Physiological Functionalities and Anti-oxidant activity of heated radish extract

  • This study proceeded an experiment that can increase such physiological properties of heated radish extract. During the extraction of radish, including the byproduct, an increase in antioxidant properties of radish according the heating temperature was performed. Upon the extracts of radish bark and radish green extract(mucheong), the physiological functionalities and antioxidant activity were investigated. As a result, the color of radish ethanol extract in dependence of heating temperature, showed light brown color at low heating temperature and black color from $150^{\circ}C$. The total polyphenol content significantly increased as a result of heat treatment; 6.7 times and 22 times higher than the control at $110^{\circ}C$ and $150^{\circ}C$, respectively. DPPH radical scavenging ability and antioxidant property increased with increasing heating temperature; in comparison to heat-treated radish at $110^{\circ}C$ and $150^{\circ}C$, $IC_{50}$ decreased by 1/22 times. $IC_{50}$ of the control was 23times higher than $150^{\circ}C$ heat treated radish (Control $IC_{50}$:130.305). According to the graph that represents ABTS activity, antioxidant activity increased in dependence of heat treatment likewise to the total polyphenol content and DDPH radical scavenging activity. Upon heat treatment at $150^{\circ}C$, antioxidant activity in consequence of ABTS assay increased 23 times higher than the control.

The Changes of Ginsenoside Patterns in Red Ginseng Processed by Organic Acid Impregnation Pretreatment

  • In order to enhance bioactive functionalities of ginseng, an acid impregnation processing was applied as a pre-treatment in producing red ginseng. Acid impregnation studies were conducted, and acids (ascorbic, malic, and citric acid) were selected. The optimal concentration of each acid was investigated in this study in terms of ginsenoside contents. The most concerned ginsenoside, $Rg_3$ was increased by ascorbic, malic, and citric acid pre-treated red ginseng up to 1 M acid concentration. In the case of ascorbic acid pre-treated red ginseng, $Rg_2$ concentration was increased depending on acid concentrations. Citric acid pre-treatment enhanced $Rg_2$, $Rg_3$, and $Rh_1+Rh_2$ formation in red ginseng. Therefore, ginsenoside patterns in red ginseng could be changed by acid impregnation pre-treatment depending on acid concentration and acid types. This research is expected to contribute to the development of the ginseng industry via new red ginseng products with selective and intensified functionality.

Effects of High Pressure Treatments and Added Binders on the Physico-Chemical Properties of Restructured Pork Meat

  • In general, the application of HP contributes to improvement of functionalities of meat protein. In the current study, HP allowed the lower thermal processing of restructured meat product. Low thermal processing allowed fresh-like meat color which is one of problems in hot-set restructuring, while they showed slight discolorization induced by HP. In addition, HP processing combined with thermal processing could be achieved the palatable binding strength in restructured meat product. The addition of non-meat protein had an effect in binding strength. However, they showed no effect on water binding properties at 200 MPa, especially in milk proteins such as casein and whey protein. This is probably due to protein aggregation or to increase in surface hydrophobicity under HP. This result indicates that the application of HP on meat restructuring is more significant than the addition of binders. Therefore, the application of HP has apotential benefit in restructured meat product, and further investigations are needed.

전통주의 항치매 활성과 심혈관질환 활성 및 항산화 활성 탐색 (Characterization of Anti-dementia, Cadiovascular and Antioxidant Functionalities in Korean Traditional Alcoholic Beverages)

