우렁쉥이 껍질로부터 정제된 섬유소 첨가 어묵의 품질특성 (Quality Properties of Fish Paste Prepared with Refined Dietary Fiber from Ascidian (Halocynthia roretzi) Tunic)

  • 우렁쉥이 껍질로부터 정제한 섬유소 슬 러리를 각각 2.5%, 5% 및 10% 첨가하여 기능성 어묵을 제조하고 기계적 물성, 전단력, 색 도 및 관능 평가를 수행하여 제품의 품질을 평가하였다. 기계적 조직감 측정 결과 섬유소를 첨가할수록 견고도, 부착성, 껌성, 씹힘성 및 전단력이 증가되었고, 수분활성도와 색도는 유 의적인 차이가 없었다. 관능검사 결과 모든 시료의 색택, 조직감 및 전반적 기호도에서 유의 적인 차이가 없었으나 5% 첨가구를 선호하는 것으로 나타났다.

Dimethylhydrazine으로 처리한 쥐에서 식이섬유소와 지방종류가 대장의 종양발생율과 세포증식에 미치는 영향 (Effect of Dietary Fiber and Fat on Tumor Incidence and Cell Proliferation of Colonic Mucosa in DMH-Treated Rats)

  • This study was designed to observe the effect of dietary fiber and fat on colon tumor incidence and cell proliferation. Male Sqraue Dawley rats(n=225) at 7 weeks of age, were divided into 3 groups depending on the type of fat b(beef tallow, corn oil and DHA-rich fish oil) and each group was again divided into 3 groups depending on type of fiber(fiber-free, perctin and cellulose) . The experimental diet containing dietary fat at 15%(w/w) and fiber at 6%(w/w) levels was fed for 25 weeks. At the same time, each rats was intramuscularly injected with DMH two times a week for 6 weeks to geive total dose of 180mg/kg body weight. Cell proliferation was measured by in vivo incroporation of bromodeoxyuridine (BrdU) into DNA. Fish oil decreased the tumor incidence (9.67%) compared with beef talow (33.39%) and corn oil (21.21%). Tumor incidence was decreased in all groups that fed cellulose (11.67%) compared with those of fiber-free(21.74%) and pectic(19.70%). Most of tumors was distributed at the site of the distal colon. The rats fed both fish oil and cellulose significantly decreased th enumber of tumors and tumor incidence compared to other groups. Fish oil was more effective in preventing cell prolofieration by decreasing crypt length and labeling index(LI) compared with beef tallow(p<0.05). Cell proliferation in distal colon was more developed to the upper part of the crypt compared to proximal colon. Overall tumor incidence and cell proliferation were more affected by dietary fat. But the effect of dietary fiber was different depending on type of fat in the experimental diet. These results suggest that a DHA -rich fish oil may has more decisive effect in inhibiting the cell proliferation in colon.

Effects of Dietary Fats and Fibers on Modulation of Biomarkers and Tumor Incidence in Rats during 1, 2-Dimethylhydrazine-Induced Colon Carcinogenesis

  • This study investigated the effect of different dietary fats and fibers on colon tumor incidence and cell proliferation, the levels of eicosanoids and polyamines in colonic mucosa of DMH-treated rats. The experiment was conducted on male Sprague Dawley rats using a 2 $\times$3 factorial design with two fats (corn oil and DHA-rich fish oil) and two fibers (cellulose and pectin) and a fiber-free control. The rats were find an experimental diet containing 15% (w/w) dietary fat and 6% (w/w) fiber for 25 weeks. Tumor incidence was Bower in rats fed fish oil as opposed to corn oil. The levels of arachidonic acid (AA) and eicosanoids ($PGE_2, and TXB_2$) in normal colonic mucosa were significantly lower in rats fed fish oil and there was a concomitant increase of docosahexaenoic acid (DHA). The levels of eicosanoids and AA in tumor tissues were significantly higher than those of normal colonic mucosa. The level of polyamines in normal colonic mucosa was not affected by dietary fats but was significantly lower than that in rumor tissues. Dietary fiber did not have a significant effect on rumor incidence and the levels of AA, eicosanoids and polyamines. Overall, fish oil rich in DHA reduced cell prolifiration and thus inhibited colon carcinogenesis through its effect on the distribution of AA and production of eicosanoids in normal colonic mucosa. However, its effect on colon carcinogenesis revealed a lack of consistency depending on the type of dietary fiber in diet.

