일부 농어촌과 도시 청소년들의 영양소와 식이섬유 섭취실태 (Estimation of Nutrients Intakes and Dietary Fiber Intake of Teenagers in Urban, Fishing, and Rural Areas.)

  • Dietary fiber(DF) intake of teenagers was estimated and the major food sources of fiber were analyzed using three-day food records and data from 365 middle school students in urban, rural and fishing areas. Mean dwily DF intake of males was 9.2$\pm$3.9g in urban, 10.4$\pm$5.4g in rural, and 7.9$\pm$4.0g in fishing areas and the intake of female was 10.6$\pm$5.1g in urban, 10.6$\pm$5.2g in rural, and 7.7$\pm$3.3g in fishing areas. When related to energy intake, female consumed more DF(5.7$\pm$2.5g/1000㎉, 7.0$\pm$3.5g/1000㎉, 4.6$\pm$2.2g/1000㎉, in urban, and rural, fishing areas respectively) than males(4.2$\pm$1.3g/1000㎉, 4.6$\pm$1.5g/1000㎉, 4.4$\pm$2.0g/1000㎉ in urban, rural, fishing respectively). Mean crude fiber(CF) intake of males was 4.1$\pm$1.7g, 4.5$\pm$2.4g, 3.7$\pm$2.4g, and female's intake was 4.7$\pm$1.9g, 4.8$\pm$2.2g, 3.7$\pm$1.9g in urban, rural, and fishing areas respectively. The mean DF : CF ratio for the subjects was 2.2-2.6, indicating that the DF intake is 2-3 times that of CF intakes. The intakes of the two measures of fiber were highly correlated(r=0.7781) . The major food sources for DF were cereals, vegetables and fruits and the percentage contributions of the food groups to the DF intake were 27-37$\%$, 22-30$\%$, and 11.5-19.7$\%$ respectively. The present study indicates that the DF intake of teenagers is considerably lower than the recommended level and they need to consume more DF than that indicated by the present levels. The importance of nutrition education on health and dietary pattern should also be emphasized among teenagers.

Dietary Fiber가 흰쥐의 철분흡수억제에 미치는 영향 (The Inhibitory Effect of Dietary Fiber on Iron Absorption in Growing Rats)

  • This study was undertaken to make comparative study on the effect of kinds(Cellulose, Agar) & contents(2.5%, 5%, 10%) of the dietary fiber with the normal Fe intakes(66ppm) on the Fe metabolism in rats during the four weeks of growth period Sixty-four male rats of wistar strain weighing $76.2\pm2.5g$ were randomly designed to one of the 8 groups. All the groups received basal diet with 9% casein and no acorbic acid. The results obtained are summarized following; 1) Feed consumption per 100g b.w. & body weight gain in normal Fe intake groups tended to be higher than Fe deficient groups, but, there was no significant difference among the 8 groups. However, body weight gain & feed consumption in cellulose sloops were significantly higher than agar groups in all the levels tested.(P<0.01). 2) Fecal Fe excretion per 100g b.w. increased significantly with increase in dietary fiber during the four weeks, but there was no significant increase in fecal weight per l00g b.w. & urinary Fe excretion. 3) Hemoglobin concentration & hematocrit decreased slightly in SFe-10% up with SFe - C group after fourth weeks, but, the difference was not significant. 4) In cellulose groups, serum-Fe remakendly decreased & TIBC increased with increase in the levels of cellulose during the fourth weeks. In agar groups, serum-Fe & TIBC tended to decrease with increased dietary fiber intake. Therefore, at high intakes of both fibers, the levels of transferrin saturation were similar to that of DFe group. 5) Contents of Fe in liver, kidney & spleen increased significantly only in 10% agar diet. The remaining 7 groups did not differ significantly. It may imply agar affect in Fe utilization from storage in rats. In conclusion, inhibitory effect of dietary fiber on Fe absorption depended upon the kinds & level of consumption Results from the present study shoves the effects of purified dietary fiber on Fe absorption in gastrointestinal tract and it may be different from those of dietary fibers consumed as a part of complex diet.

