경남 지역 세시음식의 시행 및 학교급식에서의 적용에 관한 연구 (A Study on the Annual Custom Foods in Kyungnam Area and on their Application to the School Foodservice)

  • This is the research on the observing annual customs, the annual custom foods and the application of the annual custom foods to the school foodservice. We sample 419 housewives live in Kyungnam area and 174 dieticians work at the primary and secondary schools. Annual customs the housewives and dieticians observe at high degree are Chuseok, Seolral, Jeongwoldaeboreum, Dongji, Chopail, Sambok etc. The housewives observe more Seolral, Chuseok and Dongji than the dieticians and the dieticians observe more Sambok than the housewives.(P<.001) When they provide school foodservice, the dieticians observe Dongji at the highest degree. In Kyungnam they eat most the gakjongnamul as annual custom foods on Chuseok and Seolral. They eat most ogokbap and mugeunnamul on Jeongwoldaeboreum, minarinamul on Chopail, and samgyetang on Sambok and patjuk on Dongji as the annual custom foods. Most of dieticians (94.3%) answer that it is good to provide annual custom foods as the school foodservice on annual customs. However, they indicate some practical problems to do such as inadequacy of the school cooking facilities, its not suiting students' tastes, etc. The rate of housewives' answers that we have to transmit annual customs is higher than that of dieticians.(P<.001) Seolral topped the list of annual customs both housewives and dieticians answer must be transmitted, followed by Chuseok, Jeongwoldaeboreum, Dongji. Dongji is followed by Chopail(P<.001) in the housewives' answers while Sambok(P<.001) in the dieticians' answers. Though most of the respondents know the origins, dates and details of annual customs they think must be transmitted, they don't know well those of the other ones. By their mothers both housewives and dieticians have come to know about annual customs and mostly affected. Secondly housewives affected by their mothers-in-law while dieticians by their school education.(P<.001)

식생활문화(食生活文化) 계승(繼承)의 현상(現狀)에 관한 한(韓).일(日) 양국(兩國)의 교육적(敎育的)인 과제연구(課題硏究) (A Study on Educational Tasks about the Succession Patterns of Dietary Culture in Korea and Japan)

  • This study was carried out to investigate the succession patterns of dietary culture and to find out all the educational problems with female college students in both countries as the central figure. The results are as follows. The degree of knowledge acquisition about food of annual custom is 58% in Korea and 72% in Japan. What the rate of knowledge acquisition is high among both countries’ similar food of annual custom are ${\ulcorner}Seolnal(Gantan){\lrcorner}$, ${\ulcorner}Sambok(Doyonohi){\lrcorner}$, and ${\ulcorner}Chuseok(Tsukimi){\lrcorner}$. Cooking experience of festive food is 45% in Korea and 58% in Japan. Among both countries' common festive food what cooking experience is high in Korea are ${\ulcorner}Seolnal{\lrcorner}$ and ${\ulcorner}Chuseok{\lrcorner}$, which are over 97%. In Japan those are ${\ulcorner}Gantan{\lrcorner}$ and ${\ulcorner}Tsukimi{\lrcorner}$, which are over 80%. Regarding learning experience of festive food ${\ulcorner}Seolnal{\lrcorner}$ and ${\ulcorner}Gantan{\lrcorner}$ are beyond 80% and ${\ulcorner}Chuseok{\lrcorner}$ is 88%. In Japan ${\ulcorner}Tsukimi{\lrcorner}$ is 71% and ${\ulcorner}Omisoka{\lrcorner}$ is 85%. The learning sources of food of annual custom are parents and schools in common, and Korea has another learning sources, mass communication. Festive food that is cooked shows much similarity between two countries, but each country has originality. As common food of annual custom ${\ulcorner}Seolnal{\lrcorner}$ has nine kinds of food, ${\ulcorner}Sambok{\lrcorner}$ has three kinds, and ${\ulcorner}Chuseok{\lrcorner}$ has five kinds in Korea In Japan ${\ulcorner}Gantan{\lrcorner}$ has fourteen kinds of food, ${\ulcorner}Doyonohi{\lrcorner}$ has three kinds, and ${\ulcorner}Tsukimi{\lrcorner}$ has five kinds. The successive consciousness about food of annual custom is concentrated on a specific food in Korea. And Japanese consciousness is shown as an expansion-type on diverse food. Korean successive consciousness is 69.4% and Japanese consciousness is 82%. The higher the rate of knowledge acquisition, cooking experience, and learning experience are in both countries, the higher successive consciousness is. So we must note for the importance of home and school’s education.

