A Study on effects of favor in pizza added oregano and kimchi. (Oregano와 김치 첨가가 Pizza의 맛에 미치는 영향)

  • Kimchi was added to enhance the acceptability of pizza sauce and pizza for Korean adults, and flavor 1ike oregano was also mixed to investigate the compatibility with kimchi flavor. Pizza sauce with kimchi showed a high crude protein and low crude fat content. Pizza sauce with 20% kimchi showed the highest score in flavor, taste, color and overall acceptability, was significantly different from control in quality indices except taste. Pizza with 21, kimchi powder in mixing dough showed a higher score in sensory evaluation than that of only 20% kimchi added pizza sauce.

Effect of milk flavor supplementation on growth performance, nutrient digestibility, fecal score, and blood profiles in weaning piglets

  • This study explored the effects of milk flavor (MF) supplementation on growth efficiency, nutrient absorption, fecal score, and blood profiles in weaning piglets. A total of 80 (21 days old) crossbred ([Yorkshire × Duroc] × Landrace) healthy weaned piglets with an initial body weight (BW) of 7.05 ± 1.22 kg were randomly allotted to one of two nutritive treatments with 8 repetitions and five pigs (2 female and 3 male) per pen. The experiment was divided into 2 phases (d 0 - 21, and d 21 - 42), and the dietary treatments consisted of TRT1, basal diet, TRT2 and basal diet + 1.0 g·kg-1 MF. At days 21 - 42 and the overall period, the average daily gain (ADG) and average daily feed intake (ADFI) increased (p < 0.05) by receiving the MF added feed. However, MF inclusion did not impact (p > 0.05) the feed efficiency (G : F) throughout the entire experiment. Piglets consuming the MF supplemented diet showed that the apparent total tract digestibility of dry matter (DM), nitrogen (N) and energy (E) did not vary significantly (p > 0.05) between the treatments. All through the experiment, the fecal score and blood profile of the piglets fed the flavor diet also remained unaffected (p > 0.05). In conclusion, MF addition to the diet of the piglets increased their body weight and had no adverse effects on nutrient utilization, fecal score, and blood profile. Thus, MF addition could improve the performance outcomes of weaning piglets.

  • A total of 120 weaning pigs [(Landrace ${\times}$ Yorkshire) ${\times}$ Duroc] with an average body weight of $8.95{\pm}0.88kg$ were used in this study to investigate the influence of supplementation of combined flavor and sweetener. The diets included: 1) TRT1, basal diet, 2) TRT2, TRT1 + 500 mg/kg flavor, 3) TRT3, TRT1 + 150 mg/kg sweetener, and 4) TRT4, TRT1 + 500 mg/kg flavor + 150 mg/kg sweetener. The TRT4 treatment produced a higher average daily gain (ADG) than that in the other treatments on d 0 - 14 and the whole experimental period (p < 0.05). The TRT1 and TRT2 treatments gave a lower average daily feed intake (ADFI) than that of TRT4 on d 0 - 14 and d 0 - 42 (p < 0.05). On d 15 - 42, TRT4 had a higher ADFI than that of TRT1 (p < 0.05). Compared to TRT1, dry matter (DM), gross energy (GE), and nitrogen (N) digestibility increased in pigs fed the TRT4 diet (p < 0.05) on d 14. Serum norepinephrine concentration in TRT1 treatment was higher (p < 0.05) than that in TRT4 treatment at 72 h after weaning. On d 0 - 7, diarrhea score decreased in TRT4 treatment compared with TRT1 and TRT2 treatments. In conclusion, flavor and sweetener complex addition improved ADG and ADFI as well as DM, N, and GE digestibility in weanling pigs. This supplementation in pigs' diets decreased the serum norepinephrine concentration at 72 h after weaning and the diarrhea score during the first week of weaning.

The Development of Cereal Bars with Dried Anchovy for Chinese Customer Using Check All That Apply (CATA) Analysis for Liking and Disliking