맛 선호도가 학령기 아동의 체위 및 영양소 섭취량에 미치는 영향 (The Effect of Taste Preference on Anthropometric Measurements and Nutrient intakes in Children)

  • This study investigated the effect of taste preference(sweet, sour, salty, hot) on anthropometric measurements and nutrient intakes of 256 primary school children in Kwangju. There was no significant difference in the anthropometric measurements according to the sweet taste preference. Height, weight, triceps, abdomen, and chest circumferences of the group preferring a sour taste, however, were significantly lower than those of the other groups. The height of the group preferring a salty taste was significantly shorter than that of the other groups and there was a tendency toward high systolic blood pressure and diastolic blood pressure. The waist circumference of the group not preferring the hot taste was larger than those of the other groups. There was no significant difference in the energy intake according to the sweet taste preference. The protein intake of the group preferring a sweet taste as significantly lower than that of the other groups. The fiber intake of the group preferring a sour taste was significantly higher than that of the other groups. There were no significant differences in the nutrient intakes according to the salty taste preference. The energy intake of the group preferring a hot taste was lower than that of the other groups. The results show that children's taste preferences influence anthropometric measurements and nutrient intakes. These results suggest that children's eating behaviors are in needs of correction. The findings of this study should be applied to nutrition education to ensure better physical fitness of children.

당뇨병 노인군과 대조군의 영양소 섭취실태 및 혈장지질 양상비교 (Comparison of Dietary Intakes and Plasma Lipid Levels in Diabetes and Control Elderly)

  • This study was done to investigate and compare the nutritional status and plasma lipids in the diabetes and control elderly. Subjects were 105 persons (male 32, female 73) aged over 65 years and visited public health centers in Ulsan area. The subjects were divided into 2 groups, diabetes and control group. Athropometric measurement, dietary intakes, and plasma biochemical indices were examined. Body Mass Index (BMI), Percentage of Ideal Body Weight (PIBW) and Waist-Hip Ratio (WHR) of diabetes group were higher than those of control group. Overall eating behavior were worse in diabetes group than those of control group. There was no significant difference in smoking and exercise status among groups. The ratio of drinkers was significantly higher in control group. But the amount of alcohol consumed at once was higher in the diabetes group. There was no significant difference in most nutrient intakes between males and females. The intakes of fiber, natrium (Na), vitamin A, and $\beta$-carotene were significantly higher in diabetes group than control groups while that of potassium (K) was lower in diabetes group. Diabetes group had the higher levels in triglyceride, VLDL-cholesterol, Chol/HDL-cholesterol ratio, LDL/HDL-cholesterol ratio, while they had lower HDL-cholesterol level. Overall results might imply that the elderly with diabetes have to be more careful to their meals and health-related behaviors to increase the likelihood of a healthier life.

우리나라 일부 여대생의 영양섭취실태에 관한 연구 -지방 및 단백질섭취의 질적 평가를 중심으로- (Investigations on Nutrient Intakes Among Korean Female College Students -Quality Evaluations for Fat and Protein Consumption-)

  • This study was performed to investigate the adequacy of dietary fat and protein intakes among female college students. Daily intakes of energy, fat, protein, major amino acids and other nutrients were measured in 52 female college students. Daily energy intake was 75.8% of the recommended intake. Fat and protein consist 19.2% and 16.7% of the total calorie, respectively. The average protein consumption per day was 105% of the recommended intake. Essential amino acids intakes were more than the recommended amounts which appears in the 6th edition of Recommended Dietary Allowances for Koreans. However, when the intake of each essential amino acid was compared to the recommended amino acid requirement pattern, these subjects did not meet the estimated requirements. There was a highly significant correlation between daily protein intake and lipid intake implying the major sources of protein in the diet were also major sources of fat. Daily intakes of dietary fiber, vitamin C, iron, and phosphorous were above the recommended levels of intake. However, blood hemoglobin concentration was marginal indicating dietary iron consumption is not a good marker for iron status. Also, calcium intake was only 63.5% of the recommended intake. Therefore, these results imply that main problems for these subjects are low energy consumption, low calcium intake, and the quality of protein. However, as opposed to the hypothesis, the main energy sources were not the food items high in saturated fats such as instant foods, which should be emphasized further.

