The Korean daily intake of vegetable oils has increased about 2.5-fold from 17 g/day to 46 g/day for the last several decades. Perilla (Perilla frutescens var. frutescens) has been cultivated in Korea for a long time as a dietary oil seed which has the highest content of ${\alpha}$-linolenic acid, accounting for nearly 60%. It is known that the main role of ALA is as a precursor to the longer-chain ${\omega}-3$, eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA), the metabolic products of ${\alpha}$-linolenic acid (ALA, ${\omega}-3$). Dietary ${\omega}-3$ fatty acids reduce inflammation and the risk of chronic diseases such as heart disease, cancer, and arthritis, but they also may act as functional components for cognitive and behavioral function. Thus, ${\alpha}$-linolenic acid is one of the essential nutrients in modern dietary patterns in which much linoleic acid is consumed. Nevertheless, perilla oil, rich in ${\alpha}$-linolenic acid, can be easily oxidized, giving rise to controversies with respect to shelf life, the deterioration of the product's commercial value, and further related toxicity. Recent research using genetic modifications has tried to develop new plant oil seeds that balance the ratio of ${\omega}-6/{\omega}-3$ fatty acids. Such trials could be a strategy for improving an easily oxidizable property of perilla oil due to high ${\alpha}$-linolenic acid. Alternatively, appropriate application of antioxidant to the oil can be considerable.
For the effective utilization of apricot seed resources of food protein and lipid, the general composition, amino acid composition and chemical characteristics were analysed. The skinned and non-skinned apricot seed contained 53.9% and 48.0% of crude lipid, 24.7% and 26.8% of crude protein, respectively. There were no significant difference in the amino acid composition among skinned and non-skinned apricot seed, The major amino acids were glutamic acid, aspartic acid, alanine, tyrosine and threonine, holding 14.6 to 16.9%, 12.4 to 13.7%, 9.2 to 12.1%, 7.2 to 7.5% and 7.0 to 7.2% of total amino acid content, respectively. The sum of these ammo acids occupied about 50% to total amino acids. While the quantities of methionine, histidine, and Lysine were poor content. The essential amino acids occupied about 30% to total amino acids. The acid, iodine and saponification value of apricot seed oil were 0.7 to 7.1, 80.8 to 107.5 and 182.7 to 208.4, respectively. These values were significant difference in skinned and non-skinned apricot seed.

This experiment was conducted to find the most effective organic matters to improve the contents of aromatics and essential oils in root of Anthriscus sylvestylis. Growth of top part was promoted by application of chicken dung with saw dust. The contents of crude protein, fat and fiber were also increased by chicken dung with saw dust. Essential oil content was highest as 0.82% when plants were treated by chicken dung with saw dust. The optimum organic matter showing high yield was chicken dung with saw dust as 276kg per 10a. Twenty two aromatic constituents were identified from root of Anthriscus sylvestylis regardless of organic matter kinds. In particular, aromatic constituents such as sabinene and carboxaldehyde were highest at the application of chicken dung with saw dust as 16.9 and 163.4 % area, respectively.
The protein content of seed meal were examined to evaluate genotypes of higher protein content from 164 peanut germplasms. The variations in amino acids content were investigated from nine Korean leading varieties grown at five locations. Amino acids contents of protein fractions were also ana lysed in the present study, too. The results of the study were summarized as fallows. The seed protein of 164 peanut varieties averaged 24.5% ranging from 19.5% to 28.7%, showed 9.2% varietal variation in proteins. Differences were not observed in protein content between plant types, however, protein contents were higher in small-seeded than large seeded varieties. The differences were more greater particulaly in Spanish type varieties. The varieties introduced from Taiwan and Philippine showed higher protein contents, and the cultivars or lines bred in Korea and introduced from Japan were lower in protein contents. protein contents showed non-significantly negative correlations with 100-kernel weight and pod weight per plant, but positive correlations were observed between oil and protein content in all types of peanuts. Significant differences among the varieties and locations were observed for total, essential and non-essential amino acids contents, and aspartic acid. Locational differences for arginine, lysine, methionine, threonine, glutamic acid, glycine and tyrosine, and varietal difference for phenylalanene were revealed as significant. The limiting amino acids from the leading varieties were isoleucine, methionine, threonine, alanine and tyrosine, comparing with FAO recommanding levels of amino acids. Pectin and tannin analysis were carried out to inverstigate any available components from Pinus densiflora, P. koraiensis, P. thunbergii and P. rigida. To analyze terpenoid components, the essential oils were extracted with steam distillation method from four kinds of pine needles. The essential oil was analyzed by GC and GC-MS spectroscopy. The results were summarized as follows: Pectin content was highest in P. koraiensis with 0.40%, and tannin content was highest in P. koraiensis with 1.05. Major components of P. densiflora needles were ${\alpha}$-pinene, ${\beta}$-caryophyllene, ${\Delta}^3$-carene and phytol. ${\alpha}$-Pinene, ${\Delta}^3$-carene, ${\beta}$-caryophyllene, germacrene D, and camphene were found major components in P. koraiensis. Major components of P. thunbergii needles were ${\beta}$-pinene, ${\alpha}$-pinene, ${\beta}$-caryophyllene and germacrene D. ${\beta}$-Pinene, ${\alpha}$-piene, humulene oxide and ${\alpha}$-elemene were major components in P. rigida. Sabinene and citronellol were infrequent components in P. koraiensis, and ${\alpha}$-pinene oxide was present only in P. rigida. ${\alpha}$-Pinene, limonene, and bornylacetate well known as the main components of green air bath were found in P. densiflora and P. koraiensis.

