Moving Distance of Laborer in the Kitchen for Systematic of the Korean Foods (한식(韓食)의 편의식화(便宜食化)를 위한 주방동선(?房動線)에 관한 연구)

  • In order to develop a convenient Korean food service system in commercial kitchen, processing procedure and recipe of 10 kinds of Korean food to be served as a convenient foods were decided. Moving distance and required energy of laborer in the commercial and model restaurants which have the area of $62.8m^2$ and $32.4m^2$, respectively, were measured by arranging these machinery. The results obtained were summarized as follows. In case of restaurant with the area of $62.8m^2$, moving distance, working hours and required energy of laborers were 1,922m, 2,986min and 4,704kcal in C-store, 2,134m, 3,173min and 5,001.7kcal in T-store, and 1,704m, 2,808min and 4,414.5kcal in model restaurant, respectively. Therefore energy requirements of the model restaurant were less 289.5kcal (4.5%) and 587.2kcal (10.1%) than those of C and T store. In case of restaurant with the area of $32.4m^2$, moving distance, working hours and required energy of laborer in S store were 1,277m, 2,926min and 4,588kcal, 1,425m, 3,108min and 4,873.8kcal in H restaurant and 1,167m, 2,798min and 4,381.4kcal in model restaurant, respectively. Therefore energy requirements of the model restaurant were less 206.6kcal (4.7%) and 492.4kcal (11.2%) than those of S store and H restaurant. When 6 kinds of convenient foods and 4 kinds of direct cooking foods were produced, moving distance, working hours and required energy of laborer in S store were 554.7m, 972min and 1,586.0kcal, 684.7m, 991min and 1,579.2kcal in H restaurant, 523.1m, 938min and 1,479.5kcal in model restaurant. Therefore energy requirements of the model restaurant were less 99.7kcal(6.7%) and 106.5kcal(7.2%) than those of S store and H restaurant. In case of the energy saving system kitchen, moving distance and required energy were saved less by 42% and by 20.4% than those of model kitchen, respectively.

Effect of Formalin Inactivation on Viral Hemorrhagic Septicemia Virus (VHSV) (Viral Hemorrhagic Septicemia Virus (VHSV)에 대한 포르말린 불활화 의 영향)

  • Killed vaccines, developed by inactivation with formalin, have been investigated for many fish viruses. In this study, the inactivation of viral hemorrhagic septicemia virus (VHSV) by formalin was investigated based on the infectivity titer. When viral cell culture supernatants were used, the infectivity titer decreased 1,000-fold at 1 d after treatment with 0.1% (v/v) formalin, but was below the detection limit at 7 and 14 d. Moreover, neither the N nor G gene were detectable by RT-PCR immediately after formalin treatment. In western blot analysis, N protein was not detected by rabbit antiserum against VHSV KR-9225 from 2 d after formalin treatment. On the other hand, when we used a virus that was purified and concentrated ~100 times, the infectivity titer was maintained at 106.05 TCID50/mL, even at 14 d after formalin treatment, and no change in the viral structural proteins was observed. This study provides important data on the production and use of formalin-inactivated vaccines.

Smart Service and Progressive Strategies of a Smart Village Project in Rural Area - A Case Study of Geumsan-gun - (농촌지역 스마트빌리지 사업의 우선순위 서비스 도출과 추진 전략 - 충청남도 금산군을 중심으로 -)

  • In this paper, for the smart village project in Geumsan-gun, the problems of the village were derived for the residents. And the business model of the smart village was presented. In the introduction, we looked at domestic cases related to the smart village project. And In November 2019, this paper reflected the results of the resident survey(314) and extracted important smart services using the IPA method. The results of the investigation are as follows. The government's smart village project aims to increase agricultural and fishery production and improve the urban environment. Geumsan residents want to increase agricultural production and develop tourism. The smart village model in Geumsan-gun is promoted in three directions. (1) Smart villages require smart services for crime prevention, parking lots, and public transportation. (2) Smart villages need ICT-based ginseng festivals, smart farms, and tourism services. (3) Smart villages need ICT-based culture and welfare services. The rural areas in Korea are expected to improve the quality of their living environment through the smart village project.

