울산지역 주부들의 음식물 쓰레기 처리행동 및 의식조사 (The Behavior and Consciousness of Housewives about Disposal of Foods Waste in Ulsan Area)

  • This study was carried out to obtain the information concerning the behavior and underlying consciousness of housewives about the disposal of foods waste and to find out relationships among environmental variables. Data were obtained through questionnaires and interviews from 350 housewives in Ulsan area. Foods waste can be produced at every stage of cooking. It was found that the most amount of foods waste was produced at the preparation stage of cooking. The type of dishes which produces the most waste was chigas. About 49.4% of foods waste consisted of vegetables and fruits and 18.5% of that was fishes. The environmental concern related to foods waste disposal was relatively high among subjects and they were willing to accept foods waste reducing system if it is not too complicated to use and not too expensive. These results have demonstrated that menu planning before food preparation and buying cleaned and trimmed materials in the market should be highly recommended to reduce the foods waste. To improve the disposal behavior of foods waste, it is required that well programmed education for environmental conservation and the public facility for foods waste disposal.

주부의 환경보전을 위한 음식물 쓰레기의 처리의식 및 식생활 관리행동 (Disposal Consciousness of Foods Waste and Meal Management Behavior in Relation to Environmental Conservation of Housewives)

  • The purpose of this study were to examine the disposal consciousness of foods waste and meal management behavior related to environmental conservation, and to find out the ways to improve the disposal of foods waste. Data were collected from questionaire with 786 housewives who live in Chonbuk area. About 45% of foods waste consisted of vegetables and fruits. The levels of cooking(use) and idsposal behavior among meal management behavior were relatively high, but food preparation(buy) score was low. These results suggested that menu planning before food preparation, and buying some cleaned and trimmed foods in the market should be recommennded to reduce the foods waste. The levels of meal management behavior did not show any significant associaations with disposal consciousness of foods waste but were positively correlated to environmental conciousness. It could be thought that the effort of government administration to reduce and reuse of foods waste is needed to improve the desirable disposal behavior of that, and the well programmed enviornmental education should be more required and practical than increase the environmental conciousness.

합리적인 식단작성을 위한 식품폐기율 조사 연구 (Survey on Waste Rates of Foods for Menu Planning)

  • The waste rates of 98 food items after pre-preparation were surveyed to provide database for good menu planning. The waste rates turned out 0-64.27% in vegetables, 6.38-7.03% in potatoes, 6.25-68.75% in fishes and shellfishes, 16.61% in eggs, and 16.00-56.84% in fruits. Foods with high waste rates were vegetables, fishes and shellfishes. Survey results were compared with other food composition tables. Foods with 30% higher waste rate than other food composition tables were squash leaf, pacific ocean perch, sweet potato stalk, water cress, green peas, alaska pollack, bluefin tuna, beka squid, crown daisy, dodok, amaranth, beef ribs. Food which waste rates turned out to be decreased by about 30% in this study were corb shell, pomfret, sea mussel, warty sea squirt. For the menu planning, reasonaly exact waste rates for each food items are essential. Since survey results show significant deviations, there should be more studies for exact waste rates for each food.

대학 구내 식당의 음식쓰레기 감량을 위한 교직원의 의식 및 이용실태조사 (A Survey on the Awareness for the Reduction of Food Wastes and the Use of University Cafeteria by Faculty Member's)

  • The goal of this study was to fine the way of reduction on food waste in the university cafeteria. A survey was conducted on the 500 faculty members using Yeungnam University cafeteria , and if illustrate the faculty's use and perception for the reduction of food waste. Its results can be summarized as follows ; 32.0 % of the total users use the university cafeteria everyday, also 56.6% of the users preferred Korean style dish. Female users left more food than the male users resulting in more food wastes. The male users resulting in more food waste and the most leaving food was Kimchi than the other types of foods. The most favorite stew and side dish turned out to be Yukgaejang and Bulgogi respectively, also Kimchibokkumbab was the preffered dish. But they disliked Sunjiguk , Ginger, Jellyfish and Mackerel pike. The preception of male users on the reduction of food waste was lower than that of female users. The best way of food waste treatment recognized by the users were utilizing the waste food as fodder for animals or fertilizer.

