A Study on Image and Consumption abut Instant Food of Homemakers in Ullungdo, Hansando, and Daegu (대구 및 도서지방 주부의인스턴트 식품에 대한 인식 및 소비에 관한 연구 -대구, 울릉도, 한산도 지역을 중심으로-)

  • A survey on images and consumption for Instant food for 450 homemakers in Ullungdo, Hansando and Daegu area were summarized as follows. 1) The tought of Homemakers food took 'easy to cook' and 'save time' as the best advantage in the image on instant food, while 'tasty' as the lowest one. It appeared that characteristic variables as household income, homemaker's education, homemaker's age, and area had influence on the image about instant food. 2) Processed food(ham, sausage)was purchased the most, while fermented food(kimchi, gochuchang) was purchased the least. It appeared that characteristics variables as household income, homemaker's education and homemaker's age had influence on the purchasing degree of instant food. 3) There were positive correlation coefficient between homemaker's image on instant food and household income(0.247) and area(0.211). There were negative correlation coefficient between homemaker's image on instant food and homemaker's age(-0.171). 4) Homemaker's purchasing degree about instant food had positive correlation coefficient with homemaker's image on instant food(0.389), household income(0.247) and area(0.211)and had negative correlation coefficient with homemaker's age(-0.190). 5) Fat intake had positive correlation coefficient with homemaker's purchasing degree(0.281) and homemaker's image(0.144) on instant food. Energy intake had positive correlation coefficient with homemaker's purchasing degree(0.206) and homemaker's image(0.138) on instant food.

The Relationships among Food Image, Tourist Satisfactions and Destination Loyalty Intention: A Case of Hanoi Local Cuisine

  • The purpose of this study was to examine tourist satisfaction towards Hanoi local food image as well as examine the relationship between those two variables with tourist destination loyalty intention. A self-administered survey was carried out in Hanoi, Vietnam. Of the distributed 400 questionnaires, a total 393 respondents of foreign tourists were used to data analysis by a convenience sampling method. Factor analysis was performed to identify underlying dimensions of what foreign tourists expect most from Hanoi local food image. The results showed that foreign tourist perceived Hanoi local food image as, food quality, food culture, contexture features and atmospheric. The finding showed that Hanoi local food image had a direct effect on foreign tourist's satisfaction and destination loyalty intention. In addition, tourist satisfaction had a positive influence on destination loyalty intention. At last, considering the results from this study, it is suggested that it is necessary to create and maintain the identity of image by formulating appropriate strategies and it is instrumental to promote local food image based on its distinctiveness and diversity which stands for the unique native culture.

  • This study is focused on the image benefit cost criterion value and the pure image benefit figure of the local food service industries, V, T, and O based on the theory and factor-analyses of food service industry. To accomplish the aim of this study, theoretical and positive research methods have been applied. The steps of food service image decision projects for the activating of identification on food service have been examined through theories and positive analyses. As the results, 'the image of menu service' appears to be the most effectual factor on the pure image benefit score, which is the priority order of the project planning for the food service image marketing of Jeonju area. As for the image benefit cost criterion value, 'the image of managemental service system', 'the image of approachability', and 'the service of internal surroundings' have been proved to be the most effectual factor in V, T, O respectively. On the other hand, this study shows that V manages its image of food service most effectually with 1.7 billion won, T with 96 million won, O with 7.2 million won for the image marketing strategy.

A Study on Preference according to Basic Image Divisions of Dining Space - Focused on the User aged 20's - (식 공간 이미지 유형별 선호도 조사)

  • This study has a purpose of suggesting the basic data to achieve customer satisfaction by understanding the preference of each type of restaurant industry for the taste of customers in 20's referring to 8 images. In the preference for style of image in dining space, the participants responded that they prefer natural, modern and romantic image, and both male and female participants preferred natural image. Participants responded that they prefer natural, romantic and modern in sequence as their general preference for style of image in dining space, and male participants preferred modern and natural but female participants preferred romantic and natural. The survey that was conducted for different menus has suggested that the reasonable image for fast food is casual, hard casual and classic for hotel restaurant, casual for school restaurant, romantic for cafe, casual for western restaurant, simple for Japanese restaurant, classic and elegance for Chinese restaurant and natural for Korean restaurant. According to the result of the analysis of dining space image, factor 1 are called 'cold image (CI)' as they have simple and modern image, factor 2 are called 'soft image (SI)' as they have natural and romantic image, factor 3 are called 'warm image (WI)' as they have casual and elegance image and factor 4 are called 'hard image (HI)' as they have classic image.

