한국인의 에너지 영양소의 섭취와 다소비 음식 및 주식류 섭취비율의 추이 -I기~IV기-2차(1998~2008) 국민건강영양조사 자료를 중심으로- (The Changes of Energy Nutrient Intake, Frequently Consumed Dishes and Staple Food Consumption -Based on the First to the Forth(1998~2008) Korea National Health and Nutrition Examination Survey(KNHANES I~IV-2)-)

  • The purpose of this study were to analyze the staple food consumption trend of Koreans using KNHANES(Korea National Health and Nutrition Examination Survey) data. Nutrient intake of 38,840 participants of 1998~2008 KNHANES, over 6 year old were analyzed. For the analysis of major staple food intakes, twenty four hour recall data was used. The results were analyzed by SAS Program, as follows. Despite westernized diet, ranking in the primary energy source of food showed similar patterns. But total calory intake was reduced over the past 11 years and percentage of carbohydrate intake was increased. Relative proportions of protein and fat intake was reduced. The major carbohydrate and protein source of Koreans was rice and grains. Pork and ramen were the major fat source food. Although intake levels were different by gender, age and areas, carbohydrate of rice was primary source of energy in Korea.

지방급원 형태와 수준에 따른 연속배양장치 내 반추위 발효성상, 지방산의 수소첨가 현상 및 Conjugated Linoleic Acid 생산에 미치는 영향 연구 (Effects of Type of Oilseed and Level of Concentrate on Fermentation, Biohydrogenation of Fatty Acids and Conjugated Linoleic Acid Production in a Rumen-Simulated Continuous Culture System)

  • 본 연구는 사료 내 농후사료의 비율을 높임으로서 불포화 지방산의 반추위 내 by-pass율의 향상 가능성을 조사하고, 아마종실과 전지대두 급여 시 CLA 생산을 상호 비교하기 위하여 연속배양장치를 이용하여 수행하였다. 지방 급원에 따른 발효 성상의 차이는 보이지 않았다. 한편 사료 내 농후사료 비율이 높은 (80%) 처리구는 농후사료 비율이 낮은 (40%) 처리구와 비교하여 pH는 감소하였으나, 암모니아, 총 휘발성 지방산, acetate, butyrate 및 valerate 농도가 증가되었다. 지방급원 (전지대두 vs 아마종실)과 사료 내 농후사료 비율은 organic matter (OM), total nitrogen, neutral detergent fiber (NDF) 및 acid detergent fiber (ADF)의 소화율에 영향을 끼치지 않았다. 반면에 전지대두는 아마종실과 비교하여 trans C18:1, C18:2 n-6 및 C18:3 n-3 유출율은 증가시켰다. 지방 급원에 의한 CLA flow는 영향을 받지 않았으나 사료 내 농후사료 비율이 높을 때와 전지대두와 아마종실의 함량이 높았을 때는 증가되었다. 수소 첨가현상은 C18:1 n-9 와 C18:2 n-6에서 지방 급원에 의하여 영향을 받지 않았으나, 아마종실 처리구에서는 C18:3 n-3 과 총 C18 불포화지방산의 수소 첨가현상이 전지대두 처리구와 비교하여 높은 비율로 발생했다. 한편 사료 내 농후사료 비율이 높을 때 처리구에서 C18:2 n-6, C18:3 n-3 및 총 C18 불포화 지방산의 수소 첨가현상은 농후사료 저 처리구와 비교하여 감소되었다.

Effect of L-Carnitine and Source of Dietary Fat on Growth Performance and Serum Biochemical Parameters of Piglets Weaned at 35 Days of Age

  • The effects of carnitine in diets with or without added fat (5% lard or soybean oil) were evaluated in 72 Large White ${\times}$ Landrace ${\times}$ Duroc pigs weaned at 35 days of age. Pigs were fed a 1.30% lysine corn-soybean basal diet+15% dried whey+4% fish meal with carnitine at 0 or 50 mg/kg and either 0% added fat, 5% soybean oil or 5% lard for 6 weeks in a $2{\times}3$ factorial trial (6 treatments, 3 pens per treatment, 4 pigs per pen). Addition of carnitine increased average daily gain (ADG) and average daily feed intake (ADFI) in the second two weeks of the six-week trial and overall, but had no significant effect on feed per gain (F/G). Lard alone depressed ADG (p<0.05) in the last two weeks of the trial and overall, but the ADG for pigs fed lard+carnitine was similar to the control. Lard reduced feed intake in the first two weeks of the trial (p<0.05). Carnitine reduced the percentage of pigs with poor (ADG<375 g/d) growth (15 vs 40%; p<0.05). The greater uniformity of growth was most evident in low-weaning-weight pigs in the second period (16 vs 62%, p<0.005). Addition of fat did not produce any positive effect on uniformity and had no interaction with carnitine on uniformity. Carnitine addition increased serum total carnitione and short-chain acyl-carnitine levels (p<0.05), but did not modify free carnitine levels. Serum carnitine levels were lower at weaning than at 14, 28, or 39 days after weaning (p<0.05). Carnitine increased serum protein levels on day 14 (p<0.05). Addition of fat in the form of soybean oil or lard did not improve piglet growth performance. Addition of 50 mg/kg of carnitine to the diet of weanling pigs enhanced postweaning performance.

