Bisphenol-A and related conpounds recently have been reported to be estrogenic since it has been demonstrared in laboratory stuides that they mimic the effects of estrogen. Bisphenol-A refered to as "environmental estrogen" are suspected of causing health effect in living body through disruption of endocdrine system. In this review, the occurrence, environmental fate, and biological effects of bisphenol-A are presented. To provide understanding to the potential for endocrine disruption due to environmental estrogen, the physiology of bisphenol-A mammalian and fish is also reviewed. For empty can, the migrationof bisphenol-A form food conducted epoxy coating was effected by the test conditions and it increased in order to water and 4% acetic acid. Extracts from foods packed in lacquer coated can also showed estrogenic activity. Bisphenol-A was found as a contaminant not only in the liquid food cans, but also in water autoclave in can. The used of coating certain food-packaging material may require closer scrutiny to determine when bisphenol-A contribute to advert exposure of consumers to estrogenic xenobiotics. Human breast cancer MCF cell added bisphenol-A cultivated to study the ability of bisphenol-A to elicit of bisphenol-A estrogenic bioresponse in this system. Bisphenol-A, similar to estradiol, induced PR activation in transiently transfected anterior and posterior pituitary cells.

Very little information is known on the canning of fishery products by vacuum pack. In this paper, some fundamental process conditions for the canning of fishery products were investigated. Moisture-controlled mackerel pike, shrimp and oyster were packed in lacquered cans with spice and additives. After sealing, pressure of the cans were reduced by do-aeration through specially designed gas-tight silicone rubber plug previously attacked to the lid. On this investigation, vacuum can prior to thermal processing were set up to 15, 30, 45 and 60 cmHg, The higher vacuum in cans showed the more quick heat transfer in thermal processing. tinder 60 cmHg vacuum, the heat transfer was more quick than that of the conventional water packed products, Under 15 cmHg, however, the heat transfer was markedly increased by air which acted as an insulator in conductive heat transfer. These results demonstrated that high vacuum was essential secure for the heat processing in vacuum pack.
In succession to the previous paper, the present studies were directed to determine the sterilizing valves ($F_0$) of the thermal processes for the canned smoked oyster in oil and the canned boiled oyster in brine. The heat penetration tests were carried out under the condition of industrial scale at the tannery of the Taiyang Silup Company, Pusan, Korea. The test cans were placed in the middle layer of the crate in which the same canned products were loaded with, and the test cans were arranged to the front, the middle and the rear in the retort. The heat penetration was tested three times with three cans at a time for each canned product. The heat penetration curve of the canned smoked oyster in oil shelved a simple logarimicth heating curve while that of the canned boiled oyster in brine showed a broken logarithmic heating curve. The calculated $F_0$ value for canned smoked oyster in oil packed into No. 3B square can was 14.58 and the canned boiled oyster in brine packed into No.7 fruit can was 14. 78. On the basis of the heat penetration data obtained. the nomographs representing the relationship between $F_0$ values and B values (process time including $42\%$ of come-up time) for the canned oyster products were constructed.

[ $F_0$ ]-values of the canned tuna in cottonseed oil (CTCO) were investigated under different sterilizing conditions to optimize the energy consumption and microbiological safety. The $F_0$-values were measured using a microcomputer based technique. The exact cold point was not the volumetric center of the cans, and it was located in the center of meat mass in can which had ca. $6\%$ of head space. Location of the test cans in retort showed no remarkable influence on the $F_0$-values when the cans were jumble loaded. The process time before sterilization should be shortened as much as possible to prevent the contamination of microorganisms. Thermophilic spore forming bacteria found from raw and precooked tuna were Bacillus subtilis, Bacillus cereus and Bacillus pasteurii, and the most heat resistant was Bacillus subtilis. The rational $F_0$-value for the CTCO obtained from the preservation test was regarded as 6min.
The effects of packaging materials on preserving the functional component of pine bud beverage stored under UV (ultraviolet) light exposure conditions were studied. The order of UV light blocking properties of the selected packages was: opaque can> opaque PET (polyethylene terepthalate) with green lamination=transparent PET with 10% PEN (polyethylene naphthalate) blending> transparent PET, and did not depend on film thickness in specified range. At 20${^{\circ}C}$, the order of preserving degree of original color and endobornyl acetate, which is quality index of pine bud beverage, was the same as above. Exposure to UV light can cause of deterioration of functional food components, but green color lamination and blending of PEN materials with transparent PET help to preserve the UV sensitive pine bud beverage components. However, the treated PET bottles have poorer preservation capabilities than the opaque cans. Transparent PET with PEN blending, in particular, will be very useful packaging material for colorful functional beverage preservation by helping to protect the ingredients while attracting consumer attention.

