Nutrient Intake and Breast Cancer Risk in Korean Women : A case - control study

  • To investigate the association between breast cancer risk and nutrient intake in Korean women, a case-control study was carried out. Incident cases (n=224) were identified through cancer biopsy between february 1999 and December 2000 at two university hospitals in Seoul. Hospital-based controls (n=250) were selected from patients in the same hospitals, during the same periods. food intake was investigated with semi-quantitative food frequency questionnaire (98 items) by a trained dietitian. Subjects were asked to indicate the average intake, for a 12-month period of three years prior to the baseline phase. In this study, no apparent association was found between fat intake level and breast cancer risk. High fiber intake showed a significant inverse association only among premenopausal women. In terms of antioxidant vitamins, $\beta$-carotene and vitamin C among premenopausal women and vitamin C intake among postmenopausal women was significantly associated with a decreasing risk of breast cancer. A protective effect of high calcium consumption was observed among postmenopausal women. In conclusion, our findings support epidemiological evidence that antioxidant vitamin intake could lower the breast cancer risk in Korea.

The Effect of Obesity and Nutrient intake on Serum IGF-1 and Serotonin Levels in School Children (초등학생의 비만도와 영양소섭취상태가 혈청 IGF-1과 Serotonin 농도에 미치는 영향)

  • To evaluate the role of obesity and nutrient intake on serum IGF-1 and serotonin levels in 80 elementary school children (aged 10. 8 yr, 47 boys, 33 girls), we investigated the anthropometric data and the nutrient intake by questionnaries including food daily record, and measured serum IGF-1 and serotonin using RIA and HPLC F-1050 respectively. We obtained the following results by obesity index (underweight-, normal-, obese group). The protein intake of normal group was higher than the others (p < 0.05). The underweight and obese groups had snacks more often than the normal group. The obese group preferred‘cookies’and‘fries’more than the other groups. The serum serotonin levels showed weak correlation with fat (r = 0.315, p < 0.01), fiber (${\gamma}$ = 0.280, p < 0.05) and energy intake (r = 0.242, p < 0.05), but no differences in anthropometric data by obesity index. The serum IGF-1 level was significantly correlated height (r = 0.649, p < 0.001), weight (r = 0.437, p < 0.001) and hip (r = 0.417, p < 0.001), but showed weak correlation with energy intake (r = 0.232, p < 0.05) and carbohydrate intake (r = 0.244, p < 0.05). In this study, we could see only partly correlation among the serum IGF-1 and serotonin and obesity and nutrient intake. Forker research is required into consideration of the essential role of these hormones during a growth period.

Bone Density and Nutrient Intake of University Students (대학생의 골밀도와 영양소섭취 실태에 관한 연구)

  • This study was conducted to investigate on bone density and nutrient intake of university students in Seoul area. Nutrient intake data were obtained by using the 24-hour recall method to evaluate the usual diet of the subjects. BQI(bone quality index) of the subjects was measured by an Quantitative Ultrasound (QUS). The results are summarized as follows: The average height, weight, BMI of the male and female student were 173.3 cm, 68.5 kg, 22.7; 161.4 cm, 54.2 kg, 20.8, respectively. The BQI and Z-score of the subjects were 99.50, -0.69 in male student group, and 82.6, -1.15 in female student group, respectively. Normal, osteopenia and osteoporosis percentage by bone status were 73.8%, 24.9%, 1.3% in male student group, and 39.8%, 57.6%, 2.6% in female student group, respectively. Energy intake of male and female group were 71.7%, 79.1% of EER(estimated energy requirement) respectively. Fiber, Ca, Vit $B_2$, niacin, folic acid, Vit C intake were less than RI(recommended intake) and protein, phosphorus intake were higher than RI in subjects. Nutrient intake were not significantly related with BQI in male and female groups generally.