The Linkages among Restaurant Image, Food and Beverage Price, Value and Service Quality (레스토랑 이미지, 식음료 가격, 가치와 서비스 품질과의 관계)

  • The purpose of this study was to measure the effects of service quality mediating the linkage among food and beverage price, restaurant image and value. A total of 273 questionnaires were completed. MANOVA, ANOVA and ANCOVA were used to measure the mediating effect of service quality on the relationships among food and beverage price, restaurant image, and value. The effects of food and beverage price and restaurant image on service quality and value were statistically significant. As expected, when food and beverage price and service quality were regressed on the value, the service quality was significant and the effect of the food and beverage price was reduced. Moreover, when restaurant image and service quality were regressed on the value, the restaurant image and service quality had a significant effects on value. The results demonstrated that service quality played a mediating role in the relationship between food and beverage price and value, and between restaurant image and value.

Impact of Korea's Image on Attitudes, Norms, and Purchase Intentions of Halal Foods: A Comparison Between Indonesia and Malaysia

  • Purpose - Although Korean food export has been increasing, they will stagnate without markets. This study considers Korean halal food exports to Indonesia and Malaysia, which are two of the largest halal food markets. Given the context, this study aims to predict Indonesian and Malaysian consumers' purchase intention toward Korean halal food through their acceptance of and feeling toward Korea's image. Design/methodology - This study surveyed Indonesian and Malaysian consumers who purchased Korean halal food in the past year. The survey data were analyzed using the statistical package for the social sciences 21.0 and the analysis of moment structures 21.0. Findings - The analysis reveals that the feeling toward Korea's image and its food image significantly impacted attitudes and subjective norms, while the acceptance of Korea's image significantly impacted only subjective norms. Attitude showed no significant effect on purchase intention, whereas subjective norms exhibited a significant effect on purchase intention. The image feeling had a greater impact on attitudes in Indonesia than those in Malaysia, whereas image acceptance showed a greater influence on subjective norms in Malaysia than those in Indonesia. Originality/value - This study considers the difference between Indonesian and Malaysian consumers in relation to their acceptance of and feeling toward Korea's image and its halal food image. These findings on Korea's image can play a key role in establishing Korea's food export strategy and have strategic implications on Korean companies aiming to enter the halal food market or increase their market share.

An Effect of CSR Engagement on Brand Image in the Food Service Industry (푸드서비스 산업에서 CSR의 참여 효과가 브랜드 이미지에 미치는 영향)

  • The purpose of this study was to explore the moderating effect of food safety scandals on the relationship between food company's Corporate Social Responsibility(CSR) engagement at different levels and brand image in the Chinese dairy company context. In addition, this study also examined the mediating effect of brand image on CSR engagement and consumer loyalty. The study adopted a $2{\times}2$ between-subjects experimental design using scenarios. Four scenarios provided a mixed combination of yes or no cases for food safety scandal, and high or low cases for a dairy company's CSR engagement. In this study, survey was used to collect data from Chinese consumers. Of these, 377 valid data were collected from a sample of average Chinese consumers over the age of 20, collected through the internet. The results show that CSR engagement at different levels has a significant effect on brand image and food safety scandal has a significant moderating effect on the relationship between the two. This study expanded the previous study on the sensitivity of consumers to CSR activities in eastern China. At the same time, according to the results of the study, different CSR engagement of food enterprises does have a significant impact on brand image and consumer loyalty. In particular, high CSR engagement reduces negative impact on brand image through the moderating effect of food safety scandals. Therefore, for food business managers, actively participate in CSR activities, and actively enhance the engagement has a significant influence on the management of brand image.

