This study was carried out in order to investigate the status of food and nutrient intakes depending on the types of chronic disease of the elderly at welfare centers in Seoul. The total number of subjects was 299 elderly over the age of 60 (82 men and 217 women); they were grouped by the disease status: normal, cardiovascular disease (CVD), diabetes mellitus (DM) and arthritis patients groups. The dietary intakes were obtained by a 24-hour recall and analyzed by CAN-Pro 4.0; they were then compared with the dietary reference intakes for the Korean (KDRIs). In the results of anthropometric data according to chronic disease, the waist circumference of the normal group in males and females was lower than the other groups; in particular, the normal female group showed a lower level of waist-hip ratio, body mass index (BMI) and body fat % than those of the other groups. The arthritis group showed a higher intake of milk products than the other groups (p < 0.05); consequently, calcium intake was significantly higher than that of the other groups (p < 0.001). Vitamin A intake in the arthritis group was significantly higher than the intake in the normal and DM groups (p < 0.01). Normal and arthritis groups showed significantly higher intake of zinc and copper than the CVD group (p < 0.01). In general, about 80% of the subjects in this study revealed insufficient intakes of riboflavin, vitamin C, calcium, dietary fiber, vitamin D, biotin and potassium, compared with the estimated average requirement (EAR) or adequate intake (AI). However, sodium intake of all groups was higher than the AI of KDRIs. In conclusion, nutrient intake, according to the chronic disease, showed significant difference in some of the micronutrients, vitamin A, Ca, Zn and Cu. Therefore, we suggest that dietary guidelines, such as reducing the intake of salty foods and sweet drinks and increasing the intake of foods with sufficient calcium, vitamin D and vitamin C, are necessary to the improvement of eating habits for the elderly.
It has been suggested that dietary fat increases the risk of breast cancer by elevating serum estrogen concentrations. However, studies on a relationship between fat intake and breast cancer risk have shown contradictory results, possibly because the levels of fat intake in study populations were too high to observe differences. Also, the effect of other dietary factors may present. The present study was performed to investigate the relationship between diet and estrogen metabolism in premenopausal women whose usual fat intake is relatively low compared to their western counterparts. Twenty lacto-ovo vegetarians (LOV) and twenty omnivores participated in the study. Three day food records including a Saturday or a Sunday were used to estimate nutrient intake. Serum lipids, estradiol, sex-hormone binding globulin, and urinary estradiol were measured. Study results showed $24.8\%$ and $20.9\%$ of energy intake were provided from fat in omnivorous and LOV subjects, respectively. Serum and urinary levels of estradiol were two times higher in omnivores. Fat intake was not related to either serum estradiol nor urinary estradiol when the Spearman correlation coefficient analysis was performed. Carbohydrate, total dietary fiber and soluble dietary fiber intakes were negatively related to serum estradiol concentration. Legumes, vegetables and fruit consumption showed significantly negative relationships with both serum and urinary estradiol concentrations. These results indicate lower estrogen availability may be associated with plant foodbased diets in premenopausal women whose usual diets contain less than $25\%$ of energy as fat.
The aim of this study was to evaluate the effects of a nutrition education program for the elderly at a public health center located in Jinhae city. The one group pretest and posttest design was conducted using self-administered questionnaire survey. Nutrition education lessons based on social cognitive theory (2 hours/lesson, 3 times) were provided to 27 female elderly(${\geq}65$ yrs) for a month. After the nutrition education, number of exercise increased and preference for sweetness decreased significantly (p<0.05). The outcome expectations, the knowledge of nutrition (p<0.001), and behavioral capability (p<0.05) score were significantly increased. There were significant increases in all nutrient intake. NAR was increased significantly in protein, calcium and vitamin C (p<0.01), dietary fiber, iron, zinc, thiamin, niacin and folic acid (p<0.001), and riboflavin (p<0.05). INQ was increased significantly in thiamin, vitamin B6 and niacin (p<0.05), and dietary fiber (p<0.01). The score of nutrition education satisfaction was high (4.52). The results of this study suggested that the nutritional education program based on social cognitive theory had a positive effect on dietary behavior changes, and nutrition intake status among female elderly even after short-term intervention.
