The Effect of Processing Condition on Physicochemical Characteristics in Pine Nut Gruel (잣죽의 제조조건이 이화학적 특성에 미치는 영향)

  • The physicochemical characteristics of pine nuts gruel were investigated to find the effects of processing condition during the processing. Three-dimensional response surface methodology was applied to investigate effects of ratio of water volume and pine nuts weight to rice weight and heating time on dependent variables of the physicochemical characteristics. The dependent variables in physicochemical characteristics were viscosity (cP), spreadability (cm), pH, soluble solid content (%), color, total sugar (%) and amylose content (%). The F-value of ratio of water volume and pine nuts weight to rice weight and heating time to viscosity were 8.91, 4.54 and 5.02 respectively and they are significantly different at 5% level. The F-value to spreadability were 5.44, 7.88 and 8.04 respectively and they are significantly different at 5% level. These results suggest that water volume, pine nuts weight and heating time greatly affect the viscosity and spreadability of pine nuts gruel. The processing condition also affect the soluble solid content. The changes of the processing condition did not affect the pH of pine nuts gruel. We found that the L, a, b value were affected more by ratio of water volume and pine nuts weight to rice weight than by heating time. The water volume affected more the total sugar and amylose content of pine nuts gruel than pine nuts weight and heating time.

Quality Properties of Bread Made of Wheat Flour and Black Rice Flour (흑미가루를 첨가한 식빵의 품질 특성)

  • The quality of bread (black rice bread) made of black rice flour and wheat flour was investigated. The bread was manufactured with 10, 20 or 30% black rice flour (BRF) (w/w) with increasing and wheat flour. The bread volume was decreased from 2250 cc to 1700 cc as BRF contents increased from 0% to 30%. The lightness (L values) decreased with increasing BRF contents and the redness (a values) increased. The yellowness (b values) slightly decreased with increasing BRF contents. Textural characteristics of bread crumb were influened by adding additives BRF. Breads containing additives showed an increase in hardness, gumminess and chewiness and a decrease in springness and cohesiveness. In sensory evaluation, sensory scores decreased with increasing BRF contents for the appearance, such as grain and texture, of black rice bread. On the other hand, the highest sensory scores for color, taste and overall eating quality were obtained, when BRF content was 20%. In conclusion, Bread with 20% BRF was the best quality in sensory evaluation.

Exploring the Accuracy and Methods of Estimation on Base Physical Quantities (기본물리량 어림의 정확성 및 방법에 대한 탐색)

  • This study explored people's accuracy and methods of estimating some base physical quantities, i.e. length, mass, time and temperature. A total of 40 members, ranging from freshmen to professors, of a physics education department of a local university were asked to make two different kinds of estimations, intuitive and operational, on two sets of objects. For intuitive estimation, they were asked to make estimations on four given objects (length - wood chopsticks, mass - rubber eraser, time electric fan, temperature - water in a cup) as soon as they faced with the objects, usually within a few seconds of seeing. For operational estimation, they were allowed to make estimations on a different set of objects (length - plastic rod, mass - lock, time - simple pendulum, temperature - water in a cup) with enough time and they could apply various available methods (e.g. using pencil to estimate the object's length, counting their own pulse rate to estimate time) for the estimation. The findings of this study can be summarized as follows: (1) for length, mass and temperature the intuitive estimations were better performed while for the time estimation the result was the reverse; (2) there was no positive relationship between the amount of physics experience and the accuracy of the estimation; (3) in general, people's accuracy of the length estimation was best performed while their mass estimation was worst performed; (4) people used their own various methods for estimation, esp. using nearby objects around them and applying mental units which have convenient values (e.g. 30cm, 50cm, 1kg, 1 Keun, 1 second).

Development of Fog Cooling Control System and Cooling Effect in Greenhouse (온실 포그 냉방 제어시스템 개발 및 냉방효과)

  • This study was conducted to provide a basis for raising farm income by increasing the yield and extending the cultivation period by creating an environment where crops can be cultivated normally during high temperatures in summer. The maximum cooling load of the multi-span greenhouse with a floor area of 504 ㎡ was found to be 462,609 W, and keeping the greenhouse under 32℃ without shading the greenhouse at a high temperature, it was necessary to fog spray 471.6 L of water per hour. The automatic fog cooling control device was developed to effectively control the fog device, the flow fan, and the light blocking device constituting the fog cooling system. The fog cooling system showed that the temperature of the greenhouse could be lowered by 6℃ than the outside temperature. The relative humidity of the fog-cooled greenhouse was 40-80% during the day, about 20% higher than that of the control greenhouse, and this increase in relative humidity contributed to the growth of cucumbers. The yield of cucumbers in the fog-cooled greenhouse was 1.8 times higher in the single-span greenhouse and two times higher in the multi-span greenhouse compared to the control greenhouse.

