Seo Yu-gu's Design Concept for a Rural Residential Landscape (서유구(徐有榘)의 향촌 주거환경 조성에 관한 구상)

  • In this paper, we have examined Seo Yu-gu's concept of rural home landscaping by reviewing the contents in Wonrim·Ganso in Hyungbipochi. The origin of his concept of rural residential landscaping reflects the Joseon Fengshui perspective following Bokgeo Sayo. Keeping in mind the requirements for living environment based on the Joseon Fengshui perspective, Seo Yu-gu interpreted Jiangjiuyuanji and introduced the components of ideal living that he had obtained from it in ways applicable and suitable to rural homes in Joseon. Jiangjiuyuanji, which contains the natural elements such as mountains, water, fields, and trees, could have been well received by Joseon scholars. As Seo Yu-gu explained in Sangtaekji, it had all the components of Nakto. In sum, constructing the hedges with three layers to promote the safety of rural residents and protect the food sources, utilising water sources for rural homes in various ways, and creating a beautiful courtyard Seokgasan and ponds were Seo Yu-gu's ways of reproducing the requirements for Nakto described in Jiangjiuyuanji such as a safe living environment surrounded by mountains resembling a lotus flower castle, a plentiful water source, and a beautiful natural environment based on the principle of 'Bokgeo Sayo'. In other words, through the content of his writing Wonrim·Ganso, he was articulating his thoughts on how to realise the ideal living conditions described in Jiangjiuyuanji in ways applicable to rural homes in Joseon. In the extended context of Imwon gyeongje ji, such deliberation of Seo Yu-gu shows a glimpse of the goals and practices he pursued through it. The content of Wonrim·Ganso in Hyungbipochi truly manifests Seo Yu-gu's approach to and understanding of Chinese literature. Moreover, his suggestions for application in rural Joseon villages verify the orientation and practical goals of Imwon gyeongje ji as he stated in the preface that 'the book was written specially for Joseon'.

Changes in nutritional status of Korean older adults during COVID-19 Pandemic by household income and demographic factors -using the Korea National Health and Nutrition Examination Survey(2019-2020): a cross-sectional study (가구소득 및 인구학적 특성에 따른 코로나19 유행 전·후 한국 노인의 영양소 섭취변화에 대한 단면연구: 국민건강영양조사 제8기(2019-2020) 자료를 활용하여)

  • Objectives: The study aim was to identify changes in the nutritional status of older adults during the COVID-19 pandemic according to household income and demographic characteristics. Methods: Study participants were 2,408 adults aged 65 and over who participated in the 2019-2020 Korea National Health and Nutrition Examination Survey (KNHANES). To examine changes in nutrient intake levels resulting from COVID-19, data of 2019 and of 2020 were compared. Study participants were divided into three groups based on household income level to compare these changes. The changes were compared according to household income level, age group, and household type. Results: Percentages of recommended intakes for energy, protein, and most micronutrients were the lowest for the low-income group of both males and females in 2020. The Mean Adequacy Ratio (MAR) score was the lowest for the low-income group in both years. When comparing nutrient density for 2019 and 2020 by income group, the male low-income group experienced a decrease in nutrient densities of vitamin A, thiamine, calcium, and iron. For the same group, a decreased percentage for energy intake from protein was noted. Fruit intake was lowest in the low-income group for both males and females. Low-income males had the lowest intake levels for meat, fish, eggs, and legumes in both 2019 and 2020 and the lowest milk and milk product intake levels in 2020. Older adults living alone or single older adults with children had lower MAR scores than those living with a spouse. Older adults living alone experienced decreases in energy and thiamine and iron intake levels in 2020 compared to their intake levels in 2019. Conclusions: Because of the COVID-19 pandemic, nutrition intake levels worsened for older adult males in the low-income group and older adults living alone. This finding shows the need for a more systematic nutritional support strategy for the vulnerable older adults population in national disaster situations.

Monoclonal antibody production for CP4 EPSPS detection assays (CP4 EPSPS 검출을 위한 단클론 항체 생산)

  • In this study, we described the production of an antibody to living modified organisms (LMOs) containing the gene encoding for 5-enolpyruvylshikimate-3-phosphate synthase (EPSPS) from Agrobacterium tumefaciens strain CP4 EPSPS provides resistance to the herbicide glyphosate (N- (phosphonomethyl) glycine). These LMOs were approved and have recently been used in the feed, food production, and processing industries in South Korea. Highly efficient monoclonal antibody (mAb) production is crucial for developing assays that enable the proper detection and quantification of the CP4 EPSPS protein in LMOs. This study describes the purification and characterization of recombinant CP4 EPSPS protein in E. coli BL21 (DE3) based on sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) and matrixassisted laser desorption/ionization time-of-flight mass spectrometry. The production of mAbs was undertaken based on the standard operating procedure of Abclon, Inc.(South Korea), and the purity of the mAbs was assessed using SDS-PAGE. The following five mAb clones were produced: 2F2, 4B9, 6C11, 10A9, and 10G9. To verify the efficiency and specificity of the five developed mAbs, we performed Western blotting analysis using the LM (living modified) cotton crude extracts. All mAbs could detect the CP4 EPSPS protein in the LM cotton traits MON1445 and MON88913 with high specificity, but not in any other LM cottons or non-LM cottons. These data indicate that these five mAbs to CP4 EPSPS could be successfully used for the further development of antibody-based detection methods to target CP4 EPSPS protein in LMOs.

