재질이 도시락 용기의 성형 특성에 미치는 영향 (Effect of Resin Material on Molding Characteristics of Disposable Tray for Korean Food)

  • 우리 민족이 예부터 사용해 오던 구절판 모양을 활용한 일회용 도시락 용기를 중밀도 폴리스치렌과 저밀도 폴리스치렌으로 진공 감압 성형시킨 용기의 재질간의 금형특성, 견고성 상품성을 고찰한 결과는 다음과 같다. 8절형 용질의 재질간의 부피차는 56.4%였고 5절형 용기의 재질간의 총 부피차는 41.6%였다. 용기의 절(section)수가 많아짐에 따라서 재질간의 부피차는 더 커짐을 알 수 있었다. 용기의 견고성, 금형특성, 상품성 및 종합평가는 중밀도 용기가 저밀도 용기보다 더 우수한 것으로 나타났다. 따라서 두 재질간의 가격차가 용기의 선호도에 미치는 영향보다는 금형특성, 재질감 및 상품성이 미치는 인자가 더 컸음을 알 수 있었다.

강원 지역 일부 여대생 중 골밀도 정상군과 위험군의 식품섭취빈도법을 이용한 식품과 영양소 섭취 상태 비교 (Evaluation of Food and Nutrient Intake by Food Frequency Questionnaire between Normal and Risk Groups according to the Bone Mineral Density of Female College Students Residing in Gangwon Area)

  • The purpose of this study was to examine the relationship between bone density and dietary intake for college women in their twenties. This study was performed on 160 female college students residing in Gangwon-do. It was conducted using ultrasound measurement of calcaneus bone density, anthropometric checkup and food-frequency questionnaires (FFQ) comprising 94 kinds of commonly consumed foods. Subjects were divided into two groups according to the T-score of bone density: a normal group (n = 113 persons, T-score ${\geq}1$) and a risk group (n = 47, T-score < 1.0). The average age of the subjects was 20.17 years and there was no significant difference between the two groups. Body weight and body fat percentage of the normal group were significantly higher than those of the risk group. The mean daily energy intake of the normal group was significantly higher than that of the risk group. Also, protein, fat, vitamin A, niacin, vitamin B6, folate, calcium, phosphorus, sodium, potassium, iron and zinc intake for the normal group were significantly higher than for the risk group. For the intake of the commonly consumed foods (or dishes) listed in FFQ, the mean daily intake amount of loaf bread, rice cake, potatoes, spicy beef soup, cucumber, seasoned spinach perilla leaves, crown daisy, stir-fried mushroom, sea mustard, beef rib, ham, chicken, mackerel, common squid, drink type curd yogurt, oriental melon and chocolate in the normal group was significantly higher than in the risk group. While, the mean daily intake of ramyun (instant noodle) and carbonated beverage by the normal group was significantly lower than that of the risk group. In conclusion, 20 something female college students showed a higher rate (26.9%) of the bone mineral density risk group (osteopenia or osteoporosis). For the risk group, the levels of nutrient and food intake were lower than in the normal group. Therefore, the bone density risk group needs to increase their nutrient intake and diet quality by increasing the intake of various foods. In addition, they should decrease the intake of foods, which are negative for skeletal health such as instant noodles and carbonated beverages.

일부 한국 여성에 있어 칼륨과 단백질의 섭취량에 의한 NEAP(net rate of endogenous noncarbonic acid production)와 골밀도와의 관련성 (The Relation between Net Rate of Endogenous Noncarbonic Acid Production from Diet Potassium and Protein Intakes and Bone Mineral Density in Korean Women)

