AHP를 이용한 배달음식 서비스품질의 중요도 조사 (An Investigation on the Importance of Delivery Food Service Quality using AHP)

  • 본 연구는 배달음식 서비스품질에 대한 주요요인을 찾고, 선행 연구에서 배달음식 서비스품질의 상호 중요도를 확인하여 각 요인의 중요도 순위를 도출하였다. 이를 위해 계층분석과정 (Analytic Hierarchy Process, AHP)을 이용한 의사결정모형을 사용하여 상호 평가를 정량화하는 과정을 수행하였다. 연구분석 결과, 배달 서비스품질은 배달음식 서비스품질의 주요인이며, 특히 주문 서비스품질과 음식 서비스품질은 배달음식 서비스품질의 핵심요인으로 나타났다. 주문 서비스품질의 세부요인은 편의성과 정확성이 중요하며, 배달음식 서비스품질을 통해 배달비의 세부요인을 기본료, 할인, 면제 순으로 중요하게 인식하고 있는 것으로 밝혀졌다. 본 연구 결과는 배달음식 서비스품질에 대한 분석뿐만 아니라 배달 정보 서비스품질 향상에도 이바지할 것으로 기대한다.

  • 본 연구는 레스토랑 산업에 널리 적용할 수 있는 외식 서비스 품질 측정을 위한 다문항 척도를 개발하였다. 척도 개발을 위해 Kelly Repertory Grid 방법을 이용하여 중요하게 생각하는 레스토랑 품질 속성을 파악한 후 전문가 토론을 수차례 거쳐 유사 중복 항목을 통합하고, 핵심 차원별 주요 속성을 도출하였다. 척도 정제를 위해 신뢰도 분석과 탐색적 요인 분석을 실시하였으며, 이후 각 구성 개념에 대한 중복성 여부를 확인하기 위하여 3차 확인 요인 분석을 실시하였다. 본 연구에서는 Brady & Cronin(2001)이 제안한 위계적 서비스 품질 모형을 바탕으로 외식 서비스 품질 척도를 개발하였다. 본 연구의 위계적 외식 서비스 품질 모형은 외식 서비스 품질 차원 및 측정 요인을 물리적 환경 품질, 상호 작용 품질, 음식 품질이라는 핵심 차원으로 설명함으로써 요인간의 중복성 완화, 결과와 과정 품질의 균형적 고려, 세 가지 핵심 차원별 관리포인트 명확화, 위계적 모형에 의한 핵심 차원과 하위 차원의 구분 등 이론적 기여 측면에서 뿐만 아니라 관리적 시사점 도출 측면에서도 우위성을 갖는다고 할 수 있다.

충남 지역 초·중학생의 무상학교급식 만족도에 미치는 영향 (The Effects on Satisfaction for Free Food Service of Elementary and Middle School Students in Chungnam Province)

  • The objective of this study to investigate the satisfaction of elementary and middle school students in Chungnam province. We surveyed related to school food service, concerns about food ingredients and dietary life, perceptions of free school food service and satisfaction the quality and management of the school food service. Furthermore, this survey with the previous. Compared to year, frequency of education related to school food service and concerns about food ingredients and dietary life. Perception on free school food service increased 1.2%, not statistically significant. Satisfaction for the quality of the school food service statistically significant increase compared to 2015. ore individuals educated the foods' county-of-origin and a higher concern the food materials and dietary life, subsequently higher satisfaction for the quality and management of school food service. The results of this study suggest that concern and concentration on software of school food service such as education and guide are important.

온라인상에서 식품구매 시 서비스품질과 식품품질이 구매의도에 미치는 영향 (Effects of Service Quality and Food Quality on Purchase Intention in Electronic Commerce of Food Products)

  • This study was conducted to investigate the effects of service quality and food quality on purchase intention in the electronic commerce of food products. Specifically, the relationship between purchase intention and food quality and service quality was tested based on customer satisfaction and trust, which were measured using the structural equation modeling method. Quality of service was found to affect purchase intention; however, food quality had no positive effects on purchase. Additional analyses should be conducted owing to the conflicting results of the present study. Although the amount of food bought online is increasing rapidly every year, research regarding online food purchasing is not being actively conducted. The results of the present study will help food sellers, buyers, and researchers.

