Effect of Fat Level and the Ripening Time on Quality Traits of Fermented Sausages

  • The objective of this study was to investigate the effect of the fat reduction on the physicochemical and microbiological characteristics of fermented sausages during ripening and drying. Low fat fermented sausages were produced with different fat levels (30%, 20%, 10%, and 5%) under ripening conditions and fermented process. Samples from each treatment were taken for physicochemical and microbiological analyses on the 0, 1, 2, 3, 4, 5, 7, 10, 14, and 21st day of ripening. In proximate analysis, the fat reduction in sausages produced an increase in moisture, protein and ash contents during ripening and drying (p<0.05). The weight losses were significantly higher in high fat formulations during the first 4 days, whereas those were higher in low fat ones after 10 days of storage (p<0.05). Fat reduction was responsible for an increase in shear force values after 3 days of storage. The volatile basic nitrogen (VBN) value of the low fat samples was significantly higher (p<0.05). Low fat sausages reduced the extent of lipid oxidation. The lower fat level produced redder sausages. Total plate bacteria and Pseudomonas counts of sausages showed no significant differences. Production of low fat sausages resulted in the physicochemical and microbiological attributes equal to or better than the high fat sausages without negative effects, except only a higher VBN and weight loss.

A Pilot Study of the Effects of an 8-week School-Based Weight Loss Program on Obesity, Shape Satisfaction, and Shape Esteem in Obese Children (비만 아동에서 8주간의 학교 체중 조절 프로그램 실시 후 비만도, 체형 만족도 및 체형 존중감 변화에 대한 예비연구)

  • This study was conducted to examine the effects of an 8-week weight loss program, on body composition, body shape satisfaction, body shape esteem in 15 obese children. This program included nutritional education and regular physical fitness. After completion of this program, height and body weight increased slightly but body compositions changed. BMI, degree of obesity, and body fat levels dropped slightly, however these differences were not significant. After the 8-week program body weight increased from $63.61{\pm}8.80\;kg$ to $64.07{\pm}9.11\;kg$, degree of obesity and BMI decreased from $151.73{\pm}13.62%$, and $29.08{\pm}2.35$ to $146.60{\pm}12.92%$, and $28.57{\pm}2.26$, respectively, and the percentage of body fat decreased slightly from $42.70{\pm}4.87%$ to $41.46{\pm}4.88%$. There were slight changes in weight of body muscle and lean body mass from $19.62{\pm}3.48\;kg$ and $36.17{\pm}5.78\;kg$ to $20.30{\pm}3.64\;kg$ and $37.16{\pm}6.18\;kg$, respectively. LBM and amount of muscle were higher after this weight loss program. The body shape esteem score increased from $7.60{\pm}4.01$ to $9.00{\pm}6.20$. There was no significant difference in body shape satisfaction before and after the program, and the participants also wanted to be leaner. Finally, body weight, BMI, and body fat showed negative correlations to body shape esteem.

Effects of Rice Bran Fiber on Quality of Low-fat Tteokgalbi

  • This study evaluated the effects of dietary fiber extracted from rice bran (rice bran fiber) on the quality of low-fat tteokgalbi. The controls were formulated with 20% added fat. Test samples of tteokgalbi were produced with 5 different formulations containing 1, 2, 3, 4, and 5% rice bran fiber as a fat replacer, in addition to 10% fat. The control had the highest fat content, energy value, cooking loss, reduction in diameter, reduction in thickness, CIE $L^*$-value (lighness), and color of sensory properties. The tteokgalbi containing rice bran fiber had higher moisture, protein, ash, and carbohydrate contents than the controls. Tteokgalbi with 3% rice bran fiber had the lowest cooking loss, reduction in diameter, and reduction in thickness. Meat products containing 2 and 3% rice bran fiber had a higher overall acceptability similar to the high fat control.

Arteriovenous Fistula on Forehead after Autologous Fat Injection: A Case Report (이마부위 자가 지방이식 후 발생한 동정맥 샛길 치험례)

  • Purpose: Autologous fat injection is ideal for patients who wish to add contour, projection and gross volumization of the aging, atrophic face and is claimed to be a safe procedure. However, there are several case reports in the literature where patients have suffered from acute visual loss and cerebral infarction after facial fat injection. This paper will explore a rare case of vessel related complication, an arteriovenous fistula that occurs after fat injection on forehead. Method: A 28 - year - old female who showed a non - tender, soft $1.0{\times}2.5cm$ sized mass on forehead for 3 weeks. A thrill could be detected on the totuous dilatated vessel - like structure around the mass. She had a fat injection on forehead for soft tissue augmentation 3 months prior to developing the mass. 3 - dimensional brain CT angiography showed arteriovenous fistula. Results: The fistula is totally excised with ligation of feeding vessels. Pathology report showed an atypical vessel which had intimal thickening, myxoid degeneration and thrombus formation. There were no evidences of recurrence at least for 2 months of follow - up. Conclusion: An occurrence of arteriovenous fistula after autologous fat injection is very rare. After perforation of artery and vein by coincidence, blood extravasates with the formation of a hematoma capsule and a pseudocapsule around it. The hematoma capsule would expand and clot would reabsorb resulting in a cavity leading to fistula formation. Other vessel related complications like acute visual loss or cerebral infarction are very severe. Therefore, surgeons should be cautious during facial fat injection to avoid vessel injuries.

