Dietary effects of protected fat, glycerol, and soybean meal on performance, physiological parameters, carcass characteristics, and behavioral measurements of late-fattening Hanwoo steers under heat stress conditions

  • Objective: This study aimed to determine the effects of increasing energy and protein levels in diets by including protected fat (PF), glycerol (GL), and soybean meal (SBM) on growth performance, physiological parameters, carcass characteristics, and behavioral measurements of late-fattening Hanwoo steers under heat stress conditions. Methods: Thirty-six steers (initial body weight, 724.9±58.3 kg; age, 25.5±0.4 month) were assigned into control (total digestible nutrient [TDN] 76%, crude protein [CP] 15%), PF (TDN 83.6%, CP 15%), PF+GL (TDN 83.6%, CP 15%) and PF+GL+SBM (TDN 83.6%, CP 16.5%) by randomized complete block design for a total of 16 weeks with division of 4-week periods. The average temperature-humidity index was 87.0 (1st period; severe), 82.8 (2nd; moderate), 71.4 (3rd; comfort), and 68.1 (4th; comfort). Results: The dry matter intake (DMI) showed no treatments differences during the whole experiment. However, DMI in 1st and 2nd period decreased by approximately 30% and 10% compared to 4th period, respectively. Higher average daily gain and feed conversion ratio were noted for treatments compared to control at both 1st and 2nd period (p<0.05). There were no treatment effects on rectal temperature (RT), cortisol, and behaviors during the entire experiment. However, both RT and cortisol in 0, 1st and 2nd period were higher than those of 3rd and 4th period (p<0.05). Carcass yield and grade remained unaffected by increasing TDN and CP levels. Behavioral changes in the hot season (1st period) included reduced lying (43%), increased standing (48%), decreased walking (62%), and decreased eating (38%) (p<0.05), with an increase in drinking by 54%. Rumination during standing was 53% higher, while rumination during lying was about 33% lower compared to the post-hot season (3rd period) (p<0.05). Conclusion: Dietary supplementation of protected fat in late-fattening Hanwoo steers under heat stress had a positive effect on preventing a reduction in performance.

Substituting Bread By-product for Barley Grain in Fattening Diets for Baladi Kids

  • The objectives of this study were to determine the effects of substituting bread by-product (BBP) for barley grain in high concentrate fattening diets for kids on nutrient intake, growth performance, and nutrient digestibility. Twenty-eight Baladi kids (body weight=17.1${\pm}$1.0 kg) were assigned randomly to 4 experimental finishing diets (7 kids/treatment) in a completely randomized design for 70 days. The control (CON) diet contained 20, 60, 11, 7 and 2% (DM basis) alfalfa hay, barley grain, soybean meal, corn grain, and mineral and vitamin mix, respectively. Bread by-product substituted barley grain by 10, 20 and 30% of the diet DM in the LBBP, MBBP, and HBBP diets, respectively. Dry matter intakes for the CON, LBBP and MBBP diets were similar (p>0.05; avg.=592 g/day), however, kids fed the HBBP diet had a lower (p<0.05) DM intake (451 g/day). Organic matter and CP intakes showed similar patterns to that observed for DM. Dietary treatments did not affect (p>0.05) average daily gain for kids fed the CON, LBBP and MBBP diets (avg.=150 g/day). Final body weights for kids fed the CON, LBBP and MBBP diets (avg. 27.1 kg) were greater (p<0.05) than for kids fed the HBBP diet (23.7 kg). Feed to gain ratio was greater for the CON, LBBP and MBBP diets (avg. 3.9) compared with the HBBP diet (5.0). No significant (p>0.05) effect of the dietary treatment was observed for DM, OM and NDF digestibility. Substituting BBP for barley grain up to 20% of the diet DM did not affect nutrient intake, growth performance and nutrient digestibility of kids and resulted in a decrease in feed cost.