The Inhibitory Effect of Dietary Fiber on Iron Absorption in Growing Rats (Dietary Fiber가 흰쥐의 철분흡수억제에 미치는 영향)

  • This study was undertaken to make comparative study on the effect of kinds(Cellulose, Agar) & contents(2.5%, 5%, 10%) of the dietary fiber with the normal Fe intakes(66ppm) on the Fe metabolism in rats during the four weeks of growth period Sixty-four male rats of wistar strain weighing $76.2\pm2.5g$ were randomly designed to one of the 8 groups. All the groups received basal diet with 9% casein and no acorbic acid. The results obtained are summarized following; 1) Feed consumption per 100g b.w. & body weight gain in normal Fe intake groups tended to be higher than Fe deficient groups, but, there was no significant difference among the 8 groups. However, body weight gain & feed consumption in cellulose sloops were significantly higher than agar groups in all the levels tested.(P<0.01). 2) Fecal Fe excretion per 100g b.w. increased significantly with increase in dietary fiber during the four weeks, but there was no significant increase in fecal weight per l00g b.w. & urinary Fe excretion. 3) Hemoglobin concentration & hematocrit decreased slightly in SFe-10% up with SFe - C group after fourth weeks, but, the difference was not significant. 4) In cellulose groups, serum-Fe remakendly decreased & TIBC increased with increase in the levels of cellulose during the fourth weeks. In agar groups, serum-Fe & TIBC tended to decrease with increased dietary fiber intake. Therefore, at high intakes of both fibers, the levels of transferrin saturation were similar to that of DFe group. 5) Contents of Fe in liver, kidney & spleen increased significantly only in 10% agar diet. The remaining 7 groups did not differ significantly. It may imply agar affect in Fe utilization from storage in rats. In conclusion, inhibitory effect of dietary fiber on Fe absorption depended upon the kinds & level of consumption Results from the present study shoves the effects of purified dietary fiber on Fe absorption in gastrointestinal tract and it may be different from those of dietary fibers consumed as a part of complex diet.

  • Dietary fiber is defined as soluble and insoluble polysaccharide consisted in the plant cell wall-associated fibers naturally occurring in fruits, vegetables, and cereal products, and of isolated fibers that are added to processed foods which are also artificially modified. There are so many difference types of dietary fibers as arabinoxylan, polydextrose chicory, oligosccharide. inulin, pectin, bran, cellulose, ${\beta}$-glucan, resistant starch and some seaweed polymers as alginate. Most of them provide many biological benefits in the intestine, as lower risk for developing coronary heart disease, stroke, hypertension, diabetes, obesity and some of the gastrointestinal disease like as colon cancer. And also lowering cholesterol levels, improves glycemic and insulin sensitivity to non-diabetic and diabetic persons including immune system. Beside of many benefits, average consumers in developed and under developing countries take far less amounts of dietary fiber that international organization recommended. Adequate intake of dietary fiber is 14g/1,000kcal base using the energy guide line of 2,000kcal/day for women and 26,000 kcal/day for men, dietary intake is 28g/day of adult women and 36g/day for adult men. The mechanisms behind the reported effects of dietary fiber on metabolic health are not fully well established. It is suggested that changes in intestinal viscosity resulting mucus increasing, macro-nutrients absorption, rate of passage of large intestinal, production of short chain fatty acids by fermentation. Production of gut hormones and changes of microbiota in intestine. It is necessary to do more research in this field in the future and combined interdisciplinary works together.

The Eating Behaviors, Nutrient Intakes and Hematological Status of Primary School Children in Gwangju (광주지역 일부 초등학교 아동의 식습관과 영양소 섭취량 및 혈액성상에 관한 연구)