Nutrition fortification of processed foods with microelements is a popular practice in many countries to improve nutritional status of target population. In this study the current food fortification in Korea was evaluated and the regulations and guidelines for food fortification in other countries were presented. Most commonly added nutrients were calcium, vit.C, fiber, vit.Bs and iron. The level of fortified nutrients and the vehicle foods were variable. vit.C and fiber appeared to be overfortified in some foods and the necessity of fortification of these nutrients needs to be examined since the intakes of these elements appears to meet the RDA. Most of other nutrients such as vit.A, vit. $B_1$, vit. $B_2$, and iron were added at the level of 10~25% RDA per serving size. The vehicle foods for fortification were snacks, milk, ramyun, breakfast cereal, juices, candies and ready-to-eat retort pouch foods but not rice which is a staple food in Korea. The guideline and regulation for food fortification is required to ensure safe and proper supplementation of needed nutrients in processed foods.
The purpose of this study was to investigate the effects of a winter training camp on physical fitness, physical self-efficacy and nutrients intake in juvenile Taekwondo players. Sixty three subjects of male middle school student Taekwondo players participated in this study. Before and after attending Taekwondo winter training camp, Taekwondo related fitness and physical self efficacy and nutrients intake of subjects were measured and compared. The results of this study were as follows: 1) There were significantly improvements (p<0.001) in 1200m run, sit up, push up. 2) There was no significantly change in physical self efficacy. 3) There were significantly increase intakes (p<0.001) in total calorie, protein, fat, fiber, Ca, P, K, vitamin A, vitamin B2, vitamin B6, niacin, vitamin C and vitamin E. However, index of nutritional quality in fiber, Ca, K, vitamin A had not good assessment. These results suggested that a winter training seems necessary to keep psychological management and scientific dietary management as well as physical training in juvenile Taekwondo players.
The preparation method of a soluble dietary fiber from oak wood (Quercus mongolica) and the effect of the soluble dietary fiber on physiological function in rat fed high cholesterol diets was investigated. The best condition for steam explosion method was 25 kgf/㎤ pressure for 6 min. The exploded samples were delignified by the filtration treatment with 1% NaOH for several times, which is the best condition. The enzymatic hydrolysis of Cellusoft cellulase was more effective than Onozuka R-10 cellulase. The manufactured soluble dietary fiber was assayed using gel permeation chromatography (GPC) and it was dissolved in water. Average molecular weight distribution of manufactured soluble dietary fiber was about 348-1,200 and it was assumed the oligomer form fraction. In order to compare the manufactured soluble dietary fiber with commercial soluble dietary fiber (pectin) on the physiological function, Sprague-Dawley male rats weighing 100$\pm$10 g were randomly assigned to one normal diet and five high cholesterol diet containing 1% cholesterol. The high cholesterol diet groups were classified to fiber free diet (FF group), 5% pectin (5P group), 10% pectin (l0P group), 5% manufactured soluble dietary fiber (5M group) and 10% manufactured soluble dietary fiber (10M group). Body weight gains in all soluble dietary fiber groups were lower than FF group. Food intakes were increased in all soluble dietary fiber groups than that of FF group. Food efficiency ratio (FER) was significantly decreased in all soluble dietary fiber groups than that of the FF group, and it was especially was highest in 10% supplemented soluble dietary fiber group. The weight of liver of the soluble dietary fiber supplemented groups were lower than those of the FF group, but weights of cecum and small intestine of all supplemented soluble dietary fiber groups were significantly increased, compared with that of FF group. The weights and water contents in feces were significantly increased by the soluble dietary fiber. The activity of the glutamic oxaloacetic transaminase in soluble dietary fiber groups were significantly decreased than those of FF group. The hepatic glutathione S-transferase activity in all soluble dietary fiber supplemented groups were higher than that of FF group. The physiological effects of the manufactured soluble dietary fiber are the same as the commercial soluble dietary fiber (pectin). In Korea, there is an urgent need to identify nutrition-related risk factors for obesity, because the prevalence of these conditions continues to rise among Koreans. While some studies suggest that westernized dietary pattern may increase the risk of obesity, others do not support these findings. Longitudinal studies examined the role of dietary patterns in relation to changes in body fat composition. Nowadays rapid changes in dietary patterns are related to socioeconomic status and westernized diet. Major dietary changes include a large increase in the consuming of at in the diet and a fall in total cereal intakes and fiber. This research showed remarkable decline in the consuming proportion of the grains and vegetables. These results fit closely with the trend toward increased prevalence of obesity in Korea. Most longitudinal studies on these relationships among children and adults showed that the dietary patterns affected obesity. In conclusion, we need programs to promote healthy Korean diet pattern in Korea.