Rearing characteristics of fattening Hanwoo steers managed in different stocking densities

  • Objective: This study was conducted to analyze the effects of stocking density on growth and carcass quality, and behavior of Hanwoo cattle to conform with global trends, targeting animal welfare production through the practice of environmentally friendly condition. Methods: Thirty six steers were randomly assigned to three treatment groups (C: 5 heads, T1: 4 heads, T2: 3 heads) and reared in separate pens with a constant stocking density of $50m^2$ (C: $10m^2/head$, T1: $12.5m^2/head$, T2: $16.67m^2/head$) per group from 12 to 30 month of age. Growth performance, behavior and carcass quality traits of each steer were recorded and compared between the treatment groups. Results: In general, the average daily gain during the fattening period was lower in group T2 than in T1 and the control groups. However, carcass weight and dressing percentage was lower in the control group than in T1 or T2 groups (p<0.05). Also, marbling score at 30 months of age was the lowest in the control group (p<0.05), while the three heads group (T2) had the greatest longissimus muscle area and marbling score (p<0.05). The behavior of walking time was the greatest in T2 group, while self-grooming and fighting occurred with the most frequency in the control group (p<0.05). Conclusion: Our results show that the steers in more spacious stocking density had better carcass quality and wellbeing related behaviors, indicating that a lower density has a positive effect on raising management and carcass quality. Thus it is a need to install appropriate pens fitted to welfare-oriented management practices from growing to fattening period in Hanwoo cattle.

Effects of soybean meal fermented by Bacillus coagulans NRR1207 and kefir on the feeding characteristics of weaned HANWOO calves and Holstein cows

  • This study was conducted to evaluation the effects of dietary soybean meal (SBM) and fermented soybean meal (FSBM) on the growth performance of Korean native cattle as Hanwoo calves (Bos taurus coreanae) and Holstein cows. In total, 16 calves three to four months old (Control group, SBM: 5 males and 3 females, average weight 105.7 kg; Experimental group, FSBM: 5 males and 3 females, average weight 103.7 kg) were fed 5% of the feed amount for 53 days. In terms of growth performance outcomes, the average gain body weight was significantly higher in the FSBM group than in the SBM group in the final fattening period. The average daily gain in body weight (ADGBW) for the FSBM group was higher than that of the SBM group in the final fattening period. The average gain body weight in four months for FSBM was higher than that at three months in the final fattening period. Diarrhea incidence for FSBM was significantly decreased compared to that in the SBM group in the six-week period after weaning. These results indicate that dietary FSBM can improve the growth rate and health condition during the calving period. Holstein cows fed fermented soybean meal had higher milk urea nitrogen levels and decreased somatic cell counts compared to those fed SBM. These results may be closely related with the increased average daily gain body weight associated with dietary FSBM.

쑥사료 급여가 비육한우의 비육능력 및 도체특성에 미치는 영향 (Effects of Feeding Dietary Mugwort Powder on the Fattening Performance and Carcass Characteristics in the Fattening Hanwoo)

  • 본 연구는 비육한우 32두(거세우 16두, 암소 16두)를 대상으로 (C-1구 거세우의 일반사료 : C-2구 암소의 일반사료 : T-1구 거세우에게 야생쑥 2%첨가 : T-2구 암소에게 쑥 2%첨가) 4개 처리구를 두고 14개월간(생후14개월-27개월) 비육시험한 결과는 다음과 같다. 27개월 시험종료 체중에서 대조구인 C-1구, C-2구는 각각 648.6, 623.1kg이었고, 처리구인 T-1구, T-2구는 각각 663.3 kg 및 620.7 kg으로서 T-1구가 가장 높았고, 총 증체량과 일당증체량에서도 T-1구가 각각 342.4 kg과 0.88 kg으로 가장 높았다. 1일 두당 총 사료섭취량은 대조구인 C-1구 및 C-2구와 처리구인 T-1구 및 T-2구가 각각 9.35, 9.09, 10.08 및 9.69 kg으로 T-1구가 가장 높았고, 사료요구율에서는 C-1구(11.28) > T-1구(11.48) > C-2구(11.52) > T-2(12.57)순으로 낮았다. 혈중 총콜레스테롤, GOT, GPT, 글리코스 및 BUN은 대체로 시험개시전보다 시험개시후가 더 높은 경향이었고, 특히 시험개시후의 총 콜레스테롤, GOT 및 glucose 함량은 처리구가 대조구보다 낮았다 (p<0.05). 도체중은 처리구(344.11-378.08 kg)가 대조구(342.71-369.70 kg)보다 높은 경향이었고, 등지방두께는 처리구(12.75-14.75 mm)가 대조구(15.76-16.00 mm) 보다 얇아진 반면에 배최장근 단면적은 처리구$(84.25-87.88cm^2)$가 대조구$(84.00-85.25cm^2)$보다 넓어졌다. 그 중에서 T-1구가 각각 14.75 mm와 $87.88cm^2$로 가장 좋았으며, 육량 및 육질등급은 처리구(각각, 2.02-2.50점, 2.85-3.05점)가 대조구(각각, 1.80점, 2.80-2.55점)보다 높았다. 본 시험의 결과를 종합해 볼 때 거세한우에게 쑥첨가는 일당증체량 증가, 도체중, 배최장근 단면적 및 육질개선 효과가 있는 것으로 판단된다.