Effects of poly-$\gamma$-glutamic acid on serum and brain concentrations of glutamate and GABA in diet-induced obese rats

  • Poly-gamma-glutamic acid ($\gamma$-PGA) is a mucilaginous and biodegradable compound produced by Bacillus subtilis from fermented soybeans, and is found in the traditional Korean soy product, cheongkukjang. This study was carried out to evaluate the effects of $\gamma$-PGA from a food source on the concentration of the neurotransmitter GABA and its metabolic precursor glutamate in diet-induced obese rats. Eight-week old male Sprague-Dawley rats (n=60) were used. The rats were divided into two groups and obesity was induced by providing either a 10% control fat or 45% high fat diet for 5 weeks. The rats were then blocked into 6 groups and supplemented with a 0.1% $\gamma$-PGA diet for 4 weeks. After sacrifice, brain and serum GABA and glutamate concentrations were analyzed by high performance liquid chromatography with fluorometric detection. The rats fed the high fat diet had significantly increased body weights. $\gamma$-PGA supplementation significantly increased serum concentrations of glutamate and GABA in the control fat diet groups while this effect was not found in the high fat groups. In the brain, glutamate concentrations were significantly higher in the $\gamma$-PGA supplemented groups both in rats fed the normal and high fat diets than in the no $\gamma$-PGA controls. GABA concentrations showed the same tendency. The results indicated that $\gamma$-PGA intake increased GABA concentrations in the serum and brain. However, the effects were not shown in obese rats.

Treated Extruded Soybean Meal as a Source of Fat and Protein for Dairy Cows

  • The influence of treated, extruded, partially expelled soybean meals as undegradable protein and bypass fat sources on lactation performance and ruminal fermentation of dairy cows was studied. Experiment 1: nine cows were used in a replicated 3${\times}$3 Latin square design with each period being 3 wk in duration. Cows were fed 440 g/kg forage and 560 g/kg grain diet with one of three extruded soybean meals fed at 110 g/kg of the diet. The 3 soybean meals were 1) twice-extruded soybean meal (ESM; as a control); 2) lignosulfonate-treated, twice-extruded soybean meal (LSM); and 3) calcium oxide plus lignosulfonate-treated, twice extruded soybean meal (CLSM). Experiment 2: 3 ruminally cannulated cows were used in a 3${\times}$3 Latin square to study the treatment influence on ruminal fermentation characteristics. Feeding treated soybean meal to cows in LSM and CLSM treatments did not improve feed intake, milk yield, or milk composition except that cows fed the LSM and CLSM treatments produced less milk protein compared with the ESM treatment. The proportion of $C_{18:2}$ was greater in milk fat of cows fed CLSM compared with that of cows fed the ESM or LSM treatments. Ruminal pH, ammonia, and total volatile fatty acids were not affected by treatment. An increased proportion of $C_{18:2}$ in milk fat suggests that there is a potential use of calcium salts of fatty acids in protecting the lipid portion of extruded soybean meal and further research is needed to explore this potential with full-fat extruded soybeans not with extruded and partially oil expelled soybeans.