This study was carried out to investigate Mg status and the relationship between dietary Mg the blood pressure in 30 healthy women, 26 to 57 year of age, living in rural area of Korea. Dietary intake of the subjects on self-selected diet were recorded. Duplicated food sample and 24-hour urine samples were collected for 3 days. Mean daily dietary Mg intake levels were determined by chemical analysis of duplicated food samples and mean daily urinary Mg excretion was measured from urine samples. Fasting serum Mg levels of each subjects was measured on the 3rd day of the survey. The results were as following: 1) The mean daily intakes of energy, protein were 1770.36㎉ and 55.55g, respectively. Carbohydrare, fat and protein supplied 77.1%, 10.4% and 12.5% of total energy intake. 2) The dietary Mg showed positive correlations with carbohydrate(P<0.05), vitamin A and vitamin B2(P<0.01), energy, Ca, P, fiber, vitamin B1 and niacin(P<0.001), but negative correlation with SBP(P<0.05). 3) The daily mean intake of Mg was 259.07$\pm$74.54mg and the urinary excretion of Mg was 75.48$\pm$33.14mg which was 29.5% of the dietary intake of Mg. And there was no significance between the dietary intake and the urinary excretion of Mg. 4) The dietary fiber showed negative correlations with SBP and DBP(P<0.05). 5) The serum and urinary concentrations of Mg were normal range and the serum Mg showed negative correlation with dietary vitamin C(P<0.05, r=-0.3655). It was concluded that the dietary Mg level of Korean rural women consuming self-selected diets was lower than that of RDA of American women but higher than that of RDA of Canadian. And the dietary intake levels of Mg and fiber, which are contained mostly in cereals and vegetables are useful to prevent hypertention.

Six Holstein$\times$indigenous multiparous dairy cows, $60{\pm}8$ days in milk, were used in a double $3{\times}3$ Latin square design to investigate the efficiency of milk production. The dairy cows were randomly allocated to total mixed rations (TMR) containing ground corn, ground corn plus cassava chips 50:50 and cassava chips as main sources of total non-fiber carbohydrates. Ether extract and calculated energy intakes for dairy cows fed TMR containing cassava chips were lower (p<0.05) than those fed TMR containing ground corn and ground corn plus cassava chips 50:50. There were no differences (p>0.05) in daily DM intake (3.51, 3.41 and 3.29% BW), in 4% fat corrected milk (19.66, 20.59 and 20.23%), in milk protein (3.37, 3.27 and 3.33%), and in solids-not-fat (9.03, 8.90 and 8.99%) but there were differences in cost of diets per kg of 4% fat corrected milk (40.75, 34.33 and 28.17%; p<0.01) for dairy cows fed TMR containing ground corn, ground corn plus cassava chips 50:50, and cassava chips. It can be concluded that the efficiency of milk production (4% fat corrected milk per dry matter intake) for dairy cows fed TMR containing cassava was greater than for those fed TMR containing corn.
In order to observe the effects of resistant starches on human glycemic response, nine female university students were investigated using cellulose (CED), resistant starch 3 (RS3D) and resistant starch 4 (RS4D) diets. Each woman's blood sugar and insulin, triacylglycerol and free fatty in plasma concentration were measured at fasting state, then 15, 30, 45, 60, 75, 90 and 120 minute after each test diet feeding. Glycemic indices of the Cellulose diet (CED: 57.9 $\pm3.00$), the Resistant starch 3 diet (RS3D: 52.6 $\pm7.9$) and the Resistant starch 4 diet (RS4D: 52.9 $\pm10.2$) were similar to each other, but they were significantly lower in comparison with those of white wheat bread diet (WWBD: 100). Insulinemic indices of the CED (49.8 $\pm8.2$), RS3D (50.0 $\pm7.3$) and RS4D (72.4 $\pm7.7$) were significantly lower in comparison with the white wheat bread diet (WWBD: 100), but among the dietary fiber diets, the insulinemic index of RS4D was significantly higher than the CED and the RS3D. Plasma triacylglycerol contents of the CED, RS3D and RS4D including WWBD showed gradual increase in tendency after lowering in early stage of each test diet feeding, but not significantly different in each dietary fiber added diet. Plasma free fatty acid contents of the CED, RS3D and RS4D including WWBD showed gradual decrease in tendency after each test diet feeding, but not significantly different by each dietary fiber added diet. In above results, we speculate that resistant starch 3 controls rapid elevation of blood sugar by delaying intestinal digestion and absorption of cellulose, but the result appears to be different from RS4 in comparison. Thus, RS3 intakes may contribute to the diet therapy of diabetic humans, but more studies on RS4 is needed in the future. (Korean J Community Nutrition 9(4): 528∼535, 2004)
