Background: As the cost of fishmeal continues to rise, there will be a need to optimize the diet by minimizing dietary fishmeal inclusion in aquafeed. In this study, a 7-week experiment was conducted to evaluate soybean meal, fermented soybean meal (soytide), and sesame meal as fishmeal replacers in whiteleg shrimp, Litopenaeus vannamei. Methods: A 30%-based fishmeal diet was considered as control (CON), six other diets were prepared by replacing 20% or 40% of fishmeal with soybean meal (SB20 and SB40), fermented soybean meal (ST20 and ST40), or sesame meal (SM20 and SM40) from the CON diet. Twenty shrimp with average initial weight of 0.65 ± 0.05 g (mean ± SD) were randomly distributed into 21 tanks (45 L) and fed four times a day. Water temperature was controlled at 28 ± 1 ℃ and aeration was provided by air stones. Results: Weight gain, specific growth rate, feed efficiency, and protein efficiency ratio of shrimp fed CON showed no significant differences compared to shrimp fed all the other diets. However, growth performance of shrimp fed ST20 diet was significantly higher than those of shrimp fed the SM20 and SM40 diets (P < 0.05). Superoxide dismutase activity (SOD) of shrimp fed CON, ST20, and ST40 diets was significantly higher than those of shrimp fed the SB40 and SM40 diets. But there were no significant differences among shrimp fed CON, SB20, ST20, ST40, and SM20 diets. Also, lysozyme activity of shrimp fed ST20 diet was significantly higher than those of shrimp fed the SB40 and SM40 diets. Although, lysozyme activity of shrimp fed the CON diet was not significantly different compared to shrimp fed all the other experimental diets. Conclusions: Therefore, SB, ST, and SM could replace 40% of fishmeal based on growth performance and lysozyme. According to the SOD activity, SB and SM could replace 20% of fishmeal and ST could replace 40% of fishmeal in juvenile whiteleg shrimp Litopenaeus vannamei.

Penicillin amidase of Bacillus megaterium was recovered from the fermentation broth by adsorption on celite and immobilized by entrapping the adsorbed enzyme in acrylamide gel. The operational stability in column reactor was greatly increased by entrappment as compared with that of without entrappment. The optimum pH of the immobilized enzyme was 8.7 with broader activity profile than that of the free enzyme, while the most stable pH range appeared to be between pH 7.5 and 8.0. The optimum temperature was shifted to 5$0^{\circ}C$ from 45$^{\circ}C$ for the soluble enzyme. The values of Km and the inhibition constants for 6-APA( $K_{ia}$ ) and phenylacetic acid ( $K_{ip}$ ), were 4.55 mM, 36.5mM, and 10.5mM, respectively. No significant internal pore diffusion limitation was found since the value of effectiveness factor was 0.95. The operational half life in a column reactor at pH 8.0 was 6.8 days at 4$0^{\circ}C$ and 47 days at 3$0^{\circ}C$, whereas that of without entrappment was only 1 day and 4 days, respectively. The performance of a batch and a column reactor was also discussed with respect to the productivity. The results demonstrated that the entrappment of an adsorbed enzyme for the enhancement of the operational stability of the immobilized enzyme was useful especially when an extracellular enzyme was used.

Because of its elevated cellulolytic activity, the filamentous fungus Trichoderma harzianum has a considerable potential in biomass hydrolysis applications. Trichoderma harzianum cellobiohydrolase I (ThCBHI), an exoglucanase, is an important enzyme in the process of cellulose degradation. Here, we report an easy single-step ion-exchange chromatographic method for purification of ThCBHI and its initial biophysical and biochemical characterization. The ThCBHI produced by induction with microcrystalline cellulose under submerged fermentation was purified on DEAE-Sephadex A-50 media and its identity was confirmed by mass spectrometry. The ThCBHI biochemical characterization showed that the protein has a molecular mass of 66 kDa and pI of 5.23. As confirmed by smallangle X-ray scattering (SAXS), both full-length ThCBHI and its catalytic core domain (CCD) obtained by digestion with papain are monomeric in solution. Secondary structure analysis of ThCBHI by circular dichroism revealed ${\alpha}$- helices and ${\beta}$-strands contents in the 28% and 38% range, respectively. The intrinsic fluorescence emission maximum of 337 nm was accounted for as different degrees of exposure of ThCBHI tryptophan residues to water. Moreover, ThCBHI displayed maximum activity at pH 5.0 and temperature of $50^{\circ}C$ with specific activities against Avicel and p-nitrophenyl-${\beta}$-D-cellobioside of 1.25 U/mg and 1.53 U/mg, respectively.