한식당 종사자가 인식하는 한식 세계화를 위한 한식당 품질개선 방안 (A Study on Quality Improvement of Korean Restaurants Perceived by Workers for the Globalization of Korean Food)

  • The purpose of this study was to investigate workers' perception on the quality improvement of Korean restaurants for the globalization of Korean food. A total of 342 workers at Korean restaurants in Seoul and Gyeonggi province were surveyed using a self-administrated questionnaire. Excluding responses with significant missing data, 250 responses were used for data analysis. In terms of the improvement of service quality attributes, the 'sanitation management (4.51)' category received the highest score, followed by 'service skill (3.93)', 'menu development (3.90)', 'serving method (3.88)', 'facility and ambiance (3.84)', and 'food taste (3.40)'. There were significant differences of workers' perception on the improvement of service quality which were 'menu development (p<0.01)', 'service skill (p<0.001)', 'facility and ambiance (p<0.001)', and 'sanitation management (p<0.01)' by restaurant operation type, and 'service skill (p<0.001)' and 'facility and ambiance (p<0.001)' by workers' position. The mean score of each service quality category showed that Korean restaurants managed by a franchisor were ranked the highest. In each service quality category, the items which showed the highest scores for the improvement were 'developing the finest cuisine (4.08)', 'providing food seasoning according to customer requests (3.70)', 'proving ladles, tongs, and extra plates which enable customers to take as much food as they want (4.12)', 'staff's ability to explain menu (4.08)', 'using tableware appropriate to each dish (4.03)', 'sanitary management of the provided tableware (dishes, spoons and knives) (4.57)', and 'thorough toilet management (4.57)'. This research suggests that Korean restaurants need to improve service quality to globalize Korean food, and the strategies for service quality management should be developed to be applied to each restaurant operation type.

서비스품질에 대한 만족이 점포충성도에 미치는 영향: 국내외 패스트푸드 브랜드간 비교연구 (Impact of Satisfaction about Service Quality on Store Loyalty: A Comparative Study of the International Brand and the Domestic Brand of Fast Food Franchise in Korea)

  • This study was conducted to identify the differences In Customers' satisfaction about service quality between the largest Korean fast food franchise and the largest American Fast food franchise in Korea. And this study was performed to identify the critical service factors influencing the store loyalty of fast food franchise in Korea. The results of this study show that the American fast food franchise is doing better performances in service factors than the Korean fast food franchise. And the value of food and service is identified as the most critical factor for the store loyalty of the fast food franchise in Korea.

  • 본 연구는 외식 상품의 서비스 품질이 관광 만족도에 미치는 영향 평가에 대해서 분석하였다. 본 연구의 실증분석을 위해서 외식 상품의 서비스 품질은 유형성, 쾌적성, 신뢰성, 친절성, 보증성 요인으로 측정하였고, 외식 상품의 관광 만족도는 기대 효과, 구전 의향, 재구매 의도 요인으로 측정하였다. 외식 상품의 서비스 품질과 관광 만족도 간의 관련성을 검증하기 위하여 전체 120개의 조사 표본을 활용하여 다음과 같은 연구 결과를 얻었다. 첫째, 외식 상품의 서비스 품질 특성에 기초하여 서비스 품질 유형을 도출하였다. 둘째, 외식 상품의 서비스 품질은 구매 행동의 만족도에 정의 영향을 미치는 것으로 나타났다. 셋째, 외식 상품의 서비스 품질 유형과 구매 행동 만족도 간의 유의한 차이가 있는 것으로 나타났다.