한국 중년 남성의 연도별 체질량지수, 신체계측치, 식품 및 영양소 섭취량 변화 : 국민건강영양조사 결과(2001~2011) (Body Mass Index, Anthropometric Factors, and Food and Nutrient Intakes of Korean Middle-Aged Males by Year : Based on 2001~2011 Korea National Health and Nutrition Examination Survey (KNHANES))

  • This study investigated anthropometric and biochemical characteristics, food and nutrient intakes, and changes in body mass index (BMI) of Korean middle age men (40~49 yrs). Data on BMI, anthropometric (height, weight, waist circumference, body mass index, blood pressure), and biochemical (total cholesterol, HDL-cholesterol, LDL-cholesterol, triglyceride, hemoglobin, GOT, GPT) characteristics, food and nutrients intakes, nutrient density, and index of nutrient quality were obtained from the Fifth Korea National Health and Nutrition Examination Survey (KNHANES, 2001, 2005, 2011). Subjects were divided into three groups by year. Weight, BMI, and hemoglobin increased significantly by year. All anthropometric factors except height showed a positive relation with BMI by year. Consumption of barley, chinese noodle, confections, soybean milk, egg, ice cream, pizza, fried foods, banana, coffee, and raw rice wine increased significantly by year. Intake ratios of nutrients except water and fiber were over 100% of KDRI generally. INQ according to intakes of protein, calcium, phosphorus, iron, vitamin A, thiamine, riboflavin, and niacin per 1,000 kcal increased significantly by year. Distribution of BMI status of subjects showed a significant difference by exercise. The findings of the present study show that BMI of subjects increased by year, and intakes of all nutrients except calcium and riboflavin showed aspects of overnutrition by year. Intakes of fruits decreased while intakes of raw rice wine and coffee increased by year. Therefore, practical and systematic nutrition programs are required to maintain optimum BMI and appropriate intakes of nutrients to maintain a desirable lifestyle and improve dietary life.

제2형 당뇨병 환자의 영양소 섭취와 임상지표의 상관성에 관한 연구 (Study on the Correlation between the Nutrient Intakes and Clinical Indices of Type 2 Diabetes Patients)

  • The objective of this study is to investigate the effects of dietary nutrient intakes for markers of blood glucose and inflammation which is important to the progress of type 2 diabetes and the development of its complications. For this study, 76 adults with diabetes (42 males, 34 females) were recruited from a group of patients who had visited the department of endocrine medicine. Data on anthropometric characteristics, clinical indices such as hemoglobin A1c (HbA1c) and C-reactive protein (CRP), and dietary nutrient intakes were collected. Our results have shown that 66% of subjects were either overweight or obese. Serum analysis indicates that levels of C-peptide, glucose, HbA1c, CRP, triglyceride, LDL-cholesterol were higher than normal range. Results from the dietary nutrient intake survey displayed that intakes of cholesterol and sodium were higher than Dietary Reference Intakes for Koreans. On the contrary, folate intake was lower than the guideline. Within the females, energy contribution from carbohydrate was higher than Korean Diabetes Association guideline. Statistical analysis has revealed a negative correlation between serum HbA1c level and dietary intakes of polyunsaturated fatty acid (PUFA), n-3 PUFA, ${\beta}$-carotene and vitamin E after adjustments for age, BMI, smoking habits, alcohol consumption, exercise and ingestion of diabetes mellitus medication (p<0.05). Serum CRP level was inversely associated with dietary intakes of carbohydrate, protein, vitamin C and fiber (p<0.05). Our results suggest that dietary nutrient intakes may influence the levels of HbA1c and CRP, and subsequently, it may help in the management/treatment of type 2 diabetes.

