외래관광객과 주한외국인의 한국음식 및 전통외식업체에 대한 인식 차이 비교 분석 (The Gap Analysis of Recognition and Preference for Korean Traditional Foods and Restaurants between Foreign Visitors and Foreign Residents)

  • This study was prepared to present the research data for the promotion of Korean foods and restaurants in Korea and abroad by an analysis of the recognition and preference of Korean traditional foods and an importance-performance analysis of Korean restaurants by foreign visitors (n=351) and foreign residents (n=365). The most recognized Korean foods among foreigners were Bibimbap>Kimchi>Bulogi>Galbi>Samgyetang;however, the most preferred Korean foods were statistically different; Bibimbap>Kimchi>Bulgogi>Galbi>Rameyeon by foreign visitors and Bulgogi>Bibimbap>Galbi>Samgyetang>Kimchi by foreign residents. Especially, the preferences for Samgyetang and Dakgalbi were increased whereas that for Kimchi was decreased in foreign residents. The Korean foods were described as 'hot and pungent' and 'spicy' by foreign visitors, but 'hot and pungent', 'non-greasy' and 'salty' by foreign residents. In choosing a restaurant, 'quality of food' was most important among foreigners, but 'proper price' was considered more significant than 'sanitation and cleanness' by foreign residents compared with foreign visitors. The satisfaction with Korean restaurants of foreign residents was lower than that of foreign visitors. An analysis of importance and performance of Korean restaurants by foreigners was performed. There were significant differences in the evaluations of Korean restaurants between foreign visitors and foreign residents (p<0.05). The importance of the attributes related with 'foods' and 'sanitation' were rated higher by foreign residents. On the other hand, foreign visitors rated the importance of the attributes related to 'eating environment' and 'employees' more highly. Foreign residents significantly rated the performances of Korean restaurants lower in each attribute except 'additional free side dishes' and 'communications'.

한국에 거주하는 중국인유학생과 중국에 거주하는 중국현지 대학생의 한식에 대한 인식 및 선호도 (Perception and Preference for Korean Food among Chinese Students Residing in Korea and China)

  • The purpose of this study was to survey the perception and preference for Korean food among Chinese students residing in Korea (Chinese foreign students, N=69) and China (Chinese-locals, N=98). A total of 76.8% of Chinese foreign students and 70.4% of Chinese-locals had ever eaten Korean food in China before visiting Korea, and motivation to try Korean food at first was 'easy access to Korean food restaurants' (Chinese foreign students 38.6%, Chinese-locals 44.9%). The most important factors in selecting Korean food were 'taste' and 'price' (Chinese foreign students 72.7% and 18.2%, Chinese-locals 59.1% and 22.7%, respectively), and needed improvements for Korean food were 'spicy and salty taste' and 'nutritional aspect' (Chinese foreign students 54.5% and 25.8%, Chinese-locals 33.3% and 36.4%, p<0.05). The scores for perception of Korean food were significantly lower in Chinese-locals (2.99) than in Chinese foreign students (3.31)(p<0.001). Chinese foreign students preferred Bulgogi (20.5%), Neobiani (20.1%), and Galbijjim (17.9%), whereas Chinese-locals preferred Bulgogi (16.1%), Gimbap (16.1%), and Samgyetang (15.2%) (p<0.001). The most preferred condiment was 'Garlic' (18.0%) in Chinese foreign students, and 'Red pepper powder' (16.4%) in Chinese-locals. The results of the study can be used as a foundation to prepare a globalization strategy for Korean Food.

NON-DESTRUCTIVE DETECTION FOR FOREIGN MATERIALS IN FOOD AND AGRICULTURAL PRODUCTS USING X-RAY SYSTEM

  • Quality evaluation for food and agricultural products have always been one of the most elusive problems associated with the handling , processing and marketing in a food plant production. In order to detect physical foreign materials in food and agricultural products, non-destructive techniques have been developed for many years. Application of X-ray system to detect physical foreign materials in food and agricultural products could be considered to be a high potential method. Especially , it is impossible to detect internal physical foreign materials by visual inspections. In this study, it was tried to be applied for two different X-ray devices. Soft X-ray system with CdTe sensor and X-ray CT scanner were evaluated for advantage of the detection of non-meltallic foreign materials in food and agricultural products . Though the soft X-ray is not a high energy radiation, it is possible to detect small different density in a material. The CdTe sensor has a high resolution for t e soft X-ray energy region. The density characteristics of foods and foreign material were expressed region. The density characteristics of foods and foreign materials were expressed as a soft X-ray energy spectrum. The energy spectrum was analyzed by a personal computer with a multi-channel analyzer. X-ray CT scanner can provide visual image and analyze by three dimensional information inside food and agricultural products. The X-ray CT scanner using as a medical equipment was used to detect a foreign material. The density characteristics of food and foreign materials in food were tried to be detected by the threshold value on the basis of the CT numbers. The soft X-ray absorption characteristics for acrylin plates and distilled water were obtained and could be found the possibility of detecting a small physical foreign materials such as a plastic wrapping film , a stone and grasshopper in food and agricultural products.

