Korean Female Adolescents' Food Attitudes and Food Intake Relative to the Korean Food Tower (II) : Food Attitudes

  • The food attitudes of 285 Korean female students attending a secondary school in Seoul were examined with respect to the 5 food groups of the Korean Food Tower : grain products, vegetables and fruits, meat, milk, and fats and sweets. An instrument with 22 items was utilized to measure food attitudes toward the five food groups. The items were categorized into five factors through factor analysis to obtain a description of the participants' food attitudes. The five factors are conscious choice of food, health concerns, economics and time influence, interest in foods, and foods that energize. Several facts emerged from examining the food attitudes. The most evident was their response to the items concerning the influence of economics and time on food choice, which the majority consider not limiting their food consumption. Most participants gave favorable responses for vegetables and fruits on all the five factors, but gave unfavorable responses for meat group and fats and sweets in health concerns. They also gave favorable responses for“foods that energize”for all except fats and sweets. Four of the total 25 relationships among food intake (five groups) and food attitudes (five factors) were found to have significant positive correlations (p < .01).   • In order to setup the diet guideline of five grains, five meats, five fruits, and five vegetables for the diseases of five organs, I reviewed the their tastes by comparing "Naekyeong" with "Euhakibmun", "Dongeuibogam". 'Ma(麻)' in "Naekyeong" means not a hemp, a ramie or a jute, but a sesame(胡麻;참깨). 'Maik(麥)' in it means both a barley(大麥;보리) and a wheat(小麥;밀). 'Guak(藿)' in it means bean leaves(콩잎), leaves of a red-bean(팥잎) or brown seaweed(海藻;미역). 'Gyu(葵)' in "Euhakibmun Jangbujobun(臟腑條分)" is a miswritten word for 'Welsh onion' caused by similarity of shape of word. Food of a salty taste according to five elemental arrangement in "Naekyeong" is really salty according to "Euhakibmun" and "Dongeuibogam". But a barley(大麥) and a wheat(小麥) of sour taste are bitter, a chicken of sour taste or hot taste is sweet, nonglutinous millet of sour taste is sweet, an apricot of bitter taste is hot, a sesame seed of sweet taste is sour, a nonglutinous rice of hot taste is sweet, and a horsemeat of hot taste is bitter according to them. There are two ways to recommend the food for diseases of five organs. One way is to promote or control the Qi(氣) of five organs according to "Somun(素問)" and "Euhakibmun Jangbujobun", the other way is to build up the Yin(陰血) of five organs according to "Yungchu(靈樞) five tastes(五味)". The two different ways are not contradictory to each other, but complement on the view point of their substances(體) or actions(用).

미취학 아동의 편식지도를 위한 영양교육 프로그램 개발에 관한 연구 (Development of Nutrition Education Program that Promotes Eating Behavior of Preschool Children -Especially Focused on Being Familiar with Vegetable-)

  • The purpose of this study was to develop nutrition education program that promotes eating behavior of preschool children. 118 parents of preschool children were surveyed to understand of children's food preferences and prejudices. The preference for vegetable showed the lowest score(2.345) and fruit was the favorite food(4.11). These results imply the consequence of teaching balanced diet with emphasizing vegetables for preschoolers. Thus, nutrition education program including teaching material were developed to provide the preschoolers with cognitive, affective, and psychomotor activities in order them to the familiar with vegetables. The program were consisted of following five parts: 1. Read-A-Story includes six stories with follow-up activities. 2. Grow-A-Plant gives instructions for growing vegetables. 3. Play-A-Game stimulates children's imagination and learning. 4. Take-A-Trip suggests places to visit that grow, sell, and prepare vegetables. 5. Eat-A-Treat presents easy ways to prepare and enjoy vegetables. Twenty one-Standardized recipes for vegetable dishes were also developed for preschooler's luncheon and snack in daycare center.

과실 및 채소중 유기인계 잔류 농약에 관한 연구 (Organophosphorus Insecticide Residues in Fruits and Vegetables)

  • Organophosphorus insecticide residues were investigated in six kinds of fruits and five kinds of vegetables.The materials used in this experiment were grape, musk melon, apple, peach, plum, apricot, lettuce, green pepper, cucumber, pumpkin and tomato which were collected from June to september 1986 in Seoul. Residual pesticides investigated were Diazinon, Parathion, MEP (Fenitrothion), Malathion, EPN, MPP (Fenthion), PAP (Phenthoate) and Dimethoate and all samples were analysed by gas chromatographic technique with NPD (Nitrogen Phosphorus Detector). No sample was found to approach proposed national maximum residue limits in Korea.