Retrospective Study about the Effectiveness of Korean Medicine Treatment on 254 Patients Visited Obesity Clinic (비만클리닉에 내원한 환자 254명의 한의학적 치료효과에 대한 후향적 연구)

  • Objectives: The purpose of this study is to report the effectiveness of Korean medicine treatment on 254 patients visited obesity clinic. Methods: Two hundred fifty-four patients, who had visited obesity clinic from May 2013 to November 2014, were analyzed by bioelectrical impedance analysis. We analyzed changes of weight, skeletal muscle mass, fat mass, body mass index (BMI) and body fat percentage after treatment, also investigated differences of weight and fat mass loss according to age, BMI and body fat percentage. Results and Conclusions: Male and female percent of the study group was 3.5% and 96.5%. All patients were constituted with 50.0% of 20~29-year-old group, 34.1% of 30~39-year-old and 15.9% of 40 and more year-old. In BMI, $21kg/m^2$, $21.0{\sim}22.9kg/m^2$, $23.0{\sim}29.9kg/m^2$, above $30kg/m^2$ were 20.5%, 30.3%, 42.1%, 7.1%, respectively. In Body fat percentage, under 25%, 25.0%~29.9%, 30.0%~34.9%, above 35% were 11.4%, 23.2%, 30.7%, 34.6%, respectively. 96.1% of patients were showed weight loss compared with baseline, the decrease of body weight was $2.96{\pm}1.86$ kg, that of BMI was $1.13{\pm}0.70kg/m^2$ and that of body fat percentage was $2.43%{\pm}2.06%$ after 1 month treatment. We observed a decline of weight and fat mass with higher BMI and body fat percentage at the baseline.

The Efficacy of Low Frequency Electroacupuncture Therapy for Weight Loss in Obese Korean Women (저주파 전침 위주의 한방비만치료의 체중감량 효과 및 관련 인자에 관한 연구)

  • Purpose: We investigated the efficacy of electroacupuncture therapy in obese Korean women in order to make basic guidelines for the use of oriental medicine in treating obesity. Methods: Forty women were divided into two groups and each was treated 12 times: 1) one group was treated using electroacupuncture (EA) involving auricular acupuncture and physical treatment, without exercise (EA group, n=10), and 2) the other group was treated using electroacupuncture and exercise (EA plus exercise group, n=30). The EA was applied to subcutaneous fat tissue manually. Body weight was evaluated every visit and body composition was checked at the $1^{st}$ and $12^{th}$ visits. Statistical comparisons were made using SPSS13.0. We compared the weight loss, body mass index (BMI), and body composition before and after treatment using the pairedt-test. The correlations between weight loss and BMI and age were examined. Results: After the $12^{th}$ treatment, both groups showed significant reductions in body weight, BMI, body fat, and body fat percentage. The weight loss averaged 4.58${\pm}$3.87% in the EA group and 4.69${\pm}$3.10% in the EA plus Exercise group. The reduction in skeletal muscle was significant in the EA group, but not significant in the EA plus Exercise group. The speed of the weight loss was correlated with age using Pearson's correlation coefficient. Based on BMI, normal and obese subjects in the EA plus Exercise group had significant reductions in body weight, BMI, body fat, and body fat percentage; the obese subjects also had a significant reduction in skeletal muscle. Conclusion: Combined EA therapy may be effective for weight reduction. Age and BMI were related to weight loss using EA therapy.

Effect of Functional Beverage on Weight Control and Body Fat Mass in Overweight Women

  • Carnitine, hydroxycitric acid, and soy peptide have been known to be anti-obesity agents. The purpose of this study was to evaluate the combined effects of carnitine, hydroxycitric acid, and soy peptide mixture as a potential anti-obesity supplement in overweight women. Overweight premenopausal women (n=33; PIBW>110; 20 to 39 years) were randomized into two groups: the placebo group and the functional beverage group (the test group). Functional beverage was composed of 2000 mg soy peptide, 20 mg L-carnitine and 300 mg garcinia(40% hydroxycitric acid). Body weight and 3 day food dimes, biochemical measurements and computerized tomography were measured at baseline and 8-week. After 8-week consumption of functional beverage with usual diet and exercise, body weight fell an average of 1.4 kg (2.1%). Visceral fat area reduced an average of 7.8% at L1($69.6{\pm}8.7\;vs\;64.2{\pm}7.5\;\textrm{cm}^2$) and 5.1% ($60.7{\pm}4.9\;vs\;57.6{\pm}4.8\;\textrm{cm}^2$, p<0.05) at L4level after weight loss in the test group. Calf fat area in the test group showed about 10% reduction ($31.0{\pm}2.7\;vs=\;27.7{\pm}1.7\;\textrm{cm}^2$, p<0.05) after weight loss. These reductions in fat areas were not shown in the placebo group. There were tendencies of increase in serum levels of $\beta-hydroxybutyrate$, acetoacetate, and total ketones in the test group. There were 7% and 17% insignificant increase in fasting free fatty acid (FFA) and response area of FFA during oral glucose tolerance test(OGTT), respectively, in this group. ill addition, little weight loss in the test group showed 8% but not significant reduction in insulin response area during OGTT. In conclusion, this study shows that taking a mixture of carnitine, hydroxycitric acid, and soy peptide as a potential anti-obesity supplement for 8-week produced advantageous changes in the weight and visceral fat accumulation of overweight women.

