Directions for Eco-friendly Utilization and Industrialization of Fishery By-products (수산부산물의 발생·처리 실태 및 산업화 방향)

  • The study aims to identify the generation and treatment of fishery by-products in Korea and suggests future directions and strategies for their eco-friendly utilization and industrialization. First, the study focuses on the identification of the generation and their treatment in Korea since merely few study were conducted and they did not provide enough information regarding the overall generation and treatment at the national level. According to the estimation, Korea generates 800 thousand to 1,200 thousand tones of fishery by-product every year. The fishery by-products generated at large seafood markets and processing facilities are used or processed as fish meal and feed, but those generated from households and small seafood restaurants are currently treated as food waste. In addition, inadequately treated fishery by-products cause various problems such as spoiling urban landscape, creating odor and incubating pest. After identifying the generation and treatment of fishery by-products, the study suggests directions for the formulation of infrastructure for transition into resource circulation society, minimization of dumped waste and their eco-friendly recycling as resources, diversification of recycled goods and development into a high-value added industry. Finally, the study suggests detailed strategies for the directions such as establishment of legal and institutional foundation, separation of fishery by-products from wastes, development of technology tailored for commercialization, introduction of pilot projects for industrialization and cultivation of social enterprises.

Processing of Dried Products of Ascidian , Halocynthia roretzi (우렁쉥이 건제품 개발에 관한 연구)

  • In this study, processing of dried products of adcidian , Haocynthia roretzi, were investigated, which has been cultured in the south and east coast of Korea in recent years. Raw ascidians were shucked , gutted, soaked and then drained. Seven kinds of dried ascidian meats were prepared : boiled in 5% slat solution for 10 min and hot-air dried (A)-sun dried (B) or hot-air dried (C) after soaking for 1 min in 0.2% NaHSO3 solution , sun dried (D) or hot -air dried (G) after treating for 15 sec in 5% liquid smoke solution, and sun dried (E) or hot -air dried (F) after blanching for 30 sec in boiling 5% salt solution added with 0.2% NaHSO3. The moisture contents, water activity of the products showed little change and VBN gradually increased during storage at 25 $\pm$2$^{\circ}C$. The TBA and POV values of the liquid smoked dried ascidian (product D, G0 were considerably lower than those of others, In fatty acid composition 22 : 6 , 20 : 5 : 16: 0 and 18 : 1 acid were predominant. Conditions adopted in products D and G had a good antioxidative effect on highly unsatuated fatty acids during the storage. The contents of inosine and AMP of products were higher than those of other nucleotide and their related compounds. Judging from the results of chemical experiments and sensory evaluation, the sample A, D and G were most desirable and they could be preserved more than 120 days at room temperature(25$\pm$2$^{\circ}C$).

  • As a result of survey the dealings amounts of agricultural products in the public management wholesale market from 1997 to 2009 for 13 years, that makes composted of 54,706 tons in 1997, 130,345 tons in 2003 by increasing 238%, that is resulted of about 20% increase every year. As a result of survey the dealings money of agricultural products in the public management wholesale market from 1997 to 2009 for 13 years, that makes composted of 168,074 million won in 1997, 323,232 million won in 2003 by increasing 192%, that is resulted of about 16% increase every year. It has corelation with dealings amounts and money each other, also appeals to transition without discrimination, but making high amounts than money. It is divided into excellent, good and poor products according to freshness, pileus size, color and stem length to forwarding method field survey in farm produce wholesale market.

  • Selenium(Se) is an essential trace element in the human body. Main function of this element is a catalytic part of antioxidant enzymes that protect cells against the attacks of free radicals that are produced during normal metabolism of the body. Se is also essential for normal function of the immune system and thyroid gland. It also appears to be a key nutrient in counteracting the development of virulence and inhibiting HIV(human immunodeficiency virus) progression to AIDS. It is also required for sperm motility and reduces the depression. Therefore, it is very meaningful that livestock producers generate Se-fortified animal products, such as Se-egg, Se-milk, Se-pork, Se-chicken and Se-beef from the point of producers as well as human heath. However, regulation on Se usage and Se-fortified food/feed is far from being clear in Korea even though Se should be carefully monitored because of its toxicity. Thus, one has to be aware of Se properties when designing Se-fortified animal products.

  • This study was performed to identify and assess food hazards during dry laver processing. Samples including raw materials, intermediates, and finished products during dried-laver processing were collected from seven dried-laver processing facilities, and microbial analyses were conducted. Microbial levels such as total coliforms and total viable cell count (TVC) increased as the processing steps progressed. TVC and total coliforms ranged from <30 to $9.1{\times}10^7$ CFU/g and <18 to 27,600 MPN/100 g for intermediates and finished products obtained during dried-laver processing, respectively. However, no fecal coliform was detected in the samples. Additionally, food-borne bacteria including Bacillus cereus, Listeria monocytogenes, Salmonella sp., Staphylococcus aureus, and Vibrio parahaemolyticus were not identified in finished products. For heavy metal content, arsenic ranged from 30.18 to 39.05 mg/kg, mercury from 0.005 to 0.009 mg/kg, and cadmium from 0.076 to 0.318 mg/kg dry mass in all finished products. However, lead was not detected in samples tested in this study. In conclusion, dried-laver products were safe based on the levels of food-borne bacteria and heavy metal contents. However, it is important to reduce total viable cell counts and total coliforms during dried-laver processing.