청주지역(淸州地域) 세시음식(歲時飮食)에 관한 연구(硏究) (A Study on the Foods of Annual Custom in Cheongju Area)

  • 청주지역(淸州地域)의 세시풍속일(歲時風俗日)과 세시음식(歲時飮食)에 관하여 동국세시기(東國歲時記), 열양세시기(洌陽歲時記) 경도잡지(京都雜誌) 등의 문헌(文獻)과 강원지역(江原地域)의 연구(硏究) 결과(結果)를 통하여 비교(比較) 고찰(考察)하였다. 현재 지키고 있는 세시풍속일(歲時風俗日) 중(中) 설날과 추석은 어느 가정(家庭)이든 지키고 있었으며, 정월, 대보름, 동지, 삼복, 초파일 순(順)으로 많이 지키고 있었으나 그 외 세시퐁속일(歲時風俗日)은 잊혀져가고 있으며 주오하절, 중원, 남향은 지키고 있지 않았다. 또한 세시음식(歲時飮食)은 설날과 추석에 해 먹고 있는 음식(飮食)의 종류가 다양했으며, 설날의 떡국과 만두, 정월대보름의 오곡밥, 묵은 나물과 부럼, 추석의 송편, 동지의 팥죽은 대다수의 가정(家庭)에서 해 먹고 있는 것으로 나타났으나 그 외 세시음식(歲時飮食)은 해 먹은 율(率)이 낮거나 거의 잊혀져가고 있다. 일제하의 강압과 해방 후의 서구화(西歐化)에 너무 치우쳐 전통문화(傳統文化)는 소멸되어왔지만, 공업화(工業化)가 가속되어도 우리의 농경문화(農耕文化)나 세시풍속((歲時風俗)들 그리고 우리의 전통문화(傳統文化)는 견재해가면서 국제화(國際化)에 대처해 나가야 할 것이다. 또한 국제화(國際化)와 전통문화(傳統文化)는 결코 언제나 상반된 것이 아니므로 오히려 세계적(世界的)으로 국제화(國際化)는 가속되는 속에서 우리의 전통문화(傳統文化)를 자랑스럽게 여기며, 내세우고 관광자료(觀光資料)로 활용하는 것도 좋은 방안이라 생각된다. 앞으로 각 지역별로 세시음식(歲時飮食)에 관한 조사연구(調査硏究)가 이루어져 비교해볼 수 있어야 하겠다.

한국음식문화와 유럽음식문화의 비교에 따른 한식의 유럽 진출 방안 (A Study for Advancing into European Market of Korean Cuisine & the Comparison between Korean Cuisine Culture and European Cuisine Culture)

  • There is difference between European Cuisine and Korean Cuisine in various ways. In order to advance Korean Food into European Market, we should understand well European food-culture and food-custom. There are several process for push into the European Market. First, we inform European like that Korea traditional food (repast tool, the interior of Korean restaurant, traditional music, food-sequence, service method etc.). Second, we can introduce them ' Korean Fusion Food ' and that Korean Cuisine is ' Health foods '. For globalization of Korean Cuisine, we must understand exactly European market situation and know well the field law and tax system for business. Next, we establish the prior plan to supply with Korean food material till faraway region.

백령도 주부들의 전통 음식에 대한 의식과 세시풍속 실태 (Perception of Traditional Food and Seasonal Customs by Housewives Living on Baengnyeong Island)

  • The purpose of this study was to identify determinants for the perception of traditional food and the probability of belonging to the succession group of traditional food. This study also analyzed foods for seasonal custom and strengths as well as direction concerning improvement of traditional foods, while taking the housewives' hometowns into account. Data were collected from 304 housewives living on Baengnyeong island. Regression analysis showed that family income, age, type, years of residence on Baengnyeong island and hometown were significantly related to the perception of traditional food. Among the significant variables, hometown was the most important factor in explaining perceptional differences. Logit analysis indicated that the probability of belonging to the succession group of traditional food was high with low educational level, high perceptional degree, and North Korea as a native country. The results of chi-square analysis proved that foods associated with seasonal custom, strengths and the improvement of traditional food were different between housewives having South Korea and North Korea as a native country. In this article, similarities and differences in the foods associated with seasonal customs, strengths and the direction concerning improvement of traditional foods are discussed, and implications for both nutritionists and food marketers are provided.