The seeds from two mulberry fruits [Morus alba (MA) and Cudrania tricuspidata (CT)] were examined for their oil content, and fatty acid, phytosterol and tocopherol compositions and contents. Moreover, polyphenolic compounds and biological activity of the two defatted seed residue extracts were also evaluated. Oil contents of MA and CT seeds were 29.36% and 16.69%, respectively, while MeOH extracts of the defatted MA and CT seed residues were 5.10% and 6.22%, respectively. The two seed oils were composed of 81.4 and 74.37% linoleic, 5.75 and 11.39% oleic, 8.40 and 10.18% palmitic acid, and 3.52 and 3.0% stearic acids, and two other minor fatty acids, such as linolenic and arachidic acids. MA seed had higher contents of phytosterols (507.59 mg/100 g of oil), tocopherols (99.64 mg/100 g of oil), and total flavonoid (106.50 mg/100 g of seed) than CT seed, whereas CT seed had higher levels of total polyphenol than MA seed. The MeOH extract of MA seed residue showed higher antioxidant, anti-diabetic, and anti-melanogenic activity than that of CT seed residue. trans-Resveratrol (9.62 mg/100 g), quercetin (54.83 mg/100 g), and 4-prenylmoracin (48.70 mg/100 g), were found to be the main polyphenolic components in the MeOH extract of MA seed residue. These results indicate that MA seeds are good sources of essential dietary phytochemicals with antioxidant, anti-diabetic and anti-melanogenic activity.
The purpose of this experiment was to determine and compare the digestibility of crude protein (CP) and amino acids (AA) in full-oil (no oil extracted) and de-oiled (oil extracted) corn distillers dried grains with solubles (DDGS) with different condensed distillers solubles (CDS) ratios. Six barrows ($29.6{\pm}2.3kg$) fitted with ileal T-cannula were allotted into a $6{\times}6$ Latin square design. Each period was comprised of a 5-d adaption period followed by a 2-d collection of ileal digesta. The five test diets contained 62% DDGS as the sole source of AA. A nitrogen-free diet was used to measure the basal endogenous losses of CP and AA. Chromic oxide (0.3%) was used as an index in each diet. The results showed that CP and AA were very similar in 5 DDGS, but the standardized ileal digestibility (SID) of lysine (from 56.16% to 71.15%) and tryptophan (from 54.90% to 68.38%) had the lowest values and largest variation within the essential AA, which suggests reduced availability of AA and different levels of Maillard reactions in the five DDGS. The apparent ileal digestibility and SID of CP and most of AA in full-oil DDGS (sources 1 and 2) were greater (p<0.05) than de-oiled DDGS (sources 3, 4, and 5). Comparing the AA SID in the 5 DDGS, full-oil with low CDS ratio DDGS (source 1) had non-significantly higher values (p>0.05) than full-oil with high CDS ratio DDGS (source 2); however, the SID of most AA of de-oiled with low CDS ratios DDGS (source 3) were non-significantly lower (p>0.05) than de-oiled with high CDS ratio DDGS (source 4); and the de-oiled DDGS with middle CDS ratio (source 5) but with different drying processing had the lowest SID AA values. In conclusion, de-oiled DDGS had lower SID of CP and AA than full-oil DDGS; a higher CDS ratio tended to decrease the SID of AA in full-oil DDGS but not in de-oiled DDGS; and compared with CDS ratio, processing, especially drying, may have more of an effect on AA digestibility of DDGS.