Investigation of the Acoustic Performance of Music Halls Using Measured Radiation Characteristics of the Korean Traditional Musical Instruments (국악기의 음향방사특성에 따른 국악당의 음향성능조사)

  • There have been always some difficulties in target setting and conditioning of acoustic performances or the Korean traditional music hall due mainly to the lack of the information on the sound radiation characteristics of Korean musical sources. As the 2nd experiment succeeding the previous study[1], the radiation characteristics of eight typical Korean traditional musical sources were investigated if precision. The selected musical sources were Geomungo, Haegeum (string), Piri, Taepyeongso (woodwind), Buk, Kwaengguari, Jing (drum), and male Pansori Chang (vocal Performance). The results show that the directivity pattern of each instrument is different and has their own directivity characteristics. Measured directional and spectral characteristics of traditional Korean music sources were implemented into the computation of architectural acoustic measures. Significant differences in the acoustic measures at receiver positions were observed between the results in using the omni-directional source and the directional one. In order to investigate the acoustical characteristics of the instruments depending on the spatial variation four different shapes of halls were introduced including rectangular, fan. horse-shoe and geometrical shapes. Room acoustical parameters such as RT, SPL, C80, LF, STI were calculated at each type or hall. As the results, It was found that the rectangular hall has the most high clarity. lateral energy and STI values among low shapes of halls. It is thought that the suggested source data and design method can be used as a basic reference in the future acoustic design of performance halls for the Korean traditional music.

Field Cooling Tests of Paddy Stored in Steel Bins with a Grain Cooler (곡물냉각기를 이용한 철제 원형빈에서 벼 냉각)

  • Two field cooling tests were conducted to evaluate the cooling characteristic of paddy with a prototype grain cooler. The first test was carried out during summer season in a steel bin with 180.3ton of paddy at Sunchon. And the second test was carried out during harvesting season in a steel bin with 272.2ton of paddy at Ulsan. At the first test, initial paddy temperature of 23.6$^{\circ}C$ was dropped to 14$^{\circ}C$, and initial moisture content of 19.9% was dropped to 19.3% after 52.5 hours of cooling. At the second test, initial paddy temperature of 16.1$^{\circ}C$ dropped to 5.5$^{\circ}C$ after 78.0 hours of cooling. And, at the first test, the average air flow rates of chilled air leaving the grain cooler and penetrating the grain layer were 77.5 ㎥/min and 42.5 ㎥/min, respectively. To prevent leakage of chilled air from plenum chamber of steel bin, which was about 45% of the average air flow rates of chilled air leaving the grain cooler, a proper method was required. The average total power consumption at the first test during summer was 22.1 ㎾ with control of fan damper. At the second test, it was 17.4 ㎾ due to controlling the capacity of compressor with unloading solenoid valve and changing the flow rates of hot refrigerant gas flowing into evaporator and reheater from compressor, resulting in 27% reduction of energy consumption.

Synthesis and Photovoltaic Properties of Alternating Conjugated Polymers Derived from Thiophene-Benzothiadiazole Block and Fluorene/Indenofluorene Units

  • A new donor-accepter-donor-accepter-donor (D-A-D-A-D) type 2,1,3-benzothiadiazole-thiophene-based acceptor unit 2,5-di(4-(5-bromo-4-octylthiophen-2-yl)-2,1,3-benzothiadiazol-7-yl)thiophene ($DTBTTBr_2$) was synthesized. Copolymerized with fluorene and indeno[1,2-b]fluorene electron-rich moieties, two alternating narrow band gap (NBG) copolymers PF-DTBTT and PIF-DTBTT were prepared. And two copolymers exhibit broad and strong absorption in the range of 300-700 nm with optical band gap of about 1.75 eV. The highest occupied molecular orbital (HOMO) energy levels vary between -5.43 and -5.52 eV and the lowest unoccupied molecular orbital (LUMO) energy levels range from -3.64 to -3.77 eV. Potential applications of the copolymers as electron donor material and $PC_{71}BM$ ([6,6]-phenyl-$C_{71}$ butyric acid methyl ester) as electron acceptors were investigated for photovoltaic solar cells (PSCs). Photovoltaic performances based on the blend of PF-DTBTT/$PC_{71}BM$ (w:w; 1:2) and PIF-DTBTT/$PC_{71}BM$ (w:w; 1:2) with devices configuration as ITO/PEDOT: PSS/blend/Ca/Al, show an incident photon-to-current conversion efficiency (IPCE) of 2.34% and 2.56% with the open circuit voltage ($V_{oc}$) of 0.87 V and 0.90 V, short circuit current density ($J_{sc}$) of $6.02mA/cm^2$ and $6.12mA/cm^2$ under an AM1.5 simulator ($100mA/cm^2$). The photocurrent responses exhibit the onset wavelength extending up to 720 nm. These results indicate that the resulted narrow band gap copolymers are viable electron donor materials for polymer solar cells.

