Food Choice Questionnaire 방법을 적용한 식품선택 동기요인 분석 (Analysis of the Motives for Food Choice Using Food Choice Questionnaire)

  • The purpose of this study was to analyze the motives for food choice using a Food Choice Questionnaire (FCQ). A FCQ, an instrument that measures the reported importance of nine factors underlying food choice, was administered to a representative sample of 157 adult respondents from 21 to 27 October 2013. Statistical analyses such as Descriptive statistics, Factor analysis, Reliability analysis, Pearson correlation, independent samples t-test, and analysis of variance (ANOVA) were performed on the data using the SPSS PASW Statistics 18.0 for Windows. According to the results, five food choice motivation factors were discerned: health, sensory and mood, convenience, price, and familiarity. The most important factors reported were price, sensory and mood, convenience, health and familiarity. We found that food choice motivation is distinguished by age, frequency of eating out, and consumption of HMR. Females in this study gave higher importance scores to health, sensory and mood, and familiarity. There were higher correlations between 'health' and 'sensory appeal and mood'.

전북지역 한국대학생과 중국대학생의 일반음료와 알코올음료의 기호도와 섭취실태 비교 (A Comparison of the Preference and Consumption Status of Non-Alcohol and Alcohol Beverages of Korean and Chinese University Students in the Jeonbuk Area)

  • This study was conducted to investigate the preference and consumption status of non-alcohol and alcohol beverages of Korean and Chinese university students in the Jeonbuk area. Self-administered questionnaires were collected from 241 Korean and 198 Chinese students. Statistical data analysis was completed using SPSS v. 12.0. 'Water' was the most commonly consumed non-alcohol beverages by all Korean and Chinese students. The intake frequency of 'carbonated drink' (p<.001), 'fruits/vegetable juice' (p<.05), and 'vinegar drink' (p<.01) of Chinese male students was significantly higher than the Korean male students. The intake frequency of 'ionic drink' (p<.001; p<.01) of Korean male and female students was significantly higher than the Chinese male and female students. The intake frequency of 'fruits/vegetable juice' (p<.001), 'milk' (p<.01), and 'soymilk' (p<.05) of Chinese female students was higher than the Korean female students. For the choosing the non-alcohol beverages, the Chinese female students were more health-oriented than the Korean female students (p<.01). 'Beer' was the most commonly consumed alcohol beverages by the Korean male and female and Chinese male students whereas 'Wine' was the most commonly consumed alcohol beverages by the Chinese female students. The intake frequency of 'Soju' of Korean male (p<.001) and female (p<.001) students was higher than the Chinese male and female students. The intake frequency of 'Wine' of Chinese male (p<.05) and female (p<.001) students higher than the Korean male and female students. Compared with the Chinese female students, the Korean female students more funds have to spend, in order to buy alcohol beverages (p<.01). More 81% of the Korean male and 80% of the female students reported drinking alcohol in 'beer house' whereas 78% of the Chinese male and 65% of female students drunken the alcohol in the 'beer house' or at 'home' (p<.01; p<.001). In conclusion, a practically and foreigner-friendly alcohol policies of university should be devised to reduce the alcohol consumption of students and related problems.

인천지역 일부 중학생의 스마트기기 사용시간에 따른 식습관 및 식사의 질 평가 (Study on Eating Habits and Dietary Quality according to Time Spent Using Smart Devices among Middle School Students in Incheon)

  • The purpose of this study was to investigate the association between dietary quality and smart device use among middle school students. A total of 330 middle school students (171 boys and 159 girls) residing in Incheon participated in this questionnaire survey in June 2018. The boys and girls were divided into two groups according to their daily use time of smart devices: less than 3 hours a day (<3 hours) and 3 hours or more a day (≥3 hours). Eating habits and dietary quality were assessed using a nutrition quotient for adolescents (NA-Q). For boys and girls, higher consumption frequency of white milk was significantly associated with less time spent using a smart device. For boys, a higher number of vegetable dishes and eating frequency of breakfast were significantly associated with the less time spent using a smart device. For girls, higher consumption frequency of processed beverages, ramyeon, and street foods was significantly associated with more time spent using a smart device. For boys and girls, those who spent more time using a smart device had significantly lower NA-Q scores, indicating low dietary quality. To sum up, more time spent using a smart device among middle school students may be associated with lower dietary quality. These results suggest the need to provide a nutrition education program and guidelines to students who use smart devices for a long time.