FEEDLOT PERFORMANCE AND CARCASS CHARACTERISTICS OF LOCAL (DHOFARI) AND EXOTIC (CASHMERE) GOATS FED ON A HIGH-FIBER BY-PRODUCTS DIET SUPPLEMENTED WITH FISH SARDINE

  • In the first of two experiments, liveweight gain responses and carcass characteristics were investigated using two breeds of growing male goats, local (Dhofari) and exotic (Cashmere), fed on a whole pelleted-high fiber date by-products' based diet at 32.5% level (As-fed) supplemented with 12% fish (sardine), (HF-Fish) and a commercial concentrate diet (conc.). The (HF-Fish) diet was formulated to be iso-nitrogenous to the (conc.) diet, supplying 14% CP (DM-basis). Both diets together with Rhodes grass hay (Chloris Guyana) were fed ad libitum. The experimental design was a complete random arranged in a $2{\times}2$ factorial with breeds and diets as the main factors, using six animals per treatment. The experiment lasted for 84 days and goats were penned individually. At the end of the feeding trial, three animals from each treatment group were slaughtered for carcass evaluation. In experiment 2, diets' digestibility and N-balance were determined using 3 sheep per diet. The (HF-Fish) diet significantly(p < 0.05) improved liveweight gain. There was also a significant difference(p < 0.01) between breeds, with Cashmere gaining more than local goats. Feed conversion efficiency, dressing percent and longissimus dorsi area were not significantly affected by diet or breed(p > 0.05). Digestibility of the proximate components and N-balance for both diets were similar and not significantly different(p > 0.05). Fish supplementation greatly improved the digestibility of CF, ADF, NDF, cellulose and hemicellulose. Meat production ost was decreased by 31% due to feeding of the (HF-Fish) diet.

어육장과 산채어육된장의 영양성분 분석 (The Nutritional Analysis in Fish/Meat/Doenjang and Wild Herbs/Fish/Meat Doenjang)

  • The objectives of this study were to nutritionally evaluate Korean traditional fermentation food, Doenjang, and compare the nutrients in fish/meat-Doenjang and herb/fish/meat-Doenjang. In Doenjang, sugar, protein, fat, dietary fiber, and minerals, such as sodium and calcium, were analyzed using HPLC and the ICP analysis method authorized by the Korean Food Standards Codex. Doenjang is known to prevent arteriosclerosis, cancer and hypertension, and to aid liver function, as well as serving as a protein source. Doenjang, fish/meat Doenjang, and wild-herb/fish/meat Doenjang were made according to the original recipes in antique cookbooks. The highest levels of calories, carbohydrates, and sugar were contained in wild-herb/fish/meat Doenjang. Carbohydrate in the fish/meat Doenjang was higher than in ordinary Doenjang, and ordinary Doenjang had the lowest amount of sugar. Fat was shown to be the most abundant in fish/meat Doenjang, and the least abundant in ordinary Doenjang. Fish/meat Doenjang contained the most Na content, while wild-herb/fish/meat Doenjang had the lowest Na content. In terms of dietary fiber, ordinary Doenjang contained the most, while a wild-herb/fish/meat Doenjang contained the least. Ca content was shown to be most abundant in Doenjang, and the least abundant in fish/meat Doenjang.

어류 가두리에 적용하기 위한 황동 직조 어망의 성능 평가 (Evaluation of brass weaving fishing nets for aquaculture cage applications)

  • Most fishing nets used in fish cage aquaculture are made of synthetic fibers such as polyamide (PA) and polyethylene (PE). Therefore, it is challenging to maintain the internal volume of the fish cage due to biofouling, which can increase the load on the cage or reduce dissolved oxygen levels by impeding smooth current flow. To address this issue, research has been conducted to replace conventional synthetic fiber cage nets with brass nets, demonstrating certain benefits such as improved productivity and ease of fish cage management. However, given the need for a more thorough examination of brass fishing net weaving technology and performance, this study assessed the optimal weaving method for brass fishing nets to be used in fish cages. Additionally, it provided essential data for the practical application of brass fishing nets by evaluating their weight, tensile strength, elongation, fatigue resistance, and wear resistance. The study concluded that weaving brass fishing nets using the chain link method ensures durability, ease of installation, and compact storage in a scroll-like form. Moreover, due to their superior fatigue and wear resistance properties, brass nets can offer increased utility if appropriate net diameter and length are selected to compensate for their higher weight per unit area and relatively higher cost compared to existing fiber fishing nets.

