  • NiNH4PO4 was Prepared from waste Ni catalyst used in hydrogenation of oil and fat. NiNH4PO4 was calcined at different temperature respectly 800,100,100˚C to prepare Nickel yellow. The result from this experiment are summerizer as follows: 1) Nickel yellow formed at 1100˚C was most clearness yellow color from color analyzer date. 2) Nickel yellow was consist of -Ni2P2O2 Ni3(PO4)2 from X-ray diffraction analysis. 3) The endothermic pick at 100˚C and exotherwic pick about 1050˚C on calcination of NiNH4PO4 were checked in DTA (difference Thermal analysis data.)

Nutritional Status of the Long-lived Elderly People in Kyungpook Sung-Ju Area(II) -Biochemical Nutritional Status- (경북 성주지역 장소노인의 영양상태(II) -생화학적 영양상태-)

  • The purpose of this study was to assess the biochemical nutritional status of the long-lived elderly. The subjects of the study were 148 elderly people of age over 85 years living in Kyungpook Sung-Ju area who have no problem in daily living. The anthropometric measurement and biochemical assessment of the blood sample were carried out. The subject group for this study was composed of 25.9% males and 74.1% females, the average age being 87 years old. The mean Body Mass Index(BMI) of the male and female subjects were 20.7 and 21.2 respectively. The average body fat amounts of the male and female were 21.4% and 29.8% respectively, and the average waist/hip ratios were 0.9 and 0.7 respectively. The mean levels of the total blood protein and albumin of the subjects were in the normal ranges. The mean levels of serum cholesterol and triglyceride were 167.9mg /dL and 123.9mg/dL respectively. The mean levels of the subjects below normal range of hemoglobin were 63.5%. Serum levels of antioxidant nutrients were very poor. The mean levels of serum lipid peroxidation products were 3.3nmol/mL. BMI and WHR were positively correlated with the serum cholesterol levels. The resuts showed that the long-lived elderly had good nutritional status except for antioxidant nutrients status. In addition antioxidant supplement for long-lived elderly may be effective to maintain healthy life in later years.

  • Over the past few decades, changes in patterns of behavior (e.g., diet, smoking, alcohol consumption, and physical activity) have led to major changes in health status, characterized by increases in obesity, Type II diabetes mellitus, cardiovascular disease, and some cancers. This epidemiologic transition is largely the result of rapid increases in immigration to developed countries and rural-urban migration within developing countries, which is usually accompanied by environmental and lifestyle changes. In particular, adoption of “Western” dietary patterns, which tend to be high in fat and low in fruits and vegetables, is of concern since diet is a potent contributor to chronic disease risk. However, until recently, the process by which immigrants and rural-urban migrants adopt the dietary practices predominant in their new environments, known as dietary acculturation, has received very little research attention. Dietary acculturation is multidimensional, dynamic, and complex, and varies considerably depending on a variety of personal, cultural, and environmental characteristics. Therefore, to intervene successfully on the negative aspects of dietary acculturation, it is important to understand the process and identify factors that predispose and enable it to occur. The purpose of this article is to provide a practical model for understanding and investigating the effect of dietary acculturation on food and nutrient intake. Thus, this report 1) gives an overview of acculturation, 2) defines dietary acculturation and presents a model for how it occurs, 3) discusses measurement issues around dietary acculturation,4) reviews the literature on dietary acculturation in Korean Americans; 4) suggests a paradigm for acculturation research; and 5) offers some recommendations for future research in this area.

