This treatise deals mainly with the culinary cultures of garlics, a very important condiment in Korea and France. Classified specifically as a condiment in the category of spices, garlic(A. sativum L.) is typically used to season a wide variety of foods, to give the dishes to add a pungent and pleasant flavor, highly characteristic of the delicate seasoning styles of Korean and French cuisine. Garlic is also known to be used as an invigorant. used for medicinal and mystical purposes. In both Korea and France. garlic is used in fresh state, sliced, diced, or crushed. Some examples of traditional Korean dishes using garlic is Tongmaneul Jangachi(garlic in a whole bulb, seasoned in soy sauce), alcoholic liquor of garlic, and red pepper paste with garlic. French cuisine includes garlic in sauces such as Aillade, Vinairette a l'alil, Sauce Pailloti, and in a variety of salads and Cruton, mixed with the local vegetables of every province of the country.
The main purpose of this study is to provide a basic knowledge of Kimchi preferred by high school students and to improve high school students' Kimchi intake. A questionnaire survey was conducted on 1,056 high school students in Taegu area. The results were as follows: 82% of the students had an affirmative opinion of Kimchi intake and they regarded Kimchi as one of our traditional, healthful and nutritious foods. The most well known Kimchi is as follows: Kkaktugi, Baechu Kimchi, Mul Kimchi, Chonggak Kimchi, Pa Kimchi, Dongchimi, Kkaennip Kimchi and Buchu Kimchi. The students preferred the white stems of the Chinese cabbage. Boy students preferred taste of fresh prepared Kimchi but girl students more preferred properly fermented Kimchi than the other. Their favorite ingredients were Korean radishes, oysters, green onion and carrots, also their favorite spices were red pepper powder, anchovies sauce, garlic and sugar in the order. Among those spices, boy students more preferred anchovies sauce than girl students. The students regarded market Kimchi as one of convenient and time-saving, but less quality and insanitary foods.

To reveal the relationship between the changes in the growth and photo- synthesis induced by low dose radiation, red pepper (Capsicum annuum L.) plants were serially irradiated three times with gamma rays of 0.5, 1, 2, 3, and 4 Gy. The plant growth was monitored by the fresh weight, the stem length, and the leaf length & width. All the irradiation groups (0.5-4 Gy) were stimulated in growth at 1 day after the $1^{st}$ irradiation (DA1I), but rather inhibited at 3 days after the $3^{rd}$ irradiation (DA3I). The maximum photochemical efficiency (Fv/Fm), the photochemical quenching (qP), the non-:photochemical quenching (NPQ) and the apparent rate of the photosynthetic electron transport (ETR) were used to represent the changes in the photosynthesis by the serial irradiation. The irradiation groups except 0.5 Gy had higher Fv/Fm values at 3 DA3I than the control one. After the 3$^{rd}$ irradiation, the qP values appeared to be a little lower in the 1-4 Gy groups than in the control and 0.5 Gy ones. In contrast, the NPQ values were rather higher in the irradiation groups except 0.5 Gy. During the whole experimental period, the ETRs decreased in the control group but remained relatively constant in the 4-Gy one. In conclusion, the results obtained indicate that the stimulatory effect of ionizing radiation on the plant growth was determined by the incident dose of the single irradiation rather than by the cumulative one of the serial irradiation. They also demonstrate that the growth stimulation induced by a low dose radiation could not be positively correlated with an alteration in the photosynthesis. Additionally, we discuss in text that an ionizing radiation may partly protect the leaf senescence by delaying the development of the plants.

This expriment was carried out on culture media which affect growth, development and physiological effect to Pleurotus ostreatus, when aqueous ferrum, red pepper powder, leaves of ginkgo biloba were added to culture media. The yield of fresh mushroom per 850ml PP bottle in chunchu-neutari was highest by 144g in 34.9g aqueous ferrum added, ferrous content don't affected to yield of mushroom, but variety of Pleurotus ostreatus affect to yield. Mineral content of fruit body and culture media in Suhan-neutari was different to mineral kind, ferrous content of furit body was similar to 0.31~0.43mg/kg when ferrous content of media was increased in 0.89mg/kg to 10.8mg/kg. The more content of red pepper powder in culture media was high, the more capsaicin content in fruit body was high. transferred capsaicin was highest by 6 mg/100g in Suhan-neutari. Total phenolics content were higher in culture media which was added aqueous ferrum and red pepper powder, but correlation don't showed total phenolics content among antioxydant activity, reducing power, chelating capacity. Macrophage activation was higher in Suhan-neutari than other Pleurotus spp.