The study is the result of an practical operation analysis for the full scale fishery product wastewater treatment plant with immersed MBR (iMBR) process. Since fishery product industries show a wide range of wastewater generation by the season, design and operation of the equalization basin are very important factor. The aeration system for the equalization basin mixing can save the chemical consumption for followed system through the restriction of acid fermentation. The concentrations of wastewater primary DAF process treated were BOD 2,291 mg/L, $COD_{Mn}$ 530 mg/L, SS 256.8 mg/L, T-N 38 mg/L, T-P 13.5 mg/L respectively. It was considered that iMBR is the most efficient biological process for high salinity content wastewater since It is irrelevant to the capability of the sludge precipitation. SADp and SADm were 0.31, $26.5m^3/hr{\cdot}m^3$ respectively. In iMBR process, the critical F/M ratio was derived at 0.08~0.10 gBOD/gMLSS by analysing the correlations between MLSS, normalized TMP and temperature. The effluent concentrations were BOD 1.8 mg/L, $COD_{Mn}$ 12.4 mg/L, SS 1.0 mg/L, T-N 7.85 mg/L, T-P 0.1 mg/L and removal efficiencies were 99.9%, 97.6%, 96.3%, 95.7%, 97.8% respectively.

Lactic acid bacteria (LAB) are able to secrete antimicrobial peptides called bacteriocins, which inhibit other bacteria such as pathogenic microorganisms. Therefore, bacteriocin-producing starters can be used as natural biopreservatives for various foods. The objective of this study was to screen and characterize bacteriocin-producing LAB from Kimchi and to investigate their applicability as a starter in Kimchi fermentation. To screen bacteriocin-producing LAB, gram-positive and gram-negative bacteria were used as indicators. To measure the antimicrobial activities of isolates, agar well diffusion assay method was used. According to the results, bacteriocin produced by $Lb.$$sakei$ B16 showed antimicrobial activity against $Listeria$$monocytogenes$ ATCC 19115, $Escherichia$$coli$ KCTC 1467, and$Lactobacillus$$plantarum$ KTCT 3104. Furthermore, bacteriocin was very stable after treatment with high temperature and high and low pH, but its effects were inhibited by treatment with proteolytic enzymes such as trypsin, proteinase K, and ${\alpha}$-chymotrypsin, revealing their bacteriocin-like protein- based structure. These results suggest that $Lb.$$sakei$ B16 and its bacteriocin are good candidates as a functional probiotic and natural biopreservative, respectively, in fermented foods.

A microorganism utilizing rice hulls as a substrate for the production of carboxymethylcellulase (CMCase) was isolated from seawater and identified as Bacillus lincheniformis by analyses of its 16S rDNA sequences. The optimal carbon and nitrogen sources for production of CMCase were found to be rice hulls and ammonium nitrate. The optimal conditions for cell growth and the production of CMCase by B. lincheniformis LBH-52 were investigated using the response surface method (RSM). The analysis of variance (ANOVA) of results from central composite design (CCD) indicated that a highly significant factor ("probe>F" less than 0.0001) for cell growth was rice hulls, whereas those for production of CMCase were rice hulls and initial pH of the medium. The optimal conditions of rice hulls, ammonium nitrate, initial pH, and temperature for cell growth extracted by Design Expert Software were 48.7 g/l, 1.8 g/l, 6.6, and 35.7$^{\circ}C$, respectively, whereas those for the production of CMCase were 43.2 g/l, 1.1 g/l, 6.8, and 35.7$^{\circ}C$. The maximal production of CMCase by B. lincheniformis LBH-52 from rice hulls under optimized conditions was 79.6 U/ml in a 7 l bioreactor. In this study, rice hulls and ammonium nitrate were developed to be substrates for the production of CMCase by a newly isolated marine microorganism, and the time for production of CMCase was reduced to 3 days using a bacterial strain with submerged fermentation.
This study was carried out to investigate the effects of various subsidiary ingredients added to Kimchi on the acceptance and sensory characteristics. In appearance acceptance, Kimchi without red pepper powder rated the worst, while samples without salt-fermented anchovy extracts, garlic, ginger, radish, green onion and onion showed no significant difference(p<0.05) compared with the control, and were all rated highly in acceptance. In flavor, taste and overall acceptance, the sample without garlic rated the worst, indicating that garlic has the greatest effect on the acceptance of Kimchi. Red pepper powder had an effect only on the pungency of Kimchi's flavor characteristics. Salt-fermented anchovy extracts enhanced umami taste, sweetness and saltiness of Kimchi. Garlic also enhanced the general flavor such as sourness, umami taste, sweetness, carbonated flavor and fresh flavor, but inhibited the moldy flavor. Ginger had effects on pungency, fresh flavor of Kimchi, while radish, green onion and onion only had an effect on the fresh flavor of Kimchi. Garlic had significant effects on the moldy flavor and bitterness of Kimchi's sensory characteristics, and the amount of garlic added to Kimchi influenced the sourness, sweetness and fresh flavor, irrespective of the kinds of Kimchi and fermentation temperature.