통영지역 임산부의 생선섭취가 제대혈의 수은 농도에 미치는 영향 (The Influence of Fish Consumption on Umbilical Cord Blood Mercury Level in Pregnant Women in the City of Tongyeong, Korea)

  • 어류는 두뇌발달에 중요한 영양소이기도 하지만 신경독인 메틸수은을 함유하고 있는 것으로 알려져 있다. 메틸수은은 임산부가 임신 중에 태아의 두뇌에 치명적인 손상을 유발하는 것으로 알려져 있다. 따라서 연구자들은 생선소비와 임산부 제대혈 중의 메틸수은 함량을 확인하기 위하여 통영지역 임산부 159명을 대상으로 2010년 10월부터 2011년 3월 사이에 임산부의 생선소비와 제대혈의 수은농도의 관계를 조사하였다. 어류소비 관련자료는 설문조사를 통하여 수집하였고 통계처리는 one way ANOVA 를 이용하였다. 조사에 참여한 임산부의 평균나이는 30.1세이었고 임산부 제대혈의 수은 함량은 0.01-14.80 ppb 범위에 평균 $2.69{\pm}2.50ppb$이었다. 제대혈의 평균 수은함량은 WHO 기준인 5.0 ppb를 초과하지는 않았지만 159명 중 17명(10.7%)이 WHO 기준을 초과하였다. 연령별로는 30세 이상이 0.01-14.8 ppb 범위, 평균 $3.18{\pm}2.74ppb$로 29세 이하에서 0-8.00 ppb 범위, 평균 $2.04{\pm}2.00ppb$ 보다 1.6배 높았으며 유의적 차이가 있었다. 이 연구에서 생선섭취가 제대혈의 수은농도에 영향을 미치는 것으로 나타났다. 1주일에 3회 이상 섭취군이 평균 $4.15{\pm}4.02ppb$로 주 1-2회 섭취군의 $2.63{\pm}2.22ppb$, 먹지 않는 군의 $1.60{\pm}1.44ppb$ 보다 2.6배와 1.6배 각각 높게 나타났으며 적게 먹는 군과 먹지 않는 군과의 사이에는 유의적 차이가 없었고, 많이 섭취하는 군과는 유의적 차이 (p < 0.05)가 있었다. 이상의 결과에서 제대혈의 수은 농도는 생선섭취량과 관련이 있는 것으로 판단되며 가임기 여성이나 임산부에게 생선섭취를 제한하는 것이 제대혈의 수은 농도를 낮출 수 있고 향후 있을지도 모를 신생아의 신경발달 장애나 뇌 신경학적 손상을 줄일 수 있는 방법이라고 생각되었다.

Dietary Behavior and Food Intake of Korean Farmers in Relation to Farmers' Syndrome and Gastro-Intestinal Problem

  • The purpose of this study was to compare dietary behavior and food intake in relation to physical complaints, such as farmer' syndrome(FS) and gastro-intestinal(GI) problem among Korean farmers. The questionnaire was composed of 24 Cornell Medical Index (CMI), 8 farmers' syndrome, and 5 GI problem questions. Food intake data was gathered by the semi-quantitative food frequency method. The subjects(male 226, female 415) who had FS and Gi problem were 12./8% and 8.3%, respectively. The physical complaints were higher in female and the elderly group. In the FS group, lower activity was seen that in normal groups. The lower health status and fatigues were found in the physical complaint groups. Dietary behavior showed low appetite in the physical complaint group, irregular lunch in FS, and irregular breakfast in GI problem group. Changes in dietary behavior were shown in the aspects of lower amount of intake quantity(40.8%), lower consumption in fat(32.8%) and salty(38.8%) foods, and diverse food items(47.8%). Quantity of food consumed was significantly different withing groups with FS. Kinds of food consumed, intake of protein source foods, milk and calcium and total animal foods were lower in the FS group. But milk and calcium source food and all animal food intakes were higher in the GID problem group. The results suggest that dietary behavior and food intake differ within the group of physical complaints.