The Effects of Low-Calorie Diet with Raw-Food Formula on Obesity and Its Complications in the Obese Premenopausal women

  • Recently interests on raw-food diets are rapidly increasing in relation to chronic diseases prevention in Korea, but studies on raw-food diets have been hardly performed by nutritionists. This study was performed to investigate the effects of low-calorie diets using a raw-food formula in the form of freeze-dried powder on obesity and its complications in the obese women (body mass index (BMI) $\geq$ 25kg/㎡) for eight weeks. Forty premenopausal women (mean BMI 28.04kg/㎡, mean age 28.33years old) participated in this diet intervention, and were controlled by eating 1 regular meal, 1-2 snacks and 2 raw-food formula (140kcal/pack) meals a day within the 1500-1300kcal ranges. Anthropo-mentric measurements, body compositions, physical exercise, and obesity-related risk factors were assessed before (the initial), during (the 4th week) and after (the 8th week) the study. All the data was analyzed by paired t-test, repeated measures ANOVA, and nonparametric rank test at p<0.05 level. Obesity was significantly increased during this study, and it was decreased in weight (-4.59%, p<0.000), BMI (-4.56%, p<0.000), body fat percent (-6.18%, p<0.000), fat mass (-10.19%, p<0.000), waist and hip circumferences(-5.69%, p<0.000 and -2.55%, p<0.000) and WHR (-3.24%, p<0.000). Energy expenditure of physical exercise was increased as much as 70kca1/day during the study (p=0.000), but it did not have any correlations with weight loss and changes of body compositions. Biochemical measurements including blood triglyceride(p <0.006) and leptin(p<0.000) levels were significantly decreased, LDL cholesterol level was increased(p<0.05), but all the blood lipid levels were in the normal ranges. Fatty liver echogenicity and menstrual irregularity were improved after the diet intervention(p<0.000 and p<0.034). In conclusion, this B-week low-calorie diet intervention using raw-food formula was effective for obese premenopausal women in reducing obesity and its risk factors so as not to proceed towards comorbidities. However, the variation of blood lipid levels should be observed for a longer Period.

Food Habits and Nutritional Status of the Long-Lived Elderly People in Ganghwa-gun Area (강화지역 장수노인의 식습관 및 영양소섭취량)

  • This survey was carried out to obtain the information concerning nutritional status, including factors of food habits and nutrient intake of the long-lived elderly men and women living in Ganghwa-gun. In order to assess the quality of dietary intake among the elderly, a survey was conducted during December 2003 of 103 subjects who were over 85 years of age. Dietary nutrient intake data were obtained through the 24 hr recall method. Chi-square test and t-test were the main data analysis method. Their dietary habits such as three meals a day and a regular meal time have shown that they have generally good eating habits. Average daily calorie intake ($\%$ RDA) was 1233.2 kcal ($68.8\%$) for male and 1215.8 kcal ($75.8\%$) for female which were lower than the Recommended Dietary Allowances (RDA) for Koreans. Energy intake of females got closer to RDA than that of male. Protein intake was 49.3 g for male and 46.9 g for female (which was $82.3\%$ RDA for male and $85.1\%$ RDA for female) for elderly person, the proportion of animal protein to total protein intake were $45.2\%$ for male and $39.0\%$ for female. Average CPF ratio of energy intake for both male and female were 68.7 : 16.1 : 15.2 and 69.6 : 15.4 : 15.0. SFA : MUFA : PUFA ratio of the subject was 0.78 : 1.03 : 1.00 for male and 0.64 : 0.92 : 1.00 for female. Calcium intakes for both males and females were 321.3 mg and 377.2 mg. Vitamin A was the nutrient found to be least sufficient. Mean daily intakes of most of the vitamins and minerals for both males and females were lower than RDA except vitamin C and Zn for female, especially $\%$ RDAs of vitamin A, Ca for male and vitamin A for females were less than $50\%$ of RDA. In conclusion, long-lived elderly in Ganghwa areas did not consume enough nutrients quantitatively as well as qualitatively, especially Ca, Fe, vitamin A, vitamin $B_2$ and vitamin E. These results suggest that nutritional guidelines for older Koreans should focus on the maintenance of adequate energy intake. In addition, selection of foods with high protein and calcium, such as dairy food, should be emphasized, particularly in the long-lived elderly.