  • The purpose of this study was to examine height, weight, chest circumference, sitting height, hemato logical status, eating behaviors and nutrient intakes for primary school children in Gwangju. The subjects consisted of 101 boys and 109 girls aged $10{\sim}12$ years old. There were significant differences in the height, weight, chest circumference, sitting height between the boys and girls. Hct, WBC, RBC, Hb, serum GOT, GPT and cholesterol were measured. With regard to meal regularity, 47.4% of the subjects has been 'regular'. With regard to meal volume, 15.8% of the subjects has been 'heavy'. With regard to meal balance, 44.7% of the subjects has been 'no'. The study also found that 63.4% of the subjects skipped breakfast, liked western food. Their dietary intakes were assesed for 1 day by means of 24 hours dietary recall method. The mean energy intakes of the subjects were 1,663kcal for boys and 1,427kcal for girls. The subjects for boys(girls) consumed 58(52)g protein, 43(60)g lipid, 4.8(6.5)g fiber, 470(514)mg calcium, 896(824)mg phosphorous, 9.6(16.4)mg iron, 3,301(3,468)mg sodium, 2,169(2,192)mg potassium, 388(466)RE retinol, 1.1(0.9)mg thiamin, 1.1(2.2)mg riboflavin, 12.2(26.3)NE niacin, 146(99)mg ascorbic acid and 251(159)mg cholesterol respectively. Energy, protein, calcium, iron and retinol intakes were lower than the Korean RDA. The intakes of fat, fiber, calcium, iron, sodium, retinol, riboflavin and niacin of the boys were significantly lower than those of the girls. There were positive correlations between meal time and protein intake or fat intake of fiber intake or iron intake or retinol intake : negative correlations between meal time and sodium intake : negative correlations between saltiness and cholesterol intake : positive correlations between use of perilla seeds and riboflavin intake or niacin intake : negative correlations between energy intake or carbohydrate intake or phosphorous intake : negative correlations between frequency of eating-out and protein intake or fat intake or fiber intake or iron intake or retinol intake or thiamin intake or riboflavin intake or niacin intake.

The Influence of Different Fiber and Starch Types on Nutrient Balance and Energy Metabolism in Growing Pigs

  • A repeated $4{\times}4$ Latin square design was conducted with eight ileal cannulated castrates to examine the effect of source of starch and fiber on nutrient balance and energy metabolism. Pigs were fed on one of the four experimental diets: Control diet (C) mainly based on cooked rice; and diets P, S and W with the inclusion of either raw potato starch, sugar beet pulp or wheat bran supplementation, respectively. With the exception of an increased (p<0.05) energy loss from methane production with diet S observed, no significant differences (p>0.05) in the ratio of metabolizable energy (ME)/digestible energy, the utilization of ME for fat deposition and for protein deposition, energy loss as hydrogen and urinary energy were found between diets. The efficiency of utilization of ME for maintenance was lower (p<0.05) with diets P and S than with diet C. The inclusion of fiber sources (sugar beet pulp or wheat bran) or potato starch reduced the maintenance energy requirement. The fecal energy excretion was increased (p<0.05) with either sugar beet pulp or wheat bran supplementation, while it was unaffected (p>0.05) by addition of potato starch. In comparison with diets C and P, a lowered ileal or fecal digestibility of energy with diets S and W was observed (p<0.05). Feeding sugar beet pulp caused increased (p<0.05) daily production of methane and carbon dioxide and consequently increased energy losses from methane and carbon dioxide production, while it did not influence the daily hydrogen production (p>0.05). An increased (p<0.05) proportion of NSP excreted in feces was seen by the supplementation of wheat bran. Higher NSP intake caused an increased daily amount of NSP in the ileum, but the ileal NSP proportion as a percentage of NSP intake was unaffected by diets. Feeding potato starch resulted in increased daily amount of starch measured in the ileum and the proportion of ileal starch as a percentage of starch intake, while no significant influence on fecal starch was found. Higher (p<0.05) daily amount of fecal starch and the proportion of fecal starch as a percentage of starch intake were found with fiber sources supplementation compared with diets C and P. By increasing the dietary NSP content the fecal amount of starch increased (p<0.01).

Analysis of Insoluble(IDF) and Soluble Dietary Fiber(SDF) Content of Koran Male College Students (한국인 남자대학생의 주요 상용식품의 불용성 및 수용성 식이섬유 함량 분석)