Analysis method was presented for the simultaneous determination of nine bisphenol A related compounds such as bisphenol A (BPA), phenol, p-tert-butylphenol, bisphenol A diglycidyl ether (BADGE), $BADGE{\cdot}2H_2O$, $BADGE{\cdot}2HCl$, bisphenol F diglycidyl ether (BFDGE), $BFDGE{\cdot}2H_2O$ and $BFDGE{\cdot}2HCl$ migrated from inner coatings of metal food cans by high performance liquid chromatography (HPLC) with fluorescence detection. The method was validated by examining the linearity of calibration curve, the limit of detection (LOD), the limit of quantification (LOQ), recovery and uncertainty. The migration tests of nine BPA related compounds were carried out with four food simulants; deionized water (DW), 4% acetic acid, 50% ethanol and n-heptane. There was not any compound detected in DW, 4% acetic acid and 50% ethanol at $60^{\circ}C$ for 30 min and n-heptane at $25^{\circ}C$ for 60 min. BPA and phenol were migrated into 4% acetic acid and 50% ethanol at $95^{\circ}C$ for 30 min. The concentrations were ranged from 0 to $10.77{\mu}g/L$ of BPA and from 0 to $2.35{\mu}g/L$ of phenol. Canned foodstuffs mostly have long-term shelf life. We investigated migration of nine BPA related compounds according to the variation in storage periods (0~90 days) and temperatures (4, 25 and $60^{\circ}C$). All compounds were not founded during 90 days at $4^{\circ}C$ and $25^{\circ}C$, respectively. However BPA and $BADGE{\cdot}2H_2O$ were founded in DW and 4% acetic acid at $60^{\circ}C$. The migration levels of BPA and $BADGE{\cdot}2H_2O$ were close to the value of LOQ, respectively and did not change significantly as storage period. It was founded from results that the migration of BPA related compounds from metal food cans was controlled to a safe level.
In order to improve the Quality of fermented soybean Doenjang was investigated. The samples were prepared and fermented by the koji made with A. oryzae, B. subtilis and B. natto strains, that the product added green tea powder with sanitary canned food. 1. The water content of sample was 50.30-42.14%, pH value 6.03-5.52 and total acidity, 3.01-3.87. 2. The reducing sugar content for samples was 9.35-7.81%, Amino-N, 7.96-9.21%. 3. In the sensory evaluation test, the good sensory qualify that was S-2 sample than to S-1 and S-3. 4. The heavy metals analyzed from sample cans, tin, iron and lead content were 27.31-29.04 ppm, 5.32-5.91 ppm and trace amount.
Spoiled mushroom cans were collected from several canneries and examined the spore bearing bacteria in them. Thirty four isolates of anaerobic mesophiles were isolated. The one isolate(Cl-5) which was the most heat stable among the above isolates, the other isolate (D-29) which was examined in the previous experiment (Korea J. Food Sci. Technol., 10(2), 224 (1978) and PA 3679 were compared their heat resistancy in neutral phosphate buffer. They were confirmed the spoilage of mushroom products. Z value and $D_{250}$ value of the Cl-5(isolated from mushroom casing soil at Gimjae) possessing the highest resistancy were $21.3^{\circ}F$ and 1.8 min in mushroom can (4 oz. piece and stem). It's F value was 8.95 when Z value was 21.3.
Packaged food products often undergo retort processing, a thermal processing in a pressurized vessel called a retort, to ensure their microbiological safety or shelf-stability under normal non-refrigerated conditions of storage and distribution. Retort processing is generally aimed to accomplish commercial sterility of packaged foods with acceptable nutritional and sensorial qualities. Fundamental principles on retort processing, such as thermal resistance kinetics of target microorganism, heat penetration theory, and methods for evaluating process sterility and food quality loss, were reviewed. Factors affecting process severity, heat transfer mechanism, and heat penetration efficiency were summarized. General features of retortable packaging formats including metal cans, glass jars, and plastic packages were also briefly reviewed.

The test cans were placed in the middle layer of the crate in which the same canned products were loaded with, and test cans were arranged to the front, the middle and the rear in the retort. The heat penetration curve obtained for the canned minced hen-clams in brine showed a broken logarithmic heating curve, while that of the canned smoked baby-clams in oil showed a simple logarithmic heating curve. The calculated $F_0$ values for the canned minced hen-clams in brine were 47.79 for No. 2 can, 52.99 for Ne. 7 can. and 45.21 for No. 2 tuna can, respectively. And the $F_0$ value for th canned baby-clams in oil packed into No. 3B square can was 14.12. Additionally, the nomographs represent the relationship between $F_0$ vlaues and B values (process time including $42\%$ of come-up time) for the each canned product were constructed.
