김치에 관한 문헌적 고찰 -I. 김치의 제조 역사- (Literature Review on Kimchi, Korean Fermented Vegetable Foods -I. History of Kimchi making-)

  • The history of vegetable preservation technology by salting and fermentation in Korea was reviewed from the Three Nations Era to the end of Chosun Kingdom, and the development of present day's Kimchi processing technology was traced back by using the classic books as well as recent review papers published in Korea. Although the written record on salting and fermentation of vegetables first appears in a 12th century literature (Dongkukisangkukjib, Gyu-Bo Lee $1168{\sim}1241$), the use of salted/fermented vegetables could be dated back to the Three Nations Era $(B.C.\;37{\sim}A.D.\;668)$ and even earlier period. The present type of Kimchi was gradually evolved after the introduction of red pepper into Korea in the 17th century. The descriptions on Kimchi fermention appeared in the literatures written in the period of $16th{\sim}19th$ centuries in Korea, Suunjapbang $(1500{\sim})$, Domundaijak (1611), Sasichanyocho (1656), Eumsikdimibang (1670), Chubangmun $(1600{\sim})$, Saekgyung (1676), Yorok $(1600{\sim})$, Sanlimkyungje (1715), Cheungbosanlimkyungje (1766), Kyuhapchongsoe $(1800{\sim})$, Imwonsipyukji (1827), Dongkuksesiki (1849) and Buinpylji $(1855{\sim})$ were reviewed.

김치 독자성의 근거와 형성 과정에 대한 고찰 (A Study on the Basis and Formation Process of Kimchi's Uniqueness)

  • The Chinese Sigyeong records the foods of the Primitive Pickling Period, pickling being a universal vegetable storage method, but does not indicate the origin of the pickled vegetables or the location of the source of transmission. Kimchi mainly used salt and sauce-based soaking materials at the beginning of the Fermented Pickling Period (beginning in the 1st to 3rd centuries A.D.), and it differed from the Chinese method, which used alcohol and vinegar. In the Umami-Flavored Pickling Period (beginning in the 14th and 15th centuries A.D.), jeotgal, fermented seafoods, were added, and pickles with a completely new identity were created, one different from any other pickles in the world. Lastly, entering the Complex Fermentation and Pickling Period (beginning in the 17th and 18th centuries), the technical process evolved using a separate special seasoning containing red pepper as the secondary immersion source after pickling in brine, the primary immersion source. As a result of this, kimchi was transformed into a food with a unique form and taste not found anywhere else. The unique characteristic of kimchi is that the composition of original materials, a combination of salted marine life and vegetable ingredients, is its core identity, and there is a methodological difference in that it is completed through a second process called saesaengchae (生菜)-chimchae (沈菜).

김치분리균주 Lactobacillus sp.를 Starter로 한 발효생식 제조에서의 위생미생물 살균효과 (Effects of Fermentation to Improve Hygienic Quality of Powdered Raw Grains and Vegetables Raw Grains and Vegetables Using Lactobacillus sp. Isolated from Kimchi)

  • 김치로부터 분리 된 Lactobacillus sp.를 starter로 한 생식의 발효과정 에서 위생미생물의 살균 및 일반품질의 변화를 살펴보았다. 실험에 사용한 생식분말 현탁액의 coliform group과 SS agar분리 미생물은 각각 2.3$\times$$10^3$ cfu/mL, 8.6$\times$$10^3$ cfu/mL으로 분포하여 위생미 생물의 오염 가능성이 컸다 발효생식 에 starter로 접종한 Lactobucillus sp.는 발효초기 1.1 $\times$ $10^3$ cfu/mL에서 발효 48시간 이후 107 cfu/mL수준으로 증식하였으며 coliform group과 SS agar분리 미생물은 발효시간의 경과에 따라 점차 감소하여 발효 48시간 이후에는 거의 사멸되었고 60시간 이후에는 검출되지 않았다. 발효생식의 pH는 발효초기 6.8에서 발효 48시간 후 PH 4.0 이하로 낮아졌고 산도는 발효시간의 경과에 따라 점차 증가하는 양상을 나타내었다. 발효 48시간이 경과한 발효생식 현탁액, 2% lactic acid수용액, 그리고 pH 7.3으로 중화시킨 발효생식 현탁액을 E. coli sp.와 Salmonella sp.에 처리한 결과 발효생식의 현탁액을 처리한 시험구의 살균효과(D value≒6 min)가 lactic acid 처리구(D value≒6 min) 및 중성 pH의 발효생식 현탁액(1) value ≒120 min)에 비하여 높아 김치 분리균주 Lactobacillus sp.가 생산하는 bacteriocin의 살균작용이 lactic acid를 비롯한 유기산과 복합자용에 의하여 상승작용을 나타냄을 알 수 있었다.