매실에 대한 소비자 선호 및 소비행태분석 (Analysis of Consumer Behavior toward and Preferences for Prunus mume (Maesil), the Chinese Plum)

  • 본 논문에서는 매실의 소비촉진을 위한 주요 동기와 요인을 찾기 위하여 관심소비자층과 일반소비자층으로 나누어 조사하였다. 특히 열매매실과 매실가공식품에 대한 소비실태 및 선호도를 조사하였다. 설문내용은 섭취방법, 구매경험, 구매경로, 구매가격, 소비경험, 구매결정요인, 선호요인, 불만족요인, 소비전망, 새로운 가공식품과 소비활성화에 대한 의견 등이었다. 총 534명에게서 응답을 받았으며 SAS program(Version 9.1)의 frequency test, Chi-square test를 이용하여 검증하였다. 설문분석결과 관심집단은 열매매실을 직접 구매하여 집에서 제조하는 비율이 높았고 일반집단은 시중에 판매되는 제품의 이용률이 높았다. 그러나 일반집단에서도 연령이 많을수록, 소득이 높을수록, 가구원수가 많을수록 열매매실을 구매하여 집에서 직접 제조하는 것으로 나타났다. 구매경로에 있어서는 인터넷과 직거래 이용률이 높았으나 일반집단에서는 백화점이나 대형마트도 많이 이용한다고 응답했다. 구매가격에 대해서는 일반 집단보다 관심집단이 더 비싸다고 응답했으며 가격에 더 민감한 것으로 나타났다. 소비경험에 있어서도 다양한 매실제품을 경험하지 못하는 것으로 나타났다. 구매결정요인으로는 관심집단은 원산지, 일반집단은 맛이라고 가장 많이 응답하였다. 선호요인은 건강에 좋고 맛과 향이 좋다는 점이었으며, 불만족요인은 제품이 다양하지 못하고 매실함량이 적다는 점이었다. 일반집단이 관심집단에 비해 맛에 더 민감한 것으로 나타났다. 소비가 촉진되고 활성화되기 위해서는 소비자가 편리하게 접하고 먹을 수 있는 제품과 건강 이미지제품의 개발이 필요한 것으로 조사되었다. 또한 홍보와 더불어 소비자와 가까운 시장을 확보하여 자주 접할 수 있는 기회의 제공이 중요한 것으로 조사되었다. 이러한 조사결과는 향후 일반소비자집단들의 매실소비가 관심소비자집단의 소비유형으로 이전되어 가리라는 것을 예측할 수 있다. 즉 일반소비자가 관심집단의 유형으로 변함에 따라 매실소비가 증대되어질 것으로 판단된다.

부산지역 학령전 아동의 식품섭취평가에 관한 연구 (A Studyo on the Evaluation of Food Intake of Preschool Children in Pusan)

  • To assess the food intake and diet quality of preschool children in Pusan, dietary survey was conducted with 176 subjects using 24hr recall method. Diet quality was assessed by food group pattern, dietary diversity score(DDS), dietary variety score(DVS), and dietary frequency score(DFS). The total number of food items consumed was 307. The foods consumed most frequently were rice, Korean cabbage kimchi, milk and green onion. When investigating the consumption pattern of major six food groups, 38.1% of subjects consumed all six groups. Food group was missed in order of fruit(41.5%), sweet(19.9%), dairy(16.5), vegetable(4.5%) and meat(1.7%). The mean values of DDS, DVS, and DFS were 5.16, 13.82, and 16.07 re spectively. Persons who had higher DDSs also had higher DVSs(p<0.001). DDS, DVS and DFS correlated positively with NAR(nutrient adequacy ratio) and MAR(mean adequacy ratio) significantly. Associations between the NAR of most nutrients and MAR with DVS and DFS were higher than those between the NAR of most nutrients and MAR with DDS. People with DDS of above 6 or DVS of above 16 or DFS of above 21 met two thirds of recommended dietary allowance for nutrients. Based on the result of the food group intake, the food intake of subjects was not adequate, especially the fruit and dairy groups. When assessing the dietary quality of subjects using DDS, DVS and DFS, many people appeared not to have a desirable food intake.