식품 이물에 대한 소비자 인지와 구매행동에 대한 연구 (A Study of the Perception and Purchase Behavior on Foreign Matters in Food)

  • The objective of this study was to investigate the perceptions and purchase behaviors on foreign matters in food. For that, we conducted a survey of 348 adults living in a metropolitan area. Concern over the presence of foreign matters in food was a lower than that for other harmful factors such as heavy metals, BSE, harmful microbes and so on. 70% of respondents would not take the snack which was detected a rat's head, including the manufacturer's product and similar products with it after the foreign matter incident. In contrast, about of 54% respondents were willing to buy canned tuna after the incident. It is necessary to prepare more detail management and policy on foreign matters in food.

  • The consumption of catchup is increasing due to the raising of income level and food industry and westernization of dietary life followed by economic growth.   • War against Japanese(1592-1599) and war against Manchurian(1636-1637), which had been occurred in Korean Peninsula throughout the history, and frequent trade with foreign countries since $18^{th}$ century have led to a distribution of foreign food into Korea. Several examples for this include tomato, apple, watermelon, maize, pea, cowpea, peanut, potato from China and red pepper, pumpkin, and sweet potato from Japan. Since these foods had been brought into Korea, they have been cultivated suitable for Korea's climate and land. Foreign foods with a few exceptions tend to have high calories. For instance, along with potato and sweet potato, pumpkin is considered a high-calorie food containing lots of starches as it becomes ripening. This helped a wide spread of the foreign foods across the nation where intake of high-calorie foods was critical for Korean people's nutrition at that time. Among those foods introduced from foreign countries, red pepper had a greatest impact on the dietary life-style of Chosun Dynasty. The use of red pepper has been greatly expanded from main ingredient to seasoning and garnishing in various forms of red pepper such as red pepper paste, red pepper powder, and thick soy paste mixed with red pepper. Red pepper was made eating habits is hot besides dye red colored to traditional food, because steaming and boiling is frequently cook method, fermentation food also food color is achromatic therefore food color is and mixture with red pepper, picked fish and chinese cabbage new kimchi culture came into being.

  • 식품 이물의 검출 및 저감화 기술 개발과 안전관리를 위한 정보를 제공하고자, 국내 보고된 식품 이물의 혼입 자료를 바탕으로 식품별, 이물별 검출율과 건강 위해도, 경제 산업적, 소비자 민감성 등의 인자를 고려한 다인자기반 위해평가를 수행하고 이를 바탕으로 식품-이물의 위해 순위를 분석하였다. 사용한 인자 중 이물별 발생 빈도와 건강 위해도는 이물에 대한 위험지표로 이용하였으며 식품별 국내 연간 생산량과 해당 식품의 이물 혼입율은 식품 중 이물발생이 관련 산업에 미치는 영향을 나타내는 지표로 이용하였다. 식품-이물에 대한 소비자의 민감성에 대한 간접적인 지표로는 각 식품별 이물 저감화에 따른 추가비용부담률을 활용하였다. 이와 같은 여러 인자를 종합적으로 고려한 다인자기반 종합위해지수는 금속-면류가 가장 높게 추정되었다. 그 외에도 곤충-면류 및 금속-음료의 위해순위가 높은 것으로 산출되었다. 본 결과는 지금까지 단순히 이물별 발생 순위 또는 식품별 발생 순위 중심의 자료 제공에서 나아가 식품 안전 관리에서 고려해야 할 여러 인자를 종합적으로 분석하여 위해지수를 산출함으로써 향후 식품 중 이물의 관리와 이물의 검출 기술 개발 등 식품안전 분야의 연구에서 자원의 배분과 연구개발시 유용한 정보로 활용될 것으로 사료된다.

And newly open up a foreign market is net well. So, for push into foreign market base on this study we understand various fluent in foreign market.

김치축제 행사에 관한 평가 연구 (The Appraisal of the Kimchi Festival)

  • The purpose of this research was to investigate the satisfaction of visitors of Kimchi food festival in 1999, 2000, and 2003. This is the longitudinal study on the cultural festival which used Kimchi as the main resource. This study also investigated the possibility of Kimchi festival as a foreign tour product. This study has several important findings including as follows; First, the satisfaction of residents was higher than domestic visitors in most programs. Second, there were many foreign visitors to the festival and the satisfaction of foreign tourists was higher than residents and domestic tourists. More programs for the foreign visitors are recommended to be an international food festival. Third, experience based food tour events were popular. Introducing more experience oriented programs are recommended for this festival Fourth, There should be more improvement on food price and parking.

  • This research entailed collecting foreign and foreign patents on technologies for process food related ginseng, creating category of patent technology searching and conducting quantitative analysis on each technology component and schematization. A technological trend of treating or preventing multiplicity of diseases has reviewed on 6,255 domestic and foreign patents from the year 1975 to 2004. Considering the increasing number of applicant and application of patent on technology of food manufacturing and processing in the world around year 2000, it seem that these technology is developing. The related technology seems in the initial stage and common research by related technology research centers, government organization and public corporation becomes active.
