대구지역 유아들의 식사 및 식생활 형태 조사 - 식품 섭취패턴 및 식사다양성 평가 - (Study of Food Intakes and Eating Patterns among Preschool Children in Daegu Area - Assessment of Dietary Pattern and Dietary Diversity -)

  • This study was conducted to assess dietary pattern and dietary diversity of preschool children by investigating their food consumption. To accomplish this, dietary intake survey (24 hour-recall food diary) was administered to 508 children aged between 4 to 6 years old from 4 kindergartens in the Daegu area (415 were completed). By using CAN pro 3.0 for professionals, the dietary patterns and dietary diversity scores of each food group were examined by age and sex. Data were analyzed with SPSS 12.0, and $\chi^2$, t-test and Anova test, and Duncan's multiple range test used for verifying significance. For 4~5-year-old group, boys had significantly more fruit and meats than girls (p < 0.05), but girls had more dairy food than boys with no significance. For 6-year-old group, boys had significantly more foods, milk and dairy foods than girls (p<0.05), and also boys had more vegetables and fruit than girls with no significance. For DDS (Dietary Diversity Score), the score of 6-year-old group was significantly higher than that of younger children (p < 0.05) and the older the age was, the higher the score was. Dietary Pattern (GMVFD) was verified by 8 types, and the ratio of taking all five food groups (GMVFD = 11111) of the 6-year-old group was 48.8%. Children with older ages had more various foods than younger ones (p < 0.05). In addition, the ratio of taking less than the minimal intake of dairy foods of girls (48.1%) was higher than that of boys (41.3%). As results, unbalanced diet, overeating and not eating unbalanced diet were revealed as the problematic dietary habits among preschool children, and those habits may change positively with knowledge on nutrition grow on. Therefore, nutritional characteristics and importance of preschool children should be taught to parents and caregivers, and it must be practical and ready to use in cooking for these children to healthy dietary habits.

  • In spite of high incidences in gastrointestinal cancers in Korea, there have been few studies so far, which tried to detect or isolate the mutagenic, namely the carcinogenic substances in the Korean taste traditional foods. Among the many plausible dietary sources of carcinogens, the pyrolytic products of proteins or amino acids would be the major ones. And it is more noteworthy that the food pattern analysis showed the increasing consumption of protein foods by Korean as pyrolytic products, such as Bulgogi and Kalbi, etc.

한국농촌주민(韓國農村住民)의 계절별(季節別) 식품섭취조사연구(食品攝取調査硏究) (A Study on Seasonal Variations of Food Consumption of Korean Farmers)