외식업체 고객의 서비스 품질 기대도/만족도가 고객 충성도에 미치는 영향 (The Effects of Customer Expectations & Satisfaction on Customer Loyalty in Restaurants)

  • Service quality has become an important factor to meet customer satisfaction in the food service industry where competition is getting severe. Organizations are focused upon strengthening customer loyalty through customer satisfaction. Therefore, this study, taking customers as subjects, is intended to analyze factors affecting customer loyalty, on the basis of service quality satisfaction. In doing. so, the analysis has been done with 232 customers who are purchasing service from the food services industry, for general information, and service quality expectation, service quality satisfaction and overall satisfaction. The results of the study are as below. 1) From a factor analysis, the service quality expectation level of customer has been categorized into 4 factors, which are named General ′General management ′, ′Food′, ′Reliability′and ′Reputation′. 2) From the factor analysis, the service quality satisfaction level of customer has been categorized into 6 factors, which are named ′Employee attitude′, ′Food′, ′Reliability′, ′Atmosphere′, ′Reputation′ and ′Price′. 3) After classifying customers into 3 groups according to two criteria-"will buy the service again" and "will suggest to others", a comparison has been done for the service quality expectation dimension of customers by each customer group. The result shows that the group having both the "will buy the service again" and "will buy the service again "and "will suggest to others" criteria, that is, with higher customer loyalty, tend to have higher point than other group in factors of ′Food′, ′Reliability′, ′Reputation′(p〈.05). 4) As per the dimension of customer\`s service quality satisfaction level, factors like ′Employee attitude′, ′Food′, ′Reliability′, ′Atmosphere′, ′Reputation′, and ′Price′have shown differences according to each loyalty group(P〈.001). 5) Customers′overall satisfaction level according to each customer loyalty group has been found to be more important for the group having a higher loyalty level(p〈.001) 6) From the discriminant analysis with employing judging variables, such as the customer′s service quality expectation level, service quality satisfaction level and general satisfaction level, customer loyalty groups have been identified as accurately as 68.9% of the explanatory power.

Service Quality Measurement of In-Flight Meal Service: A Comparison between Korean and Foreign-Based Airlines

  • The current exploratory study investigates and compares the perceptions of the service quality of in-flight meals through the evaluation of recent consumers (within 2 weeks) of services provided by Korean and foreign-based airlines. Twenty (20) items for measuring service quality were categorized into three factor dimensions of 'food quality', 'employee service', and 'professionalism'. Among these, 'employee service' was rated highest by Korean and foreign-based airlines. When items representing each service quality dimension were analyzed and compared, only the 'food quality' dimension of Korean-based airlines was perceived higher than that of other foreign-based airlines. Findings also revealed a spectrum with some items with higher or lower mean values within each service quality dimension. Results of this study can expectedly be used to benefit both from a theoretical and practical point of view by providing empirical data that measure the service quality of in-flight meal service.

외식업 종사원의 서비스 품질 지각과 긍정적 감정 반응이 직무 만족에 미치는 영향 (The Effect of Service Quality and Subsequent Response on Job Satisfaction of the Employee within the Food Service Industry)

  • This study attempted to find more efficient ways of managing human resources through the effect of service quality and affect response on job satisfaction of the employee in the food service industry. Quality of service to the customer has an effect on the response of the employee. Therefore providing a high quality of service quality to. the customer is an important factor that contributes to a positive work environment for employees in the food service industry. For this study, research data was collected from employees of various restaurants. Among a total of 170 collected questionnaires, 20 incomplete samples were eliminated and consequently a final 150 completed questionnaires were provided. The SPSS/win 12.0 was used for statistical analysis: frequency analysis, factor analysis, reliability analysis and regression analysis. It is recommended that the food service industry should provide a positive work atmosphere which is satisfactory to the employee based on the needs of the employee. This study indicated that the quality of service quality affected the response and job satisfaction of employees in the food service industry.