A Study on the use of Word-of-Mouth(WOM) Information in the Customers of Korean Local Food Restaurants: Focused on Jeonbuk Area (향토음식점 이용고객의 구전정보 이용 특성 분석: 전북지역을 중심으로)

  • The purpose of this study is to analyze customers' behavior in using word-of-mouth(WOM) information about Korean local food restaurants. The questionnaire developed for this study was distributed to 500 customers living in Jeonbuk area and a total of 455 copies (91.0%) were used for analysis. The statistical analysis was conducted using SPSS Win(12.0). The results were summarized as follows. The recommendation of people experienced'($M=3.57{\pm}1.24$) and 'word-of-mouth through people around'($M=3.52{\pm}1.20$) were major word-of-mouth information sources of Korean local foods; 'taste of food'($M=4.16{\pm}1.15$) and 'service quality'($M=3.79{\pm}1.11$) were important attributes in word-of-mouth information. In addition, to the question about the reasons for recommending the restaurant to the people around, the most people replied that 'flavor, nutrition and quality of local foods can be kept only in the specific location' ($3.53{\pm}1.08$), followed by 'to keep the memory of the visit to the areas in mind through local foods'($3.51{\pm}1.03$). These results showed that people usually recommend a restaurant based on the quality of the food itself or local characteristics. As a result, it is deemed that word-of-mouth effect is an important factor for the spread of Korean local foods.

Determination of Phosphatidylcholine in Korea Functional Foods Containing Lecithins using HPLC with Evaporative Light-Scattering Detector (ELSD) (ELSD를 이용한 레시틴중의 포스파티딜콜린의 분석)

  • Lecithin is a naturally occurring group of phospholipids found in nearly every living cell and has been widely used as the ingredient of functional foods. Lecithin has high content of phosphatidylcholine(PC), pharmaceutical material which promotes metabolism through the cell membrane. This study was carried out to improve the present inconvenient analytical method of PC in law for health & functional foods. The commodities used in this experiment, were two kinds of egg yolk and eight kinds of soybean lecithin functional foods. PC was separated with isocratic elution with hexane : isopropanol : D.W (30:60:8) through silica column (2.1$\times$150 mm) by HPLC with Evaporative Light-Scattering Detector (ELSD). The flow rate of the eluent was 0.5 ml/mim and infect volume was 10ul. The neubilizer temperature of detector was $60^{\circ}C$, drift tube temperature of that was $75^{\circ}C$ and gas flow was 30 psi. Quantification was carried out by external standardization. Limit of quantification was 0.15ppm. Lecithin contents of egg yolk and soybean Products were > $66\%$ and > $81\%$), respectively. Phosphatidylcholine contents of egg yolk and soybean products were > $74\%$ and > $18\%$, respectively.

A Study in Every Possible Correlation between Daily Food Intake and Growth Rate of Primary School Students (국민학교(國民學校) 아동(兒童)의 영양섭취실태(營養攝取實態)와 성장발육(成長發育)에 관(關)한 연구(硏究))

  • With the object of the study id every possible correlation between daily food intake and growth rate of primary school students, aged eleven years old, the author distributed prepared questionnaires through 200 children of 5th grade in both sexes in K private primary school, Seoul. Specific object of this study were included following three points: such as daily food intake records for six days. daily food intake records for six days. school records of sample children at the end of 4th grade. physical growth index calculated by means of weight and height of sample children at the first part of the 5th grade. CR. t. F. test as well as percentage calculations were included for statistical analysis. The result of this study were as follows: 1. For the living circumstances a) Average numbers of brother and sister in sampled family were two to three. b) Approximately 50%of the children were brought up by mother's milk at their infants and about 35% of children were weaned at the age of 7 to 12 months. c) Thirty to forty percent of the respondents revealed irregulity in their meal time due to early school time in the morning. d) Monthly average expenditure for daily food reached 20 to 29% out of total income. e) The most favorit foods reflect as follows: The most favorit main dish is boiled rice mixed with other careals and side dish beaf. Fruits and juice are more popular snack among whole children. 2. Nutrition survey a) The calcium and thiamine were the most limited factors out of daily nutrients consumption. b) The total calory intake were composed of carbohydrate 63%, protein 16% and fat 21% respectively. c) The total food intake were composed of 20 to 24% of animal source of foods and 76 to 80% of plant source of foods (vegetables, grains, fruits) d) The total protein intake were composed of 46% of animal protein and 54% of others. e) The grain stuffs consumed in the largest quantity at the level of 50% out whole food groups. f) Twenty four percent of total food intake came from snack between meal time. 3. The result of statistical analysis were as follows: a) The correlation between the calory intake and plysical growth index revealed statistical significancy at the level of p<0.001. b) The correlation between the protein intake and physical growth index revealed statistical significancy at the level of p<0.001. c) The correlation between the meal time and physical growth index revealed statistical significancy at the level of 0.02

