Status of Supplier Selection Status and the Practical Use of Purchase Specifications for Self-operated School Foodservices in the Seoul Area (서울 지역 직영 학교 급식의 공급 업체 선정 및 식재료 규격서 사용 실태 조사)

  • The purpose of this study was to identify the problems related to the purchasing processes of school foodservices that should be corrected for the food service safety, by examining the purchasing processes and the status of supplier selection. A questionnaire was given to 300 dietitians working at self-operated food services. Ninety-eight responses, excluding incomplete answers, were used for the statistical analysis. The survey consisted of three parts: the general characteristics of the school foodservice and dietitian, purchasing processes and supplier selection, and the purchase specifications. We found that 84% of the contract was made by informal purchasing, and the contract period was 6 months or one year. For supplier selection, problems related to the document screening systems were the superficiality of the content(45.7%) and the absence or lack of clarity of the appraisal criteria(34.8%). The important factors for the facility and equipment standards of suppliers were included unclear evaluation methods for content(41.1%) and inappropriate appraisal lists(21.1%), while unclear evaluation methods for content(41.9%) and absence or lack of clarity of the appraisal criteria(20.4%) were the problems pertaining to the supplier evaluation checklist. When using the Food Labeling Standards to select suppliers, confirmation of the sell-by date and the storage method had the highest score at 3.85 out of 5. For supplier selection, only 25% of the contract was made by using the purchase specifications. The levels of satisfaction of with Kimchi and rice cakes suppliers were significantly different according to employment type and educational background, respectively. Depending on working experiences, satisfaction was significantly different for the use of document screening, as a standard for the selection and management of suppliers, and for the facility and equipment standards of suppliers, The use of purchase specifications was different by employment type, while the use of purchase specifications for contracts was different by working experience. These results imply that the specialization of suppliers is necessary to unsure food safety. Therefore, the objective methods to evaluate the suppliers should be developed by the government, and appropriate education programs for dietitians should be prepared to enhance the utilization of purchase specifications.

Consumer behaviors towards ready-to-eat foods based on food-related lifestyles in Korea

  • The purpose of this study was to examine consumers' behaviors toward ready-to-eat foods and to develop ready-to-eat food market segmentation in Korea. The food-related lifestyle and purchase behaviors of ready-to-eat foods were evaluated using 410 ready-to-eat food consumers in the Republic of Korea. Four factors were extracted by exploratory factor analysis (health-orientation, taste-orientation, convenience-orientation, and tradition-orientation) to explain the ready-to eat food consumers' food-related lifestyles. The results of cluster analysis indicated that "tradition seekers" and "convenience seekers" should be regarded as the target segments. Chi-square tests and t-tests of the subdivided groups showed there were significant differences across marital status, education level, family type, eating-out expenditure, place of purchase, and reason for purchase. In conclusion, the tradition seekers consumed more ready-to-eat foods from discount marts or specialty stores and ate them between meals more often than the convenience seekers. In contrast, the convenience seekers purchased more ready-to-eat foods at convenience stores and ate them as meals more often than the tradition seekers. These findings suggest that ready-to-eat food market segmentation based on food-related lifestyles can be applied to develop proper marketing strategies.

The Perception for Development Need of Codonopsis Lanceolata Dishes by Industrial Foodservice Dieticians (사업체 영양사의 더덕 음식 개발에 대한 인식 조사)

  • The purposes of this study were to assess the perception of the characteristics of Condonopsis lanceolata dishes and to find out the development need & willingness to purchase for Condonopsis lanceolata dishes in view of industrial foodservice dieticians. Of 250 questionnaires distributed, 152 completed questionnaires were used for the statistical evaluation. Statistical data analysis was using SPSS 10.0 program for descriptive analysis, $X^{2}$-test, t-test and analysis of variance. The perception score on the characteristics of Condonopsis lanceolata dishes varied according to the number of meals served, mean price of a meal, type of food service management, food cost variation, offering type, and intake frequency; however, perception score was not affected by the number of meal serving/day and the type of menu. Regarding processed foods containing Condonopsis lanceolat, the need for developing side dishes was the highest in processed foods using Condonopsis lanceolata, followed by alcoholic beverage, one dish foods, health foods, and desserts. The score for willingness to purchase dessert of Condonopsis lanceolata was the highest, followed by alcoholic beverage, one dish foods, health foods, and side dishes.

