the order, Total amounts of glucosinolates, in dry basis, were higher amount in Chinese cabbage, cabbage, radish, kale and mustard in the Order, and also in processing conditions, showed higher amount in fresh, sun dried, oven dried and cooked samples in the order. During the storage in Chinese cabbage and cabbage, total amounts of glucosinolate decreased gradually as time goes by.

Effects of Blanching and Salting on the Quality of Immatured Soybeans during Frozen Storage (Blanching 및 염처리가 냉동저장중 풋콩의 품질에 미치는 영향)

  • Effects of blanching and salting for the pretreatment during frozen storage condition were investigated and optimized the salting condition on the activities of peroxidase and lipoxygenase, the stability of vitamin C and color, moisture content and hardness in immatured soybean. Before frozen storage, pretreatment processing is necessary to extend the shelf-life of vegetables. Salting condition of 2% for 180min treatment led to maximum inactivation of both lipoxygenase and peroxidase while blanching can more inactivate for lipoxygenase. Salting at 2% for 180min resulted in the highest amount of vitamin C remaining in the immatured soybeans after 6 months storage. The color of the immatured soybeans were severely changed after 6 months storage, while the color of salted soybeans at 3% and 180min treatment was similar to fresh products. Moisture content and hardness were reduced with addition of salt.

  • The effect of physicochemical characteristics on the freezing point depression of garlic bulb was studied to examine the reasons of cryoprotectivity in garlic bulb stored at subzero temperature. The composition of fresh garlic was characterized by having high soluble solids($40^{\circ}$ Brix; 90% on dry basis), comparing with $10^{\circ}$ Brix in case of other fruits and vegetables. Soluble solids were composed of 70% sugars, 20% protein, and 10% insoluble solids(including 3% of ash, 3% of crude fiber, and 4% of fat). The main component of sugars in garlic was fructosan with 1-29 degree of polymerization(D.P) and the fructosan of 4-5 D.P was over 50% of total fructosan. Freezing point of garlic bulb, which is a parameter of cryoprotectivity, was depressed as the concentration of soluble solids increased, and as the D.P value decreased in the same concentration of soluble solids.

  • To observe trends over time in the consumers' preference for food purchasing, a content analysis of food advertising in Women's Dong-A was conducted with the five-year intervals from 1968 to 1995. Advertisements for food were classified with the types of foods represented, the types of food products sold, and the types of promotional statements. The results of this study can be summarized as follows: 1. The percentages of advertisements for Ingredients &Condiments group; Fats, Sugars & Desserts group; and Beverages group were peaked in the 1970s; advertisements for Protein foods, Dairy products, and Fruits & Vegetables began to increase in early 1980s; and advertisements for Starch & Cereals stabilized over time. 2. The percentages of advertisements for products classified as Fresh, Frozen and Bottled foods increased linearly; and Canned, Dry products (whether ready-to-eat or required reconstitution) decreased. 3. The percentages of promotional statements about General Health Nutrition and Contains specific nutrients were all very high, although they may decrease in recent decade; promotional statements about Minimizes or Eliminates Certain substances increased linearly over time. 4. The advertisements of Consumer-related statement were very high over time. The proportion of statement about Taste was 60.6% of all advertisements.

Antioxidant Effects of Spinach (Spinacia oleracea L.) Supplementation in Hyperlipidemic Rats

  • Increased consumption of fresh vegetables that are high in polyphenols has been associated with a reduced risk of oxidative stress-induced disease. The present study aimed to evaluate the antioxidant effects of spinach in vitro and in vivo in hyperlipidemic rats. For measurement of in vitro antioxidant activity, spinach was subjected to hot water extraction (WE) or ethanol extraction (EE) and examined for total polyphenol content (TPC), oxygen radical absorbance capacity (ORAC), cellular antioxidant activity (CAA), and antigenotoxic activity. The in vivo antioxidant activity of spinach was assessed using blood and liver lipid profiles and antioxidant status in rats fed a high fat-cholesterol diet (HFCD) for 6 weeks. The TPC of WE and EE were shown as $1.5{\pm}0.0$ and $0.5{\pm}0.0mg$ GAE/g, respectively. Increasing the concentration of the extracts resulted in increased ORAC value, CAA, and antigenotoxic activity for all extracts tested. HFCD-fed rats displayed hyperlipidemia and increased oxidative stress, as indicated by a significant rise in blood and liver lipid profiles, an increase in plasma conjugated diene concentration, an increase in liver thiobarbituric acid reactive substances (TBARS) level, and a significant decrease in manganese superoxide dismutase (Mn-SOD) activity compared with rats fed normal diet. However, administration of 5% spinach showed a beneficial effect in HFCD rats, as indicated by decreased liver TBARS level and DNA damage in leukocyte and increased plasma conjugated dienes and Mn-SOD activity. Thus, the antioxidant activity of spinach may be an effective way to ameliorate high fat and cholesterol diet-induced oxidative stress.

Radiation Hormesis on the Growth of Chinese Cabbage and Radish (전리방사선에 의한 배추와 무의 생육촉진효과)

  • Hormetic effects of low dose radiation were analyzed in terms of growth stimulation in radish and three cultivars of chinese cabbage. Seeds irradiated with ${\gamma}$ radiation were planted in the green house and in the experimental field. Though it varied with cultivars of tested plants, hormetic effect of low dose ${\gamma}$ radiation on an early stage of growth were shown especially in germination rates and elongation of seedlings. The height of seedlings increased in 0.2 Gy irradiated group of Seolim cultivar and radish, in 1 Gy irradiated group of Konaenggi cultivar and in 4 Gy irradiated group of Ducksung cultivar, respectively, In case of plants grown in the experimental field, prominent were the height increase of radish and Seolim cultivar in 1 Gy irradiated group and the fresh weight increase of both radish and cabbage in 4 Gy irradiated group.
