The crude lipid contents of dried sea food products varied remarkably from 1.2 to 29.9% for dried fish products, from 2.8 to 12.3% for dried mollusk ones, and from 0.1 to 2.3% for dried seaweed ones. In fatty acid composition of dried fish products, the saturated acid was the most predominant component for dried anchovies, hair tail, Kstsuobushi, the monoenoic acid was the most predominant one for dried yellow corvenia, flat head, common carp, sea eel and conger eel. And the polyenoic acid was the most abundant one for dried cod. Allaska pollack, flounder, sole fish, ray, smelt and sardine. The major fatty acids of these dried fish products were 16:0, 16:1, 18:0, 18:1, 20:5 and 22:6. Fatty acid composition of dried mollusk products were mainly consisted of polyenoic acid, and followed by saturated acid, monoenoic aced. The major fatty acids of these products were similiar to those of dried fish products. And in case of dried seaweed products, saturated acid such as 14:0, 16:0 was the most predominant component, while polyenoic acid was abundant one in dried laver and sea mustard. The main fatty acids of dried seaweed products were 14:0, 16:0, 18:1, 20:1, 20:4, and 20:5. Judging from the results, dried sea food products were abundant of the highly unsaturated fatty acids in spite of the drying processing and storage.
This study was conducted to asses the $\omega$-3 fatty acid intake levels and to evaluate the relationship between the levels of $\omega$-3 fatty acids in plasma and erythrocyte membrane and the dietary intake of these fatty acids over the period of two months in 56 young Korean females. Dietary survey was conducted to obtain 7-day weiged records and six 24-hour recalls. Fasting blood sample was collected from each subject after the dietary survey period. Mean daily intakes of energy, fat, and cholesterol were 1,569㎉, 41.8g, and 217mg, respectively. Fat suppled 24% of total energy intake. Mean daily intake levels of eicosapentaenoic acid(EPA), docosahexaenoic acid(DHA), and total $\omega$-3 fatty acids were 0.04g, 0.06g, and 0.48g, respectively. Plasma cholesterol levels of most of the subjects were within normal range, and there was no significant correlation between plasma cholesterol levels and intake levels of any specific fatty acid. Levels of EPA, DHA, EPA+DHA in plasma and erythrocyte membrane, but not the levels of $\alpha$-linolenic acid(LNA), were significantly correlated with dietary in take of respective fatty acids. Such a correlation, however, was not observed in a previous study where dietary intake was assessed for 3 days. The results of this study show that dietary intakes of $\omega$-3 fatty acids are low in the subject and that about two-month period is required to assess dietary intake levels of $\omega$-3 fatty acids with a reasonable accuracy.
The biosynthesis of phospholipid and the composition of fatty acid in C. ellipsoidea mitochondria treated with antibiotics(cycloheximide, nalidixic acid) during the culture analyzed. The growth of Chlorella and the contents of total lipid in mitochondria treated with antibiotics were lower than those of the control. The synthesis of PC (phosphatidylcholine) and PI(phosphatidylinostiol) were inhibited in the nalidixic acid treatment and also the contents of PC(phosphatidylcholine), PE (phosphatidylethanolamine), PG(phosphatidylglycerol) and PI(phosphatidylinositol) in the cycloheximide treatment were also inhibited. The major fatty acids utilized for the various phospholipids formation in each antibiotics treatment were analyzed stearic acid, myristic acid, palmitic acid, oleic acid, linoleic acid and linolenic acid at the late phase of the culture.

The purpose of the study was to determine fat contents and fatty acid compositions of the lipids in sweetfish cultured in Korea and lipid oxidation during storage at refrigeration temperature ($2^{\circ}C$). Whole or minced sweetfish were vacuum-packaged or treated with ascorbic acid. Changes in thiobarbituric acid (TBA) values, peroxide values (PV) and free fatty acid (FFA) in the fish were determined. Sweetfish contained 72.5% moisture, 5.3% lipid and 1.1% ash. Palmitic acid was the highest (27.4% (w/w) of the total fatty acids) among the saturated fatty acids. Total monounsaturated fatty acids (MUFA) were 33.9% and oleic acid (21.0%) was the highest, followed by palmitoleic acid (7.8%). Total PUFA were 28.2%. Predominant PUFA were linoleic acid (8.1%), EPA (5.7%) and DHA (12.1%). TBA values and PV of the whole sweetfish treated with ascorbic acid and vacuumpackaged were not different from the control. TBA values of the minced sweetfish treated with ascorbic acid were significantly lower than the other groups (p<0.05). PV of the fish treated with ascorbic acid and vacuum packaging were significantly lower than the other groups (p<0.05). The result of this study suggests that cultured Korean sweetfish may be a good source of unsaturated fatty acids including EPA and DHA, and vacuum packaging and addition of ascorbic acid may protect lipids from oxidation.
This study was conducted to determine the effects of dietary supplementation with conjugated linoleic acid (CLA) feeding levels (0, 0.5, 1.0, 1.5, and 2.0%) on the carcass characteristics, growth performance, serum cholesterol, and fatty acid in thigh of chicken meat. Two hundred broiler (Arbor Acre Broiler, male) were randomly assigned to five groups and were fed for five weeks and slaughtered. Thigh muscle was used for determining fatty acid composition. There was no significant difference in growth performance, such as weight gain, feed intake and feed conversion by CLA levels. Among carcass characteristics, percentage of carcass, thigh, breast, and drumstick was not influenced by the dietary CLA levels, but abdominal fat was significantly reduced with the increased CLA amount in the broilers diets (p<0.05). Higher CLA levels increased HDL-C and reduced total cholesterol and LDL-C (p<0.05). As the dietary CLA levels increased, muscular palmitic acid (saturated fatty acid) levels was increased, but the rates of oleic acid, linoleic acid, and arachidonic acid (unsaturated fatty acid) were decreased. In addition. CLA isomers were linearly increased with the increase in dietary CLA levels (p<0.05). As a conclusion, 2% of CLA feeding is possible to maximize accumulation of CLA in meat, but changes in fatty acid composition is not profitable. Therefore, 1% of CLA feeding i,j considered to be proper for accumulation of CLA and minimization of the change in fatty acid.