  • This is the report of a food consumption survey of 193 members of 30 farm families in three rural villages of Korea. From a total of 188 households of the three villages, namely Wolgok in Kyunggi Do Province, Wachon in Kangwon Do Province, and Sobong in Cholla Namdo Province, 30 households were chosen for the survey. Four consecutive seasonal surveys, beginning in the autumn, November 1974 and finishing with the summer, August 1975, were made and each survey covered three consecutive days. The Precise Weighing Method was used in evaluating the kinds of food and nutrient intakes of the subjects. This method entails the accurate weighing of all foods by the investigator just prior to their consumption by the subjects under investigation. This survey was male to determine the actual food eaten by the members of these farm families at each season of the year, and to note any special differences in the foods consumed. The results obtained are summarized as follows: Food Intake The traditional ordinary diet of Korean farmers consists mainly of rice and other cereals as staple foods, and simple subsidary foods. The nutritional shortcomings of rice as a staple food are evident in the subclinical status of nutritional deficiencies. The mean consumption of cereals and their products was very high and it was more than half of the daily total food intake throughout all the seasons. The consumption of animal food, fruits, and fat by the farmers was very low. Fruit intake during winter and spring was almost nil. One of the special foods in the Korean dietary pattern is Kim-chi, a variety of pickled and fermented vegetables. The mean intake of Kim-chi during autumn and winter was very much higher than the other seasons. Korean farmers have difficulties in balanced year-round supply of food due to seasonality of food production and lack of food preservation. As nutrition problems of Korean farmers are highly influenced by seasonal variations, the expansion of an appropriate food preservation and storage programme should be encouraged. Special consideration should be given to new methods of preservation, the types of foods preserved, and production and consumption of nutritionally valuable foods for the improvement of the nutritional status in rural communities. Nutrient Intake Average adult rates for calorie and protein in the three study areas were 0.80 and 0.87 respectively, with little variations by villages. The adult caloric intake in averaged 2,928 kcal for autumn, 2,662 for winter, 2,673 for spring, and 2,760 for summer. Cereals contributed most of the total calories. In terms of the recommended daily dietary allowances for the Korean given by the Korea FAO Association, the diets in this survey were adequate except in the winter and spring. The protein intake averaged from 76.4 grams in autumn to 83.4 grams in summer and was near the recommended allowance, but a relatively large proportion of the total protein came from cereals and their products. The fat intake was unsatisfactory, ranging from 19.2 grams to 29.3 grams for the four seasons, and the consumption during farming season was higher than other seasons. It is apparent that the diet of the Korean farmers should be supplemented by calcium during autumn and winter. The highest calcium intake, with a mean of 583.5 milligrams, was recorded in summer. The mean intake of iron ranged from a low of 9.2 milligrams in the autumn to a high of 15.0 milligrams in the spring and it was satisfactory for all seasons. Among the vitamin group, the daily average intakes of vitamin A, thiamine, riboflavin, and ascorbic acid were lower than the desired intake throughout all the seasons. The mean vitamin A intake as ${\beta}-carotene$ ranged from a low of 2,807.8 IU to a high of 5,221.0 IU. The thiamine intake ranged from 0.98 milligrams to 1.19 milligrams, while mean riboflavin intake ranged from 0.92 milligrams to 1.13 milligrams. Ascorbic acid intake was 37.3 milligrams, the lowest, and the highest 47.8 milligrams. Niacin intake among Korean farmers was higher than the recommended allowance throughout all the seasons, and the mean intake ranged from 18.3 milligrams to 25.8 milligrams. The main character of the Korean farmers' diet has been found low in quality of protein and high in carbohydrate. Attention should be paid to the low intake of vitamin A, thiamine, riboflavin, and ascorbic acid among Korean farmers.

양송이통조림 가공중의 에너지소비량 조사연구 (Energy Consumption in Mushroom Canning Factory)

  • 통조림공장에서의 에너지 사용의 합리화를 위하여 양송이통조림 가공공장에서의 에너지 소비형태 및 공정별 에너지소비량을 조사한 바 그 결과는 다음과 같다. 1. 양송이 통조림공장의 에너지원별로는 유류는 겨울철 재배사의 온도유지에, 전기는 재배관리에 주로 사용되고 있었으며, 양송이 1kg의 재배 및 가공에 사용되는 에너지 부하는 열에너지 4,634 kcal, 전기에너지 0.116kwh이었고 전체에너지의 80%가 재배에 사용되고 있었다. 2. 각 가공라인별 수증기의 라인별 큰 차이 없이 $92{\sim}94%$였다. 3. 양송이 통조림 가공공정에 소비되는 총에너지는 1일 양송이 8 ton 가공시 전기에너지 60.1 kwh, 열에너지 $301.5{\times}10^{4}kcal$였으며, 에너지 다소비공정은 데치기(35%)와 살균(38%)이었다.

국내 소비자들의 김치 소비 실태 연구 (A Survey on the Nationwide Customers' Usage of Kimchi Consumption)