Synthesis, Crystal Structure and Theoretical Calculation of a Novel Nickel(II) Complex with Dibromotyrosine and 1,10-Phenanthroline

  • A new complex [$Ni(phen)(C_9H_8Br_2NO_3)_2{\cdot}2CH_3OH{\cdot}2H_2O$] [phen: 1,10-phenanthroline $C_9H_8Br_2NO_3$: 3,5-dibromo-L-tyrosine] was synthesized and characterized by IR, elemental analysis and single crystal X-ray diffraction. X-ray crystallography shows that Ni(II) ion is six-coordinated. The Ni(II) ion coordinates with four nitrogen atoms and two oxygen atoms from three ligands, forming a mononuclear Ni(II) complex. The crystal crystallizes in the Orthorhombic system, space group $P2_12_12$ with a = 12.9546 ${\AA}$, b = 14.9822 ${\AA}$, c = 9.9705 ${\AA}$, V = 1935.2 ${\AA}$, Z = 1, F(000) = 1008, S = 0.969, ${\rho}_{calcd}=1.742g{\cdot}cm^{-3}$, ${\mu}=4.688mm^{-1}$, $R_1$ = 0.0529 and $wR_2$ = 0.0738 for 3424 observed reflections (I > $2{\sigma}(I)$). Theoretical study of the title complex was carried out by density functional theory (DFT) method and the B3LYP method employing the $6-3l+G^*$ basis set. The energy gap between HOMO and LUMO indicates that this complex is prone to interact with DNA. CCDC: 908041.

A Study on the Application of a Wind Power Generation System Using Outdoor Air on the Rooftop and Indoor Ventilation (건물 옥상외기와 실내배기를 활용한 풍력발전시스템 적용 연구)

  • This study proposed a wind power generation system utilizing outdoor air on the rooftop and indoor ventilation, which would increase according to the building height, as a way to help to save energy consumption in a building by using wind power energy of the new renewable energy sources. The study measured the distribution of air currents and power generation according to the usage factor of exhaust pipes in the kitchen and bathroom and identified the elements to consider when applying a wind power generation system to buildings in order to use outdoor air on the rooftop increasing according to the height and the indoor ventilation produced in the facility vertical shafts inside the buildings by installing a wind power generation system on the rooftop. (1) The study measured the ventilation velocity of the kitchen hood and bathroom ventilation fan by changing the zone areas by the households according to the usage factor of [${\alpha}$]=33~100%. As a result, the kitchen ventilation pipe generated the ventilation wind of 3.0m/s or more at the usage factor of [${\alpha}$] 66% or higher, and the bathroom ventilation pipe generated ventilation velocity lower than 3.0m/s, the blade velocity of the wind power generator, even after the usage factor rose to [${\alpha}$]=100%. (2) As the old bathroom ventilation pipe generated the ventilation velocity of 3.0m/s, the blade velocity of the wind power generator, even with the rising usage factor [${\alpha}$], the application of an outdoor air induction module increased the ventilation velocity by 2.9m/s at the usage factor of [${\alpha}$]=33%, 3.8m/s at the usage factor of [${\alpha}$]=66%, and 3.6m/s at the usage factor of [${\alpha}$]=100%. Thus the ventilation velocity of 3.0m/s, the blade velocity of the wind power generator, or higher was secured. (3) The findings prove that the applicability of a wind power generation system using outdoor air on the rooftop and indoor ventilation is excellent, which raises a need for various efforts to increase the possibility of its commercialization such as securing its structural stability according to momentary gusts on the rooftop and typhoons in summer and making the structure light to react to the wind directions of outdoor air on the rooftop according to the seasons.

Physical Properties of Dietary Fiber Sources from Peel of Asian Pear Fruit at Different Growth Stages (생육단계별 배 과피에서 분리한 식이섬유원의 물리적 특성)

  • Physical properties and compositions of dietary fiber sources (DFS) from peels of Asian pear fruit, Hosui, Niitaka and Chuwhangbae, were examined at different growth stages, young, unripe, and ripe fruits, to investigate their use as functional ingredients. Total dietary fiber (TDF) contents of DFS prepared from peels of three cultivars at three stages were high, 74.00-88.38%, with most being insoluble dietary fiber. Total phenolic compound contents of DFS were 1.64-4.46mg/g, with those of Niitaka and Chuwhangbae increasing with growth stages. Density of DFS from young fruit was significantly lower than those from unripe and ripe fruits (p<0.05), because particle size of DFS increased with growth stages within cultivars. Water-holding capacity (WHC) and oil absorption were 3.11-6.03g water/g solid and 1.98-2.57g oil/g sample, respectively. Young fruits, which showed lowest WHC value, had highest oil absorption value. Particle size of DFS had significant correlation with density, WHC, and oil absorption (p<0.05). Physical properties of DFS were mainly influenced by cellulose and uronic acid.
