증편 반죽의 냉동 가능성에 관한 연구 (A Study on Freezing Possibility of Jeung-Pyun Batter)

  • This study was carried out in order to investigate the possibility of frozen rice batter for the manufacturing of Jeung-pyun. Despite of its unique taste and texture, Jeung-pyun is not consumed much because it needs long time to make. The physicochemical, sensory, rheological and surface characteristics of Jeung-pyun were analyzed to develop the easy manufacture method. The storage condition of rice batter was used at -2$0^{\circ}C$ up to 4 weeks. Statistical data analysis was completed using a SAS program. The results are summarized as follow: The pH brix% and sugar content of all samples which added low-temperature tolerance raw yeast or regular raw yeast decreased during the fermentation. Kind of yeast did not influence on the moisture content of the Jeung-pyun batter. Specific volume and carbon dioxide evolution of Jeung-pyun batter were highest when the rice batter was frozen for 1 week regardless of the kind of yeast. Overall quality of frozen batter of Jeung-pyim at -2$0^{\circ}C$ for 4 weeks had the highest score among different samples. As the test results of mechanical characteristics, cohesiveness, gumminess, brittleness, hardness and springiness did not show any significant differences statistically. The result clearly suggests that freezing the rice batter is a possibile way to manufacture Jeung-pyun.

저장온도 및 포장조건이 건멸치의 이화학적 품질에 미치는 영향 (Effects of Storage Temperature and Packaging Methods on the Physicochemicl Quality of Boiled-Dried Anchovies)

  • For improved preservation of boiled-dried anchovies, the current preservation method of corrugated-cardboard box packaging and freezing below -18$^{\circ}C$ was compared to the nylon/polyethylene(NY/PE) packaging along with cooling temperature ranging from 5$^{\circ}C$ to 1$0^{\circ}C$ as well as ambient condition for eight months by determining physicochemical quality of stored samples. Lipid oxidation of stored anchovies and their browning increased with storage time. The phenomenon was delayed under the conditions of lower temperature and air-tight packaging. As quality-indicative criteria of stored anchovies, carbonyl value(r=-0.989), browning (r=-0.949) and color a value(r=-0.989), browning(r=-0.965), Hunter's color b value(r=-0.949) and color a value(r=-0.940) showed a highly-negative correlations with organoleptic qualities of the samples. Based on the above results, air-tight packaging in a laminated film and subsequent storage at cooling temperature was found to be a possible alternative to the current freezing-storage of boiled-dried anchovies from the physicochemical point of view.

CLSM [Confocal Laser Scanning Microscope] Observation of the Surface Roughness of Pressurized Rock Samples During Freeze/Thaw Cycling

  • Physical and chemical weathering degrades rock, affecting its structural properties and thus the stability of stone buildings or other structures. Confocal laser scan microscopy (CLSM) is used here to observe temporal changes in the surface roughness of rock samples under simulated accelerated weathering. Samples were pressurized to 50, 55, or 70 MPa using a pressure frame, and subjected to freeze/thaw cycling controlled by a thermostat. The temperature was cycled from -20℃ to 40℃ and back. After each 20 cycles, CLSM was used to assess the change in surface roughness, and roughness factors were calculated to quantify the progression of the surface condition over time. Variations in cross-section line-roughness parameters and surface-roughness parameters were analyzed for specific parts of the sample surfaces at 5× and 50× magnification. The result reveals that the highest and lowest values of the roughness factors are changed according to elapsed time. Freezing/thawing at high pressure caused larger changes in the roughness factor than at low pressure.