  • 새로운 고품질의 전통주 개발을 위한 자료를 얻고자 시판 전통주들을 수집하여 이들의 물리화학적 성질과 항치매활성, 심혈관질환활성 및 노화억제활성등을 조사하였다. 수집된 45종의 전통주들의 에탄을 함량은 $7.0%{\sim}52.0%$로 다양하였고 pH는 $3.05{\sim}5.28$이었으며 SBB-ju 전통주가 비교적높은 1.37%의 총산을 함유하고 있었다. 항치매성 $\beta$-secretase 저해활성은 PMR-ju가 42.5%로 제일 높았으나 acetylcholinesterase와 butyrylcholinesterase 저해활성은 없거나 20% 미만의 낮은 활성을 보였다. 항고혈압성 ACE저해활성은 YON-ju가 85.6%로 조사한 모든 생리기능성 중 가장 우수하였으나 혈전용해활성은 없었다. 항노화성 전자공여능은 SBB-ju(A)가 72.2%을 보여 높았으나 SOD 유사활성과 혈전용해활성등은 매우 낮거나 없었다. 최종 항고혈압활성 우수 기능성 주류로 선발된 YON-ju의 주, 부원료 추출물들의 항고혈압 활성을 조사한 결과 인삼의 물과 에탄을 추출물, 멥쌀의 물추출물 및 국화의 에탄올추출물에서 항고혈압활성이 높은것으로 보아 발효중에 이들로부터 항고혈압성 ACE 저해물질이 용출되거나 이들의 분해산물들이 YON-ju의 항고혈압 활성을 상승시킨 것으로 사료 되었다.

  • 본 연구는 육류등급제 시행에 따라 유화형 소시지 제조시 원료육의 일반성분과 기능성 규명을 통해서 최소사격배합에 입력자료로서 사용될 원료육의 결착지수를 국내 실정에 맞도록 추정하고자 실시하였다. 각 원료육의 일반성분, 기능성 및 육색소 함량은 축종별 부위별로 다양한 수치를 보였으며 원료육의 결착력(cohesiveness)과 높은 상관산계를 갖는 것이 많았다. 특히 수분, 단백질함량과는 정의 상관관계를, 지방함량과는 부의 상관관계를 나타냄으로써 단지 일반성분 분석치만으로도 원료육의 결착성 추정을 위한 회귀식 산출이 가능하였다. 따라서 분석기기가 갖추어지지 않은 공장현장에서도 최소가격배합에 필요한 결착지수의 추정이 가능하며 기존의 결착지수가 밝혀지지 않은 원료육의 결착지수 추정도 가능하였다.

약용 식물 첨가 된장의 숙성 중 생리기능성의 변화 (Changes of Physiological Functionalities during the Fermentation of Medicinal Herbs Doenjang)

  • 재래식 된장의 품질을 고급화하기 위해 재래식 된장과 각종 한약제와 약초류를 달리 첨가하여 제조한 두 종류의 약용 된장들을 6개월간 숙성시키면서 성인병에 관련된 몇 가지 생리 기능성의 변화를 조사하였다 약용 된장들의 고혈압을 예방하는 엔지오텐신 전환효소(ACE) 저해활성은 숙성기간이 길어짐에 따라 급격히 감소하여 숙성 6개월 후에 39.0%∼51.7%을 보였고 혈전용해활성은 숙성 6개월후에 10.4∼11.3 U를 보였다. 약용 된장들의 전자공여능은 제조직후 95%∼97%을 보였고 숙성 기간이 길어짐에 따라 큰 변화가 없었으며 SOD 유사활성은 숙성 6개월 후에 모두 10% 내외를 보였다. 약용 된장(I)의 tyrosinase 저해활성은 숙성 기간이 길어짐에 따라 증가하여 숙성 6개월 후에 상온물 추출물에서 97.6%의 높은 활성을 보였다. 6개월 숙성된약용 된장들의 조단백질과 총당 함량은 각각 14%와 33%로 재래식 된장보다 높았다.

전통 명태식해(식해)의 기능성 (Physiological Functionalities of Traditional Alaska Pollack Sik-hae)