간접적 영양교육과 조리법이 생선 및 채소 섭취량 변화에 미치는 영향 (The Consumption Changes of a Fish and Vegetable according to Indirect Nutrition Education and Cooking Methods)

  • This study was targeted at 91 students living in a boys' high school dormitory and centered on the how the consumption of fish and vegetables changed after students were educated according to nutrition education and cooking methods. First of all, the primary investigation of the leftover amount in the beginning of the semester was conducted five times for five days from March 21st to 25th, 2011. The secondary investigation was conducted with the same diet for five days as well from December 1st to 7th. Then the tertiary investigation was performed eight times from December 12th to 30th, after cooking method changes. There was a difference of the total leftover food amount between the first grade and the second grade during the beginning of the semester, but after the nutrition education there was no difference of the leftover food amount. In particular, leavings of vegetables and fish both significantly decreased in the first grade, after the nutrition education to encourage students to eat fish and vegetables. However, there was no difference in the leftover food amount of the second-grade students who received the education before, between the beginning and the end of the semester. When cooking fish the way students preferred, they had fried fish fillets the most, followed by roasted fish fillets, roasted bone-in fish, and braised fish. There were significant differences. Regarding vegetable, students ate salad the most, followed by Geotjeori and blanch, and there were significant differences.

  • 유용 취나물 5종류의 종간 유사도 및 종내 변이를 파악하기 위하여 38개체를 대상으로 PCR 방법을 이용하여 비교분석하였다. 사용된 62가지 primer 중에서 38개체 전체에서 band를 보여준 것은 10가지였고, 이를 통해 얻어진 총 band의 수는 176개로 나타났다. 종내변이는 청옥취가 31.1%에 해당하는 15개의 polymorphic band를 가져 변이가 가장 낮았으며 곰취는 61.1%로 가장 높게 나타났다. 군집분석 결과 조사된 38개체는 유사도 0.93에서 5종의 구분이 가능하였으며 38개체 각각은 유사도 0.62-0.99의 유사성을 갖는 것으로 나타났고 종내변이는 0.93이상으로 높게 나타나 변이가 적은 것으로 나타났다. 이상의 결과에서 PCR방법을 이용한 결과가 취나물 5종류를 구분하는데 유용하게 사용되었으며 군집분석 결과 종내 변이가 매우 낮은 것으로 나타났다.

과채류 섭취를 통한 Neonicotinoid계 농약의 노출평가에 대한 확률적 접근 (Probabilistic Approach on Dietary Exposure Assessment of Neonicotinoid Pesticide Residues in Fruit Vegetables)

  • 본 연구에서는 우리나라 소비자를 대상으로 우리나라에서 재배된 과채류 섭취를 통한 neonicotinoid계 농약의 노출량을 확률적 접근법을 이용하여 평가하였다. 농약 잔류량을 2009년에 수행된 과채류 중 neonicotinoid계 농약 5종(acetamiprid, clothianidin, imidacloprid, thiacloprid, thiamethoxam)에 대한 모니터링 자료를 이용하였다. Neonicotinoid계 농약의 총 노출량을 개별 과채류별로 구분하여 확률적 평가를 실시한 결과 neonicotinoid계 농약 5종의 총 노출량의 극단값은 0.087~0.236 ${\mu}g$/kg/day의 범위를 보였다. 확정론적 접근법의 결과와 비교했을 때 총 노출량의 평균치는 거의 유사하게 나타났으며, 노출량의 $95^{th}$ percentile값에 서는 확률적 접근법의 결과가 확정론적 접근법의 결과에 비해 38.8 ~ 62.0%의 수준으로 낮게 나타났다. 총 노출량에 대한 민감도 분석을 실시한 결과, acetamiprid의 총 노출량은 딸기 섭취를 통한 노출량에 크게 영향을 받으며, 특히 딸기의 섭취량 보다는 딸기 중 acetamiprid 잔류량 수준에 더 크게 영향을 받는 것으로 나타났다. 이는 thiacloprid를 제외한 나머지 3종의 neonicotinoid계 농약에서 유사한 경향을 보였다.