부어초 개발에 관한 기초 연구(I) - 인조섬유 로우프의 정적시험 - (A Basic Study on the Development of Floating Fish Aggregating Devices , Part I - Laboratory Static Tests on Synthetic Fiber Ropes -)

  • 해양 공간에 설치되어 유체의 흐름과 지형에 변화를 주며, 대상 수산 생물의 유집에 의한 생산 어장의 조성과 치어의 보호 육성을 도모하는 중효한 어장 시설인 인공어초의 기술 개발은 점차 다양화되어지고 있다. 부체부와 계류부로 구성되어 있는 부어초의 개발에 있어서는 부어초의 특성 및 안전상 계류시스템의 설계가 극히 중요한 부분이 된다. 이 논문에서는 부어초의 계류시스템에 많이 사용되어지는 나일론, 폴리에스터와 폴리에틸렌으로 이루어진 인조섬유로우프의 정적시험의 과정과 그 결과로서의 Creep거동 및 하중-인장 곡선을 얻었다. 특히 나일론 로우프의 경우 수중에서 20%내외의 강도 하락(Strength drop)이 관찰되며, Creep 시험 곡선은 대수시간 축(longerithmic time axis)상에서 직선을 유지하고, Flessner's formula와 평행한 결과를 얻었다.

망상어 척출자궁(剔出子宮)에 대(對)한 자율신경계(自律神經系)의 작용(作用) (Actions of Autonomic Drugs on the Uterine Muscle of Ditrema Temmincki Bleeker)

  • The author studied the actions of autonomic drugs on the uterine muscle isolated from Ditrema temmincki Bleeker, and the results obtained were summerized as follows. 1) The motility of the fish uterus was stimulated by epinephrine, norepinephrine and phenylephrine, but inhibited by isoproterenol. 2) The inhibitory effects of isoproterenol on the fish uterus was not affected by phenoxybenzamine, but blocked by propranolol. 3) The excitatory effects of phenylephrine on the fish uterus were blocked by phenoxybenzamine, but stimulated by propranolol. 4) The excitatory effects of epinephrine and norepinephrine were reversed by phenoxybenzamine and stimulated by propranolol. 5) The motility of the fish uterus pretreated with phenoxybenzamine and propranolol was not affected by isoproterenol, phenylephrine, epinephrine and norepinephrine. 6) It seemed that the uterine muscle of the fish had both alpha excitatory and beta inhibitory receptors. 7) The motility of the uterus of the fish was stimulated by acetylcholine. The stimulating action of acetylcholine was antagonized by atropine. 8) The motility of fish uterus was not affected by nicotine and DMPP. The actions of these drugs were not affected by pretreatment with hexamethonium and atropine. 9) It is, therefore, concluded that there are not present ganglia cells furnished with cholinergic fiber in the uterine wall of the fish.

돌돔(Oplegnathus fasciatus) 사료의 어분대체원으로서 DHA가 다량 함유된 발효대두박의 효과 (Effects of DHA-rich Fermented Soybean Meal as a Dietary Protein Replacement for Fish Meal in the Parrot Fish Oplegnathus fasciatus)

  • This study determined the level of fermented soybean meal (FSM) that could be substituted for fish meal in the diet for parrot fish Oplegnathus fasciatus. Fish meal (FM) was used the sole protein source in the control diet. FSM was substituted for 20, 40, 60, 80, and 100% of the fish meal in the experimental diets. The FSM resulted in increased crude protein, crude fat, and crude ash, but decreased crude fiber. The methionine and tryptophan contents in the FSM increased, while lysine and threonine decreased. The 18:2n-6 fatty acid content decreased from 55.30% to 28.67%. Fermentation increased 20:5n-3 (EPA) and 22:6n-3 (DHA) by 2.03% and 15.54%, respectively, although the differences were not significant. Based on growth performance, we concluded that FSM could replace up to 60% of FM for the maximum growth of juvenile parrot fish.
