Application of sweet and taste modifying genes for development in plants: current status and prospects

  • Sweet and taste modifying proteins are natural alternatives to synthetic sweeteners and flavor enhancers, and have been used for centuries in different countries. Use of these proteins is limited due to less stability and availability. However, recent advances in biotechnology have enhanced their availability. These include production of sweet and taste modifying proteins in transgenic organisms, and protein engineering to improve their stability. Their increased availability in the food, beverage or medicinal industries as sweeteners and flavor enhancers will reduce the dependence on artificial alternatives. Production of transgenic plants using sweet and taste modifying genes, is an interesting alternative to the extraction of these products from natural source. In this review paper, we briefly describe various sweet and taste modifying proteins (such as thaumatin, monellin, brazzein, curculin and miraculin), their properties, and their application for plant development using biotechnological approaches.

생명공학기술 사용에 대한 소비자의 위험인지가 우유소비에 미치는 영향분석: 여성과 남성의 위험인지 및 소비행위 비교분석 (Consumer Risk Perceptions and Milk Consumption associated with Food-Related Biotechnology: Exploring Gender Differences)

  • The purposes of this study were to determine what factors influence risk perceptions of females and males for milk produced using food-related biotechnology, to test whether risk perceptions or other factors influence self-protection actions and to estimate milk demand response in light of self-protection actions and other economic and demographic factors. The expected utility model was applied to explain the way consumers would take self-protection actions regarding risk perceptions and to drive milk demand. Telephone interviews were conducted and the data were collected from households(females=1,029, males=437) nationwide in the U.S. And the data were analyzed by Heckman two-step method using the software package LIMDEP. Risk perceptions were found to be influenced not by demographic factors but by outrage factors as well as attitudinal factors in both females and males, although some factors were different. In addition, risk perceptions and labeling availability were found to significantly influence self-protection actions in both groups. Furthermore, as an important concern in this study, self-protection action was found to significantly influence milk demand in only male group, implying a consistent behavior of males. Also milk price and household size were found to significantly influence milk demand in both groups. In fact, the results did demonstrate that labeling availability significantly influenced self-protection actions. That is, in markets where labeled laternatives were present, concerned consumers were more likely to self protect by substituting to these products. A policy implication of this result is that labeling food products produced using biotechnology enhances consumer choice. Hence, consumer could express a more accurate demand response and reduce the perceived food safety risk. Furthermore, education for females might be necessary to have a consistent behavior because self-protection action did not significantly influence female's milk demand, though they have greater risk perceptions than males have.

Water footprint estimation of selected crops in Laguna province, Philippines

  • In 2013, the Asian Development Bank classified the Philippines among the countries facing high food security risks. Evidence has suggested that climate change has affected agricultural productivity, and the effect of extreme climatic events notably drought has worsened each year. This had resulted in serious hydrological repercussions by limiting the timely water availability for the agriculture sector. Laguna is the 3rd most populated province in the country, and it serves as one of the food baskets that feed the region and nearby provinces. In addition to climate change, population growth, rapid industrialization, and urban encroachment are also straining the delicate balance between water demand and supply. Studies have projected that the province will experience less rainfall and an increase in temperature, which could simultaneously affect water availability and crop yield. Hence, understanding the composite threat of climate change for crop yield and water consumption is imperative to devise mitigation plans and judicious use of water resources. The water footprint concept elaborates the water used per unit of crop yield production and it can approximate the dual impacts of climate change on water and agricultural production. In this study, the water footprint (WF) of six main crops produced in Laguna were estimated during 2010-2020 by following the methodology proposed by the Water Footprint Network. The result of this work gives importance to WF studies in a local setting which can be used as a comparison between different provinces as well as a piece of vital information to guide policy makers to adopt plans for crop-related use of water and food security in the Philippines.