Mutation of the lbp-5 gene alters metabolic output in Caenorhabditis elegans

  • Intracellular lipid-binding proteins (LBPs) impact fatty acid homeostasis in various ways, including fatty acid transport into mitochondria. However, the physiological consequences caused by mutations in genes encoding LBPs remain largely uncharacterized. Here, we explore the metabolic consequences of lbp-5 gene deficiency in terms of energy homeostasis in Caenorhabditis elegans. In addition to increased fat storage, which has previously been reported, deletion of lbp-5 attenuated mitochondrial membrane potential and increased reactive oxygen species levels. Biochemical measurement coupled to proteomic analysis of the lbp-5(tm1618) mutant revealed highly increased rates of glycolysis in this mutant. These differential expression profile data support a novel metabolic adaptation of C. elegans, in which glycolysis is activated to compensate for the energy shortage due to the insufficient mitochondrial ${\beta}$-oxidation of fatty acids in lbp-5 mutant worms. This report marks the first demonstration of a unique metabolic adaptation that is a consequence of LBP-5 deficiency in C. elegans.

A Study on Ju-ak as Affected by Adlay Flour (율무쌀을 첨가한 주악에 관한 연구)

  • In order to maks use of Adlay widely, it was analyzed and determined the content of amylose, amylopection. And Ju-ak was made from glutinous rice flours with vairous mixing ratio of Adlay flours and then this was tested for suitability to preparation of Ju-ak. Evaluation was conducted through sensory evaluation and objcetive evaluation. The results are as follow: 1. The content of moisture, total ash, crude protein, crude fat, and carbohydrate in Adlay were shown to be about 10.58%, 84.4%, 17.3%, 3.76%, 66.52%. 2. The amylose and amylopectin content were 15.6%, 84.4%. 3. By the sensory evaluation results the taste of Ju-ak prepared with mixing of 25% and 50% Adlay flour was better than glutinous rice Ju-ak but 75% and 100% mixed flour were undersirable. 4. By the Instron measurement results that hardness tend to increass as the additon level of Adlay increased. Gumminess, Chewiness and Elasticity was not significantly different as the addition level of Adlay increased. Conhesiveness tend to decrease as the addition level of Adlay. 5. Consistency of Ju-ak had significant relationship with hardness and cohesiveness. Moistness had significant relationship with hardness, elasticity, cohesiveness and chewiness. Texture of Ju-ak had significant relationship with hardness, elasticity, cohesiveness and gumminess.

Plasma Leptin and Performance of Purebred and Backcrossed Hereford throughout Grazing and Feedlot Fattening

  • In a herd of 24 spring-born steers, plasma leptin and performance of selected purebred (n=5) and backcrossed Hereford (n=5) were compared in a year-round summer grazing and winter feedlot fattening. Bimonthly blood collection and body weight measurement were accomplished. The plasma samples were analyzed for leptin, insulin, total cholesterol, triglyceride, NEFA and glucose. The experimental design utilized one-way ANOVA with breed as the treatment. The purebred obtained higher plasma NEFA (p<0.001) compared to backcross, regardless of seasonal feeding systems (SFS). The backcross showed gradual increase and nonresponsiveness of plasma leptin to SFS. During summer grazing, attenuation of plasma leptin and sudden elevation when shifted to winter feedlot fattening were observed in purebred. Plasma leptin obtained linear relationship with body weight of purebred (r=0.53;p<0.001) and backcrossed Hereford (r=0.49; p<0.01). The purebred and backcrossed Hereford, when shifted to summer grazing, resulted to sustained and restricted daily gain, respectively. Therefore, cattle breeds of higher growth potential exhibit significant elevation of plasma leptin after 400 kg BW, when animal starts to deposit significant body fat.

A Study on Energy expenditure in Korean Adult (한국인의 에너지 소비량에 관한 연구)

