Flavor Release from Ice Cream during Eating

  • The main purpose of flavor research using conventional extraction methods, such as solvent extraction, distillation, and dynamic headspace, is to effectively extract, identify, and quantify flavor volatiles present in food matrices. In recent flavor research, the importance of understanding flavor release during mastication is increasing, because only volatiles available in the headspace contribute to the perception of food 'flavors'. Odor potency differs among flavor volatiles, and the physicochemical characteristics of flavor volatiles affect their release behavior and interaction with various food matrices. In this review, a general overview of flavor release and flavor-food interactions within frozen dessert systems is given with emphasis on chemical, physiological, and perceptual aspects. Chemical and sensory analysis methods competent for investigating such flavor-food interactions are illustrated. Statistical analysis techniques recommended for data acquired from such experiments are also discussed.

Changes in flavor-relevant compounds during vine ripening of tomato fruit and their relationship with ethylene production

  • Flavor quality is import for determining consumer perception and acceptance of tomato products. In this study, 'Fendou' tomato fruit were harvested at six ripening stages and sampled to investigate the development of flavor-relevant compounds during vine ripening. Results showed that upon the initiation of ripening there was an increase in respiration rate and concomitant ethylene evolution that was associated with increased membrane permeability. In accordance with these physiological changes, flavor-relevant compounds demonstrated different expression patterns as fruit ripened, which contributed to 'red-ripe' flavor characteristics of red-ripe fruit. Based on correlation analysis between ethylene evolution and the flavor-relevant compounds during 'Fendou' tomato ripening and the other researchers' reports, the activation of System 2-dependent autocatalytic ethylene production plays an important role in the development of most flavor-relevant compounds during tomato vine ripening. Overall, our results suggested that most flavor-relevant compounds that accumulated the most during tomato fruit ripening at red stage could be under ethylene regulation and were among the most important contributors to the 'red-ripe' flavor. Due to the development of these compounds, the flavor quality at late ripening stages is different from that of fruit at early ripening stages.

Headspace GC-MS을 이용한 더치커피의 향기성분분석 (Studies on the Flavor Compounds of Dutch Coffee by Headspace GC-Mass)

  • Dutch coffee is extracted in low temperature for a longer time than espresso and drip coffee. This study was conducted to investigate changes in the flavor compounds in Dutch coffee resulting from different extraction times and storage days. The fifty six flavor compounds in Dutch coffee were identified using a headspace mass-spectrometer. Major flavor compounds were 2-furfuryl acetate, 5-methylfurfural, pyridine, furfural, 2-acetylfuran, pyridine, 2-methoxyphenol, furfuryl alcohol and some compounds varied with espresso and drip coffee. It was worthy of notice that more diverse compounds were composed of total flavor in Dutch coffee. There were more kinds of flavor compounds in early extracts than in latter ones. The duration of storage didn't significantly affected the peak area percentage of flavor compounds in Dutch coffee except with 2-furfuryl acetate.

  • Three sensory evaluations were conducted to assess the effect of food color on flavor identification. Elementary students and women university students served as subjects for three evaluations of hard candies, in order to assess color preference, to examine the effect of atypical color on flavor identification and to examine the acceptability of harmony between the color and the perceived flavor. Results showed that inappropriate coloring of the three flavored hard candies induced flavor responses that are normally associated with that color and decreased the acceptability. In addition, the acceptability of colorless candies is lower than that of colored candies. It is suggested from it that when there is no color on the product, even atypical color, it`s harder to identify the flavor and to get a high grade in its preference.

잎담배 중 neutral volatile flavor 화합물 분석 (The Analysis of Neutral Volatile Flavor Compounds in Tobacco)

  • This work has been conducted to develop a method for the analysis of neutral volatile flavors and their precursors in tobacco. The neutral volatile compounds and precursors in tobaccos have been investigated by Neutral Volatile scan method(NV scan) using Soxhlet extractor. The method has been used to analyze a range of different tobaccos and tobacco products. Neutral flavor compounds were classified as three sections(1st Volatile Fraction, Breakdown Flavor Products and Cembranoid Precursors). The major components of the First Volatile Fraction were 2-cyclohexene-1-one, 6-methyl-5-hepten-2-one, limonene and phenyl ethanol. The major components of Breakdown Flavor Products were isophorone, solanone, damascenone, 3-hydroxy-$\beta$-damascone, geranyl acetone, $\beta$-ionone, dihydroactinidiolide, norsolanadione, neophytadiene, hexahydrofarnesylacetone, farnesyl acetone and megastigmatrienone. The major cembranoid precursor compounds were dibutyl phthalate, duvatrenediols, 8,12-epoxy-14-labden-13-ol, 11-hydroperoxy-2,7,12(20)-cembratriene-4,6-diol, 12,15-epoxy-12,14-labadien-8-ol, 2,7,11-cembratrien-4,6-diol and 8,13-epoxy-14-labdien-12-ol. The NV scna results of tobacco types(flue-cured, burley and oriental) showed that each tobacco type has a characteristic flavor component profile.

향기성분 미세캡슐화를 위한 유화 및 분무건조 공정 최적화 (Optimization of Emulsification and Spray Drying Process for the Microencapsulation of Flavor Compounds)

  • 본 연구는 분무건조를 이용한 미세캡슐화 기술을 이용하여 유화압력 및 분무건조에 있어서 송풍 온도와 분무 속도를 최적화하는데 목표를 갖고 수행되었다. 분석지표로 유화액의 유화안정성과 flavor release를, 분무건조 분말의 total oil, surface oil, flavor release, 흡습성을 측정하고, SEM에 의해 분말의 형태를 관찰하였다. Wall system을 이용하여 piston-type homogenizer의 압력을 달리하여 실험한 결과 향기성분의 미세캡슐화를 위한 최적 유화압력은 20.7MPa이었다. 분무건조공정에 있어서 송풍 온도와 분무 속도를 독립변수로, total oil retention, surface oil content, flavor release를 종속변수로 반응 표면 분석법을 행한 결과 송풍 온도는 $170{\circ}C$, 분무 속도는 15,000rpm이 우수한 공정 조건임을 예측 할 수 있었다.