  • This study attempted to improve frying powder products based on 272 consumers' purchase conditions. Factor analysis by type was conducted on purchase attributes of consumers who purchased frying powder by categorizing them based on five factors-namely, convenience, information, diversity, safety, and economy. Five main factors were divided into four purchase attributes named various pursuit, convenience pursuit, economical pursuit, and inform/safety pursuit. Purchasing status of frying powder products was analyzed according to three independent variables such as age, meal preparation type, and purchase attributes. The top motivation for using frying powder was convenience. According to the importance-satisfaction analysis survey, taste, expiration date, and certification mark were chosen as highly important and high satisfaction characteristics for frying powder (p<0.001), whereas nutrition, oil absorption, adhesiveness, crispiness, origin, and food additives were highly important and low satisfaction characteristics (p<0.001). In the conjoint analysis, crispiness was the most important attribute of fried food.

Attributes of consumer preferences for black garlic

  • Food consumption trends in Korea are becoming more health-oriented, and consumers have become interested in high-quality foods that are also beneficial to health. The goals of this study are to examine consumers' impressions of black garlic and to investigate the preferred optimal attribute combinations related to black garlic. To do this, a survey of 352 consumers was used to analyze the current status of consumer purchases of black garlic. A conjoint analysis was conducted to analyze certain aspects of consumer preferences, such as price, health functional food certification status, processing type, and taste. Consumers' purchase experiences with black garlic were relatively few, but those with purchase experience reported that they consumed it mainly for their health. The results show that consumers are not satisfied with the taste and flavor of black garlic despite their perceiving it as a beneficial food for health. Despite the fact that consumers' purchase intentions were found to be low, it can greatly increase if improvements in price, flavor, and taste can be realized and if offering substantial benefits. The results of the conjoint analysis of the preference attributes of black garlic products are as follows. Consumers considered price among the four attributes as most important. The taste of black garlic and the processing style were similar in terms of importance, and health functional food certification was less important. Finally, the results suggest that continuous improvements in price and flavor are needed to spread the consumption of black garlic.

The Effects of Participation Rates in Bakery Promotional Events on Repurchase and Recommendation Intention (베이커리 판촉 행사 참여도가 재구매 의도 및 추천 의도에 미치는 영향)

  • This study aims to examine the properties of using bakeries based on demographic variables and repurchase intention and recommendation intention according to participation rates in promotional events. First, demographic characteristics and frequency of using bakeries were analyzed. Second, crosstabulation analysis on usability was conducted according to demographic variables. Third, effects of participation rates in promotional events on repurchase intention and recommendation intention were examined. This study could provide the reasons why bakeries should do promotional events, showing their effects on sales. Surveys were conducted with the students of the culinary department and bakery customers to investigate the influence on repurchase intention and recommendation intention according to participation rates in promotional events. As a result, both repurchase intention and recommendation intention showed a significant result. Also, the study aims to improve understanding by analyzing demographic variables on the properties of using bakeries(frequency in use of bakeries, purchase type, bakery type that is preferred, a time slot being made a purchase, objects of purchase, and purchasing price per person) and create data to help the management of a bakery.

Impact of Types of Food Tourism Experience on Purchase Intention and Visitor's Satisfaction: Focused on Participants at Dae-gu Food Tour Expo (음식관광 체험유형이 상품구매의도와 방문만족에 미치는 영향: 대구음식문화박람회 방문고객을 대상으로)

  • The purpose of this study was to analyse the impact of food tourism experience types on purchase intention and further to verify the influence of purchase intention on visitor satisfaction. For these purposes, a survey was given to 233 participants at the $15^{th}$ Daegu Food Tour Expo held from $9{\sim}12^{th}$ June 2016. The studay also carried out analysis of frequency, reliability, and correlation employing SPSS V. 20.0. The findings of the study are as follows. 1) Among 4 factors of food tourism experience types, gourmet, knowledge and healing pursuit groups havd a positive influence on purchase intention, although relation pursuit group had no significant influence on purchase intention. 2) It was discovered that purchase intention had a positive influence on visitor satisfaction. The results shown that food tourists have basic experience of gourmet with paying attention on knowledge and healing, as well. But food tourist has no significant influence on the group of relation pursuit. Accordingly, in order to encourage food tourists to re-visit, it is necessary to continuously develop and improve tour programs with well organized tour destinations and social system.