  • A 4-week energy balance study was conducted to estimate the energy expenditure (EE) of 16 college age men and women, 20 to 26 year of age, by measurement of energy intakes and changes in body energy(BE) content(intake/balance technique), keeping their normal living pattern and maintenance body weight. Energy intake was measured by bomb calorimetry and estimated by food table. Fecal energy loss was calculated from nitrogen excreted. Fat mass was determined from body density estimated from skinfold tickness. 1) Gross energy (GE) intakes calculated from food table was not only 13.4% lower than those of bomb calorimetry but also lower 4 and 5% than metabolizable energy(ME) intakes for the male and female subjects, respectively. 2) Fecal energy loss was 7.2% and 6.9% proportion of the gross energy intake for the male and female subjects, respectively. 3) Mean daily metabolizable energy intakes estimated by subtract fecal and urinary energy loss was 2467kcal for the male subjects and 1897kcal for the female subjects. 4) Total body energy change estimated from body composition change over 31 days was decreased 7672kcal for the male subjects and 2689kcal for the female subjects. 5) Mean daily energy expenditure was 2714kcal (45kcal/kg of body weight) for the male subjects and 1984kcal(40kcal/kg of body weight) for the female subjects. 6) The estimated energy expenditure of college-age subjects in this study provide evidence to support the Recommended Dietary Allowances for energy of Korean normal adult.

The Research of Body Types of the Chosunjok college Women in China and Korean College Women (한국과 중국조선족 여대생의 체형 비교연구)

  • This research analyzes characterisation and classification of body types for the Chinese women and to compare the differences of body type with Korea women in university. The measurement has gauged in 1998 at Yeon-Gil University in China. One hundred of the Chosunjok college women aged 17 and 24 in China were measured for this research. In the results of frequency analysis a comparison of the anthropometric categories of the chinese women with those of the Koreans revealed that the Chinese women were shorter and more fat in body. In the results of factor analysis Both two groups factor 1 represented the degree of abesity while factor 2 indicated the stature and the arm length. For the Chosunjok the body types are classified into eight types but Korean has four types by cluster analysis The stature and weight varied according to types leading to a classification focusing on the body size determened by stature and weight factors.

A Study on Obesity Rate and Self-evaluated Body Shape of Women Living in Inchon (인천에 거주하는 도시 여성의 비만도와 자신의 체형에 대한 인식)

  • To compare actual obesity rate and self-evaluated body shape, 651 women living in Inchon were participated in the measurement of anthropometric indices and in the survey by questionnaire. Mean RBW and BMI were in normal range except the girl in 13-15 years. RBW and BMI of the women in 40s and 50s were significantly higher than those in women in younger ages(p<0.001). Triceps skinfold thickness of the subjects were not significantly different. Significantly low DRBW in teenagers and women in 20s showed that their desire to reduce body weight were very strong. Over the half of the subjects thought they were too heavy and unsatisfied at their body shapes. The parts of the body desired to remove extra fat were the waist & abdomen in women over 30s and the thigh & legs in teenagers. It is thought that women, especially in 10s and 20s need the education about the appropriate evaluation of body shape and also need the nutrition education about the deteriorated influence of underweight on health.

Accurate Determination of Malachite Green and Leucomalachite Green in Fish using Isotope Dilution Liquid Chromatography/Mass Spectrometry (ID-LC/MS)

  • Malachite green (MG) has been used world-widely in aquaculture as a parasiticide or fungicide. Although MG performed successfully, it has not been permitted for use in aquaculture from European Union, USA, and Canada because of its carcinogenicity and mutagenicity. We developed a sensitive and specific method to determine MG and its principal metabolite, leucomalachite green (LMG), respectively by isotope dilution liquid chromatography mass spectrometry (ID-LC/MS). To enhance the extraction recovery of MG and LMG from fish tissue, an additional step, saponification, was introduced in sample preparation process to remove fat in sample extract, which hampered the performance of SPE columns. The residue of MG and LMG in fish was analyzed using liquid chromatography mass spectrometry in the selected ion monitoring (SIM) mode by monitoring at m/z 329 and 334 for MG and $d_5$-MG and at m/z 331 and 337 for LMG and $^{13}C_6$-LMG, respectively. This method was validated by comparing with the value of the reference material provided by Laboratory Government Chemistry (LGC). The results agreed within the measurement uncertainty and the accuracy was much improved than the provided reference value by LGC.