부산 일부지역 토양과 채소의 중금속 함량 연구 (Heavy Metal Contents in Soil and Vegetables Collected from Susan District)

  • The contents of five heavy metals such as lead, cadmium, zinc, copper and manganese in soil and vegetables collected from four sites in Busan district with composite sampling method were determined with ICP emission spectrometer. The ranges of their contents in soil were lead, $1.65\sim4.36ppm;$ cadmium, $0.05\sim0.09ppm;$ zinc, $6.33\sim11.09ppm;$ copper, $0.44\sim1.35ppm;$ manganese, $8.40\sim19.39ppm$, respectively. These contents were lower than the Clarke number. The range of heavy metal contents in four vegetables such as lettuce, radish and its roots, spinach and cabbage were lead, $0.09\sim0.48ppm;$ cadmium, $0.01\sim0.08ppm;$ zinc, $1.81\sim14.62ppm;$ copper, $0.14\sim1.87ppm;$ manganese, $0.71\sim14.5$ 5ppm with the order of Zn(7.30 ppm)>Mn(4.35 ppm)>Cu(0.53 ppm)>Pb(0.19 ppm)>Cd(0.04 ppm) in average contents. The average transfer ratio of metals from soil to vegetables was order of Zn(77.8 %)> Cd(37.5 %)>Cu(34.5 %)>Mn(18.6 %)>Pb(6.7 %). In case of the same cultivating soil, the transfer ratio could be expected to the order of spinach$lettuce{\approx}cabbage$

전처리 나물류에서 Bacillus cereus 성장 예측 모델 검증 (Validation of Broth Model for Growth of Bacillus cereus in Blanched Vegetables)

  • The objective of this study was to develop a predictive growth model for Bacillus cereus in nutrient broth and validate the developed growth model in blanched vegetables. After inoculating B. cereus into nutrient broth, growth of B. cereus was investigated at 13, 17, 24, 30 and $35^{\circ}C$. Lag time (LT) decreased while specific growth rate (SGR) increased with an increase in storage temperature. Growth of B. cereus was not observed at temperatures lower than $12^{\circ}C$. Secondary growth models were developed to describe primary model parameters, including LT and SGR. Model performance was evaluated based on bias factor ($B_f$) and accuracy factor ($A_f$). In addition, we inoculated B. cereus into blanched vegetables stored at 13, 24, $35^{\circ}C$ and observed the growth kinetics of B. cereus in five different blanched vegetables. Growth of B. cereus was most delayed on Doraji at $13^{\circ}C$ and was not observed on Gosari at $13^{\circ}C$. Growth of B. cereus at $35^{\circ}C$ was significantly (p<0.05) slower on Gosari than on other blanched vegetables. The developed secondary LT model for broth in this study was suitable to predict growth of B. cereus on Doraji and Gosari, whereas the SGR model was only suitable for predicting the growth of B. cereus on mung bean sprout.

한국인 다소비 채소의 에탄올 추출물이 LPS 처리된 대식세포에서 NO, TNF-${\alpha}$와 MCP-1 분비에 미치는 영향 (Effects of Ethanol Extracts from Commonly Consumed Vegetables by Koreans on NO, TNF-${\alpha}$ and MCP-1 Production in LPS-stimulated RAW 264.7 Macrophages)

  • Korean dishes, Hansik are characterized by healthful vegetable intake. The purpose of this study was to evaluate the inhibitory effect of commonly consumed vegetables by Koreans on obesity/metabolic disease-related inflammation. Through statistical analysis of the KNHANES database ($1^{st}$ 1998, $5^{th}$ 2010, 2011) and a literature review, we selected vegetables for study. Among the vegetables, main or sub ingredients of Kimchi were excluded. Samples were prepared using only edible portions and freeze-dried. After grinding, samples were extracted with ethanol, evaporated and finally lyophilized. The cytotoxicity of samples was determined by 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide (MTT) assay, at various concentrations that do not affect cell viability. Raw 264.7 macrophages were treated with lipopolysaccharide (LPS) and 11 kinds of samples or positive control (troglitazone) dissolved in dimethyl sulfoxide (DMSO). After 24 hours, nitric oxide (NO), tumor necrosis factor ${\alpha}$ (TNF-${\alpha}$) and monocyte chemoattractant protein-1 (MCP-1) production were determined. Excepts for young pumpkin and bracken, nine samples effectively reduced NO production compared with control treated with LPS and DMSO. NO levels of five samples (bean sprouts, leeks, eggplant, mugwort, and pumpkin) were similar to that of the positive control. These five samples showed significantly decreased TNF-${\alpha}$ or MCP-1 compared to the control group. Our results suggest that consumption of commonly consumed vegetables contributes to partial prevention of obesity and related metabolic syndrome through reduction of NO, TNF-${\alpha}$, and MCP-1 production.