음식물 쓰레기를 줄이기 위한 체계화 연구(I) -상용식품의 폐기율 조사와 급식소의 유형별 음식물 쓰레기량과 교육에 의한 개선효과- (The Systematic Study on Reduction of Food Waste Products(I) -Survey on Waste Rates of Frequently Consumed Korean Foods and Effect of Education on Kitchen Wastes of Institutional Foodservices -)

  • This research was conducted to estimate waste rates of 69 food items after pre-preparation and amounts of food wastes disposed and it's reduction effect by education in some institutional foodservices for reduction of the food wastes. The result are as follows: 1. The waste rates were 55.40% for sweet corn, 5.73% for potatoes, 19.14% for sweet potatoes, and 33.47% for chestnuts. 2. The waste rates of fruits were 0.21-49.36%. Food items with over 40% waste rate were banana, watermelon, and pineapple. 3. The waste rates of vegetables were 1.14-52.90%. The number of foods with under 10% waste rate were 14 items(red pepper, green pepper, chard, and so on), 10-20% was 9 items(perilla leaf, chinese cabbage, ginger root, and so on), 20-30% was 5 items(root of chinese bellflower, garlic, radish-leaves, burdock, welsh onion-large type), 30-40% was 3 items(shepherd's purse, head lettuce, kale) and over 40% was 3 items(water dropwort, crown daisy, mallow). 4. The waste rates were 24.30% in chicken, 9.53-13.79% in eggs, and 9.30-55.32% in fishes. The waste rates of vegetables and fishes were higher than those of other food groups. 5. There were significantly different in amount of food wastes disposed (g/person/day) to institutional foodservices (hospital>industrial institution> Korean restaurant>elementary school). The amount of food wastes disposed, especially amount in pre-preparation phase, after education for reduction of food wastes was significantly reduced. Since these study results show significant deviations in food waste rates and education effect, there should be more studies for standard waste rates of each food and systematic education method for reduction of food wastes.

Food Preservation Technology at Subzero Temperatures: A Review

  • Purpose: Cold storage is the most popular method used to preserve highly perishable foods such as beef and fish. However, at refrigeration temperatures, the shelf life of these foods is limited, and spoilage leads to massive food waste. Moreover, freezing significantly affects the food's properties. Ice crystallization and growth during freezing can cause irreversible textural damage to foods through volumetric expansion, moisture migration induced by osmotic pressure gradients, and concentration of solutes,which can lead to protein denaturation. Methods: Although freezing can preserve perishable foods for months, these disruptive changes decrease the consumer's perception of the food's quality. Therefore, the development and testing of new and improved cold storage technologies is a worthwhile pursuit. Results: The process of maintaining a food product in an unfrozen state below its equilibrium freezing temperature is known as supercooling. As supercooling has been shown to offer a considerable improvement over refrigeration for extending a perishable product's shelf life, implementation of supercooling in households and commercial refrigeration units would help diminish food waste. Conclusions: A commercially viable supercooling unit for all perishable food items is currently being developed and fabricated. Buildup of this technology will provide a meaningful improvement in the cold storage of perishable foods, and will have a significant impact on the refrigeration market as a whole.

쓰레기 매립지 침출수에 관한 연구 (Studies on the Leachate in Landfill Site)

  • Physical compositions of solid waste in Wonju, shopping area were investigated with combustibles 78.13% (papers 35.89%, foods 14.41% etc.) incombustibles 21.87% (glass and ceramics 11.02%, metals 6.0% etc.) in 1991, solid waste in apartment area were investigated with combustibles 84.27% (foods 34.29%, papers 22.58% etc.), incombustibles 15.73% (glass and ceramics 8.77%, metals 4.85% etc.) and residence area were characterised with combustibles 70.37% (foods 33.55% , papers 10.53% etc.) and incombustibles 29.63% (ash of briquet 17.29%, glass and ceramics 7.49% etc.). Water qualities of a leachate from municipal landfill of Wonju city were analysed pH 8.0~8.4, total suspended solid 102~140 mg/1, CN ̄ 0.003~ 0.008 mg/1, NO$_2$-N 0.108~0.294 mg/1 and phenols 0.46~1.12 mg/1. Volume of the leachate for 20% methemoglobin formation were 0.2~0.4 mg/ml in Octever, 0.3~0.4 ml/ml in December sampling, 0.2~0.3 ml/ml in St.1 and 0.4 ml/ml in St.3.