Economic Valuation of the Off-Shore Fisheries Stock Enhancement Project (근해 수산자원 증대사업의 경제적 타당성 평가)

  • This study is to evaluate the prior economic feasibility of the off-shore fisheries stock enhancement project. The main findings of this study can be summarized as follows: first, offshore fisheries stock enhancement project shall be implemented by dividing them into 1st·2nd·3rd projects for efficient promotion. The 1st·2nd·3rd projects will be conducted in a total of 50 locations (the eastern sea, the western sea, the southern sea, and the jeju sea areas), and the project period per unit will be five years, which will cost 1 trillion won. Second, according to the results of the survey on public awareness, the most consumed marine species in Korea over the past year were analyzed in the order of mackerel, hairtail, squid, yellow corvina, blue crab, and cod. The dominant response to the reason for consuming marine products in Korea was healthy well-being food and safe food. In addition, 67.9% of them have hesitated to purchase offshore fish species over the past year due to high prices, indicating that they are burdened by high prices. On the other hand, 79% of the respondents said that the government's policy was insufficient, according to a survey on whether the government's coastal marine resource creation policy was sufficient. Third, as a result of preliminary economic analysis of offshore fisheries stock enhancement project, the benefit-cost ratio is 4.01, net present price is 1,283.7 billion won, and internal rate of return is 91.7% per year, which means that the economic analysis ensures the feasibility of the projects. The results of this study provide useful information on securing or organizing budgets for offshore fisheries stock enhancement project by securing economic feasibility as a national infrastructure project that increases fishery income and public benefits such as consumption of marine products.

Physiological Activities and Amino Acid Compositions of Korean Dried Laver Porphyra Products (국내산 마른 김(Porphyra)의 생리활성 및 아미노산 조성 비교)

  • The physiological activities and amino acid compositions of dried lavers of Porphyra from the Jangheung, Seochen and Haenam coasts were determined. The ethanol extract of the Haenam dried laver exhibited the greatest 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity (56.1%), ferric-reducing antioxidant potential (FRAP) value(86.5 mM) and total polyphenol content (3.51 ppm) of these dried laver products. In addition, there was a strong positive correlation between the antioxidative activity and total polyphenol content of the laver products, suggesting that polyphenol compounds contribute to the antioxidant capacity in the ethanol extract of dried laver. However, there was no difference among the extracts in terms of cell proliferation activity. Fourteen combined amino acids were identified in oligopeptides from the dried laver products. Of the three extracts, that of the Haenam dried laver contained the highest levels of both free and total amino acids including alanine, glutamic acid, taurine, phosphoserine, and aspartic acid.

  • This paper aims to find out the problems and improvement direction of quality control and hygiene management of fishery products in Korea. For this reason, we conducted a comparative analysis of quality control and hygiene management of fishing, landing and selling between Japan and Korea, taking mackerel as an example. Japan has established a systematic freshness management system from fishing to landing (production) areas and consumption areas. On the other hand, Korea is not fully lead-managed in the production area after fishing, and is distributed in a state where the quality of the product is deteriorated due to exposure to room temperature. Accordingly, a certain quality can not be secured at the final consumption stage, and sanitary problems occur. In order to improve the quality control and hygiene management of the fishery products, the following needs to be improved. First, we will improve the fishing level freshness management system. Second, we will improve the quality control and hygiene management of fish in the production area and wholesale stage. Third, we will promote the introduction of innovative sales and consignment sales systems at the production stage. Fourth, we will establish a consistent low temperature distribution system from the production area to the wholesale stage from a long-term perspective. Fifth, we will promote the development and education of manuals on fish quality and hygiene management.

Biological Estimation of Waste Products from Olive Flounder (Paralichthys olivaceus) Fed on Three Different Feed Types

  • Waste products were biologically estimated from juvenile flounder (Paralichthys olivaceus) on three diet types-raw fish-based moist pellets, moist pellets, and extruded pellets. Total solid and soluble wastes were estimated by determining nutrient digestibility and accumulation in juvenile flounders through growth trials. Total solid wastes produced were 20%-23% of the organic matter supplied. Soluble excretions ranged from 45% to 49%. Soluble nitrogenous excretions ranged from 36.4% to 46.2%. These results indicate that about 30.2%-35.9% of supplied feed is retained in the fishes' bodies while the remainder of feed is excreted into culture systems or the surrounding environment.

Forecasting the Wholesale Price of Farmed Olive Flounder Paralichthys olivaceus Using LSTM and GRU Models (LSTM (Long-short Term Memory)과 GRU (Gated Recurrent Units) 모델을 활용한 양식산 넙치 도매가격 예측 연구)

  • Fluctuations in the price of aquaculture products have recently intensified. In particular, wholesale price fluctuations are adversely affecting consumers. Therefore, there is an emerging need for a study on forecasting the wholesale price of aquaculture products. The present study forecasted the wholesale price of olive flounder Paralichthys olivaceus, a representative farmed fish species in Korea, by constructing multivariate long-short term memory (LSTM) and gated recurrent unit (GRU) models. These deep learning models have recently been proven to be effective for forecasting in various fields. A total of 191 monthly data obtained for 17 variables were used to train and test the models. The results showed that the mean average percent error of LSTM and GRU models were 2.19% and 2.68%, respectively.