  • In this study, Kimchi usage was examined by nationwide consumers. 1,000 consumers between 20~60 years olds from 15 cities/province based on an administrative district participated in this questionnaire, which were one-on one interviews from September 23th to October 14th, 2009. 76.1% of the customers prepared Kimchi by them self, 26.9% customers received Kimchi from relatives and, 13.1% purchase Kimchi from the market. In addition, the rate of preparing Kimchi by themselves increased with age(p<0.05). 4~6 cabbage heads(34.5%) was the most preferred quantity for preparing Kimchi at a time, which was followed by more than 10 heads(25.2%) and 2~3 heads(22.9%). Chinese cabbage Kimchi was the most preferred type for purchase. 49.1% of customers purchased Kimchi at the supermarket and warehouse market and the origin of the ingredients, taste and-, price of Kimchi were considered important factors. The satisfactory scores of selling Kimchi were variety 3.60, taste 3.11, freshness of main ingredient 3.10, hygiene 2.86, -appropriate salt usage 2.99 and-, the origin of ingredients 2.94. There were significant difference between gender in taste and hygiene of selling Kimchi (p<0.05). In conclusion, to provide more appropriate Kimchi based on changes in Kimchi usage and consumption patterns at home and in the community, new types of Kimchi should be developed.

한약재 복용으로 인한 금속 섭취량 추정 및 위해성 평가 연구 (Metal Exposure Through Consumption of Herbal Medicine, and Estimation of Health Risk Among Korean Population)

  • Metal contamination of medicinal herbs is of growing concern because of their potential adverse health effects. In this study, metal exposures were estimated and their potential health risks were preliminarily evaluated using available data including metal contamination levels and consumption estimates of herbal medicine in Korea. Consumption and contamination data of 34 medicinal herbs abundantly used in Oriental medicine in Korea were used in this study. Lead, mercury, arsenic, cadmium, cobalt, and chrome were identified as contaminants of potential health concerns. Even based on a conservative exposure scenario, i.e., consuming 5 times more herbal medicine with 95th percentile contamination levels, health risks associated with herbal medicine consumption were estimated to be minuscule. Herbal consumption was 0.3% of the provisional tolerable daily intake levels recommended by Joint Expert Committee on Food Additives (JECFA) of WHO/FAO. However, it should be noted that there are several important assumptions and uncertainties associated with this evaluation: This study was conducted for only 34 types of medicinal herbs of which consumption and metal contamination data were available. In addition, there are no reliable herbal medicine consumption data among Korean population. The pattern and amount of herbal (medicine) consumption in Korea need to be investigated in order to conduct more refined risk assessment associated with metal contamination in medicinal herbs.

경주지역 주민들의 약선요리 이용형태에 관한 연구 (Research on Medicinal Food Consumption Patterns in Gyeongju Area)

  • 본 연구는 경주지역 소비자를 중심으로 약선요리에 대한 이용형태를 살펴보고 이를 통하여 관광자원으로서 약선요리의 상품개발에 대한 기초자료를 제공하고자 하는데 목적이 있다. 실증분석을 위해 총 300부의 설문지를 배부하여 256부의 자료를 표본자료로 사용하였으며 자료처리는 SPSS WIN 20.0 통계패키지를 이용하였다. 연구결과 "성별에 따라 약선요리 선택속성은 유의적인 차이가 있을 것이다"의 결과는 평균비용에서 남녀 간에 유의적인 차이가 있는 것으로 나타났다. "결혼여부에 따라 약선요리 선택속성은 유의적인 차이가 있을 것이다"의 결과는 맛비교에서 기혼과 미혼 간에 유의적인 차이가 있는 것으로 나타났다. "연령에 따라 약선요리 선택속성은 유의적인 차이가 있을 것이다"의 결과는 인지정도, 맛비교, 건강비교에서 유의적 차이가 있는 것으로 나타났다. "학력에 따라 약선요리 선택속성은 유의적인 차이가 있을 것이다"의 결과는 인지정도에서만 유의적 차이가 있는 것으로 나타났다. "직업에 따라 약선요리 선택속성은 유의적인 차이가 있을 것이다"의 결과는 연령과 마찬가지로 인지정도에서만 유의적인 차이가 있는 것으로 나타났다. 이상 본 연구의 결과를 토대로 경주지역 약선요리 전문점의 경쟁력을 위해서는 다양한 메뉴와 서비스를 제공하고 약선요리 전문점의 전문성을 고객에게 상기시킬 수 있는 방법을 마련해야 할 것이다.