중국(中國) WTO 가입(加入) 및 관세인하(關稅引下)에 따른 4개 분야(分野) 보건산업(保健産業) 수출(輸出)에 대한 연구(硏究) (A study on effect related to health industry through WTO entrance of China)

  • The health industry of China is faster than before, so it will be rank 5th at world-wide markets in 2010. Firstly, the custom tariff was lower at 15% in 2000 and at 10.4% on June 2005. And, it will be lower into 9.8% in 2010. Secondly, this is because of expansion of purchase power on increase in economic growth, extended human life expectancy. As it is entered the WTO in January 2002, it will positively affect on export of Korea for China. This paper focuses on the analysis of export increase caused by reduction of custom tariff in China. As above mentioned, the time schedule on average reduction of custom tariff was 15% in 2000, 10.4% in 2005. Then, it will be lower into 9.8% in 2010. As the empirical test related health industry, it presents 19.80% export increase rate for China of Korea on reduction of custom tariff from 2001 to 2010. The exporting of drug for China will be up to 17.85% for 10 years. Also, the exporting of Biomedical will be up to 20.99%, and respectively 22.95%, 22.60% in Cosmetics and food industry. Conclusionally, the exporting of this health industry will be increase greatly, compared with any other industries. So, it is necessary that firms increase in R&D investment and government support as policy for health industry.

주문형 케이크 제작 자동화를 위한 영상 기반 식품 모양 인식 및 측위 (Vision-based Food Shape Recognition and Its Positioning for Automated Production of Custom Cakes)

  • 본 논문에서는 주문형 케이크의 자동화 제작을 위해 필요한 일련의 영상 기반 식품 모양 인식 및 정밀 측위 방법을 제안한다. 초소형 카메라 모듈을 푸드 아트 프린터 내부의 비스듬한 위치에 장착 후 원근 변환을 적용하여 탑 뷰(top veiw) 이미지로 전환 후 에지 검출, 직선 및 원형 허프 변환 등을 수행하도록 하여 식품의 모양을 인식하고 무게 중심 좌표를 검출하도록 하였다. 본 알고리즘을 케이크 및 떡 모형에 적용하여 테스트를 수행하였으며 그 결과 180~250 lux 범위의 조명 환경에서 98.75% 의 높은 객체 인식률을 얻을 수 있었으며 50~120 lux 범위에서 0.87% 이내의 중심점 측위 오차율을 얻을 수 있었다. 이는 수요처의 요구 사항을 충분히 만족하는 수치이며 실시간 처리 성능도 프레임당 0.5초 이내로 나타나 상용화 가능성을 충분히 갖춘 것으로 판단된다.

서울지역 대학생의 외식실태 및 기호도 조사연구 (II) (A Study on the State of Eating out and Food Preference of College Students in Seoul (II))

  • The purpose of this study was to investigate the state of eating out and the food preference of college students in Seoul. This survey was carried out through questionaires, and the subjects were 158 male and 159 female students. The results obttained were summarized as follows; 1) Students who took late evening meal at home after eating out were 35.7% and most of the reasons were to custom. 2) During eating out, 30% of students had drinking. Male students had Soju (45.6%), and female had Beer (56.0%). 3) The most cases in date time, eating out cost were 5,000w. They were fond of Western Restaurant and the favorite food were Dongas. 4) Freqency of eating out with family had more than once a month (35%), because of a memorial day and event day, and the most favorite food was Sogalbigui. 5) Male and female students's choice in food at restaurant type were very different.

The Brassica/Arabidopsis Comparative Genome Browser A Novel Approach to Genome Browsing

  • Scalable Vector Graphics (SVG) has enabled a visually appealing, browser-based application for the display of Brassica sequences relative to Arabidopsis thaliana, and there are currently more than 70,000 B. napus Expressed Sequence Tags (ESTs) displayed. The client side of this browser is based on a Custom Graphical User Interface (CGUI) library which uses SVG, a new web graphics standard, to provide windowing functionality inside the web browser. This windowing functionality, combined with asynchronous data retrieval and client side rendering overcomes two of the key technology imposed drawbacks of current web based browsers: Fixed displays and frequent page reloads. The end result is an intuitive and enjoyable browsing experience. The browser is accessible online from the Brassica / Arabidopsis Genomics Initiative (http://brassica.agr.gc.ca).