  • The purpose of this study is to show probability of alternate food by using edible insects through the reports (Edible insects: Future prospects for food and feed security) edited by WFO (World Food Organization). We were carried out to develop the functional meat new product using Mealworm (Tenebrio molitor lavare) and Chicken breast. People's interest to the healthy, low-calories food is growing up, the Foodservice industry is developing and making Functional food, which helps to a sale strategy. Insects have played an important role as human food throughout history, especially in Africa, Asia and Latin America. A rapid increase in the human population is expected in the second half of the 21 century, which will lead to lower availability of food, especially animal protein As the problem of food supply and demand has come to the fore with climate change, Food and Agriculture Organization of the United Nations (FAO) has noticed edible insects as future food resources in order to prepare against the shortage of protein source. Recently consumers, especially patients have doubts about safety of raw materials for food. To overcome these limitations, I propose an enteral nutrition formula using edible insects as a raw material.

물리적 처리에 의한 한천의 물리화학적 및 유통 특성 (Physicochemical and Rheological Properties of Agar by Physical Treatment)

  • The effects of spray drying and extrusion drying on functional properties of agar were investigated to increase the availability of agar in food industry. In case of unmodified and spray-dried agar, gel strength and viscosity were 1,070g/$ extrm{cm}^2$ and 170.50pcs, 820g/$\textrm{cm}^2$ and 17.07cps, respectively, while 523.28g/$\textrm{cm}^2$ and 12.81 in extrusion-dried product. The lowest dissolving onset and conclusion temperature were revealed in extrusion sample, where it was attained in 80 and 11$0^{\circ}C$ of unmodified, 60 and 9$0^{\circ}C$ of spray-dried, and 35 and 8$0^{\circ}C$ of extrusion-dried agar, respectively. Melting and setting in unmodified sample were showed to 110.17 and 40.52, 90.05 and 39.54$^{\circ}C$ in spray dried, and 80.01 and 36.05$^{\circ}C$ in extrusion-dried agar, respectively.

Cellular Zn depletion by metal ion chelators (TPEN, DTPA and chelex resin) and its application to osteoblastic MC3T3-E1 cells

  • Trace mineral studies involving metal ion chelators have been conducted in investigating the response of gene and protein expressions of certain cell lines but a few had really focused on how these metal ion chelators could affect the availability of important trace minerals such as Zn, Mn, Fe and Cu. The aim of the present study was to investigate the availability of Zn for the treatment of MC3T3-E1 osteoblast-like cells and the availability of some trace minerals in the cell culture media components after using chelexing resin in the FBS and the addition of N,N,N',N'-tetrakis-(2-pyridylmethyl)ethylenediamine (TPEN, membrane-permeable chelator) and diethylenetriaminepentaacetic acid (DTPA, membrane-impermeable chelator) in the treatment medium. Components for the preparation of cell culture medium and Zn-treated medium have been tested for Zn, Mn, Fe and Cu contents by atomic absorption spectrophotometer or inductively coupled plasma spectrophotometer. Also, the expression of bone-related genes (ALP, Runx2, PTH-R, ProCOL I, OPN and OC) was measured on the cellular Zn depletion such as chelexing or TPEN treatment. Results have shown that using the chelexing resin in FBS would significantly decrease the available Zn (p<0.05) $(39.4{\pm}1.5{\mu}M\;vs\;0.61{\pm}10.15{\mu}M)$ and Mn (p<0.05) $(0.74{\pm}0.01{\mu}M\;vs\;0.12{\pm}0.04{\mu}M)$. However, levels of Fe and Cu in FBS were not changed by chelexing FBS. The use of TPEN and DTPA as Zn-chelators did not show significant difference on the final concentration of Zn in the treatment medium (0, 3, 6, 9, $12{\mu}M$) except for in the addition of higher $15{\mu}M\;ZnCl_2$ which showed a significant increase of Zn level in DTPA-chelated treatment medium. Results have shown that both chelators gave the same pattern for the expression of the five bone-related genes between Zn and Zn+, and TPEN-treated experiments, compared to chelex-treated experiment, showed lower bone-related gene expression, which may imply that TPEN would be a stronger chelator than chelex resin. This study showed that TPEN would be a stronger chelator compared to DTPA or chelex resin and TPEN and chelex resin exerted cellular zinc depletion to be enough for cell study for Zn depletion.