폐타이어 칩 및 에폭시를 활용한 탄성 복합체의 개발 - 강도와 내구성을 중심으로 - (Development of Elastic Composites Using Waste Tire Chip and Epoxy Resin - Focused on Strength and Durability -)

  • This study was performed to evaluate the strength and durability properties of modified epoxy composites with waste tire chip, recycled coarse aggregate, filler and modified epoxy to improve elongation and elasticity of epoxy. Additionally, for comparing to modified epoxy and unsaturated polyester resin as a binder, unsaturated polyester resin composites were developed in the same condition. The mix proportions were determined to satisfy the requirement for the workability and slump according to aggregate size and binder content. Tests for the compressive and flexural strength, freezing and thawing and durability for 20 % sulfuric solution were performed. The compressive and flexural strength of modified epoxy composites were in the range of 34.9~61.6 MPa and 10.2~18.3 MPa at the curing 7 days, respectively. Also, the compressive and flexural strength of unsaturated polyester resin composites were in the range of 44.2~77.8 MPa and 11.3~20.8 MPa at the curing 7 days, respectively. After 300 cycles of freezing and thawing, weight decrease ratio and durability factor of modified epoxy composites were in the range of 0.8~1.9 % and 95~98, respectively. Accordingly, modified epoxy composites will greatly improve the durability of concrete.

가공처리조건이 초유 Immunoglobulin G의 변화에 미치는 영향 (Changes of Bovine Colostral Immunoglobulin G on Processing Conditions)

  • We investigated changes of immunoglobulin G (IgG) concentrations by heating and drying condition. Also it is performed to group for commercial product by promoting of IgG preservation and reducing of protein denaturation. The result was that content of IgG in colostrum was higher than normal milk. Especially, IgG content of colostrum within 12 hrs after parturition was over 44.67mg/ml and it is 60 times of normal milk. IgG contents was reduced rapidly according as passage of the time. IgG content of the sample heating at 30min at 65$^{\circ}C$ was still a little higher that heating for 10sec at 72$^{\circ}C$. IgG denaturation of heat treatment at 100$^{\circ}C$ for 10sec was lower than at 85$^{\circ}C$ for 30min. We investigated the changes of IgG concentrations of kinds of market milk different with heating processing. This result showed that IgG denaturation ratio by ultra high temperature pasteurization (UHT) was higher than long time low temperature pasteurization (LTLT). On the other hands, IgG content by spray drying was 14.5mg/g and freezing drying was 10.8mg/g. It showed that denaturation of protein content by freezing drying was more than spray drying.

  • A study on the heat and mass transfer for the drying time in spray freezing drying process was experimentally presented in this paper. A spray freezing dryer for the production of an inhalable powder medicine is developed and an albumin solution as protein specimen is adopted. The freeze-drying for the albumin solution is tested in three different height of the particles piled up in a tray such as 2 mm, 5 mm, 7 mm, and the drying time is estimated as 10 h, 15 h, 22 h. From this results, the correlation is suggested and the drying time with various height of the particles piled up in a tray can be estimated. The assessment on the drying time is conducted thought a microbalance and the rate of water content is measured. The results based on temperature and weight are compared. The difference of the results happens due to the heat transfer from the lateral side of the vial. It is thought that the better estimation in drying time can be predicted by considering the heat transfer effect.

실물대시험에서의 양생방법 차이에 따른 한중콘크리트의 온도이력 및 강도특성에 관한 연구 (A Study on the Strength Properties and the Temperature Hysteresis of Winter Concrete according to the difference of Curing Method in Mock-up Test)

  • This study is to investigate the temperature hysteresis and development of compressive strength due to the curing conditions and to evaluate the optimum curing condition of test specimens showing the same development of strength to that of real structures in cold weather. The results of temperature curve with curing conditions in mock-up tests showed the trend of decrease plain concrete with insulation form, plain concrete with heating, concrete with accelerator for freeze protection, and control concrete in turn. The strength development of plain concrete of inside and outside of shelter showed the very slow strength gains due to early freezing, but that of concrete with accelerator for freeze protection showed the gradual increase of strength with time. From this, it is clear that accelerator for freeze protection has the effects of refusing the freezing temperature and accelerating the hardening under low temperature. Strength test results of small specimens embedded in members and located in insulation boxes at the site are similar to that of cores drilled from the members at the same ages, thus it is clear that these curing methods are effective for evaluating in-place concrete strength

