The effective growth of pepper seedlings relies on the growing period and tray used, which both aim to minimize seedling damage during the transplantation process. Therefore, the objective of this study was to evaluate the effect of red and green pepper seedling growth in plug and cylindrical paper pot (CPP) trays with different growth periods of the seedlings. Two different seedling growth trays were used for the two varieties of pepper seedlings in the same growing media. The pepper seedling growth rates were investigated at 15, 30, and 45 days for each of variety. Important parameters, e.g., the plant height, fresh weight for the plant and root, number of leaves, leaf length and width, and leaf chlorophyll contents, were measured. During the experiment, the CPP tray maintained uniform seedling growth as compared to the plug tray. CPP trays ensured the height of the seedling, with these results 0.84 to 1.6 times higher than those of the plug tray for all conditions, indicating the good quality of the pepper seedlings. The shoot and root weights were found to be greater with more leaves in the CPP tray seedlings for 45 days compared to the seedlings grown in the plug tray, whereas the green pepper variety showed a greater leaf ratio than the red pepper seedlings. The analysis of pepper seedling growth presented in this study will guide the selection of suitable growth trays and seedling periods for farmers when they undertake automatic pepper transplantation in the field.
This study evaluated the influence of light quality and intensity during healing and acclimatization on the $CO_2$ exchange rate, growth, and morphogenesis of grafted pepper (Capsicum annuum L.) transplants, using a system for the continuous measurement of the $CO_2$ exchange rate. C. annuum L. 'Nokkwang' and 'Tantan' were used as scions and rootstocks, respectively. Before grafting, the transplants were grown for four weeks in a growth chamber with artificial light, where the temperature was set at $25/18^{\circ}C$ (light/dark period) and the light period was 14 hours $d^{-1}$. The grafted pepper transplants were then healed and acclimatized under different light quality conditions using fluorescent lamps (control) and red, blue, and red + blue light-emitting diodes (LEDs). All the transplants were irradiated for 12 hours per day, for six days, at a photosynthetic photon flux (PPF) of 50, 100, or 180 ${\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$. The higher PPF levels increased the $CO_2$ exchange rate during the healing and acclimatization. A smaller increase in the $CO_2$ exchange rates was observed in the transplants under red LEDs. At a PPF of 180 ${\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$, the $CO_2$ exchange rate of the transplants irradiated with red LEDs was lowest and it was 37% lower than those irradiated with fluorescent lamps. The $CO_2$ exchange rates of transplants irradiated with blue LEDs was the highest and 20% higher than those irradiated under fluorescent lamps. The graft take was not affected by the light quality. The grafted pepper transplants irradiated with red LEDs had a lower SPAD value, leaf dry weight, and dry matter content. The transplants irradiated with blue LEDs had longer shoot length and heavier stem fresh weight than those irradiated with the other treatments. Leaves irradiated with the red LED had the smallest leaf area and showed leaf epinasty. In addition, the palisade and spongy cells of the pepper leaves were dysplastic and exhibited hyperplasia. Grafted pepper transplants treated with red + blue LEDs showed similar growth and morphology to those transplants irradiated with fluorescent lamps. These results suggest that high-quality grafted pepper transplants can be obtained by healing and acclimatization under a combination of blue and red lights at a high PPF level.
감마선 조사에 의한 건고추와 고춧가루의 위생화 및 장기저장을 위한 일련의 연구를 수행하면서, 감마선 조사후 저장조건 별 시료를 대상으로 수분활성과 지방산 조성의 변화를 검토하였다. 건고추의 부위별 일반 성분 조성에서 수분함량은 과피 21.75%와 씨 9.30%였고, 조지방 함량은 과피 7.20% (신선물 기준)와 씨 22.50%였으며, 일반성분은 감마선(max. 10 kGy) 조사에 의해서도 유의적인 변화가 없었다. 건고추와 고춧가루는 PE (0.1 mm)/폴리마대 및 nylon $15\;{\mu}m/PE\;100\;{\mu}m$에 각각 포장하였을 경우 실온$(3{\sim}30^{\sirc}C,\;RH\;50{\circ}95%)$ 저온$(5{\sim}10^{\circ}C)$에 각각 9개월간 저장 하여도 수분함량과 수분활성도(Aw)의 변화는 거의 없었다. 건고추의 주요 지방산은 $8{\sim}9$종으로 linolenic acid, oleic acid, palmitic acid, linolenic acid의 순으로 구성되어 있었다. 특히 고추씨$(84{\sim}85%)$에는 과피$(73{\sim}76%)$에 비해 불포화지방산 함량이 매우 높아았으나 감마선 조사 직후나 6개월 간 저장된 시료에서도 지방산 조성에는 뚜렷한 차이가 확인되지 않았다.