This study was performed to obtain the effective selection informations for improvement of quality and increase of yield in red pepper. The eight parents and twenty eight crosses from partial diallel were used as materials for estimation of correlations among the pericarp characters, viz, fruit length, fruit width, pericarp thickness (fresh and dry) and pericarp weight (fresh and dry), between pericarp weight and seed weight and between pericarp weight and the percent of seed weight/pericarp weight and path coefficients on fresh and dry pericarp weight. Results were as follows. In $F_1s$, fresh and dry pericarp weight had positive correlations with fruit length, fruit width, and pericarp thickness. Fresh pericarp weight was also positively correlated with dry pericarp weight. Dry pericarp thickness had a negative correlation with fruit length but had positive correlations with fruit width and fresh pericarp thickness. Fresh pericarp thickness had a positive correlation with fruit width. Significantly positive correlations between $F_1s$ and mid-parents were observed in pericarp characters. Pericarp weight had a positive correlation with seed weight but had a negative correlation with the percent of seed weight/pericarp weight. In path coefficient analysis, it was found that fruit length, fruit width and pericarp thickness had direct effects on fresh and dry pericarp weight and that fruit length had the largest direct effect in $F_1s$.
This research was conducted to evaluate the effect of supplemental light-emitting diode (LED) light on growth characteristics and phytochemical content of pepper (Capsicum annuum L.) seedling using LED blue (470 nm, B), red (660 nm, R), blue + red (BR), far red (740 nm, FR) and UV-B (300 nm) light treatment, and without artificial light. Photon flux of LED light was 49, 16, 40, 5.0 and $0.82{\mu}mol\;m^{-2}s^{-1}$ for B, R, BR, FR, and UV-B light, respectively, during experiment. Supplemental LED light duration was $16hr\;day^{-1}$ and UV-B light duration was 10 min. per day after sunset up to 15 days (12 days after germination) of plants age. In our research, growth characteristics and phytochemical content of pepper seedlings were greatly influenced by supplemental LED light compare to control treatment. Red light increased the number of leaves, number of nodes, leaf width and plant fresh weight by 34%, 27%, 50% and 40%, respectively. Blue light increased the leaf length by 13%, and stem length and length of inter node were increased by 17% and 34%, respectively under grown far red light. After 15 days of light treatments phytochemical concentrations of pepper plants were significantly changed. Blue light enhanced the total anthocyanin and chlorophyll concentration by 6 times and 2 times, respectively. Red light increased the total phenolic compound at least two folds meanwhile far red light reduced the ascorbic acid and antioxidant activity 31% and 66%, respectively compared to control treatment.
We investigated the effect of freezing on changes in the chemical components of semi-dried red pepper (SDRP). We used storage temperatures of $0^{\circ}C,\;-10^{\circ}C,\;-20^{\circ}C,\;and\;-70^{\circ}C$. After 30 days of storage, capsaicin content had decreased by 40% at $0^{\circ}C$ and by 21% at $-20^{\circ}C$. Initial vitamin C content was 1,358.02 mg%. Compared with control, the $0^{\circ}C$ storage group showed a significant decrease in vitamin C content but no such decrease was noted in the $-20^{\circ}C$ and $-70^{\circ}C$ storage groups after 30 days. ASTA values were not influenced by storage temperature or period, in agreement with previous results. We concluded that storage was effective at temperatures of less than $-20^{\circ}C$. Next, both dried red pepper (DRP) and SDRP were stored at $-20^{\circ}C$ for 12 months. DRP had the lower level of capsaicinoids (55.01 mg%) owing to the long drying time. After 12 months, SDRP capsaicinoid had decreased by 30-33%, compared with a decrease of 54% in DRP. Initial vitamin C contents were 721.48 and 955.25 mg% in DRP and SDRP, respectively, and, after 12 months, vitamin C loss in the SDRP group (37%) was less than that in fresh red pepper (FRP) samples (45%). Initial $\beta$-carotene content was greatest in the FRP group (259.82 mg%), and that of DRP decreased by 20% after 12 months. The color a/b value of SDRP (1.40) was greater than that of DRP (1.00).
Six genetic populations, viz, $P_1$, $P_2$, $F_1$, $F_2$, $B_1$, and $B_2$ of three crosses involving five varieties ($342{\times}$Kimjanggochu, Masan${\times}$Hungarian was, and Masan${\times}$Jeju) were used for estimating heterosis, heterobeltiosis, inbreeding depression, genetic components, heritability and correlations for fresh and dry anatomical components of red pepper. The results obtained were summarized as follows. Heterosis was positive in most characters of three crosses and heterobeltiosis was negative except in cross $342{\times}$Kimjanggochu. Inbreeding depression was positive, showing decrease of weight in $F_2$ generation. Duplicate and complimentary type of epistasis were concerned with the expression of characters, and broad and narrow sense heritabilities of fruit weight and pericarp weight were fairly high and stem weight, placenta weight and seed weight were low. Correlations among the anatomical components were positively significant in fresh and dry weights.
