  • Improved nutritional intake contributes to maintaining health and quality of life in elderly population and also reducing individual and social medical costs. Most of nutrition assistance programs for elderly, such as congregate or home-delivered meal programs, are not currently serviced in rural communities mainly due to low cost efficiency of program operation. However, the needs and necessity of such programs are presumed to be higher in rural area where the population density of elderly at nutritional risk is relatively high. Therefore, the purpose of this study was to develop a community-based meal program for the rural elderly. In 2007, four rural communities located in Jeon-Nam province were selected and the pilot meal program was applied for three months. Following are key features of the meal program model developed in this study: 1) meal production and service are operated by elderly participants to overcome the voluntary personnel shortage 2) utilization of locally-produced foods is maximized to reduce the meal cost, 3) traditional cooking methods are applied to adjust the food preference of elderly, and 4) foods are serviced on site to minimize the food safety problem possibly caused by delivery process. The pilot programs resulted in high satisfaction with the programs of participating elderly. The community-based meal program model developed in this study is expected to be used as an effective nutrition and health intervention model for the rural elderly.

  • The aging of the population has a fundamental impact on the national economy, including decline in productive population, atrophy of available funds, slowdown of technological innovation, slowdown of economic growth, and decrease in vitality of society as a whole. Increase of elderly population would lead to increase in elderly welfare consumers, which would also lead to increase the demand for elderly welfare services. However, due to the continuation of the low birth rate, there is a great shortage of human resources who can handle this. In such a situation, the main goal of the elderly welfare system in the future should aim to actively try to design effective policies, prepare systems, and implement services for the problems of the aged society, and to find ways to expand the finances, manpower, methods, and facilities necessary for the welfare of the elderly. Elderly welfare services in Korea have been changed and developed in accordance with socioeconomic changes such as industrialization and urbanization. This study examines the changes in elderly welfare services in Korea by the flow of times and presents a method which utilizes artificial intelligence and Internet of Things in services for the elderly welfare consumers to improve both quality and efficiency.

  • Asia hosts more than half of the world's 1 billion goats and is also where domestication of wild goats began. Goats, including dairy goats, are adapted to a wide variety of harsh environments and thus play key roles as providers of nutrition, food security and socio-economic status to their human owners in many low-income Asian countries. In many countries in Southeast and East Asia, medium and large scale commercial dairy goat farming can be profitable enterprises because of the high price of goat milk, and good demand due to its health and medicinal properties. In some Asian countries, dairy goats play important roles in non-commercial activities, including use as educational animals in elementary schools in Japan and show animals in Indonesia. Dairy goat farmers in Asia are faced with numerous challenges, such as a shortage of high producing animals adapted to the local environment, lack of quality feeds during a prolonged dry season, many diseases and difficulty getting their product to market, however, the increasing demand for goat milk in the newly developed and developed economies in Asia provides an optimistic future for dairy goat production in this region.

  • The changes in the dietary pattern of Koreans during the last one century and its consequences are summarized as follows; 1. Until the beginning of 20th century, Koreans used variety of cereals, vegetables and fruits for their staple food, but the variety has been largely reduced by the agricultural development and urbanized life style. 2. The well balanced traditional dietary pattern of Korean had been deeply deteriorated by the food shortage during the Japanese occupation and Korean war. 3. The deteriorated nutritional condition of Korean was not remedied by the restoration of traditional dietary pattern, but attempted to overcome it by the adoption of Western food habit. 4. The people were trained to eat milk and flour-meals during the starvation of Korean war, and it was continued after Korean war through the animal husbandry promotion policy. 5. The importation of food and feed cereals has been increased rapidly during the economic growth in 1970's and the food self-sufficiency droped below 50%. 6. In 1970's, the food supply pattern of Korean was restored to the level of early 1900, but the consumption of lipid increased extraordinarily. 7. The overconsumption of animal food and lipid continues in 1980's, and it coincides with the rapid increase in the occurence of food related degenerative deseases. 8. • Optimal nutrition serves to maintain normal organ function and to preserve body energy stores to guarantee survival during times of shortage of food. Adequate nutrition of intensive care unit (ICU) patients improves outcome, while malnutrition is strongly associated with increased morbidity and mortality rates among critically ill patients. Previously published researches showed that trials of nutritional support in critical illness rarely fulfill basic quality requirements. Nutrition support plays a vital role in the prevention and treatment of nutritional deficiencies in at-risk, critically ill patients. This paper reviewed the challenges in determining critically ill patients' nutrition requirements including nutrition assessment, determination of caloric requirements then providing them with adequate nutrition support while in the ICU with the guidelines published by Society of Critical Care Medicine and American Society for Parenteral and Enteral Nutrition. Nutrition support can be effectively enhanced by using the guidelines.