A Study on the Importance of Selection Attributes according to the Types of Makgeolli Consumers based on Purchase and Drinking Motives (막걸리 구매 및 음용 동기에 따른 소비자 유형별 선택속성 중요도에 관한 연구)

  • The purpose of this study is to establish a marketing strategy for the makgeolli manufacturing industry. We fractionized cousumer types depending on motives for purchase of customers who had bought makeolli or drunk it for the last six months. We also examined the relationship between makgeolli selection attributes and customer satisfaction by the cousumer types. SPSS 15.0 statistical package was used to process data. Frequency analysis, factor analysis, a reliability test, K-means cluster analysis, one-way ANOVA, and multiple regression were executed. As a result, the motives to purchase and drink were divided into four factors - marketing, effect on health, self-desires, outside environment; consumers into three types - dependent type, loving type, indifferent type; makgeolli selection attributes into five factors - health characteristics, visual elements, brand characteristics, drinking characteristics, purchase characteristics. It was shown that the makgeolli loving type considered all the makgeolli selection attributes as most important; the dependent type considered the health characteristics and visual elements as less important than the loving type did. The indifferent type considered all the makgeolli selection attributes as less important compared with the other types. Among the makgeolli selection attributes, drinking characteristics and the purchase characteristics had effects on customer satisfaction.

Classification of elderly households based on diet-related style and analysis of their characteristics

  • The objectives of this study were to classify the types of elderly households and to compare the characteristics of their dietary lifestyle. Panel data surveyed by Korea Rural Economic Institute (KREI) for Food Purchase Attitudes over three years (2019 - 2021) were utilized for the analysis. Through a factor analysis, five common factors were extracted out of 19 basic variables related to dietary style, which indicate two kinds of consumer competency index (safe diet, traditional diet) and three kinds of purchase frequency (healthy food, meat & fish, fresh seafood). Applying the cluster analysis method, by using socioeconomic variables along the five common factors, elderly households aged 60 or older were grouped into four types. As a result, Type 1 elderly households accounted for 50.8%, Type 2 for 16.2%, Type 3 for 27.8%, and Type 4 for 5.2% out of all 870 elderly households. Type 1 is characterized as a low-income vulnerable class with a poor diet, Type 2 as a middle-income class with a healthy food-oriented diet, whereas Type 3 was classified as a middle-income class with a meat-oriented diet, and Type 4 as a high-income class with diverse dietary culture. It is necessary to expand the agri-food voucher pilot project to the entire country and also increase the monthly subsidy for the Type 1 elderly households. Implementing community kitchen projects for elderly single-person households, promoting senior internships by providing incentives to companies that employ retirees, the provision of education by local governments on a safe and balanced diet for Types 2 and 3, and the promotion of an elderly-friendly social environment are also recommended.

Communication Effects of the Presenting Types of Menu Labelsand Consumers' Knowledge Level (메뉴 라벨의 제시 유형과 소비자 지식 수준에 따른 커뮤니케이션 효과)

  • The purpose of this study is to analyze the effects of the presenting type of menu labels(regular/descriptive) and knowledge level(high/low) on the advertisement(Ad) comprehension, attitude toward the Ad, attitude toward the brand, purchase intentions. For that reasons, 157 university students who are majoring in food-service management or culinary arts were conveniently selected as sample for $2{\times}2$ factorial design. A final sample of 153 responses were deemed usable and then two-way ANOVA was used for statistical analysis. The findings are as follows. First, there were significant differences between the presenting types of menu labels and communication effects including the Ad comprehension, attitude toward the Ad, attitude toward the brand, purchase intentions. It can be known that descriptive menu labels showed higher communication effects than regular menu labels. Second, there were significant differences between the knowledge levels and communication effects including the Ad comprehension, attitude toward the Ad, and purchase intention but not in attitude toward the brand. It can be known that consumers with relatively high knowledge levels showed higher the Ad comprehension, attitude toward the Ad, purchase intention than consumers with low knowledge levels. The results of this study can be used as data for more effective menu marketing and basic of further empirical study for effectiveness of menu labels.