This study was conducted to ivestigate the quality of modeled chinese-cabbage Kimchi. The mutual action of sub-ingredients and optimum mixing conditions were examined by analyses of pH, acidity, content of vitamins, carotenes, number of total microorganism, and Lactobacilli, the activities of softening related to enzymes (polygalacturonase and ${\beta}$-galactosidase), and sensory quality during fermentation. The result about the mutual action of red pepler powder and garlic showed that the pH was decresed as concentration of garlic was higher and that of red peppler powder became lower. Kimchi had unpleasant taste and undesirable odor when the adding ratio of the peper powder and garlic was unbalanced. As the concentration of garlic became higher, the content of vitamin C in Kimchi tissue decreased while that of vitamin C in Kimchi juice increased. The contents of vitamin B1, B2 and carotene increased as the concentration of garlic became lower. The optimum mixing ratio of red pepper powder and garlic evaluated by overall eating quality was 4.66% and 3.45%, respectively. The result about the mutual action of ginger and green onion was that pH became higher as the concentration of ginger was 1.84% and that of green onion was 5.96%. The intensity of fresh taste and odor became stronger as the concentration of ginger increaed to 2.76% and that of green onion decreased to 2.98%. The balance of sour, salty and hot taste became better as the concentration of ginger increased and that of green onion decreased. The optimum mixing condition evaluated by overall eating quality was 2.94% in ginger + 2.78% in green onion. The contents of vitamin B1, B2 and C were high in this condition. The result about the mutual action of leek and salted anchovy juice was that pH became lower as the concentration of leek increased and that of salted anchovy juice decreased. Sour, hot and sweet tastes were good in the condition of leek 12%, salted anchovy juice 4.69%. Palatable, fresh taste and odor became weaker when the one of both sub-ingredients was too much little. The optimum mixing condition evaluated by overall easting quality was 9.76% in leek + 7.32% in salted anchovy juice. The contents of vitamin B1, B2, C and carotene were high in this condition and other sensory qualities were good. The result about the mutual action of salt and sugar was that pH became lower as the concentration of sugar became higher and that of salt became lower. The sweet taste was reduced of hot taste than salty taste. Palatable and fresh tastes were desirable when Kimchi fermented with less salt and more sugar. The optimum mixing condition evaluated by overall eating quality was 3.29% in sugar + 4.80% in salt. The contents of vitamin B1, B1, C and carotene were high in this condition. The result of model Kimchi fermented at 20$^{\circ}C$ was that the number of Lactobacilli in model Kimchi was higher than that of in control Kimchi. The fermentation period was extended under pH 4.0 and the contents of vitamin B1, B1,C and carotene were high through the whole edible period. The activity of polygalacturonase was low, but that of ${\beta}$-galactosidase was high during fermentation.
As a primary step to develop natural preservative for extending the shelf-life of kimchi, the effect of 102 edible plants, 21 antimicrobial agents and related compounds on kimchi fermentation was studied. Among 42 oriental medicinal plants tested, Baical skullcap and Assam indigo were found to be highly effective for maintaining the fresh state of kimchi. Although Bugbane, Red mangolia, Bushy sophora, Szechuan pepper, Chinese quince and Scisandre significantly inhibit the growth of Lactobacilli, their effect was not high enough to be used as raw materials for kimchi preservative. When the effect of 32 herbs and spices was tested, peppermint, cinnamon, lemon balm, clove, hop, rosemary, sage, horseradish and thyme showed high antimicrobial activity against kimchi microorganisms. Among them, the effect of clove ranked top. When it was added to fresh kimchi, initial cfu value ($2.4{\times}10^{6}cfu/g$) changed little even after 2 day's fermentation ($2.6{\times}10^{6}cfu/g$). Sensory test was not a good criteria to evaluate the effect of herbs and spices, since their highly specific flavors affected the taste of kimchies. Twenty eight fruits, vegetables and related plants were tested, but only leaves of pine tree, persimmon and oak leaves showed a significant bactericidal effect, finally contributing to the storage of kimchi. In addition, when 21 natural preservatives and other compounds were added individually to fresh kimchi, nisin and caffeic acid could inhibit fermentation.