The main purpose of this study was to examine the influence of treatment amounts of Slurry Composting and Biofiltration liquid fertilizer (SCBLF) on biomass growth of Yellow poplar (Liriodendron tulipifera) and to compare bioethanol production from the harvested wood. Relative growth rate, biomass production and leaf characteristics were significantly enhanced by SCBLF treatment and medium treatment plot showed highest value. Nitrogen compounds and water content in SCBLF affected to increase chlorophyll contents which led improving biomass production (64.67%) and glucose contents (6.07%) than control. Organosolv and dilute acid pretreatments were preliminarily carried for bioethanol production, and the pretreatment processes were conducted at all the same solid to liquid ratio (1 : 10), reaction temperature ($150^{\circ}C$), preheating time (40 min) and residence time (10 min). The water insoluble solid recovery of Organosolv pretreatment with 1% sulfuric acid as a catalyst was the lowest and that of medium treatment plot was 44.81%. Exchangeable cations in SCBLF might be affected to increase pretreatment effect. The simultaneous saccharification and fermentation process was followed to determine the ethanol production of the pretreated biomass. The highest ethanol production yield based on initial weight was obtained from high treatment plotby Organosolv pretreatment with 1% sulfuric acid (16.11%). But regarding biomass production, medium treatment plot produced most, and bioethanol production was increased by 72.93% than control.
In order to develop a new starter for fermented milk, 2082 bacteria were isolated from raw milk. The strain that showed excellent acid forming and ${\gamma}$-aminobutyric acid (GABA) production ($711.40{\mu}g/g$ D.W) characteristics after incubation at $37^{\circ}C$ for 18 hr was selected and identified as Lactobacillus acidophilus by the result of API carbohydrate fermentation pattern and 16S rDNA sequence. L. acidophilus RMK567 was investigated for its physiological characteristics. RMK67 strain showed good GABA production compared with commercial lactic acid bacteria. The optimum growth temperature of L. acidophilus RMK567 was $40^{\circ}C$ and cultures took 15 hr to reach pH 4.3. L. acidophilus RMK567 showed higher sensitivity to penicillin-G, novobiocin, as compared to other 14 different antibiotics. However, it showed more resistance to kanamycin, neomycin, streptomycin. It showed higher leucine arylamidase and ${\beta}$-galactosidase activities compared to 16 other enzymes. It was comparatively tolerant to bile juice and able to survive at pH 2 for 3 hr. It showed resistence to Escherichia coli, Salmonella typhimurium and Staphylococcus aureus with rates of 29.2%, 39.1% and 51.4%, respectively. Based on these and previous results, L. acidophilus RMK567 could be an excellent starter culture for fermented milk with excellent GABA contents.

The study was targeted to saccharify foodwastes with the cellulolytic and amylolytic enzymes obtained from culture supernatant of Trichoderma harzianum FJ1 and analyze the kinetics of the saccharification in order to enlarge the utilization in industrial application. T. harzianum FJ1 highly produced various cellulolytic (filter paperase 0.9, carboxymethyl cellulase 22.0, ${\beta}$-glucosidase 1.2, Avicelase 0.4, xylanase 30.8, as U/mL-supernatant) and amylolytic (${alpha}$-amylase 5.6, ${\beta}$-amylase 3.1, glucoamylase 2.6, as U/mL-supernatant) enzymes. The $23{\sim}98\;g/L$ of reducing sugars were obtained under various experimental conditions by changing FPase to between $0.2{\sim}0.6\;U/mL$ and foodwastes between $5{\sim}20\%$ (w/v), with fixed conditions at $50^{\circ}C$, pH 5.0, and 100 rpm for 24 h. As the enzymatic hydrolysis of foodwastes were performed in a heterogeneous solid-liquid reaction system, it was significantly influenced by enzyme and substrate concentrations used, where the pH and temperature were fixed at their experimental optima of 5.0 and $50^{\circ}C$, respectively. An empirical model was employed to simplify the kinetics of the saccharification reaction. The reducing sugars concentration (X, g/L) in the saccharification reaction was expressed by a power curve ($X=K{\cdot}t^n$) for the reaction time (t), where the coefficient, K and n. were related to functions of the enzymes concentrations (E) and foodwastes concentrations (S), as follow: $K=10.894{\cdot}Ln(E{\cdot}S^2)-56.768,\;n=0.0608{\cdot}(E/S)^{-0.2130}$. The kinetic developed to analyze the effective saccharification of foodwastes composed of complex organic compounds could adequately explain the cases under various saccharification conditions. The kinetics results would be available for reducing sugars production processes, with the reducing sugars obtained at a lower cost can be used as carbon and energy sources in various fermentation industries.