영유아 보육시설의 영양관리 시범사업(I): 유아의 식생활 현황 (Baseline Dietary Behaviors of Children for Nutritional Management Programs at Child Care Centers in Korea)

  • The aim of this investigation was to collect the baseline data about growth, dietary behaviors, nutrient intakes and dietary quality of children at child care centers for planning nutritional management program. The dietary intakes were measured by weighing method for intakes at child care centers and by dietary records by children\\`s mothers for intakes at home. The weight and height were measured and calculated z-scores by using standard of the same age groups. The children were 163 boys and 168 girls and the mean age were 55.6 months(12-78 months) and 56.0 months(16-78 months). respectively. The Z-score for height(0.33) and weight(0. 11) showed that the growth of children were above average. Nutrients intakes such s energy, protein, fiber, iron, sodium, potassium, vitamin A, vitamin B$_1$, vitamin C, niacin of boys from lunch and snack at day care centers were significantly higher than those of girls, and the meals at child care centers provided 20-37% of RDAs. The daily energy intakes were 1332.2kcal(83.1% RDA), protein 44. 26g(109.3% RDA), calcium 437.73mg(72.4% RDA), iron 7.24mg(72.4% RDA), vitamin A 459.6RE(113.1% RDA),vitamin B$_1$ 0.74mg(93.4% RDA), vitamin B$_2$0.79mg(79.7% RDA), niacin 7.66mg(69.9% RDA) and vitamin C 56.84mg(142.1% RDA). The nutrients which more than 50% of subjects ate less than 75% RDA were calcium, iron, niacin, and vitamin B$_2$.The average mean adequacy ratio was 0.80 and mean dietary variety score was 22.42, and those are positively correlated to % RDA of nutrient intakes. In summary, the children using child care centers consumed most nutrients below level of RDA and the nutritional management program at child care center is required to enhance the nutritional status of them. 대학생의 식품 및 영양소 섭취 변화 - 1999년과 2009년의 비교 - (Changes in Food and Nutrient Intakes of College Students between 1999 and 2009)

  • The purpose of the study was to examine the changes of food and nutrient intakes of college students between 1999 and 2009. Dietary survey of 169 college students was conducted by a 24-hour recall method for three days in 2009. Food and nutrient intakes in 2009 were compared with the data from 106 students collected by the same methods in 1999. The intakes of cereals & grain products and vegetables in 2009 were lower than those of 1999, but the intakes of meats, eggs, milk & milk products, and manufactured food were higher. The intake of rice per person decreased greatly from 452.2 g in 1999 to 351.4 g in 2009 in males, and from 306.9 g to 237.2 g in females. While the intakes of protein, fat, thiamin, niacin, vitamin $B_6$, phosphorus, potassium, zinc, and cholesterol were significantly higher, the intakes of dietary fiber were significantly lower in 2009 compared to 1999 both in males and females. The nutrients consumed less than the Recommended Intakes were vitamin A, riboflavin, vitamin C, and calcium in males and additionally folate, iron, and zinc in females in both 1999 and 2009. The ratio of carbohydrate, protein and fat as energy was 61 : 15 : 24 and 60 : 14 : 26 in 1999, and 54 : 16 : 30 and 56 : 15 : 29 in 2009 in males and females respectively, showing that carbohydrate intake decreased and fat intake increased greatly. Our data suggest that nutrition education is necessary for college students to help them consume more vegetables and fruits and less fat and cholesterol.

  • This study was conducted to investigate the anthropometric data, serum profiles, food intakes frequency, and nutrient intakes of women aged 30-49 years. The subjects were divided into two groups: drinking group and non-drinking group. For the study, we obtained data for analysis from the combined 2008-2015 Korean National Health and Nutrition Examination Survey (KNHANES). Height and weight were 159.2 cm and 58.1 kg in the drinking group as well as 158.1 cm and 57.7 kg in the non-drinking group, respectively. Obesity percentage in the two groups were 22.5% and 24.8%, respectively. HDL-cholesterol (P<0.001) and Vitamin D (P=0.0248) levels in the drinking group were significantly higher than those of the non-drinking group. In the drinking group, rates of hypertension, myocardial infarction, and diabetes were significantly lower than those of the non-drinking group. Food and nutrient intakes, including energy, water, protein, fat, retinol, thiamin, riboflavin, and niacin, in the drinking group were significantly higher than those of the non-drinking group. In the two groups, energy, water, fiber, calcium, and potassium intakes were low while Na intakes were extremely high considering KDRIs (Dietary Reference Intakes for Koreans). The mean adequacy ratio (MAR) in the two groups was not significant.