Local Knowledge on Trees Utilization and Their Existing Threats in Rashad District of Nuba Mountains, Sudan

  • Rural people of Sudan are endowed with a deep knowledge concerning the utilization of different tree species. However research on the local knowledge related to tree species utilization still lacks adequate attention. The study objectives were to identify the existing local knowledge related to the utilization of the tree species and the existing threats to the availability of the trees. A total of 300 respondents were selected randomly from Rashad district in Nuba Mountains in 2011. Semi-structured interview, direct observation, group discussion, preference ranking and direct matrix ranking were used to collect the data. The study results revealed that people of Nuba Mountains utilize different tree species for food, medicinal purposes, fodder, firewood, construction and cultural ceremonies. The study results also indicated that the availability of trees is negatively influenced by firewood collection, agricultural expansion, drought, overgrazing and charcoal production. The study concluded that local knowledge has crucial role in tree species utilization in Nuba Mountains. Further researches to document and substantiate the local knowledge on useful tree species are highly recommended.

충남대 여대생의 철분 섭취량과 영양 상태에 대한 연구 (A Survey on Iron Intake and Nutritional Status of Female College Students of Chungnam National University)

  • Iron intake and nutritional status of 99 female college students of Chungnam Natiional Unive-rsity were estimateed with dietary survey and measurement of hematological indices including the level of serum ferritin Food intake was measured using the weighing method and iron availability per meal was calculated according to Monsen and Hallberg. The average daily intakes of protein vitamin C. total iron and also total available amount of iron were higher than the Korean R.D.A. The blood indices for iron status however showed that iron status of the subjects was inade-quate. Furthermore the serum ferritin levels indicated marginal iron storage in 75% of the subjects.

Application of Irradiation Technology to Preserving and Improving Qualities of Agricultural Products

  • Potential applications of irradiation technology inpostharvest handling of agricultural products have been documented over the past five decades. The biological effects of ionizing radiation on food were demonstrated to have the potential both of reducing the storage losses by controlling spoilage microoraganisms, insects, to have the potential both of reducing the storge losses by controlling spoiliage microorganisms, insects, sprouting and ripening, and of improving the hygienic quality of raw and processed products. Food irradiation is recognized as a physical and cold process using gamma-rays from radioisotope sources and electron-beam from the accelerator. As one of the technologies or techniques for preserving and improving the safety of food, irradiated technology has been approved in some 40 countries for more than 200 individeual items of foods and of these about 30 countries including Korea are commerically utilizing this technology. Although limited quantities of irradiated foods are available in the market now, the proper uses of this renewed technology will offer great possibilities not only for increasing the availability of postharvest agricultural products, thereby contributing to price stabilization in the off-season, but also for reducing reliance on chemicals used for sanitary and quarantine requirements. This paper deals with biological actions of ionizing radiation and its potential applications in the agri-food industry from the international point of view.

한국인의 안토시아닌 섭취량과 주요 급원식품 (Estimated Dietary Anthocyanin Intakes and Major Food Sources of Koreans)

  • This study aimed to estimate daily intake of anthocyanins and to identify major sources of anthocyanins in current Korean dietary patterns in order to implement dietary recommendations for the improvement of Korean health. Sixteen foods were selected based on the availability of food intake and reliable anthocyanin content. Food intake data from the Korea National Health and Nutrition Examination Survey 2014 and anthocyanin content data from earlier investigations were used to calculate the consumption of anthocyanins. Anthocyanin contents of 16 foods varied significantly and exhibited a range of 0~4,009 mg/100 g of fresh weight. Daily intake of anthocyanins was estimated to be 3.3 mg to 95.5 mg in Koreans. Of the 16 foods studied, the source contributing most to anthocyanin intake in the Korean population was plums (35.1%), followed by black beans (17.1%) and grapes (15.2%). These results indicate that major foods contributing to anthocyanin consumption in the Korean dietary pattern are fruits and grains.