The effects of gamma-irradiation on the nutritional components of some Korean soybean-based fermentation foods were studied. Doenjang (soybean paste), kochujang (red pepper paste) and chungkukjang were prepared, irradiated at 0, 5, 10 and 20 kGy, and their compositions of free amino acid, free fatty acid and organic acid were determined. Compositions of free amino acid and free fatty acid in gamma irradiated sample were stable compared to non-irradiated control. Content of citric acid and succinic acid increased, while that of malic acid decreased in the gamma irradiated chungkookjang, but there were no significant changes in organic acid composition in organic and kochujang.
In this study, we determined the fat content, total fatty acid composition, trans fatty acid (tFA) content, and acid value of twenty samples of sweet-and-sour pork and fifteen samples of used frying oils collected from Chinese restaurants in Seoul. After the extraction of crude fat by the Folch method, the total fat content of the twenty sweet-and-sour porks ranged from 9.93 to 20.04%. The total unsaturated fatty acid content ranged from 50.05 to 81.22%, which mostly consisted of oleic and linoleic acid, while those of total saturated fatty acids were 18.06~49.26%. The tFA content of all of the twenty sweet-and-sour porks tested was less than 0.24 g per 100 g of food. The acid values of the fat extracted from the twenty sweet-and-sour porks ranged from 0.44 to 4.37. In the used frying oils, the ranges of the major compositional fatty acids were as follows: palmitic acid, 4.47~20.28%; oleic acid, 23.43~77.45%; linoleic acid, 5.6~53.06%; stearic acid, 1.81~7.38%. The tFA content in all of the fifteen used frying oils was less than 0.98 g per 100 g of fat, while the acid values of the fifteen used frying oils ranged from 0.27 to 2.41.
In order to determine the position and the content of fatty acids attached to glycerides and the migration degree of fatty acids in the migration reaction, hydrolysis of fish oil was carried out with lipolase-100T derived from Aspergillus oryzae. The content of fatty acids in the glyceride mixture was analyzed and compared with that of fish oil. The amounts of fatty acid in 2-position and the migration degree of the fatty acid in 2,3-DG (diglyceride) and 2-MG (monoglyceride) were calculated. The results showed that approximately 95% (w/w) of DHA (docosahexaenoic acid) and 65% of EPA (eicosapentaenoic acid) was attached to the 2-position of glycerides in the fish oil. Approximately 87% (w/w) of DHA and 75% of EPA remained in 2,3-DG and 88% of DHA and 65% of EPA in 2-MG were not involved in the migration reaction.
To investigate changes in protein and total lipid contents, seed storage protein pattern, and fatty acid composition of germination perilla(Perilla frutescens) seeds. Also, the corresponding value components in cotyledons, hypocotyles and roots were measured according to germination stage. The results were summarized as follows ; During germination, pertein and total lipid contents of Yepsilldalggae and Kwangyang cultivar were decreased continuously. In particular, protein contents rapidly decreased to the 3 days after germination(DAG), and then total lipid contents rapidly decreased between 3 DAG and 10 DAG. In changes of protein and total lipid contents of cotyledons, protein contents of Yeupsildalggae was increased during the germination, but Kwangyang cultivar was decreased during the same periods. The total lipids contents of Yeupsildalggae and Kwangyang cultivar were decreased during the germination. According to SDS-PAGE analysis, there was no detectible polypeptide bands on the gel before seed germination suggesting that this may be due to the rapid degradation of the storage proteins in the mature seed by hydrolyttic enzymes during the stage. During germinatation , the polypeptide band with 27$\sim$28KD of Yeupsildalggae and Kwangyang cultivar were accumulated gradually. In changes of fatty acid composition of total lipid of Yeupsildalggae and Kwangyang cultivar , saturated fatty acids such as palmitic acid and stearic acid increased during the germination. On the other hand, unsaturated fatty acid such as linoleic acid and linolenic acid decreased during the same periods. However, oleic acid increased to the 5 DAG, and then was repidly decreased.
Fabrea salina is a hypersaline ciliate having importance as a live food source for juvenile stages of aquatic animals including smaller invertebrates. The analysis of this ciliate for proximate and biochemical composition was carried out. The moisture, protein, fat, carbohydrate and ash content of F. salina from natural sources were 86.66$\pm$0.380, 56.66$\pm$0.494%, 36.66$\pm$0.614%, 1$\pm$0.073% and 4$\pm$0.182%, respectively. Gas chromatographic analysis (percent area below the curve) revealed that the presence of oleic acid was higher over other fatty acids in both natural and cultured F. salina. The absolute content of oleic acid was higher in natural (18.91% area) than in the cultured (10.74% area) F. salina. Linoleic and linolenic acids were also among major fatty acids with the percentage area of 16.29 and 14.58, respectively. The number of fatty acids in cultured Fabrea was less as compared to the natural ones and the oleic acid was followed by palmitic acid, palmitoleic acid, linoleic acid and stearic acid.
