급식규모와 운영형태가 유사한 3곳의 급식소를 대상으로 원재료, 조리기구 및 조리종사원 손과 최종조리음식간의 미생물 오염실태를 분석한 결과는 다음과 같다. A 급식소에서는 닭볶음탕, 잡채, 비빔밥, 콩나물무침에서 황색포도상구균이 검출되었다. 닭볶음탕은 조리종사원의 손, 재료를 손질한 도마, 양파에서 황색포도상구균이 검출되었으므로 조리종사원의 손이나 도마를 통한 교차오염이 발생한 것으로 판단된다. 잡채는 조리종사원의 손, 당면을 삶아 건진 바구니, 양파와 양파를 손질한 도마에서 모두 황색포도상구균이 검출되었으므로 이들 간의 교차오염이 발생했을 것으로 생각된다. 비빔밥과 콩나물무침은 해당일 조리를 담당한 종사원의 손에서 황색포도상구균이 검출되었으므로 조리종사원 손에 의한 오염이 발생한 것으로 판단된다. C급식소의 오징어채무침에서는 대장균이 검출되었다. 오징어채무침은 가열조리공정을 거치지 않는 메뉴로서 원재료인 오징어채에서 검출되었던 대장균이 그대로 최종조리 후까지 전이된 것으로 판단된다. 급식소 최종음식의 안전성 확보를 위해서는 위생적인 원재료의 구매와 사용, 조리종사원 개인위생의 개선, 조리기기의 철저한 세척 및 소독관리가 선행되어야 할 것으로 사료된다.
This study examined consumer perception and use on labeling of cooking utensils made of plastic and glass to get information about improving the labeling. The data were collected from 505 adults in Seoul, Busan, Daegu, Daejeon, Incheon, and Gwangju. The data were analyzed by SPSS Windows V.14.0. Frequencies, t tests, one-way analysis of variance, and Duncan's multiple range tests were carried out. Many respondents checked off 'precautions in use' more than any other notice when they purchased the cooking utensils made of plastic and glass. Respondents were dissatisfied with the letter size and intelligibility of foreign language on the labeling. Most respondents preferred 'tag' for most cooking utensils made of plastic and glass. In addition, on necessity of precautions for each category of plastic cooking utensils, frying pans, plastic baskets, plastic water buckets, plastic seasoning bottles, the frying pan showed the highest need for 'do not place close to the fire'. Plastic cups and plastic containers showed the highest in 'whether utensils could be used in the microwave oven and accompanying precautions', and plastic cutting board showed the highest in 'matters relating to washing before use.' In the case of cooking utensils made of glass, 'precaution on shock' was the highest for glass cups and mugs and 'whether utensils could be used in the microwave oven and accompanying precautions' was the highest for glass pans, dishes and containers.
The objective of this study was to evaluate the microbiological quality of non-heat-processed foods for implementation of a HACCP (Hazard Analysis and Critical Control Point) system in day-care center foodservice operations. The evaluating points were microbial assessment of foods, utensils, and employee's hands during preparation, cooking, and serving. The temperature of non-heated food being served was also measured. Microbiological quality was assessed using 3 M Petrifilm/syp TM/ to measure total plate count and coliforms for food and utensils and Staphylococcus aureus for hands in five Gumi day-care centers. Results showed low microbiological quality of non-heated foods. This was probably due to contaminated raw ingredients and cross-contamination that occurred during preparation and cooking (e.g., unsatisfactory washing and disinfection of raw materials and utensils). These results suggest that it is essential to educate employees on good personal hygiene (hand washing) , prevention of cross-contamination through use of properly washed and sanitized utensils, and proper washing and disinfection of raw vegetables. Establishing Sanitation Standard Operating Procedures (SSOPs) are an essential part of any RACCP system in day-care center foodservice operations.