  • Today, energy bars are consumed not only as snacks but also as meal replacement foods. Convenience and nutritional supplementation are the main factors accounting for the increasing use of energy bars. Two hundred Chinese customers who attended the China Fisheries & Seafood Exposition in China, and had no inhibitions about consuming cereal bars were selected. The questionnaire was composed of CATA choices that selected both the reasons for liking and disliking four different types of cereal bars, namely topokki flavor (hot pepper paste), seaweed flavor, kimchi flavor, and ginseng flavor cereal bars with 10% of dried anchovy content produced by BadaOne Co. (Seoul, Korea). The purpose of the study was to investigate Chinese consumer's attitudes and acceptance of different flavored cereal bars containing protein and calciumrich anchovy. For the selected Chinese customers, the acceptance score for the seaweed flavor was the highest, followed by topokki, red ginseng, and kimchi. The acceptance for the topokki flavor was higher than for seaweed for the attributes of color except for general acceptance, flavor, aroma, and texture. The results of the survey showed that the acceptance of kimchi was the lowest, contrary to earlier predictions. The results of the Check All That Apply (CATA) analysis showed that the reasons for liking the seaweed & anchovy flavor were the most diverse, and there was no reason chosen for disliking this flavor. The reasons for liking this flavor were listed as sweet flavor, healthy, seafood flavor, malty flavor, texture, new/unique, and umami. In the case of topokki and kimchi, the reason for disliking the flavor was umami, and in the case of red ginseng, the ginseng flavor was the reason for both likes and dislikes. CA analysis showed that both the flavor and emotional factors were positive for seaweed & anchovy and topokki, but negative for red ginseng. As a result, seaweed & anchovy flavor, which is familiar to the Chinese people, should be the first cereal bar considered for a launch.

Effects of Tapioca Starches on Quality Characteristics of Rice Cookies (타피오카전분의 첨가가 쌀쿠키의 품질특성에 미치는 영향)

  • The effects of tapioca starch (TS) and tapioca modified starch (TMS) as additives on the quality characteristics of rice cookies were investigated in this study. The amounts of TS and TMS replaced were 5, 10 and 15%(w/w) based on 100 g of rice flour. At the result of rapid viscosity analyser (RVA) properties of rice flour added with starches, peak, trough, and final viscosity of rice flour added with TMS decreased significantly(p<0.05). Hardness of dough and cookies as measured by Texture analyzer (TA) significantly decreased upon addition of TMS, and hardness of cookies significantly decreased upon addition of TS, hardness of cookies TMS lower than TS. L value of dough and cookies increased upon addition of TMS, whereas a value decreased upon addition of TMS. Spreadability of cookies increased upon addition of TMS, 10% TMS is the highest. Bulk density of dough decreased upon addition of TMS, bulk density of cookies decreased upon addition of TS and TMS, and bulk density of TMS cookie lower than TS cookie. In sensory evaluation, 10% TS added rice cookies showed the highest score in overall acceptability, hardness, brittleness, color, softness, taste and flavor, and 15% TS added rice cookies showed the highest score in appearance. And 15% TMS added rice cookies showed the highest score in overall acceptability, taste, brittleness, flavor, and 10% TMS added rice cookies showed the highest score in hardness, flavor, taste and color. It is indicated that the quality characteristics and sensory characteristics of the rice cookie can be improved by adding TS and TMS.

Effect of Cheeses and Flavors on Sensory Properties of Gamma-irradiated Tarakjuk (치즈와 향신료의 첨가가 감마선 조사된 타락죽의 관능적 품질에 미치는 영향)

  • This study was conducted to improve organoleptic quality of gamma-irradiated Tarakjuk at 10 kGy with cheeses (Camembert, Cheddar, Gouda, and Edam) and flavors (Nurungji, cream, and vanilla-cream). Overall acceptability of gamma-irradiated Tarakjuk added each camembert cheese and vanilla-cream flavor was the highest among the all samples. In the effect of sterilization method on the quality of Tarakjuk, the autoclaved samples added with Edam cheese, Gouda cheese, and vanilla-cream flavor, respectively, were showed higher score on the overall acceptability than the irradiated samples, meanwhile the irradiated samples were superior in the other samples. In case of added mixture of Edam cheese and vanilla-cream flavor, irradiated Tarakjuk with mixture was showed the most of high score on overall acceptability. In conclusion, addition of mixture of cheese and flavor to Tarakjuk may help to improve organoleptic quality of sterilized Tarakjuk by gammairradiation.

Identification of the SNP (Single Necleotide Polymorphism) of the Stearoyl-CoA Desaturase (SCD) Associated with Unsaturated Fatty Acid in Hanwoo (Korean Cattle)

  • Fatty acid composition of beef intramuscular tissue is an important trait because high proportions of mono-unsaturated fatty acid are related to favorable beef flavor. In this study, we investigated the effects of genetic factors, such as stearoyl-CoA desaturase (SCD), on beef carcass traits, including fatty acid composition, in the Hanwoo. Analysis of fatty acids in Hanwoo was performed using a breed raised in Gyeonbuk province (n = 395). Compared to the homozygote, the GA, CT, and CT genotypes of exon 5 in the SCD polymorphism showed a higher content of oleic acid (p<0.05) and higher contents of mono-unsaturated fatty acid (p<0.05) and marbling scores (p<0.05) in intramuscular fat. Results of haplotype analysis showed a significant presence of unsaturated fatty acids and marbling score in the $ht1^*ht2$ and $ht2^*ht2$ groups (p<0.05). Furthermore, haplotype effects more powerful than a single gene were also observed. These ht1 and ht2 types also showed a significant difference in unsaturated fatty acids and marbling score, affecting beef flavor in the Hanwoo groups. Therefore, it can be inferred that the ht1 and ht2 types might be valuable new markers for use in improvement of Hanwoo.