  • 단백질과 칼륨의 섭취량으로 산출한 NEAP와 여성의 골밀도 및 골대사지표와의 관련성을 알아보기 위하여 $18\sim81$세의 여성 276명을 대상으로 설문조사와 식사섭취조사, 요추와 대퇴경부의 골밀도 측정, 소변의 디옥시피리디놀린을 분석한 결과는 다음과 같다. 대상자들의 NEAP 수준은 요추 골밀도(p<0.05)와 유의적인 음의 상관성을 보였고 대퇴경부 골밀도와도 유의적인 수준은 아니었으나 음의 상관성을 보였다. NEAP의 수준에 따라 대상자를 4분위수로 분류하고 연령, 신장, 체중의 차이를 보정하여 골밀도를 비교하였을 때 NEAP 수준이 가장 낮은 군의 요추 및 대퇴경부 골밀도가 가장 높았으나 유의적인 차이를 보이지는 않았다. 또한 단백질의 섭취량에 따른 골밀도의 4분위수 분석결과 단백질의 섭취량이 증가함에 따라 요추 골밀도가 감소하였다(p<0.05). 이상의 연구결과를 통하여 체내에서 알칼리를 생성하는 칼륨의 섭취증가와 체내에서 산을 생성하는 단백질의 섭취감소를 통한 체내 산도의 감소가 여성의 골밀도와 긍정적인 관련성을 나타낼 수 있음이 제시되었다. 따라서 칼슘섭취의 부족문제가 좀처럼 해결되고 있지 않은 우리나라의 식생활에서 골용해와 칼슘의 배설을 줄임으로써 골격건강을 유지할 수 있는 방안으로 단백질의 과잉섭취를 제한하고 체내 알칼리를 형성할 수 있는 무기질이 풍부한 식품의 섭취를 늘일 수 있도록 하는 식사지침의 마련이 필요하다고 생각된다. 또한 본 연구에서는 골밀도에 긍정적인 영향을 미치는 체내 알칼리성 유도 영양소를 칼륨으로만 한정했지만, 마그네슘이나 칼슘 등도 체내 알칼리성에 영향을 미치는 요인이기 때문에 다양한 알칼리성 영양소의 섭취가 골밀도에 미치는 영향에 대한 추후 연구가 요구된다.

  • This study was conducted to investigate the effect of physiological and behavioral factors on the bone density of 125 middle aged women who visited Saint Bundo Hospital. 16.1% of subjects had osteoporosis and 40.3% had osteopenia according to the measurement of the bone density of lumbar spine. Mean age was 56.9 in osteoporosis group and 53.7 in osteopenia group. It was significantly different from the mean age of control group, 50.7. The mean bone density of the women who had menarche after 15 years old was significantly lower than that of the women who had menarche before 15. But the age of menopause, the total year of menstruation, irregularity of the menstrual cycle and percentage of subjects who had ovariectomy were not significantly different among osteoporosis, osteopenia and control group. The use of medication such as oral contraceptive, steroid, depressant, diuretic, and Ca supplement and the preference of salty food were not significantly different among three groups. The percentage of subjects who had rheumatism, gastric ulcer, and pain in neck or shoulder was higher in osteoporosis and osteopenia group than in control group. This study shows that the age and the age of menarche affect the bone density, and that behavioral factors were not sig nificantly different in osteoporosis and osteopenia group compared to the control group. Further researches are needed to find out the effective way to minimize the effect of age and other physiological conditions on the decrease of bone density.

  • T. japonius의 배양에 유효한 먹이 미생물을 탐색하기 위하여, T. japonicus가 서식하는 tide pool 면장 해수 및 해조류에서 264균주를 분리, 각 균주에 대한 먹이효과 실험을 하였던 결과, 각 생장단계별로 세균종이 달랐다. 즉 nauplius기, copepodite기 및 성체의 각기에 가장 유효한 먹이 세균은 Acinetobacter sp. AG-3뿐이고, Moraxella spp., Flavobacterium spp.는 copepodite기 이후에, Pseudomonas spp.는 성체기의 먹이 효과가 있었다. 이것은 tide pool속의 많은 세균중 극히 일부에 속하며, 먹이 세균의 최적 농도는 $10^6/ml$로 tide pool 평균 생균수 농도에 거의 일치하였다.

분말식품의 마이크로파 유전율 및 수분함량 측정 (Measurement of Permittivity and Moisture Content of Powdered Food at Microwave Frequencies)

  • In this study, the microwave free-space transmission technique was used to measure the dielectric property of powdered food at microwave frequencies. The sample holder was designed and fabricated to transmit the microwave signals ranging from 1 to 15GHz. From the microwave propagation theory the equation expressing the dielectric property of powdered food was derived and validated by standard dielectrics. The dielectric property of powdered food such as wheat flour, coffee powder and milk powder was measured and analyzed. In the uniform range of bulk density of material, the real parts of permittivity of the food samples increased with the increase of moisture content, bulk density and temperature of the samples. The propagation properties such as attenuation and phase shift increased linearly as the moisture density of the food samples increased. As a measuring frequency of the moisture content, the X-band was recommended.