Effect of mixed hay supplementation during fattening on carcass traits and meat quality of Hanwoo steers

  • Background: This study was aim to observe the effects of feeding mixed local hay (MH) consisted of 55% orchard grass (Dactylis glomerata L.), 35% tall fescue (Festuca arundinacea) and 10% red clover (Trifolium pratense) to Hanwoo steers on performance, carcass characteristics and meat quality (longissimus thoracis) compared with feeding imported timothy hay (TH) and local rice straw (RS). Results: Although no significant effects were found on animal performance and carcass yield grade, the carcasses of MH group had higher marbling score and quality grade than those of RS and TH group (P < 0.05). Therefore, higher fat content (P < 0.001), lower shear force and hardness value in the beef of MH group than that of other groups were observed. Furthermore, the beef of MH group had higher CIE $a^*$ value (redness) than that of other groups and feeding MH to Hanwoo steers lowered n-6 to n-3 fatty acids ratio in beef. Conclusions: Mixed hay provided benefits on meat quality and could be used for Hanwoo fattening program.

Change of performance, serum metabolite, and carcass characteristics on high energy diet of Hanwoo steers

  • The aim of this experiment was to determine the effect of a high-energy diet on the level of serum metabolites and on carcass characteristics of Hanwoo steers. High energy diets have been used for enhancing intramuscular adipose tissue in high quality beef cattle. However, there is not much information about the physiological reactions to this diet. We hypothesized that a high energy diet would increase blood metabolites and the meat quality of Hanwoo steers during the early and final fattening periods. A $2{\times}2$ factorial arrangement (High, Control, and Early, Final) in a completely randomized design was used to feed 24 Hanwoo steers. Two steers were kept in the same pen and 12 pens were used for the experiment. Blood was drawn from each steer on the first week of every other month from 11 to 28 months. Overall Average Daily Gain (ADG) and feed efficiency were not different between high energy and control diets (p > 0.05). However, Dry Matter Intake (DMI greater with the control diet than DMI with the high energy diet during the final fattening period (p < 0.05). Serum non-esterified fatty acid (NEFA) concentrations were greater in the control diet group than in the high energy diet group during the final fattening period (p < 0.05). However, serum albumin, glucose, total protein, triglyceride, and phosphorus were greater in the high energy group than those of the control group (p < 0.05). Carcass traits or physico-chemical characteristics were not different between high energy diet treatment and the control. These data indicated that a high energy diet (+ 3% TDN) increased serum triglyceride during early fattening periods and decreased non-esterified fatty acids during final fattening periods in Hanwoo steers.

Growth, Behavior, and Carcass Traits of Fattening Hanwoo (Korean Native Cattle) Steers Managed in Different Group Sizes