과냉각상태 정지수의 동결특성에 관한 연구 (Freezing Characteristics of Still Water Under a Subcooling Condition)

  • 과냉각수 이용 아이스슬러리 제빙시스템은 기존 제빙방식에 배히 많은 장점이 있지만, 열교환기 내 빙결정의 성장으로 인한 관내동결이 발생하기 쉽다. 이러한 관내동결조건을 알아보기 위한 기본실험으로 정지상태 증류수와 수도수의 과냉각도를 알아보고 시험관재질이 과냉각도에 미치는 영향 등에 대해 검토하였다. 또한 , 첨가한 메타알데이드 농도가 임계 과냉각 해소범위가 좁게 나타났으며, 과냉각 해소에대한 시험관별 표준편차는 파이렉스 경우 1.8 스테인레스강 2.0을 보였다. 최소 과냉각도는 파이렉스 6.2$^{\circ}C$ , 스테인레스 5.5$^{\circ}C$ 로서 파이렉스가 약 0.7$^{\circ}C$크게 나타났다. 메타알데히드는 실험횟수가 증가하여도 그 성질을 유지하면서 빙 활성화물질로써 작용하는 것으로 나타났다.

Application of electrical resistivity for assessing characterizations of frozen and unfrozen soils

  • Permafrost refers to the condition where the ground is frozen. It is crucial to review and evaluate the ground's characteristics before construction. In this study, electrical resistivity surveying is chosen as the investigative technique to apply and illustrate the results on the state of permafrost ground and to summarize its applicability. Field experiments are conducted in the Yeoncheon area of South Korea, which has a freezing index of 522.6°C·days. The target area is categorized into two ground conditions: the first where the original ground freezes, and the second involves excavating the original ground up to a depth of 3 meters, backfilling it, and then artificially injecting fluid. Thus, frozen ground conditions are simulated under both natural and artificial circumstances. Electrical resistivity surveys are performed under both above-freezing and sub-zero temperature conditions, with the experiments conducted at sub-zero temperatures revealing relatively more high-resistivity zones due to the temperature conditions. In this area, the distribution of soil moisture content is also investigated using the Time Domain Reflectometry (TDR) technique. It is observed that the ground into which water is artificially injected had a relatively higher moisture content, although the difference is minor. Finally, a 3D map of the target ground is constructed based on the measured electrical resistivity values, and through this, the distribution of porosity, a crucial design parameter, is also depicted. This research demonstrates that the electrical resistivity technique can effectively evaluate the state of frozen and unfrozen ground and further suggests that it can detailed extract the characteristics of the target ground.

고분자전해질형 연료전지의 효율향상에 대한 연구 (Efficiency Improvement Research in Proton Exchange Membrane Fuel Cell)

  • 연료전지의 안정성 여부를 장시간에 걸쳐 측정하기 위한 stability test logic을 LabVIEW 기반으로 설계하여 개선된 평가 system을 구성하였다. 일반적으로 사용되어온 logic에서 탈피하여 다량의 데이터 수집을 통한 평균값과 표준편차를 도출함으로서 연료전지 성능 데이터의 안정성 검증과 신뢰도를 대쪽 향상시킬 수 있었다. 가습의 새로운 개념인 water injection system방법을 제시하였으며 양측가습의 경우와 비교할 때 4% 이하의 미미한 성능 차이를 보였다. Water injection system의 경우 가습에 필요한 에너지를 최소화할 수 있으므로 전체적인 에너지효율을 높일 수 있고 system을 소형화할 수 있다는 장점이 있다. 영하의 조건에 연료전지를 방치한 후 실험을 수행한 경우 성능이 다소 감소하였으며, 이와 같은 현상은 MEA의 구조 및 제조사에 따라 영향을 받는 것으로 사료된다. 연료전지 운전 후 영하의 상태로 내려가기 전에 가스를 사용하여 내부의 물을 제거하는 방법에 대한 실험을 수행하였다. 저온방치 전 건조실험에서 전극면적이 $25cm^2$인 경우에 성능저하가 거의 없었다.