유통업태의 변화에 따른 전통발효식품의 구매 현황 (The Effect of Change of the Distribution Structure on Korea Indigenous Fermented Food)

  • A change in distribution structure affect a consumption structure which may result in considerable changes in lifestyle including food purchase. The purpose of this study was to investigate the effect of change of distribution structure on the indigenous fermented food purchase. The informations of this study were obtained from 407 housewives residing in Seoul and the capital area by using questionnaire during May to June, 1997 Their data were statistically analyzed based on frequency, mean, and $X^2-test$. The results were as follows; 1) The percentages of subjects buying ready made fermented food were 69.8% for Jotkals(salt-fermented fish products), 22.3% for Kochujang(fermented red pepper soybean paste), 21.6% for Janachis(pickled basic side dishes), 21% for Kanjang(Korean style soybean sauce), 17.1% for Toenjang(Korean style soybean paste), and 3% for Kimchi(seasoned and fermented vegetables). 2) With decreasing age, preparation ability of Kanjang, Janachis, and Kimchi. The subjects living close to the new distribution channel were higher in ready made fermented food than the others. 3) Compared to the subject living far from the new distribution channel, the subject living close to the new distribution channel was high in frequency of new distribution channel utilization for indigenous fermented food purchase but low in frequency of conventional market utilization. The younger in age, higher in educational level, and nuclear family, the higher the utilization of new distribution channel for indigenous fermented food purchase.

전통 침채류 유래 다당 생산균의 분리 특성 (Isolation and Characterization of Exopolysaccharide-Producing Bacteria from Korean Fermented Vegetables)

  • 탄닌 분해균 선발배지를 이용하여 탄닌 분해활성 보유 유산균을 발효 침채류로부터 분리하는 과정에서 오이소박이, 파김치, 총각김치로부터 다당류로 추정되는 점질물질을 생산하는 균주 4종을 선발하였다. 이들 균주의 165 rDNA 염기서열에 의한 계통유전학적 동정 결과, CK31은 Enterobacter cowanii, CK32는 Escherichia senegalensis, YK5는 Enterobacter asburiae, GK23은 Enterobacter ludwigii와 99% 이상의 매우 높은 상동성을 나타내었다. 가장 많은 양의 점질 물질을 세포 외로 생성하는 CK3l 균주는 rhamnose, fucose, arabinose, mannose, galactose, glucose의 중성당 조성을 가지고 있는 분자량 약 420 kDa heteropolysaccharide를 생산하는 것으로 나타났다.

소규모 국내생산 식물 발효식품의 바이오제닉아민 잔류특성 (Investigation on Biogenic Amines in Plant-based Minor Korean Fermented Foods)

  • 본 연구에서는 식물을 원료로 하여 제조된 발효식품들 중 지금까지 BAs에 대한 잔류분석연구가 진행되지 못하였던, 식품군들에 대해 BAs 잔류분석을 실시하였다. 조사대상 식품군으로는 식물 발효진액, 장아찌, 막걸리, 흑마늘, 발효차를 선정하였으며, 발효진액, 막걸리, 흑마늘, 발효차는 HIS, TYR, PUT, CAD, PHE 5종 BAs 의 총 함량이 1,000mg/kg을 초과하지 않았으나, 장아찌시료에서는 19.2-1,214 mg/kg으로 검출되었다. 이러한, 장아찌류의 고잔류 BAs는 간장과 된장 등 원료 장류에 의한 영향이 높을 것으로 사료되며, 장아찌에 대한 BAs 연구는 원료 및 제조 특성별 잔류 분석연구가 보완되어야 할 것이다.

한국 발효식품에 대한 생물화학적 연구 ( 제 8 보) 발효식품중의 Vitamin $B_{12}$의 함량 조사보고 (Biochemical Studies on Korean Fermented Foods. VIII Studies on Vitamin $B_{12}$ Contents of the Fermented Foods in Korea)