인천지역 초등학교 급식소 영양사들의 전처리 식품 사용에 관한 인식 (Perception on Using Preprocessed Foods Among Dietitians Employed in Elementary School Foodservices in Inchon)

  • This study was performed to investigate the recognition on preprocessed foods among dietitians employed in 106 elementary school foodservices in Inchon by questionnaire from December 11th to 28th in 1999. Number of cooks in school foodservices increased significantly(p<0.01) with the number of children to feed, and 8 or 9 cooks were the most typical number(36.79%). Most(93.4%) of the subjects understood that it is necessary to use the preprocessed foods and they considered the food hygiene as the most important factor. Many subjects(89.62%) responded that the lack of cooks and cooking equipment was partly solved by using preprocessed foods and the expected reductions in personnel and waste through using preprocessed foods were $15{\sim}20%$ (38.68% of the subjects) and 20-30% (41.51% of the subjects), respectively.

오븐조리 및 전통조리 방법을 활용한 급식 메뉴의 기호도 비교 연구 (Comparative Study of the Effects of Conventional Cooking and Oven Cooking on the Acceptability of the School Lunch Menu)

  • Frying is the most popular cooking style used in food service institutions in Korea because fried dishes are well accepted by students. However, trans fat contents reduction have recently been required in many foods for health reasons Therefore, alternatives to frying such as oven baking or roasting are being used in many institutions. Steam convection ovens provide dry heat as well as steam so that they can be used to make a wide variety of Korean dishes. In this study, a menu acceptance test was conducted over 2 weeks. Pork, chicken, fish and potato dishes cooked by conventional cooking methods were served for 4 successive days, after which the same dishes were prepared using the oven. Overall, 322 junior high school students evaluated the traditionally cooked foods, while 316 evaluated the oven cooked foods. Comparison of the foods prepared using both methods only revealed a significant difference in the acceptability of foods on the fish menu (p<0.05). Specifically, the acceptance of fried fish was higher than that of the oven baked fish. Additionally, overall acceptance of the menu by males was higher than the acceptance by girls. Furthermore, students who had the preference for special ingredients showed a higher menu acceptance for the menu cooked with those ingredients. On average, approximately 25% of the meal was not consumed and left as plate waste. The portion of the fried fish not consumed was smaller than that of the oven cooked fish, but the portion not consumed did not vary based on cooking method for any other foods evaluated. Overall, it is expected that the oven cooking method will be a good substitute for frying or other cooking method for traditional Korean dishes.

음식물쓰레기 감량방안에 관한 연구 (한식메뉴를 중심으로)

  • The changes of life-style by improving the standard of living produce the development of food service industry. But, the consequence is that food waste also increase. I think that the problems about the food waste become more critical. There are some reports about counting the amount of remaining foods until now. But, I can not find reports about the calory analysis of the remaining foods. So, I analysis the amounts and calories of the food and remaining food served at the restaurants for the purpose of groping how to reduce the remaining food and conclude as follows. First, the average amount of the food giving to one person is 1007gm(from 300gm to 1367gm), and the average amount of the remaining food is 126gm(from 29gm to 172gm). Second, the average calory of the food giving to one person is 795.5kcal(from 464kcal to 1225kcal), and the average calory of the remaining food is 140.8kcal(from 29kcal to 289kcal). So, we gain 130kcal more than recommending calory to woman. Therefore, we need to studies of developing menu, controlling the amount of supplied food, and improving how to supply. Also we need to study about the using of food bank and publish and use about recycling of food waste.