고지방식이로 유발된 비만 백서에서 가미감비제습탕이 비만 유발에 미치는 영향 및 기전 연구 (Anti-obesity Effects and Mechanism of Original and Modified Gambejaeseup-tang in Female Rats with Diet-induced Obesity)

  • Gambejaeseup-tang (GBJST) have recently been used as an anti-obesity herbal medicine but their effect and mechanism of action have not been studied. We modified ingredients of GBJST based on the previous experiments about exploring herbs to suppress triglyceride accumulation in 3T3-L1 adipocytes. We investigated the effects of modified GBJST on energy, glucose and lipid homeostasis using female rats with diet-induced obesity and their action mechanism was also determined. Rats fed a high-fat diet (HFD) were divided into 3 groups: rats in each group received 0.2 or 2 g water extracts of modified GBJST (L-GBJST or H-GBJST) or 2 g cellulose per kg body weight (a negative control) on a daily basis. A further group was fed a low-fat diet (LFD) as a positive control. We found that modified GBJST dose-dependently decreased body weight and mesenteric and retroperitoneal fat more than the control. This decrease was due to the reduction in energy intake and the increase of energy expenditure. HFD increased fat oxidation more than LFD and modified GBJST further increased fat oxidation as a major energy source more than the control in a dose-dependent manner. In addition, H-GBJST improved glucose tolerance without changing serum insulin levels during an oral glucose tolerance test. H-GBJST also suppressed the increase of serum total and LDL cholesterol and triglyceride levels by HFD. In conclusion, modified GBJST have a good anti-obesity effect by decreasing energy intake and increasing energy expenditure mainly as fat in female rats with diet-induced obesity. It also improves glucose tolerance and lipid metabolism.

Anthropometric Data, Nutrient Intakes and Food Sources in Overweight and Obese Korean Adult Women

  • This study was conducted to investigate the dietary intake, anthropometric data, and association between two factors and main food sources contributing macronutrients for overweight and obese females. Subjects were 85 adult females (overweight : 28, obese 57) where mean age was 38.7y. The results are summarized as follows. Mean fat percent, BMI, obesity rate were 29.3, 23.9 and 15.1%, respectively for overweight women and 32.7, 28.3, 36.4%, respectively for obese women. There were significant differences for most of the anthropometric data between groups. Fat percent for all subjects was significantly correlated with weight, waist circumference, hip circumference, mid arm circumference or skinfold thickness for the triceps, subscapular and suprailiac (p < 0.001). The parameter which showed the highest correlation coefficient (r=0.6156) with fat Percentage was the waist to hip ratio. Any significant differences were not found in dietary intake of nutrients or in diet composition between groups. The mean energy intake was 2090.1kcal (104% of RDA) for overweight women and 2113.0kcal (106% of RDA) for obese women. PFC ratio for overweight was 17 : 24 : 59 and 18 : 23 : 58 for obese subjects, which can be regarded as higher fat and lower carbohydrate percentages compared to recommended PFC ratio (15 20 65) .4) Fat intake was positively correlated (r : 0.2301, p < 0.05) with the triceps skinfold thickness, protein intake was also positively correlated with waist circumference (r=0.2668, p < 0.05) or fat weight(r: 0.2406, p < 0.05) .5) The main food items that contributed to energy intake for overweight or obese subjects were similar (rice, pork, bread, grapes, barley) except com oil in overweight or instant noodle for obese group. The subjects in this study were taking less energy from rice and more energy from pork and bread than women from 98 National Health and Nutrition Survey. Because there were no significant differences of dietary data between overweight and obese group, further investigation considering basal metabolic rate or activity would be needed.

American Television: A Source of Nutrition Education and Information

  • Television is a powerful and persuasive teacher. It has the potential to influence perceptions, knowledge, beliefs, and behaviors, thus nutritionists need to be aware of the nutrition-related information (NRI) in television programming and the effect this information has on viewers. The purpose of this article was to review research published in peer-reviewed journals between 1988 and 2003 that examined the NRI embedded in American television programming, which is exported to over 125 nations, and its impact on nutrition knowledge, attitudes, and/or behaviors. This review revealed that, for the past 15 years, NRI was commonly included in both television advertisements and shows. Advertised foods were mainly high in fat, sodium, and/or sugar. In addition, the NRI embedded in food advertisements tended to be misleading or inaccurate. Prime-time television shows included numerous NRI containing scenes every hour, with situation comedies having the most and real-life re-enactment shows the least. Overall, low nutrient density foods accounted for approximately 40 percent or more of all food references on prime-time television shows. In television shows, foods were mostly consumed as snacks rather than meals and children often ate more nutritious foods than adults. Although relatively few studies have examined the impact of television programming on viewers, those that do exist indicate that as children watch more television, nutrition knowledge and understanding declines while misconceptions about nutrition increase. Advertising influences children's food purchase requests and subsequent purchases by adults, with the most requested and purchased foods being high in sugar, fat, and/or salt foods. Existing research indicates that television must be acknowledged as a major source of NRI and a potentially powerful influence on dietary practices.