Preparation of Soy Yogust Using Isolated Soybean Protein and Whey Powder (분리대두단백과 유청분말을 사용한 대두 요구르트의 제조에 관한 연구)

  • Lactobacillus helveticus was inoculated to the fermentation liquid containing skin milk powder(SMT) plus soymilk, SMP plus isolated soybean protein(ISP), SMP plus ISP plus whey powder(WP) to increase the nutritional and economic value of commercial soy yogurt. The yogurt fermented with soymilk and SMP showed the lower acid production than of SMP and had significant beany flavor in the product. The yogurt prepared with ISP and SMP showed the higher cell number and lower acid production than that of SMP. Also, the partial substitution of SMP with ISP over 6%(w/w) produced less acceptable product due to gel production. The yogurt prepared by the partial substitution of SMP with ISP, WP and SMP showed the higher cell number and lower acid production than that of SMP and not bring about gel formation unlike the case of ISP. Sensory properties of yogurt substituted SMP with ISP and WP(38:62 mixture) below 4% were not significantly different from that of SMP and the sample containing the mixture over 6% and 0.067% artificial flavor showed lower sensory score due to beany taste than that of SMP. But increase of yogurt flavor up to 0.1% resulted in significantly high score in organoleptic acceptability. The separation of water occured in yogurt prepared by the combined mixture of ISP, WP and SMP, and this problem could be resolved by addition of Na-alginate and PGA at the concentration of 0.1%(w/w).

Effect of anise flavor on the performance of sows and their litters with different weaning ages

  • This study was conducted to evaluate the effect of dietary supplementation of anise flavor on the performance of lactating sows and suckling pigs at different weaning ages. A total of 120 sows (Landrace ${\times}$ Yorkshire) were used in this experiment. Sows were fed with a commercial lactation diet (60 sows) or diet with flavor (60 sows) during days 100 to 114 of gestation period and the whole lactation period. Piglets were allotted to 2 dietary treatments based on their initial body weight (BW) using a $2{\times}2$ factorial arrangement of treatments with 2 levels of anise flavor (0 or 0.5 g/kg) and weaning periods (weaned at 21 day or 28 day after birth). Sows fed with flavor supplemented diets had higher (p < 0.05) back fat and average daily feed intake (ADFI) at weaning, lower (p < 0.05) back fat loss than those fed with non-flavor diets. Sows weaned at 28 day had higher (p < 0.05) weaning back fat and lower (p < 0.05) back fat loss than those weaned on 21 day. During weaning, piglet average daily gain (ADG), ADFI, digestibility of dry matter (DM), nitrogen (N), and gross energy (GE) and fecal score were affected by anise flavor, respectively. In conclusion, dietary flavor supplementation could increase feed intake of lactating sows, improve growth performance and reduce weaning stress of piglets, especially effective in the early weanling piglets. Meanwhile, interactive effects were observed about the piglet performance between weaning ages and anise flavor supplementation after weaning.

Changes in Organoleptic Properties of Chinese Cabbage Kimchi Adding Pinemushroom during Storage (송이 첨가 김치의 저장 중 관능적 특성 변화)

  • The response surface methodology was used for monitoring the changes in organoleptic properties of chinese cabbage kimchi adding pinemushroom during storage at l0$\^{C}$. The sensory score of kimchi were high from 4th to 8th days and low at around 12th day. At the 1st day of storage, the more pinemushroom was added, the lower showed the score of sensory evaluation. But in case of the score for taste and flavor, the more pinemushroom and red pepper powder were added together, the higher it showed. At the 4th day, the score of color, flavor, taste and overall palatability increased. Especially, the score was the highest when kimchi was added with 5.0∼6.0% of pinemushroom and 3.0∼3.5% of red pepper powder. At the 8th day, the score of mouth-feel was high. The kimchi adding pinemushroom showed the highest scores of sensory evaluation during the storage period from 4th to 8th days at 10$\^{C}$.