Possibility of Making Low-fat Sausages from Duck Meat with Addition of Rice Flour

  • Low-fat sausages with or without 10% hydrated rice flour were made from duck, chicken and pork and their physical and sensory properties were compared. Results showed that moisture content did not differ significantly among the sausage batters. However, crude protein, crude fat and total ash content were significantly lower in the group with added rice flour compared with the no flour group. Crude protein and crude fat were the highest in pork sausages without rice flour (p<0.05). Adding 10% rice flour reduced total expressible fluid in all meat type sausages. Cooking loss was also decreased when 10% rice flour was used in making sausages from chicken and pork. However, no changes in cooking loss were found in duck meat by adding rice flour. Again, the highest cooking loss was in pork sausages without rice flour and lowest in chicken sausages with 10% rice flour. The pH of the meat from different animal species differs significantly, although no significant difference was found within meat types with or without rice flour. Lightness ($L^*$) increased, while redness ($a^*$) decreased with adding rice flour in all meat type sausages. Results showed that hardness was significantly reduced when 10% rice flour was added to pork, chicken and duck meat (p<0.05). This may be due to increased water retention of rice flour after cooking. Sensory evaluation indicated that the overall acceptability of pork and chicken sausages with or without rice flour was the same, but duck sausages without rice flour had the highest off-flavor score among the sausages. Addition of rice flour increased the overall acceptability of duck sausage to that of pork and chicken sausages.

Effect of Complete Fasting on Energy Metabolites and Serum Parathyroid Hormone and Mineral Excretion in Women (여성에서 절식이 에너지 대사산물 및 혈청 PTH 수준과 무기질 배설에 미치는 영향)

  • This study was designed to observe the change of body composition and nutrient metabolites and the excretion of minerals during complete fasting for 10 days in thirty women. Average loss of body weight was 7.98kg and body fat was gradually reduced after 9 days fasting, but the loss of lean body mass was reduced after 7 days fasting. Serum glucose level was sustained at constant level, but serum levels of blood urea nitrogen, free acid and $\beta$-hydroxybutyrate were significantly increased during fasting but decreased after re-feeding. Urinary excretions of 3-methylhistidine, total creatinine, and urea were high in the beginning of fasting but gradually decreased. Serum level of parathyroid hormone was significantly reduced by fasting but regained after re-feeding. Serum level of minerals was at the constant level throughout the experimental period. The urinary excretion of minerals(Ca, K, Mg, P) was significantly increased in the early stage of fasting and then reduced from 7 days, but the excretion of Zn was continuously increased until the late stage of fasting. These results showed that amino acid fatty acid released from the breakdown of muscle protein and body fat, respectively, were utilized for energy during fasting. Body weight and BMI were reduced because of the increased muscle protein breakdown and body water excretion during early stage of fasting, but the significant body fat loss was after 9 days fasting. Therefore, it could be suggested to fast for longer than 10 days if the reduction of body fat was planned by fasting, and recommed to exercise and ingest more vitamins and minerals to replace the excreted minerals during fasting. A statistical analysis of the fat mass experimental data using random coefficient model (변량계수모형을 이용한 체지방 실험자료에 관한 통계적 분석)

  • Thirty six female students participated in the experiment of the fat mass weight loss. they kept diary for foods they ate every day, took a picture of the foods, transmitted the picture to the experimenter by the camera phone, and consulted him about fat mass loss once a week for 8 weeks period. Fat mass weight and its related factors of the students had been measured repeatedly every week during 8 weeks, The repeated measurement data were used for applying various random coefficient models. And hence optimal random coefficient model was selected. From the optimal model, the baseline, body mass index, diastolic blood pressure, total cholesterol and time of the fixed factors were very significant. The fixed quadratic time effect existed. The variance components corresponding to the subject effect, linear time effect of the random coefficients were all positive. Thus random coefficients up to the linear terms were considered as the optimal model. The treatment effect reduced the weight loss to an average of 2.1kg at the end of the period.