고지방식이 및 고탄수화물식이가 흰쥐의 혈청 Leptin 농도 및 지질함량에 미치는 영향 (Effect of High Fat and High Carbohydrate Diet on Serum Leptin and Lipids Concentration in Rat)

  • The purpose of this study was to investigate the effects of diet composition on serum leptin and lipids profiles in rats. At the baseline, seven 4-week-old Sprague-Dawley rats, male, were sacrificed and the remaining rats were divided into five groups and each group was fed one of the following five dietary regiments for 2 weeks and 6 weeks;the control diet AIN76(CAL, n=2l), high-carbonhydrate(rice)(HCR, n=2l), high-carbohydrate(flour)(HCF, n=2l), high-fat(corn oil)(HFO, n=2l), high-fat(beef tallow)(HFB, n=2l). Serum leptin was determined by a double antibody ELISA assay at the baseline(n=7), 6 week(n=35) and 10 week of age(n=70). At 6 weeks of age, the increase in the Food Efficiency Ratio(FER) was related to adipocyte hyperplasia in rats on HFB diets. The serum triglyceride, total cholesterol, and LDL-cholesterol increased significantly in HFB group, and decreased in HFO group compared to control group. The HFC group showed significant increase in serum triglyceride level compared with control group. After 2 weeks and 6 weeks, noticeably high increases in epididymal adipose tissue fat cell mass and numbers were observed with the HFB fed group. Serum leptin levels increased as body weight increased over the period of time(4weeks; 1.50$\pm$0.13ng/ml versus 10weeks; 2.08$\pm$-.13ng/ml). And this result shows that there are 193% higher in rats fed high fat-beef tallow diet than the control diet. Serum leptin levels of the HFB group(4.01$\pm$0.39mg/ml) were significantly higher than that of the HFO(2.06$\pm$0.5613ng/ml), CAL(2.08$\pm$0.1313ng/ml), HCR(2.41$\pm$0.2113ng/ml) and HCF(2.80$\pm$0.4713ng/ml) at p<0.05. The serum leptin concentration was positively correlated with the amount of epididymal fat pads(r=0.47 p<0.01), serum triglyceride(r=0.49, p<0.001), tatal cholesterol(r=0.48, p<0.001), LDL-cholesterol(r=0.58, p<0.001), atherogenic index(r=0.67, p<0.001), and inversely correlated with HDL-cholesterol(r=-0.65, p<0.001). In conclusion, the changes in composition of dietary fat and carbohydrate intake could affect changes in concentration of serum lipids and leptin. Especially, the high-fat diet with animal fat source could increase circulating leptin level. (Korean J Nutrition 34(2) : 123-131, 2001)

지역에 따른 주요영양성분의 공급음식에 관한 연구(I) -에너지 및 3대 영양소를 중심으로- (A Study on Sources of Energy & Macronutrients from Korean Dishes by Area)

  • The dietary intake of nutritional elements by Koreans as determined by the Ministry of Health and Welfare's National Nutrition Survey have been reported for $1969{\sim}1993$. But these data were based on not dish but food. Therefore, the purpose of this study was to compare dish sources of energy and macronutrients (carbohydrate, fat, protein) in the diets of three area (large city, small city and rural). Dish sources were evaluated from two-day record obtained in the secondary analysis of the 1993 Korean National Nutrition Survey. The result, large city and small city had higher fat and protein intake than did rural. Otherwise, carbohydrate intake among rural was higher than those among large and small city (p<0.05). The primary dish source of energy and macronutrients was cooked rice for all area. The percentage of cooked rice in daily carbohydrate intake was 52.64% for nationwide, 48.40% for large city, 50.52% for small city, 61.79% for rural. The cumulative percent of top 10 dish sources to carbohydrate for large city, small city, rural were 78.02%, 81.16%, 85.69%, respectively. These was higher than cumulative percent of other macronutrients. The milk as good protein source ranked 3 for large city, 6 for small city, 22 for rural. The major dish sources to fat were cooked rice and pork that prepared by various cooking way. These results show that the major dish sources of energy and macronutrients were cooked rice based of Korea traditional consumption pattern. The most of nutrient intake consumed some dishes for all area. The dish consumption pattern was generally similar between large and small city. But rural was different from other area. Threfore, nutrition educations and interventions should be targeted to each area and should be attended with studies that comparision of dish sources to nutritional elements by specific age-sex groups.