친환경농산물의 속성별 상대평가 및 포지셔닝 전략 (Relative Evaluation to Its Attributes and Positioning Strategies for Environment-Friendly Agricultural Procucts)

  • This study attempted to identify relative evaluation to its attributes and improvement of consumer's demand in the Environment-Friendly Agricultural Products(EFAP). To identify the consumption patterns of EFAP, a series of household surveys were conducted for housewives residing in Seoul and its metropolitan area(Bundang and Ilsan). the sample size of the survey is 366 respectively. This study operated relative evaluation of EFAP by Multi-Demential Scales(MDS) about 10 attributes that this study set up. As the result, the consumers recognized that EFAP is "protection of ecosystem", "food safety", "good for growth of children", "high quality", and in case of conventional farming products is "inexpensive price", and "diversity of purchasing items". This trend has significant implications to the structure of EFAP output and how positioning strategies, and approaches should be properly formulated and implemented.

The association of dietary quality and food group intake patterns with bone health status among Korean postmenopausal women: a study using the 2010 Korean National Health and Nutrition Examination Survey Data

  • BACKGROUND/OBJECTIVES: Osteoporosis and osteoporosis-related disease are drawing a lot of attention in Korea as one of the serious health problems. Bone health status may be influenced by the general dietary quality and dietary pattern. SUBJECTS/METHODS: To determine the relationship between dietary quality and intake patterns and bone health status, the %RNI, NAR, DDS, and food group intake patterns were assessed according to their bone health status for 847 postmenopausal women using the 2010 KNHANES data after eliminating those of likely changing their diet under the advice of doctors or those taking estrogen. RESULTS: Bone health became worse as dietary quality deteriorated. All NAR and %RNI values were highly associated with bone health levels and the consumption frequency of Ca sources, DDS and the food group intake patterns also confirmed the findings. CONCLUSIONS: This study confirmed that dietary quality and dietary patterns were important for bone health. Nutritional education on eating foods from the five basic food groups has to be emphasized to prevent osteoporosis among older women.

외식 소비 성향에 따른 감정 반응이 만족도에 미치는 영향 (The Effect of Emotional Response on Satisfaction according to the Dining-Out Consumption Pattern)

  • 본 연구는 고급 한정식 레스토랑 이용 경험이 있는 고객을 대상으로 외식 소비 성향을 파악하여 외식 경험을 통해 느꼈던 감정 반응이 외식 결과 만족도에 미치는 영향을 분석하고자 문헌연구를 통하여 연구모형을 설계하고 가설을 도출하였다. 실증분석을 위하여 자기기입식(self-administered) 방법을 사용하여 총 250부의 설문지를 배포하여 235부(94%)의 설문지를 회수하였으며, 최종적으로 220부(88%)의 설문지가 분석에 사용되었다. 자료처리는 SPSS WIN Version 12.0 통계패키지 프로그램을 사용하여 분석하였으며, 빈도분석, 신뢰도분석과 요인분석을 실시하였으며, 가설 검증은 회귀분석을 통하여 검증하였다. 연구결과 "외식 소비 성향은 감정 반응에 유의한 영향을 미칠 것이다"에서는 건강 추구형과 관계 충성형은 즐거움에 유의한 영향을 미치는 것으로 증명되었으나, 휴식 추구형은 즐거움에 유의하지 않는 것으로 나타났으며, 건강 추구형과 관계 충성형은 자극에 유의한 영향을 미치는 것으로 증명되었으나, 휴식 추구형은 자극에 유의하지 않는 것으로 나타났다. "감정 반응은 만족도에 유의한 영향을 미칠 것이다"에서는 즐거움과 자극은 만족도에 유의한 영향을 미치는 것으로 증명되었다. 본 연구 결과 외식 소비 성향은 과거 생물학적 욕구를 충족시키기 위해서 단순히 식사 자체를 충족시키기 위한 목적과는 달리 현재 외식 소비 성향은 자신의 선호 취향이나 분위기 등 감정 반응의 중요성이 부각되고 있음을 보여주는 결과라고 사료된다.