  • Contents of insoluble(IDF), soluble dietary fiber (SDF), and total dietary fiber(TDF) of 30 foods which are consumed commonly by 80 Koeran male college students were determined by Prosky and colleagues' enzymatic-gravimentric method. Foods with highest intake frequency were rice, Kimch'i, and red pepper powder. TDF, IDF, and SDF contents of rice were 0.96, 0.59 and 0.37g/100g wet wt., respectively and tose of Kimch'i were 3.07, 2.19 and 0.88g/100g wet wt., respectively. Red pepper powder contained high amount of TDF(39.37) and IDF (33.13g/100g wet wt.). The TDF content of the 30 foods ranged from 0.70 to 39.37g/100g wet wt. Red pepper (39.37), dried laver(31.36), and dried sea mustard (37.77g/100g wet wt.) contained high amounts of TDF. The IDF content of the 30 foods ranged from 0.13 to 33.13g/100g wet wt. Red pepper powder (33.13), dried laver(15.55) and sesame(15.43g/100g wet wt.) contained high amounts of IDF. SDF of the 30 foods ranged from 0.01 to 25.66g/100g wet wt. Dried sea mustard(25.66), dried laver(15.81), coffee powder (13.17), and garlic(8.72g/100g wet wt.) were good sources of SDF. % ratio of SDF to TDF of the 30 foods was lower than 50% except soybean curd(94.27%), coffee powder (88.93%), garlic(86.17%), dried sea mustard(67.94%), and dried laver(50.41%). It is recommended to increase intake of seaweeds in order to supply TDF adn SDF properly.

Supplementary Effect of the High Dietary Fiber Rice on Lipid Metabolism in Diabetic KK Mice (고식이섬유쌀의 급여가 KK 당뇨 마우스의 체내 지질 대사에 미치는 영향)

  • This study was conducted to investigate the supplementary effects of Suwon 464 developed by Rural Development Administration, which has over two times of dietary fiber content compared with normal rice (Ilpum), on lipid metabolism in diabetic mice. We supplied 5 kinds of experimental diets (com starch diet as a control (CO), Ilpum polished rice diet (IP), Ilpum brown rice diet (IB), polished rice diet (SP) and brown rice diet (SB) of Suwon 464) to diabetic mice for 8 weeks, after analyzing dietary fiber contents of 5 experimental diets. Diet intake, body weight, organ weights, and lipids levels of serum, liver and feces were measured. The dietary fiber contents in CO, IP, IB, SP, and SB diets were 1.0, 1.2, l.4, 1.4, and 2.0% respectively. Body weight and liver and epididymal fat pad weights were lower in SB group than the other groups though there was no significant difference in diet intake among experimental groups. The concentrations of serum triglyceride was lower in SP and SB groups than CO and IP groups. The levels of hepatic total lipid and total cholesterol were significantly lower in SP and SB groups than CO group, and the level of hepatic triglyceride was lower in IB, SP and SB groups than CO group. The levels of total lipid and triglyceride excreted in feces were higher in IB, SP and SB, and the level of total cholesterol in feces was higher in SP and SB groups than CO group. These results suggested that the high dietary fiber rice (Suwon 464) decrease the triglyceride or total cholesterol concentrations of serum and liver by increasing of fecal lipid excretion in diabetic mice. Effect of Cereals on Lipid Concentration of Liver and Serum the Rats (곡류 급원에 따른 흰쥐의 간과 혈중 지질농도에 관한 연구)

  • The present study was performed to investigate the effect of cereal fiber on lipid concentration of liver and serum in rats. Male Sprague-Dawley rats weighing 180$\pm$4g were divided into five groups by completely randomized block design : R, BR, B, W, and F. Each group fed a diet containing 0.7% cholesterol and a kind of cereal among rice(R), brown rice(BR), barley(B), whole wheat(W), and wheat flour(F) for 5 weeks. The results were summarized as follow : 1) Food intake. weight gain and feed efficiency ratio were not significantly different among the groups. 2) Fecal wet weight and dry weight were significantly higher in W group which fed the most amount of IDF(insoluble dietary fiber). 3) The weight of large intestine was significantly heavier in the W group compared to the others. But the weights of liver, stomach and small intestine were not significantly different among the groups. 4) Total lipid. triglyceride(TG) and total cholesterol(TC) content in liver were significantly different among the groups. The values were the lowest in the B group whose intake of SDF(soluble dietary fiber) was the highest 5) TC content in serum was not significantly different among the groups. TG content in serum was significantly lower in the rest groups than in the R group. HDL-c and free-c content in serum were significantly higher in the B group than in the rest groups. HDL-c/LDL-c, free-c/ester-c ratio were the highest in the B group but not significant. Above results show that the dietary fiber contained in cereals has physiological effects and they are different depending on fractions, IDF and SDF.