  • In order to know contents of vitamin B$_{12}$ in the fermented foods in Korea, the contents of this vitamin are studied on the following foods; kimchies (pickled vegetables) .................. 39 chukkals (fermented and salted sea foods) ...... 8 fermented soy-bean products .................... 5 the kimchies and fermented soybean products studied in this paper, are from individual homes and chukkals are from markets. The content of vitamin B$_{12}$ is estimated by the microbiological assay method using lactobacillus leichmannii ATCC 7830. Details for assay are indicated in the original part of this paper. The pseudo-vitamin B$_{12}$ substances as thymidine which is active to the growth of lactobacillus leichmannii, are eliminated by the alkali treatment method of sample solution. According to the results as indicated in the table, the following conclusions are summerized; 1. Vitamin B$_{12}$ contents of kimchies for winter season are 1.03 to 1.52 mcg% in average. The hobakk-kimchi which contain the highest content of vitamin B$_{12}$ is not popular one among Korean. 2. Chukkals contain much higher content of vitamin B$_{12}$ varying from 0.91 to 11.10mcg%. 3. The soybean fermented foods, as kanjang, denjang, kochojang, contain lower content of vitamine B$_{12}$ varying from 0.08 to 0.52 mcg% containing higher content of pseudo-vitamin. 4. Based on daily consumption of kimchi in winter season by Chai, the consumption of this vitamin through kimchi is about 3 mcgs daily per capita. This will be a quite source of this vitamin for Korean as vitamin C. as vitamin C.

침채류와 과실의 연화현상에 관한 고찰 (A review on the softening of the fermented vegetables and the fruits)

  • The softening of the femented vegetables and the fruits was resulted from the degradation of pectin substances, cellulose, hemicellulose by polygalacturonase(PG), pectinesterase(PE), Cx-cellulase, $\beta$-galctosidase. The conversion of insoluble pectin to soluble pectin in cell wall-middle lamella was a major factor in the changes of firmness. Ca2+ was substantially increased firmness. However, Ca2+ could be removed from cell wall by chelating agents such as oxalic acid and citric acid. And Ca2+ was replaced with Na+ by ion exchange reaction. Ca2+ deficient tissue was vulnerable to attack by PG. Preheating treatment and Ca2+ addition is most effective in inhibiting the vegetable food softening and in increasing middle lamella-cell wall regidity, which PE activation by preheating treatment and Ca2+ addition could created more anionic carboxyl groups for cationic materials binding such as Ca2+ and chitosan and for polypectategel formation. Excessive demethylation by PE was associated with loosening of middle lamella cell wall components and softening.

한약재 및 채소류 물추출물 첨가에 의한 깍두기 숙성 적기의 연장 효과 (Effect of Hot Water Extract of Natural Plants on the Prolongation of Optimal Fermentation Time of Kakdugi)

  • To investigate the effect of natural plants on the prolongation of optimal fermentation time of kakdugi, various kakdugies, added with hot water extract from 105 kinds of natural plants(68 medicinal plants and 37 vegetables), were fermented at 20oC until optimal fermentation time. In case of control without addition, the time required to reach the optimum acidity(0.6% lactic acid) was 60 hr. Among 105 kinds tested, 48 plant(42 medicinal plants and 6vegetables) extracts decreased the acidity after 60 hr fermentation to less than 50% of control. In addition, these extracts extended the optimal fermen tation time(>120 hr) by more than 2 folds. Moreover, among the above 48 kinds, 12 sorts of extracts raised the hardness of kakdugi, by more than 30%, compared to control. And the number of lactic acid bacteria in kakdugi added with the above 12 kinds was not smaller than that of control. In sensory test, 8 kinds of medicinal plants(including Phyllostachys edulis) were found to be acceptable. Based on these results, it is suggested that kakdugi added with 8 kinds of medicinal plants was adequate in the prolongation of optimal fermentation time of kakdugi.

중국 연변 조선족의 고향별 한국 전통 명절 음식과 일상 음식의 선호도와 섭취 빈도 (Preference and Intake Frequencies of Traditional Korean Foods and Foods of National Holidays in the Yanbian Region of China)

  • This study was conduced to identify the preference and intake frequencies of traditional Korean foods by Chinese-Koreans in the Yanbian region of China based on the hometown of the female head of household. Data were collected from 261 Korean housewives living in Yanbian. Twenty-six kinds of daily food items were surveyed. Analysis of variance was used to compare the similarities and differences among the three groups, which were divided according to hometowns in North Korea, South Korea, and China. The results for the traditional Korean daily food preferences showed that housewives born in South Korea are more likely to prefer cereal soup, vegetables soup, and fermented rice punch than housewives from North Korea and China. Considering the intake frequencies of traditional Korean foods, Korean housewives born in China are more likely to eat boiled rice and a bun stuffed with seasoned meat and vegetables, as well as beef and vegetables cooked in a casserole than housewives with hometowns in South Korea and North Korean. In this article, similarities and differences in the preferences and intake frequencies of traditional Korean foods are discussed, and implications for nutritionists as well as food marketers are provided.