Analysing Foreign Consumers' Perceived Brand Image of Korean Food (외국인의 한식에 대한 브랜드 이미지 분석)

  • This study investigated foreign consumers' perceived brand image of Korean food by applying the factor analysis research method. Questionnaires were distributed to 600 foreigners visiting Korea, from September 1 to 21, 2008. A total of 416 questionnaires were returned, of which 70 unusable questionnaires were excluded and 346 were used in the final analysis. SPSS 12.0 was employed for the statistical analysis. According to the factor analysis results, the brand image of Korean food were classified into four factors, 'premium concerns', 'novelty concerns', 'health concerns', and 'popularity concerns', where 'health concerns' had the highest mean score among the factors. The results also showed that the respondents perceived Korean food as 'healthy' and 'organic', but not as 'feminine' or 'high-grade', particularly respondents who were Japanese and Chinese. Additionally, the respondents were divided into two groups by degree of preference for Korean food. No significant differences existed between the two groups except for the attribute 'family-oriented'. Overall, the results suggested that the representative brand image of Korean food is 'healthy', which also corresponds with recent food consumption trends and Korean food characteristics.

A Study on Dietary Habits, Body Satisfaction and Nutritional Knowledge by Body Image of Middle School Girl Students in Chungbuk Area (충북 일부지역 여자 중학생의 체형 인식도에 따른 식습관, 체형 만족도 및 영양지식에 관한 연구)

  • This study was performed to investigate the dietary habits, body satisfaction and nutritional knowledge according to body image of middle school girl students (n = 284). The subjects were classified as lean, normal and fat groups according to body image. The weight, body mass index (BMI) and the score of body image were significantly higher in the students who recognized their body image as 'fat'. The satisfaction of present body image was significantly lower in students who recognized their body image as 'lean'. The interest in weight control and experience of weight control were significantly higher in students who recognized their body image as 'fat'. The necessity of nutrition education was higher in all groups (lean 67.2%, normal 59.0% and fat 52.8%). The products used to feel sweetened were sweetened ice (68.7%), processed milk (68.3%), confectionery (62.3%), carbonated beverage (55.3%), fermented milk (38.0%) and none (6.0%). The frequency of consumption of fruit juices and fried food was significantly higher in 'normal' compared to 'fat'. There was no significant difference in the frequency of consumption of snack and nutritional knowledge among the three groups. In the multiple regression analysis, the score of body image was negatively associated with the frequency of snack consumption in the 'lean'. The score of body image was positively associated with identification of nutrition labels and an interest in weight control but was negatively associated with satisfaction of present body image in the 'fat'. Based on these results, we conclude that, the middle school girl students need correct recognition of body image and continuous and practical nutrition education in order to maintain healthy dietary habits.

The Relationship of Food Behaviors with Body Image and BMI of Female College Students in Jeonbuk Province (전북지역 일부 여대생의 체형인식도 및 신체질량지수와 식생활 행동과의 관련성)

  • This study was conducted to investigate the relationship between body image and BMI with satisfaction of own body image, snack intake practices, food intake practices and weight control practices of 226 female college students in Jeonbuk province using questionnaire. The results were summarized as follows : 1. The average height, weight and BMI was 162.08cm, 52.02kg and 19.78, respectively. The average ideal body weight of the subjects was 48.92kg. Ninety percent of the subjects was dissatisfied with their body image. The degree of dissatisfaction was higher in the group who recognized themselves as fat. Most of subjects wanted to lose weight, but as the group having a recognition of thin body image significantly wanted to gain weight (p<0.001). 2. The subjects preferred fruits and juices for snack. The more subjects recognized themselves as fat, the more they restricted snack intake (p<0.05). 3. The rate of skipping meal tends to increase. The subjects did not intake balanced meals and skipped breakfast most (20.7%). The number of food groups taken at breakfast, lunch and dinner was 1.84, 2.25 and 2.55, respectively and the most variable food groups were taken at dinner(p<0.001). Dairy food group intake was low. The duration of meal time was longer in the underweight group by BMI regardless of body image recognition (p<0.05). 4. The weight controlling method was concentrated mostly on decreasing food intake. The more subjects recognized themselves as fat, the more they tried to control weight (p<0.001). Even though 59.5% of the subjects with no weight control experience had no future weight control plans, 50% of the group who recognized themselves as normal or fat did not want to control weight in the future (p<0.01). These results suggest that nutrition education programs and correction programs of food behaviors and weight control should start from focusing on the accurate recognition of body image for college female students.