A Study on Collection and Usage of Panel Data on On-board Job Taking and Separation of Korean Seafarers (한국선원의 승선과 이직에 대한 패널자료 구축과 활용방안)

  • Seafarers are an essential resource in maritime industries, which provide navigation skills, vessel maneuvering skills and fishing skills in the fishery industry. They also work as a driving force in pilotage, port operation, vessel traffic service, and marine safety. Other areas in maritime services, which rely on seafarer include safety management of ships, supervisory activities, and maritime accident assessment. In these ways, Korean seafarers have contributed to the growth of Korean economy. However, there have been issues of high separation rate, shortage of supply, multi-nationality, multiplicity of culture caused by employment of foreign seafarers, and aging. The present paper finds that maritime officers and fishery officers demonstrate differences in the statistics of on-board job taking and separation: the separation rate of fishery officers is higher than that of maritime officers. The existing data and statistics by the Korea Seafarer's Welfare & Employment Center could be improved by changing its structure from time series to panel data. The Korea Seafarer's Welfare & Employment Center is the ideal institution for collecting the panel data, as it has already accumulated and published relevant statistics regarding seafarer. The basic design method of the panel data is to adopt and improve it by including the information on ratings of maritime and fishery industries, ranks in a ship, personal information, family life, and career goal. Panel data are useful in short- and long-term forecasts of supply of Korean seafarers; demand evaluation of education, training, and reeducation of the seafarers; demographical dynamic analysis on Korean seafarers; inducement policy of long-term on board job taking in harmony with man-power demands in marine industries such as pilotage service; implementation of job attractiveness policy on Korean seafarers; and employment stabilization of Korean seafarers.

Suitable Site Assessment using Habitat Suitability Index for Styela Clava and Styela Plicata in Jindong Bay (서식지 적합지수를 이용한 진동만 미더덕과 주름미더덕의 어장적지평가)

  • This study was conducted in warty sea squirt farm, Jindong Bay(10 stations; July, October, January, April) for the culture period of Styela clava, Styela plicata. We utilized water temperature, chlorophyll a, suspended particulate matter, hydrodynamics, salinity and dissolved oxygen saturation for the suitability assessment of warty sea squirt farm. Newly, Life Requisite Suitability graphs were made for the correlation between the growth of Styela clava, Styela plicata and farm environment. As a result of the assessment for Habitat Suitability Index, western bay(HSI 0.32~0.41) show values higher than eastern bay(HSI 0.19~0.27). This result shows the high correlation with the unit production of Styela clava, Styela plicata($R^2$=0.834, P<0.01). This could be helpful for fishery management for the sustainable productivity through the scientific suitable site assessment.

  • Coastal settlements have a diversity of tangible or intangible local assets and are environmentally sensitive areas. The value of tangible or intangible local assets is often overlooked and there is no enough consideration for the inhabitants who have a various and acute stake in the development process of coastal settlements. The development of coastal settlements without consideration for the local circumstance, resident's needs, and local characteristics makes it difficult to achieve sustainable regeneration. There are also alienation, conflicts, and the loss of a authentic sense of place because of physical oriented development without regard to the social, economic, and cultural aspects. This research defines the components and types of coastal settlements and draws the characteristics of them around the fishery ports in Busan in the aspect of sustainable regeneration. It will be the important methods for an integrated regeneration including not only spatial and physical regeneration but also social and economic regeneration which has the preservation of local culture with living conditions, local economy activation, and community building. It will also provides the bases of sustainable development, attractiveness, and competitiveness of coastal settlements.

The Functional Selection for the Assessment of Ecosystem Service at Pond Wetland in Agricultural Landscape (농업경관 내 연못형습지의 생태계서비스 평가를 위한 기능 설정 연구)

  • A lot of Pond Wetland (Palustrine Wetland) are distributed in agricultural landscapes, Korea. These wetlands are evaluated as important resources for conservation of biodiversity. However, the study of Pond Wetland is rarely conducted except type classification in Korea. In this study, the function of pond wetland as ecosystem services is studied for conservation and utilization of wetland. Research was conducted in three steps; functionality analysis, functionality derivation, and importance analysis. A total of 22 features were derived by analyzing the previous studies. As a result of expert survey, 4 features were selected by each in the field of biological, environmental, and socio-culture among the 22 features. Importance was calculated by conducting a cross-functional features using Analytic Hierarchy Process (AHP). Finally, 10 ecosystem service functions of pond wetland were derived through expert survey; (1) Water Storage & Irrigation, (2) Vegetation Diversity, (3) Amphibian & Reptile Habitat, (4) Water Purification, (5) Aquatic Insect Habitat, (6) Nutriments Control was derived, (7) Groundwater Recharge, (8) Fishery Habitat, (9) Eco-Experience & Education, and (10) Aesthetic landscape. It is expected that this study is able to utilize in evaluation of pond wetlands ecosystem services by further study on analysis of functional importance and economic value index.