  • This study was conducted to evaluate growth, behavior and carcass traits of fattening Hanwoo (Korean native cattle) steers managed in different group sizes. A total of 48 animals, 6 months of age, were allocated to one of three group sizes and the experiment was conducted from 12 to 30 months of age. Groups were balanced for weight and the group sizes consisted of 4, 8, or 12 steers which were named 4sG, 8sG and 12sG, respectively. When animals were 12 months of age, initial fasted body weight (BW, $304.51{\pm}12.40\;kg$) was measured. All animals were housed at a constant space allowance of $8.82\;m^2$ per animal, and a feeder and drinker were provided per 4 animals. The whole fattening stage was divided into three phases: phase I (from 12 to 18 month of age), phase II (from 19 to 24 month of age), and phase III (from 25 to 30 month of age). Steers managed in 12sG showed low (p<0.05) growth rate and feed conversion rate (FCR) in phase I and phase II when compared to other treatment groups. However, this difference was not observed for the whole fattening phase (p>0.05). Steers managed in 4sG had a thick (p<0.05) ultrasound back fat thickness at 15 and 18 months of age. However, group size had no effect on meat yield and quality traits of area and marbling score. Animals managed in 8sG yielded a better meat grade of "A" than the "B" grade in other treatment group sizes. Lean color, fat color, firmness and maturity scores did not differ among group sizes. Hanwoo steers housed under 12sG spent less time on eating concentrate, relevant higher eating rate, less frequency of allogrooming, and more time on walking (p<0.05). It could be concluded that a large group size retarded growth rate and back fat thickness in the fattening stage, which was mainly focused on 15 and 18 months of age.

Effects of Physically Effective Neutral Detergent Fiber Content on Intake, Digestibility, and Chewing Activity in Fattening Heifer Fed Total Mixed Ration

  • The objective of this study was to determine the effects of physically effective neutral detergent fiber (peNDF) content in total mixed ration (TMR) on dry matter intake, digestibility, and chewing activity in fattening Hanwoo (Bos taurus coreanae) heifers. The experiment was designed as a replicated $3{\times}3$ Latin square using 12 heifers. Fattening heifers were offered one of three diets [high (T1), medium (T2), and low (T3) peNDF] obtained by different mixing times (3, 10, and 25 min) for the same TMR feed. The peNDF content of TMR was determined by multiplying the proportion of dry matter retained by a 1.18 mm-screen in a Penn State Particle Separator by the dietary NDF content. The $peNDF_{1.18}$ content was 30.36%, 29.20%, and 27.50% for the T1, T2, and T3 diets, respectively (p<0.05). Dry matter intake was not affected by peNDF content in TMR. Total weight gain in T1 group was significantly higher (p<0.05) than in T2 and T3 groups. However, weight gain did not differ between T2 and T3 groups. The feed conversion ratio decreased with an increase in the peNDF content (T1: 12.18, T2: 14.17, and T3: 14.01 g/g). An increase in the peNDF content of TMR was associated with a linear increase in the digestibility of dry matter, crude protein, crude fiber, neutral detergent fiber, and acid detergent fiber (p<0.05). Also, an increase in peNDF content of the TMR resulted in a linear increase in the number of chews in eating and ruminating (p<0.05), and consequently in the number of total chews (p<0.05). These results indicate that peNDF content affects digestibility and chewing activity. Consequently, the peNDF content of TMR should be considered for improving feed efficiency, digestibility, body weight gain, and performance in fattening heifers.

한우 거세우의 비육후기 사료 형태에 따른 사양성적, 도체특성 및 혈액성분 변화 (Effects of Dietary Type During Late Fattening Phase on the Growth Performance, Blood Characteristics and Carcass Traits in Hanwoo Steers)

  • 본 연구는 한우 비육후기사료 개발을 위하여 사료의 급여형태를 달리하였을 때, 사양성적, 도체특성 및 지방합성과 관련된 혈액 중 성분들의 변화를 구명하고자 수행되었다. 평균체중 445 kg 되는 20개월령 한우 거세우 30두를 이용하여 30개월령까지 사양시험을 실시하였다. 처리구는 농후사료와 조사료를 분리급여한 구(Formula feed), TMR 급여구, 그리고 TMR에 배합사료를 추가 급여한 혼합구 (Formula-TMR)로 나누어 각 처리구당 10두씩 완전 임의배치 하였다. 전 시험기간 동안 평균 건물 및 TDN 섭취량은 혼합구에서 가장 많았으나 (p<0.05), 증체량, 도체중, 육량지수, 지방색은 처리간에 유의적인 차이를 보이지 않았다. 혈액 중 retinol, insulin 및 leptin의 함량은 처리에 따른 유의적인 차이는 없었고, leptin 함량이 상대적으로 높았던 혼합구의 근내지방도가 유의적으로 높게 나타났다 (p<0.05). 배최장근의 조직감, 육량등급 및 육질등급은 분리급여구, TMR구 및 혼합구에서 각각 가장 높았다 (p<0.05).