This investigation was designed to determine the influence of drying methods on the free amino acids and free sugars in red pepper and to study the browning mechanism of brown-colored red pepper. Three different drying methods were employed: 1) Sun-drying at $25{\sim}28^{\circ}C$ for 15 days, 2) Drying in oven at $60^{\circ}C$ for 49 hours, and 3) Drying in oven at $90^{\circ}C$ for 8 hours. Dried and ground peels were used for the analysis of free amino acids and free sugars. The results were as follows; 1. Sixteen kinds of amino acids i.e. asparagine, methionine, and cystine etc. were identified. Total amino acid content of the sun-dried sample was not different from that of the fresh sample, but the samples dried at $60^{\circ}C$ and $90^{\circ}C$ in the oven were decreased to 24.9% and 67.4% respectively. Of amino acids identified, methionine, lysine and aspartic acid were decreased in all treatments. Especially, methionine ana aspartic acid were decreased rapidly to 71.8% and 73.3% , respectively. 2. Three kinds of free sugars i.e. glucose, fructose and sucrose were identified. The total content of free sugars was significantly decreased in each treatment. Among the reducing sugars, glucose was rapidly decreased; 65.9% for the glucose of sample dried at $90^{\circ}C$ in the oven. 3. At the higher drying temperature, the darker red color was found. Brown-color appeared at $90^{\circ}C-drying$ showed appreciable losses in carotenoid content, but the major color seems to be due to the large increase in browning compounds. 4. It was assumed that increased browning compounds of red pepper were due to the Maillard reaction which is a nonenzymatic browning process.
This study was conducted to investigate effect of low temperature and ripeness stages on fruit quality of chilli pepper (cv. Nockgwang) during storage at 5, 7, and $10^{\circ}C$. Fruits at three ripeness stages were selected based on uniform fruit size and three maturities on peel color: S1 (fully developed fruit just before the onset of ripening), S2 (fruits in the onset of color change), and S3 (fruits in completely red in color). Lower temperature attributed to increase fruit weight loss (WL) and WL was higher in S2 than the other ripeness stages. The highest respiration rate and ethylene production was found at S2 fruit while those of fruit in green and red showed similar and remained lower level during storage. Electrolyte leakage (EL) was higher as storage temperature decreased. After 28 d storage, EL rates of fruits at $5^{\circ}C$ were 43, 36, and 17% in S1, S2, and S3 while those at $10^{\circ}C$ were 17, 19, and 14%, respectively. These results show that chilli pepper fruits are tended to lose more water at lower temperature partially associated with increased EL. Thus, threshold storage temperature must be considered for avoiding chilling during storage and for extending the storage life of fresh pepper fruits.

The objective of this study was to understand the combined effect of shading treatment and harvest time on pungency, ascorbic acid content, market-quality pepper yield, and photosynthetic activity in a yellow 'Star Flame' and 'Fire Flame' F1 hybrid pepper cultivar (Capsicum annuum). Plants were cultivated in a greenhouse under white, red, and green shading nets and compared to those grown under unshaded control conditions. The ascorbic acid and pungency parameters were analyzed by high-performance liquid chromatographic methods. Ascorbic acid, a compound of high nutritive value in pepper, was highest in fruits gathered during the first summer harvest in both hybrids. The ascorbic acid content was found to be further increased in fruits from plants grown under white net shading in both 'Star Flame' and 'Fire Flame'. Total capsaicinoid contents in 'Star Flame' were influenced by the interaction of shading treatment and harvest time (p = 0.004), with the lowest amounts ($241.2-251.5mg{\cdot}kg^{-1}$ fresh weight) resulting from white and red shading treatments at the early autumn harvest. In 'Fire Flame', both shading treatment (p = 0.009) and harvest time (p < 0.001) affected total capsaicinoid contents. We observed significantly higher total capsaicinoid contents in control fruits compared to that resulting from red and green shading treatments at the second harvest, and that resulting from red shading treatment at the third harvest. Analysis of photosynthetic activity revealed a significant and negative correlation between Fv/Fm values and total capsaicinoid contents in both hybrids (p < 0.001). Based on the obtained results, the harvest of peppers during summer should be promoted to produce fruits with high pungency.