Effect of Korean Soup(Tang) upon Customers Royalty in the Food Service Industry in Korea (외식급식산업에 있어서 국(탕)이 고객 충성도에 미치는 영향)

  • This study has been designed to stress the thoughts that soups should be offered taking into account customer's preference aimed at leading to eventual customer's satisfaction and the importance that Korean traditional food should take the lead in shifting dining-out industry's paradigm to customer-orientation instead of product-orientation. From August 15 through August 30, 2003, the drawn-up questionnaires were handed out to 500 numbers of adults aged over 20 living in Seoul, metropolitan city of Korea and the finally collected 361 questionnaires from them have been analysed as a subject for this study. It showed that the male respondents(44%) dined out much more frequently than the female respondents(35%) and their rate of 5,000-7,000 Won for a meal was most preferred as their average expenditure at one sitting in the restaurant. When eating Korean food at home or in a restaurant, the majority(5l,3%) of them think the soups(Tang) should be served coupled with their ordered meals. Among soups using flesh and meat as a staple material, they most preferred beef & bone soup(33.2%), followed by beep rib soup(30.4%) and beef soup with seasoned red pepper(l0.8%), and among soups using fish & shell and crustacean as a staple material, most preferred were hot fish soup(20.6%), loach soup(l5.2%) and hot crab soup(11.4%). Among soups using beans as a staple material, they most preferred soybean paste stew(33.2%), uncurdled soybean curd stew(29.4%) and Dambuk stew(l5.8%). Among soups using fowls and birds as a staple material, chicken soup with ginseng(51.9%), plain chicken soup(l8.4%) and chicken soup with red pepper sauce(l2.3%) falls on the most preferred. Among soups using vegetables and seaweeds as a staple material, most preferred are sea mustard soup(25.3%), Kimchi soup(16.8%), soybean paste soup with Chinese cabbage(13.0%) and bean sprout soup(10.1%). The soups(Tang) most preferred in the morning time are those soups whose staple materials are vegetables and seaweeds, such as sea mustard soup, bean sprout soup, Kimchi soup and soybean paste soup with Chinese cabbage while the soups most preferred for the lunch time are beef & bone soup, beep rib soup, chicken soup with ginseng and beef soup with seasoned red pepper while beef soup with seasoned red pepper, beef & bone soup, soybean curd stew and Kimchi soup are most preferred soups for the dinner time. The survey showed that 41 % of the subject preferred chicken soup with ginseng for a food considered good by themselves for their health. The male respondents preferred Bosin-tang(soup of edible-dog meat) than the female counterparts did, while the female respondents preferred chicken soup with ginseng than the male counterparts did. The survey showed that when eating korean traditional food, 70% of the subject are visiting a restaurant where soups are cooked delicious while 61% of the subject think that price does not matter if only food tastes good, which is reflecting that taste of food is a decisive factor in selecting menu rather than its price is. In conclusion, you can say that taste of soup is the most important factor creating steady customer in the restaurant, taking it into account Korean people most prefer their traditional food when dining out.

A Survey on the Food Habit and Health of the Aged in a Middle City (중소도시지역 노인의 식습관 및 건강상태에 관한 연구)

  • This survey was carried out to study the food habit and several health indicators of 438 persons (male ; 179, female ; 259) aged over 60 years old living in a middle city, The results obtained were as follows. The food habit of male was better significantly than that of female, the eating frequencies of fruits, eggs, meats and fishes, and legumes of male were higher than those of female. The mean weights and heights of both male and female were low in comparison to the Korean standard, but the mean BMIs of both male and female showed normal range and the mean obesity rates of male and female were 3.5% and 8.2%, respectively, The mean hemoglobin content and hematocrit were 13.1g/100m1 and 39.8% in male, and 12.4g/100m1 and 37.8% in female, respectively, The anemia rate judged by the WHO level of hemoglobin content was 42.0% in male and 34.7% in female. The mean systolic and diastolic blood pressures of both male and female showed normal range; But the incidence of hypertension judged by the WHO level was 15. 6% in male and 16.7% in female. The subjects suffering from diseases were 78.2% in male and 86.7% in female. Common diseases were neuralgia, circulatory system diseases, respiratory system diseases, diabetes mellitus, and athritis. There were positive correlations between the score of food habit and body weight, height, hemoglobin content, and hematocrit. And there was a negative correlation between the food habit score and obesity rate. Systolic and diastolic blood pressures were correlated positively to skinfold thickness and the incidence of suffering from diseased.