향기 성분의 미세캡슐화를 위한 피복물질에 대한 연구 (A Study on Wall Materials for Flavor Encapsulation)

  • 본 연구는 분무건조를 이용한 향기성분의 미세캡슐화를 위해 maltodextrin(MD), gum arabic(GA),alkenylsuccinated modified starch(MS), gellan gum을 피복물질로 사용하여 배합비율을 최적화하는데 목표를 갖고 수행되었다. 핵물질은 특성이 다른 5종류의 향기성분을 채종유와 1 : 4의 비율로 혼합한 flavor model system으로 사용하였다. 예비실험을 통해 핵물질 : 피복물질의 비율을 1 : 4로 하였으며, MD함량은 30%로 고정하였다. GA : MS를 $2\;:\;8{\sim}8\;:\;2$의 비율로 제조하여 유화액에서의 특성을 분석한 결과, GA : MS = 4 : 6에서 유화안정성이 우수하였으며, flavor release가 가장 적었다 이 비율에 gellan gum을 $1{\sim}5%$ 첨가하여 실험한 결과, 4% 첨가한 것이 결과가 가장 우수하였다. 이상의 결과로 MD : GA : MS : gellan gum = 30 : 26.4 : 37.6 : 4의 배합비율이 분무건조를 이용한 향기성분의 미세캡슐화를 위한 피복물질의 최적 배합조건이었다.

Volatile Flavor Components of Scent, Colored, and Common Rice Cultivars in Korea

  • To compare the composition of volatile flavor components of three different cultivars of rice, Hyangnambyeo (aromatic cultivar), Heugjinjubyeo (pigmented cultivar) and Dongjinbyeo (normal cultivar), the volatile flavor components of brown rice were isolated by Likens-Nickerson simultaneous steam distillation and extraction apparatus. The flavor concentrates obtained were analyzed by gas chromatography and gas chromatography-mass spectrometry. A total of 65 components, including 14 aliphatic aldehydes and ketones, 7 aliphatic alcohols, 8 aromatic alcohols, 13 hydrocarbons, 9 esters, 7 aliphatic acids, and 7 miscellaneous components were identified. The aliphatic aldehydes, which are known as contributors to the overall flavor of cooked rice, were present in larger amounts in Hyangnambyeo than in Heugjinjubyeo and Dongjinbyeo, while the difference in quantity of these components between Heugjinjubyeo and Dongjinbyeo was not remarkable. Hyangnambyeo and Heugjinjubeyo contained 562 ng and 259 ng of 2-acetyl-1-pyrroline per gram of brown rice based on dry weight, respectively, which is a key compound contributing to the popcorn-like aroma in aromatic rice. Dongjinbeyo contained about 6 ng.

숙성에 의한 육두구(Myristica fragrans Houttuyn)의 향기성분 변화 (Changes in the Volatile Flavor Components of Nutmeg(Myristica fragrans Houttuyn) during Aging)

  • 향미료 또는 착향료로서 서양요리에 주로 이용하는 육두구 (Nutmeg, Kernels of the fruits of Myristica fragrans Houttuyn)를 $37^{\circ}C$에서 숙성시키면서 상압수증기 증류장치로 향기성분을 추출한 후, capillary GC와 CC/MS를 이용하여 이들 휘발성 화합물의 조성변화를 관찰하였다. 숙성기간의 경과에 따라 저비점화합물의 백분율은 점차 감소하는 반면, 고비점화합물의 백분율은 증가하였고, 중비점화합물은 약간 증가하였다. 특히, 고비점화합물 중 myristicin과 myristic acid는 현저하게 증가하여, 6개월째 각각 24.50% 및 18.69%이었다. 전체 휘발성 화합물의 양은 4개월까지 증가하다가 이후는 점차 감소하였다.

배주스의 휘발성 향기성분 (Volatile Flavor Compounds from Pear Juice (Pyrus pyrifolia cv. Niitaka))

  • The aim of this study was to determine volatile flavor compounds in Shingo pear juice. Volatile flavor compounds were analyzed using solid-phase micro-extraction (SPME) - gas chromatography-mass spectrometry (GC-MS). The effect of inorganic salts solution on the extraction ability of the SPME fiber was treated by adding saturated $CaCl_2$ solution at the ratio of 1:20 (v/v) after 0, 60, 120 min of preparing pear juice, respectively. As a result, a total of 22 volatile compounds were identified in Shingo pear juice. Ethyl acetate was found to be the most abundant volatile compound ($13.36{\sim}19.61{\mu}g/kg$), followed in order by hexanal, ethyl hexanoate, ethyl 3-(methylthio)-2-propenoate, ethyl octanoate and 2-hexenal. Total contents of volatile flavor compounds were $31.07{\mu}g/kg$ (control), $40.93{\mu}g/kg$ (0 min), $27.62{\mu}g/kg$ (60 min) and $26.32{\mu}g/kg$ (120 min). This result indicated that the addition of saline solutions could inhibit the enzymatic reaction of volatile flavor compounds effectively when treated as soon as juice preparation.