  • 본 연구에서는 전통적 명태식해를 제조한 다음 저장.숙성조건에 따른 명태식해의 항균성, 항산화성, 항고혈압성 및 항콜레스테롤성 등의 생리적 기능특성에 대해 조사하였다. 항균성에서는 9종의 균주에 대해 모두 항균작용이 있는 것으로 나타났으며 , 이중 gram 양성균에 대해 Listeria monocytogenes를 제외하고 저장 직후에 항균활성이 나타났으며, 모든 gram 양성균에 대해 전 저장기간 동안 항균활성이 확인되었고, Staphylococcus aureus에 대해 강한 항균활성을 나타내었다. 반면에 gram 음성균 및 진균류에 대해서는 항균활성 이 gram 양성균에 비해 약하였다. 항산화성은 저장.숙성조건에 따라 모두 관능적으로 맛이 우수한 15~16일 경에 가장 강한 항산화활성을 나타내었으며, 그 후로는 저장기간이 증가함에 따라 감소하는 경향을 나타내었다. 항고혈압성은 명태식해 제조직후를 제외하고는 모든 저장.숙성조건에서 항고혈압활성이 나타났으며, 항콜레스테롤성은 2$0^{\circ}C$ 15일과 변온 16일에서만 항콜레스테롤활성이 검출되었다. 이러한 결과를 바탕으로 할 때 전통적인 방법에 따라 제조된 명태식해는 김치류와 같은 우수한 생리적 기능성을 가지고 있었으며, 명태식해의 유통기간 연장을 위한 변온조건에서도 그 생리적 기능성이 계속해서 유지됨을 알 수 있었다.

  • Kimchi is a traditional Korean fermented vegetable probiotic food. The use of high quality ingredients and predominant LAB (lactic acid bacteria)-whether it be ambient bacteria or adding starters, low temperature and facultative anaerobic condition for the fermentation are important factors for preparing kimchi with better taste and functionality. The predominated LAB genera are Leuconostoc, Lactobacillus, and Weissella in kimchi fermentation. The representative species are Leu. mesenteroides, Leu. citrium, Lab. plantarum, Lab. sakei, and Wei. koreensis. Kimchi, especially the optimally fermented kimchi, has various health benefits, including control of colon health, antioxidation, antiaging effects, cancer preventive effect, antiobesity, control of dyslipidemic and metabolic syndrome, etc.; due to the presence of LAB, various nutraceuticals, and metabolites from the ingredients and LAB. The kimchi LAB are good probiotics, exhibiting antimicrobial activity, antioxidant, antimutagenic and anticancer effects, as well as immunomodualatory effect, antiobesity, and cholesterol and lipid lowering effects. Thus, kimchi ingredients, LAB, fermentation methods, and metabolites are important factors that modulate various functionalities. In this review, we introduced recent information showing kimchi and its health benefits in Korean Functional Foods (Park & Ju 2018).

Organoleptic Profiles of Kefir and Yogurt Supplemented with Various Concentrations of Mentha piperita's (Peppermint) Oil: A Preliminary Study

  • The objective of this study was to evaluate the organoleptic profiles of Kefir and yogurt supplemented with Mentha piperita's (peppermint) oil. The organoleptic profiles of Kefir and yogurt were evaluated by 15 trained panelists between 20 to 50 years of age. The products of Kefir and yogurt were prepared with Mentha piperita's oil at concentrations of 0%, 0.1%, 0.3%, 0.5%, and 1.0%. Taste, color, and overall acceptability scores were the same or lower in Kefir supplemented with 0.1%, 0.3%, 0.5%, or 1.0% Mentha piperita's oil than the control group (0%). The scores of all categories were higher for yogurt containing 0.1% Mentha piperita's oil than the control group. Taste, color, and overall acceptability decreased in proportion to the added amount of Mentha piperita's oil. Further studies are needed to evaluate the functionalities and effectiveness of Mentha piperita's oil in promoting human health.

  • The vinegar can be used not only as functional foods but as the new high-quality materials. Lifestyles have changed a lot because of single-person households, women's economic activities, the aging society, the diversification of mass media, and the traveling abroad. Lifestyle diseases have increased with the life extension. The preference for the fermented vinegar, which is safer and healthier than the synthetic vinegar, has increased since the 1990s. The market of the functional fermented vinegars rapidly grew as researches and product developments on biological activities. In particular, the fermented vinegar, which can be enhanced in functionality depending on the characteristic of materials, is useful not only in the food industry but in various industries such as medical, defense, and construction. For the steady growth of the vinegar industry in the future, it is necessary to research and develop the function of the vinegar that can be utilized in various industries.