조선왕조실록 분석을 통한 조선시대 식중독에 관한 연구 (A Study on Food Poisoning during the Joseon Dynasty using the Veritable Records of the Joseon Dynasty based data)

  • This study analyzed food poisoning articles in the Joseonwangjosillok to acquire historical evidence. The study method used case studies from the textual content of the Joseonwangjosillok. In all, there were fifteen cases of food poisoning in spring (60%), four cases in summer (16%), five cases in fall (20%), and 1 case during winter (4%). Most cases of food poisoning occurred during spring, followed by fall, then summer, and the least during winter. Foods that caused poisoning were as follows: twelve cases of seafood (48%), three cases of vegetables (12%), two cases of meat (8%), and eight cases of poisonous food (32%). Maximum cases pertained to seafood poisoning, which also spiked during spring. This could be attributed to the increased number of planktons as the sea temperature rose during spring. Due to the increased plankton, shellfish absorbed more toxins. The consumption of increasingly toxic shellfish resulted in more cases of food poisoning. The food poisoning frequency was the most severe during the 18th century, followed sequentially by the 15th, 16th, and 17th centuries, and was the least severe during the 19th century. Joseonwangjosillok showed that food poisoning cases happened most during social events where many guests or family members gathered to eat.

청소년이 있는 농촌가정의 수입식품 이용실태에 관한 연구 (A Study on the some aspects of use of imported foods at the rural homes with the growing generation)

  • The purpose of this paper was to grasp some aspects of use of imported foods at the rural homes with the growing generation. So we put some questions to the 399 middle school and high school students. The results were as follows: (1) The number of the homes using the imported foods, which marks 56.9% of the whole, was higher than the number of the homes not using the ones. (2) Even though the use of imported foods had no relation with the occupations of the student's mothers, the degree of living quality, the situations of food consumption, and so on, however the use ratio was high at the homes of middle class. (3) The students of the home of using imported foods favored the traditional diets, and marked 63% of the objective students of investigation. The students who like the western style of diets marked the high frequency of the use of the imported foods. On the other hand, the students who like the Chinese foods used the meat and fishes and processed foodstuffs among the imported foods. (4) The frequency of instant foods for the carried lunches showed the meaningful relation with frequency of use of imported foods. (5) In the view of use of instant foods for the lunches, the group of people who carried the lunches 3 or 5 times per week used the imported meat foods, the other group who carried the lunches 1 or 2 times per week marked the high frequency of having coffee and tea.

조선왕조실록 텍스트 빈도 분석을 통한 조선시대 곡물에 관한 인식 특성 고찰 (Perceived Characteristics of Grains during the Choseon Dynasty - A Study Applying Text Frequency Analysis Using the Choseonwangjoshilrok Data -)

  • This study applied the text frequency method to analyze the crops prevalent during the Chosunwangjoshilrok dynasty, and categorized the results by each king. Contemporary perception of grains was observed by examining the staple crop types. Staple species were examined using the word cloud and semantic network analysis. Totally, 101,842 types of crop consumption were recorded during the Chosunwangjoshilrok period. Of these, 51,337 (50.4%) were grains, 50,407 (49.5%) were beans, and 98 (0.1%) were seeds. Rice was the most frequently consumed grain (37.1%), followed by pii (11.9%), millet (11.3%), barley (4.5%), proso (0.8%), wheat (0.6%), buckwheat (0.1%), and adlay (0.05%). Grain chronological frequency in the Choseon dynasty was determined to be 15,520 cases in the 15th century (30.2%), 11,201 cases in the 18th century (21.8%), 9,421 cases in the 17th century (18.4%), 9,113 cases in the 16th century (17.8%), and 6,082 cases in the 19th century (11.8%). Interest in grain amongst the 27 kings of Choseon was evaluated based on the frequency of records. The 15th century King Sejong recorded the maximum interest with 13,363 cases (13.1%), followed by King Jungjo (8,501 cases in the 18th century; 8.4%), King Sungjong (7,776 cases in the 15th century; 7.6%).