This study was conducted to compare and evaluate the difference in washing and disinfection when the Hazard Analysis and Critical Control Point (HACCP) protocol was applied to foodservice operations. The results of the survey were as follows: Among the 116 foodservice operations surveyed, 67.2% were HACCP-compliant and 32.8% were not HACCP-compliant. Also, 62.9% served meals once daily, and 79.3% conducted food safety education once a month. Compared to HACCP non-compliant foodservice operations, the disinfection performance of HACCP-compliant operations was significantly better concerning worktables (p<0.001), food inspection tables (p<0.001), preparation tables for distribution (p<0.01), serving tables (p<0.01), overflow and trenches(p<0.05), sinks (p<0.05), and insect attracting lamps (p<0.01). Similarly, the disinfection performance of HACCP-compliant foodservice operations was significantly better for 18 cooking utensils and personal tools such as food slicers (p<0.001), multiple cooking machines (p<0.05), tray carts (p<0.001), stainless steel tools (p<0.001), rubber gloves (p<0.05). Worktables (45.1%), serving tables (29.6%), sinks (37.0%), and scales (21.6%) were most often disinfected 'at the end of each task', while food inspection tables (36.5%), food preparation tables for distribution (31.2%), dish machines (34.2%), overflow and trenches (25.7%), and floors (25.8%) were most often disinfected 'once a day'. All cooking utensils were most often disinfected 'at the end of each task'. 'Chemical disinfection' was most frequently used in all foodservice facilities. To improve the food safety management of foodservice operations, it is necessary to apply the HACCP protocol and comply with the washing and disinfection manual.
본 연구의 목적은 식중독으로 인한 지속적인 위해 발생을 예방하기 위하여 학교의 급식시설 및 집기류에서 미생물 오염수준을 분석하고자 하였다. 그 결과, 총 세균 측정용 배지에서 $12.3{\pm}2.6$건으로 가장 많은 미생물이 배양되었고, 황색포도상구균 측정용 배지에서 $10.3{\pm}3.9$건과 대장균 측정용 배지에서 $9.5{\pm}3.9$건으로 미생물이 배양되었다. 그러나 비브리오 측정용 배지에서는 $1.5{\pm}1.0$건으로 가장 적은 미생물이 배양되었다. 급식시설 및 집기류에서 미생물 오염이 심한 곳은 전처리실 바닥으로 $4.5{\pm}0.6$건으로 가장 높고, 조리실 바닥도 $4.3{\pm}1.0$건으로 나타났다. 다음으로 조리대가 $3.3{\pm}1.0$건으로 나타났으며, 급식식탁에서도 $3.0{\pm}0.0$건으로 상당히 높은 미생물 오염을 확인할 수 있었다. 반면에 집기류에서는 시설들에 비하여 낮은 미생물 오염도를 보였다. 칼과 도마를 사용용도에 따라 구분하여 미생물을 분석한 결과, 생선용 칼에서 $2.0{\pm}0.8$건과 생선용 도마에서 $1.3{\pm}1.5$건으로 다른 용도에 비하여 약간 높은 미생물 오염도를 보였다. 배양된 미생물들을 동정한 결과, 다양한 미생물들이 오염되어 있으며 일부는 2번 이상씩 반복하여 검출되었다. 특히, 주요 식중독균인 Staphylococcus aureus는 조리대, 트렌치, 칼에서 3번에 걸쳐서 확인되었다. 또한 주요 식중독균에 속하는 Bacillus cereus가 칼에서 확인되었으며, 자연에 널리 분포하면서 때로는 급성폐렴을 일으키기도 하는 Klebsiella pneumoniae는 4번 반복하여 검출되었다. 위의 결과를 종합하여 보면, 황색포도상구균을 비롯한 주요 식중독균뿐만 아니라 식품의 부패를 일으키는 미생물들이 학교급식의 시설 및 집기류에 오염되어 있다는 것을 확인 할 수 있었다. 그러므로 학교급식의 안전성을 확보하고 학생들의 건강을 증진시키기 위하여 더욱 철저한 개인위생 및 효율적이고 체계적인 시설 관리가 이루어져야 할 것으로 사료된다
The Korean tea culture appeared in a variety of ceremonies of the royal household. As mentioned above, the Korean tea culture has a deep-rooted effect on the Korean traditional culture from the spiritual aspect, art, learning, to the practical life. Recently the tea culture has been rapidly coming into vogue. So the tea culture has been recognised not only to be an index of the cultural level, but also to be an important cultural phenomenon. Besides, It came to be a major role as a reception method by which we can communicate with quests from ail over the world. Because preferred tea was different according to the times and to the regions, tea utensils have been changed along with the tea culture. The present Korean tea culture has a tendency to go to the somewhat different way from the traditional one. This study has the purpose to let us apprehend the Korean traditional culture and hold the national pride. In addition, the value of the Tea should be assessed more properly, and our own Tea that is unique, simple, and natural, should be settled in the our culture.
