The purpose of this study was to investigate the perceptions, intake levels and information needs of elementary school students on artificial food colorants in order to provide better understanding and proper dietary education to these students. From May to June 2010, a survey was conducted from 315 elementary school students at fifth and sixth grade level who were living in Seoul. The questionnaire was distributed by 14 elementary school teachers to their classroom students. The results showed that food safety was regarded as the most important factor in purchasing food items, and artificial food colorants were the most interested among various food additives. Although there was a lack of general knowledge and the students' estimated intake levels of artificial food colorants from processed foods were comparatively low, most (82.7%) believed that artificial food colorants were dangerous for health. The information they wanted to know most was the safety, necessity, and function of artificial food colorants, in order. Above results suggested the necessity of providing accurate information on artificial food colorants to elementary school students possibly by developing educational materials which can improve the perceptions on artificial food colorants and encourage a safe dietary life.
Natural colorants are regarded as substitutes for synthetic colorants in the fields of fiber dyeing, hair dyeing, cosmetic, and food industries. The use of natural colorants has been increased in view of global environment and sustainability. However, scientific approach to the production is required because the supply of natural colorants depends on the climate, soil, and cultivation methods. This brief review contains the advances in science and technology related to natural colorants including characterization, analysis, CIEL*a*b* and Munsell color systems, and future prospects. For the characterization and the analysis of natural colorants, chromatography, some spectroscopic techniques (UV-Vis, FT-IR, NMR), mass spectrometry, and X-ray diffraction are generally used.

A simple, efficient and accurate method was developed for the simultaneous determination of non-permitted oil soluble colorants (sudan I, II, III and IV) in foods. The identification has been carried out for sudan colorants by TLC as well as HPLC with photodiode array (PDA) detection. Separation of sudan colorants was achieved within 20 min by a gradient elution with water and acetonitrile as eluents. Sudan colorants showed good linear relationships in the range of 0.1 ~ 100 $\mu\textrm{g}$/mL. The correlation coefficients of the calibration curve for sudan colorants exceeded 0.999. The detection limits (signal-to-noise ratio 3 : 1) for sudan I, II, III and IV were 0.01, 0.01, 0.02 and 0.02 $\mu\textrm{g}$/mL, respectively. This method has been successfully applied to the analysis of red pepper powder, Kimchi and Kakdugi, and the average recoveries for real samples ranged from 83.02% to 104.3%.
Synthetic color additives approved for general food use are sixteen in European Union, seven in U. S. A. and twelve in Japan. Twelve food dyes were examined for their inhibitory potency against human protein tyrosine phosphatases (PTPases). Half of the food colorants inhibited PTPases significantly and three of them were potent inhibitors with low micromolar IC50 values. Also examined were the synthetic dyes structurally similar but not allowed in food. Some of them were potent inhibitors of PTPases. Considering the importance of PTPases in cellular signal transduction, inhibition of PTPases by food colorants might cause harmful effects in human health.
The objective was to investigate the efficacy of Metasequoia(Metasequoia glyptostroboides) cone colorants as a new functional dye for wool fiber. Effects of dyeing conditions and mordanting on dye uptake, color change, and colorfastness were investigated for wool fiber. Compared with cotton and silk fibers, wool fiber showed better affinity for the Metasequoia cone colorants. Fe and Cu mordants improved dye uptake, and mordanting did not change the color of dyed fabric with YR Munsell color. Colorfastness to rubbing and washing was as good as grade 4, whereas lightfastness of the dyed fabrics was above grade 3. Antimicrobial activity of the colorants was very high 99.3% of reduction rate toward S. aureus. It was confirmed that Metasequoia cone colorants can be utilized as a new functional natural dye for wool fiber. In addition, considering its high antimicrobial functionality it could be applied to cosmetics and food.

An investigation of certain tar food colorants required a relatively inexpensive TLC adsorbent to be used in preparative thin-layer chromatography procedure. As will be shown activated clay and Kieselguhr has excellent physical characteristics for T LC applications, is easily applied, and is good for analytical work as well as showing good separator capabilities with selected groups of compounds. In addition to its usefulness its economical price suggested this article.

Novel meat-inspired products, such as cell-cultivated meat and meat analogues, embrace environmental sustainability, food safety and security, animal welfare, and human health, but consumers are still hesitant to accept these products. The appearance of food is often the most persuasive determinant of purchasing decisions for food. Producing cultivated meat and meat analogues with similar characteristics to conventional meat could lead to increased acceptability, marketability, and profitability. Color is one of the sensorial characteristics that can be improved using color-inducing methods and colorants. Synthetic colorants are cheap and stable, but natural pigments are regarded as safer components for novel food production. The complexity of identifying specific colorants to imitate both raw and cooked meat color lies in the differences in ingredients and methods used to produce meat alternatives. Research devoted to improving the sensorial characteristics of meat analogues has noted various color-inducing methods (e.g., ohmic cooking and pasteurization) and additives (e.g., lactoferrin, laccase, xylose, and pectin). Additionally, considerations toward other meat components, such as fat, can aid in mimicking conventional meat appearance. For instance, the use of plant-based fat replacers and scaffolds can produce a marked sensory enhancement without compromising the sustainability of alternative meats. Moving forward, consumer-relevant sensorial characteristics, such as taste and texture, should be prioritized alongside improving the coloration of meat alternatives.
Statement of problem : Ceramic and composite resin have been used to fulfill the demand for esthetic prosthesis. However, ceramic is easy to break and wears off the opposite natural teeth. Conventional composite resin also has low abrasive resistance and color stability. Ceramic Optimized Polymer (ceromer) was developed in mid-1990s to overcome the shortfalls of ceramic and composite resin. Ceromer has similar abrasiveness with the natural tooth and has relatively high strength. Color stability affects esthetics and long-term prognosis of the prosthesis. Purpose The purpose of this study was to compare color stability of ceromers(2 types : $Artglass^{(R)}$. $Targis^{(R)}$) with ceramics ($Vintage^{(R)}$-polishing, $Vintage^{(R)}$-glazing). Material and Method : The color difference(${\Delta}E^*$) was measured by spectrophotometer with different immersion time. Twenty disks, 3mm in thickness and 10mm in diameter, were fabricated for each specimen in shade A2(Vita Lumin shade guide), Specimens (5 samples in each group) were immersed in the food colorants (Red no.3. Yellow no.4, Blue no.1, Distilled water) for 24 hours, 48 hours and 72 hours respectively. $L^*,\;a^*$ and $b^*$ value were measured with spectrophotometer (CM 503i : Minolta Co., Japan) and mean ${\Delta}E^*$ value was calculated for statistical analysis Results : The results of this study were obtained as follows. 1. The ${\Delta}E^*$ values of all test samples increased with the time of immersion. 2. The ${\Delta}E^*$ values of all materials increased in order of Distilled Water, Yellow no.4, Blue no.1 and fed no.3. There was significant difference between Red no.3 and the other food colorants(p<0.05). 3. The ${\Delta}E^*$ values increased in order of $Vintage^{(R)}$-glazing, $Vintage^{(R)}$-polishing. $Artglass^{(R)}$ and $Targis^{(R)}$. There was significant difference between $Vintage^{(R)}$-glazing and the other materials (p<0.05). Conclusion : By means of the above results, immersion time was found to be a critical factor for color stability of ceromer. For the long-term color stability of prosthesis it is recommended patients having ceromer prosthesis ($Artglass^{(R)},\;Targis^{(R)}$) to reduce the habitual intake of Red no.3 colorants con taming foods.