  • A high cell density culture system for the anchorage dependent CHO cells was developed based on the combination of in removal of ammonium ion and microcarrier culture system, and semi-fed-batch feeding of glucose and glutamine was employed to the developed culture system. The glass bead was selected as an optimum microcarrier in terms of cell growth. An ammonium ion selective zeolite, Phillipsite-Gismondine, was packed in a dialysis menium ion. The semi-fed-batch operation was employer to the novel culture system for the high density cell culture, and the results showed the cell growth was improved by 32% and tPA productivity by 250%.

High Density Cell Culture of Mucor sp. KCTC 8405P for Production of ${\gamma}-Linolenic$ Acid in Fed-Batch Culture

  • In order to produce ${\gamma}-linolenic$ acid by Mucor sp. KCTC 8405P. the fungus was cultivated in fed-batch culture with two phases. i.e., growth in yeast-like form and induction to hyphal growth by pH shift of the culture medium during cultivation. The synchronous growth of the fungus into the appropriate sizes was important for the high density cell culture of this dimorphic fungus. Dissolved oxygen concentration in the medium did not affect degree of unsaturation of fatty acids and ${\gamma}-linolenic$ acid content. Under the culture conditions applied in this experiment. the fungus was found to produce 100 g/l dry mycelia containing 40% of the lipids, where ${\gamma}-linolenic$ acid comprised about 9% of the total extractable fatty acids.

Antioxidative Activity on Human Low Density Lipoprotein(LDL) Oxidation by Pentagalloic Acid

  • The aim of this study was to investigate the efficiency of the pentagalloic acid compound in inhibiting the metal ions and cell lines that mediate in low density lipoprotein (LDL) oxidation. Pentagalloic acid prolonged the lag time preceeding the onset of conjugated diene formation. In chemically induced LDL oxidation by Cu$^2$(sup)+ plus hydrogen peroxide or peroxyl radical generated by 2, 2-azo-vis (2-amidino propane) hydrochloride (AAPH), pentagalloic acid inhibited LDL oxidation as monitored by measuring the thiobarbituric acid reactive substances(TBARS), malondialdehyde(MDA), and gel electrophoretic mobility. The physiological relevance of the antioxidative activity was validated at the cellular level where pentagalloic acid inhibited mouse macrophage J774 and endothelial cell-mediated LDL oxidation. When compared with several other antioxidants, pentagalloic acid showed a much higher ability than naturally occuring antioxidants, ${\alpha}$-tocopherol and ascorbic acid, and the synthetic antioxidant, probucol.

해조가공품의 Dietary Fiber 함량과 물리적 특성 (Determination and Physical Properties of Dietary Fiber in Seaweed Products)

  • 전남 서남해안에서 생산되는 수출용 해조가공품인 마른미역, 마른다시마, 찐톳, 마른김, 마른파래, 한천을 시료로 하여 Dietary Fiber의 함량, 보수성 및 밀도를 측정한 결과는 다음과 같다. 1. Dietary Fiber 중 Neutral Detergent Fiber는 찐톳이 41.52%로 가장 많고, 한천이 0.05%로 가장 적었으며, Acid Detergent Fiber도 찐톳이 26.20%로 가장 많고, 한천이 0.01%로 가장 적게 나타났다. Lignin은 찐톳이 6.94%로 가장 많고, 마른김과 한천은 거의 존재하지 않았으며, Hemicellulose는 마른김이 25.79%로 가장 많고, 한천이 0.04%로 가장 적게 나타났다. 또한 Cellulose는 찐톳이 19.26%로 가장 많고 한천이 0.01%로 가장 적게 나타났다. 보수성은 마른미역이 $16.6g{\cdot}waer\;/\;g{\cdot}A.D.P$로 가장 큰 값을 보였고, 기타 시료는 $6.1{\sim}8.5g{\cdot}water\;/\;g{\cdot}A.D.P)$로 비슷하였으며, 침지시간 및 입자크기별 보수성의 변화는 크게 나타나지 않았다. 밀도는 Direct density가 $500{\sim}806mg/ml$Bulk density가 $0.562{\sim}0.833g\;/\;cc$Hydrated density가${1.4{\sim}2.01g\;/\;ml$Hydrated volume expansion이$102{\sim}160%$였으며, Direct density와 Bulk density의 값은 대체로 상응하였다.