외식산업의 빠른 성장과 함께 호텔을 비롯한 일반음식점에서의 식중독의심사건 발생빈도가 증가하고 있어 현장에서 신속하고 간편하게 위생상태를 판단할 수 있는 모니터링기법이 필요하게 되었다. 본 연구는 서울시내 5개 호텔을 대상으로 개인위생 (작업자의 손), 조리기구 (칼, 도마, 행주, 캔오프너, 식품보관용기, 슬라이스머신칼날), 시설 설비 (냉장고손잡이, 작업대, 싱크대)에 대한 위생관리 실태를 조사하였고 그에 대한 검증법인 ATP 조사법의 상관관계를 도출하고자 하였다. 5개 호텔의 위생관리 실태조사 결과, 50점 만점 중 개인위생 46.6점, 조리기구 위생관리 40.2점, 시설 설비 위생관리 40.3점으로 개인위생은 비교적 관리가 잘 되고 있었으며, 조리기구와 시설 설비의 위생관리는 미흡한 것으로 나타났다. ATP검사 결과, 작업자의 손은 $40.8{\pm}6.77\;RLU/cm^2$로 조리기구와 시설 설비에 비해 높은 값을 보였으나, 모두 1,000 RLU/$cm^2$의 기준 이하로 위생관리 상태가 양호한 것으로 나타났다. 위생실태조사 결과 점수와 ATP 값의 상관성 분석을 실시한 결과, 각 호텔별 작업자 손, 조리기구, 시설 설비 모두에서 음의 상관관계를 가지며 높은 상관성을 보였다 ATP검사법은 신속, 간편, 일관성을 바탕으로 호텔을 비롯한 외식업체에서 감시원이 수행하는 주관적인 위생실태조사를 대체 할 수 있는 객관적인 위생관리 방법이 될 것으로 판단된다.
The objective of this study was to evaluate the microbiological quality of heating and after-heating processed foods for implementation of a HACCP system in day-care center foodservice operations. The evaluating points were microbial assessment and temperature of foods during receiving, cooking, and serving in heating process. In non-heating process, in addition to monitoring microbial assessment of food during preparation, cooking, and serving steps, the microbial populations of employees' hands and utensils and serving temperature were also evaluated. Microbiological quality was assessed using 3M Petrifilm$^{TM}$ to measure total plate count and coliforms for foods and utensils and Staphylococcus aureus for hands in five Gumi day-care centers. Microbiological quality assessment for foods and utensils is summarized as follows. Microbiological quality of the heating processed foods was satisfactory for cooking and serving steps. The internal temperature of food was above 74$^{\circ}C$. However, temperature control before the serving step was not achieved due to inappropriate time management between the cooking and serving steps. In the after-heating process, the total plate counts of boiled mungbean sprouts salad, blanched spinach salad, com vegetable salad were below the standard at the serving step. The majority of samples showed that coliforms exceeded the norm, which is thought to be the result of the cross-contamination from utensils. These results suggest that it is essential to educate employees on the importance of hand washing and of avoiding cross-contamination by using clean, sanitized equipment to serve food in the after-heating process. Objectives: The aim of this study was to evaluate the microbial hazards posed by food utensils and fixtures in food service operations at selected middle and high schools located in Seoul, Korea. Methods: We collected 200 samples of utensils and fixtures including cups, spoons/chopsticks, food trays and tables from five different schools in Seoul. Target microorganisms of this study were divided into two groups: total bacterial count and total coliform as indicators of microbial contamination and Bacillus cereus and Staphylococcus aureus as pathogens of food poisoning. We used selective media to quantify microbial concentration and 16S rRNA PCR assay for qualitative analysis. In addition, intensive interviews with nutritionists were conducted and observations were made to identify factors that may affect microbial contamination. Logistic regression analysis was employed to examine the relationship between the microbial concentration and operation characteristics of each operation. Results: The level of microbial concentration in school B and C were significantly lower than in school A, D and E (p<0.05). Some samples from school A, D and E showed over 3.4 log CFU/100 $cm^2$ (total bacterial count) and 1.0 log CFU/100 $cm^2$ (total coliform), which requires immediate hygienic action. The number of customers per staff member, periodicity of hygiene education for staff and daily operation time of sterilizers were also found to be important factors related with the microbial contamination of food service operations. Conclusions: These results suggested that not only a HACCP (Hazard Analysis and Critical Control Point) approach, but also efforts to assess internal risk factors within operations be needed to reduce the microbial contamination of food utensils and fixtures. This study is expected to provide preliminary data for assessing microbial hazards in food service operations.