A Historical Literature Review on the Records of Korean Anchovies (우리나라 멸치의 기록에 관한 연구)

  • This study is about the historical records of anchovy which has fluent nutritions as well as the representative side dish in Korean food culture and life. The formal first record about anchovy is in the Uhaeieobo written by Damjeung in 1803. Another important historical record about anchovy are Hyeonsaneobo(Jasaneobo) written by Jeong Yak-jeon in 1814, and Eomyeonggo(Fish name list) of Nanhoeomogji written by Seo Yu-gu in 1820. The anchovies were used for food in Korea even before the Chosun Dynasty, but they were not noticed by people. Because at that time, fishing tools and instruments such as nets were not developed enough to raise enough catches and food processing technology were not developed. Since then, in the Japanese colonial era, it has been actively developing agricultural fertilizers using anchovies. In addition, the processing technology that can be used as an edible food using anchovy has been rapidly developed. Now, the anchovy industry has very important position in Korea's fisheries industry. Among them, 'Jukbangryum anchovy' catching bamboo weir tool which has been existed for over five hundred years in Namhae province, not only creates great high economic value, but also has cultural value. Therefore, the historical literature study on anchovy can be used as an invaluable resource not only for the study of fishery from an industrial point of view, but also for the registration of world cultural heritage and GIAHS (Globally Important Agricultural Heritage System) of 'Jukbangryum' which is traditional fishery catching instrument in Korea.

Effects of Spices on the Growth of Lactic Acid Bacteria (향신료(香辛料)가 유산균(乳酸菌)의 증식(增殖)에 미치는 영향(影響))

  • This study was undertaken in order to examine the effect of ginger, gerlic and red pepper, usually used as the ingredients of Kimchi, on the growth and acid production of Lact. plantarum ATCC 8014 and Lact. fermenti ATCC 9338 during incubation in the medium containing different amount of each extract. The results obtained are as follows: 1. The effects of ginger extract a. The growth of Lact. plantarum ATCC 8014 and Lact. fermenti ATCC 9338 tended to be stimulated as the amount of extract added into the medium increased in a certain amount (3.64mg soluble solid/ml). b. The pH of the culture medium of Lact. plantarum ATCC 8014 became lower to some degree and acid production tended to be stimulated but acid production of Lact. fermenti ATCC 9338 tended to be suppressed as the amount of extract added in a certain amount (3.64mg soluble solid/ml) increased. 2. The effect of garlic extract a. The growth of Lact. plantarum ATCC 8014 and Lact. fermenti ATCC 9338 tended to be stim ulated as the amount of extract added in a certain amount (31.7 mg soluble solid/ml) increased. b. The acid production of Lact plantarum ATCC 8014 was suppressed (p<0.01) and drop in pH was suppressed (p<0.05) as the amount of extract added in a certain amount increased. In case of Lact. fermenti ATCC 9338, the acid production t ended to be suppressed also. 3. The effects of red pepper extract a. The growth of Lact. plantarum ATCC 8014 and Lact. fermenti ATCC 9338 tended to be stimulated as the amount of extract added in a certain amount (14.5 mg soluble solid/ml) increased.

A basic study on the introduction of safety management system for the costal/offshore fishing vessels in Korea (연근해어선 안전관리체제 도입에 관한 기초 연구)

  • This study analyzed the condition of marine accident and disaster rate of crew of Korean fishing vessels by vessel type, and checked the Australian safety management system and relevant regulation in Korea to suggest measures to build coastal/offshore fishing vessel safety management system in Korean coastal/offshore fishery. As a result, the power and production amount of Korean coastal/offshore fishing vessel is consistently decreasing while marine accident is increasing. Disaster rate of crew was higher than land industry, especially, the disaster rate of coastal/offshore fishing vessel was very high (100.0‰). Australia applies safety management system differed by vessel type and operation waters which fully considers the characteristics of pertinent vessel. The average accident rate of fishing vessels with gross tonnage over 20 tons among the Korean coastal/offshore fishing vessel was 13.6%, which was significantly higher than fishing vessels with gross tonnage below 20 tons (1.4%). Such result indicates it is urgent to implement safety management system to fishing vessel with gross tonnage over 20 tons and introduce fishing vessel safety supervisor. Establishing safety management system of coastal/offshore fishing vessel will contribute to consistent industrial development by achieving the general goal of reducing marine accident and spreading safety culture.