충격방법(衝擊方法)에 의(依)하여 고추씨를 분리(分離)할 수 있으나 그 수율(收率)을 45%이상(以上) 올릴 수는 없었다. 따라서 보다 높은 씨분리수율(分離收率)을 이룩하기 위하여 고추 조직(組織)에 대(對)한 가열효과(加熱效果)를 시도(試圖)한 결과(結果) 씨의 분리(分離)가 용이(容易)하게 이룩될 수 있는 고추 내(內)의 공격(空隔)이 증가(增加)되었다. 이와같은 가열효과(加熱效果)를 씨의 분리(分離)에 이용(利用)키 위하여 회전사식원통형(回轉篩式圓筒型) 씨분리기(機)에 $65^{\circ}C$, 0.61m/sec의 열풍(熱風)을 송입(送入)하면서 씨를 분리(分離)할 경우 93%까지 분리수율(分離收率)을 높일수 있었다. 열풍하(熱風下)에서의 씨의 분리(分離)는 고추의 절단부위(切斷部位)에 따라 차이(差異)는 있었으나 고추 건조(乾燥)가 완료(完了)되기 이전(以前)에 씨의 분리(分離)를 완료(完了)할 수 있었으므로, 동시탈종(同時脫種) 건조방법(乾燥方法)이라는 새로운 고추의 가공방법(加功方法)을 개발(開發)하게 되었다.
Among the 6500 accessions of the pepper germplasm which conserved at RDA Genebank, 319 accessions were investigated charateristics such as their growth habit, flowering and fruit shape in Capsicum frutescens. All accessions were characterized for their 14 qualitative and 16 quantitative characters. Results revealed that both qualitative and quantitative characters exhibited wide variation among the studied germplasm. The hypocotyl color, which investigated in juvenile stage, was divided in three types such as green, purple, and purple with green, and most of the accessions showed in purple. Flowering starts from 7 May, and most accessions were starting to flower from 27 May to 25 June. The fresh color of the mature pepper were red, yellow, orange, Etc. Fruit shape were mostly elongated, while exhibited ball shape and round shape were a few. The fresh weight of fruits ranged from 0.2 to 42.3, and the diameter of fruit showed from 4.2 to 45.1 mm, respectively. The phenotypic diversity exists in Capsicum frutescens. provide valuable information to improve agronomic traits in pepper breeding program.
It is very difficult to export the fresh agricultural products to long distant countries such as America and EU without any damage. Fresh exporting products would be met very hazardous environments such as hot and cold weather, heavy trembles with rolling and pitching. Therefore, care should be taken on tight fastening the products inside the container and keeping the designated temperature and relative humidity. The physical strength of outer box should be applied differently because each agricultural product has its own character for packaging. There have been many agricultural products researches for export packaging to the U.S.A. so far. However they have never got desirable results which enough to apply it in real. The main purpose of this research is to develop optimum compressive strength of corrugated fiber board box which would be used to American export packaging of fresh agricultural products such as perilla leaves, green red pepper and spinach.
고추는 한국의 식생활에서 필수적인 향신료로서 대부분이 건조 보관되면서 소비되고 있으며 식품 제조용 및 조미료로써 광범위하게 활용되고 있다. 고추와 고추 재배 토양에서 미생물 오염도를 확인하고자 본 연구에서는 고추 재배 농가(I, II, III, IV, V)에서 시료를 채취하여 일반세균수, 대장균군, 대장균은 정량적 분석을 수행하였고, Salmonella spp., E. coli O157:H7, L. monocytogenes, B. cereus는 정성적 분석을 수행하였다. 고추 63점과 재배 토양 54점의 일반세균수는 각각 2.97~8.13 log CFU/g, 5.91~7.65 log CFU/g이었고 재배 토양이 고추보다 좀 더 높은 미생물 분포를 보였다. 대장균군은 고추에서, 그 범위가 1.87~6.71 log CFU/g 수준으로 나타났고 재배 토양에서, 그 범위는 0.67~6.16 log CFU/g 수준으로 나타났다. 대장균은 고추에서는 전혀 검출되지 않았고 토양 시료 54점 중3점(6%)에서 0.83~4.36 log CFU/g 수준으로 검출되었다. 5개 농가의 고추, 재배 토양 시료에서 Salmonella spp., E. coli O157:H7, L. monocytogenes등은 검출되지 않았고, B. cereus는 고추 63점 중 3점(5%)에서 검출되었고 재배 토양 54점 중 53점(98%)에서 검출되었다. 농산물에서의 미생물 오염은 생산, 가공, 유통의 전 과정에서 일어날 수 있으므로 각 단계에서의 철저한 위생관리가 요구된다.