Some biochemical features of varietal variation in seed protein and their implications for soybean breeding for high protein were pursued employing 86 soybean varieties of Korea, Japan, and the U.S.A. origins. Also, studied comparatively was the temporal pattern of protein components accumulation during seed development characteristic to the high protein variety. Seed protein content of the 86 soybean varieties varied 34.4 to 50.6%. Non-existence of variety having high content of both protein and oil, or high protein content with average oil content as well as high negative correlation between the content of protein and oil (r=-0.73$^{**}$) indicate strongly a great difficulty to breed high protein variety while conserving oil content. The total content of essential amino acids varied 32.82 to 36.63% and the total content of sulfur-containing amino acids varied 2.09 to 2.73% as tested for 12 varieties differing protein content from 40.0 to 50.6%. The content of methionine was positively correlated with the content of glutamic acid, which was the major amino acid (18.5%) in seed protein of soybean. In particular, the varieties Bongeui and Saikai #20 had high protein content as well as high content of sulfur-containing amino acids. The content of lysine was negatively correlated with that of isoleucine, but positively correlated with protein content. The content of alanine, valine or leucine was correlated positively with oil content. The seed protein of soybean was built with 12 to 16 components depending on variety as revealed on disc acrylamide gel electrophoresis. The 86 varieties were classified into 11 groups of characteristic electrophoretic pattern. The protein component of Rm=0.14(b) showed the greatest varietal variation among the components in their relative contents, and negative correlation with the content of the other components, while the protein component of Rm=0.06(a) had a significant, positive correlation with protein content. There was sequential phases of rapid decrease, slow increase and stay in the protein content during seed development. Shorter period and lower rate of decrease followed by longer period and higher rate of increase in protein content during seed development was of characteristic to high protein variety together with earlier and continuous development at higher rate of the protein component a. Considering the extremely low methionine content of the protein component a, breeding for high protein content may result in lower quality of soybean protein.n.
To fulfill the increasing demand for a high quality of flower, we investigated the effects of nitrogen application on plant growth, yield and bioactive compounds of Chrysanthemum indicum L.. C. indicum L. was cultivated in a pot scale, and nitrogen applied with the level of 0 (N0), 50 (N50), 100 (N100), 150 (N150), 200 (N200) and $300\;(N300)\;kg\;ha^{-1}$ to suggest optimum rate of nitrogen fertilization. Phosphate and potassium applied the same amount of $80-80\;kg\;ha^{-1}$ ($P_2O_5-K_2O$) in all treatments. Growth characteristics and yields of C. indicum L. were significantly affected by nitrogen application. Maximum yield achieved in 265 and $295\;kg\;ha^{-1}$ N treatment on the whole plant and the flower parts, respectively. The nitrogen content and uptake of whole plant significantly increased by the increase of nitrogen application. Five major components of essential oil, $\alpha$-pinene, 1,8-cineol, chrysanthenone, germacrene-D, and $\alpha$-curcumene in flowerheads of C. indicum L. occupied approximately 40% of peak area, germacrene-D decreased by the increase of nitrogen application among them. However, cumambrin A contents in the flower parts of C. indicum L. were affected negatively by the increase of nitrogen application, but total yields of cumambrin A in flower part significantly increased. Conclusively, nitrogen fertilization could increase the yield of flowerheads. The optimum application level of nitrogen fertilizer might be on the range of $265-295\;kg\;ha^{-1}$ in a mountainous soil.

An attempt was made in this study to investigate the possibility of processing garlic into an garlic oleoresin and investigate on the storage stability of it. To obtain a garlic oleoresin, water, phosphoric acid, garlic extract, poly sorbate and KM-72 as antiform agent were mixed with lecithin, and then these mixtures were homogenized at $50{\sim}55^{\circ}C$ for $5{\sim}7\;min$, cooled down to $25^{\circ}C$, and finally mixed with TBHQ (tert-butylhydroquinone) as antioxidant and garlic essential oil. Optimum components for garlic oleoresin consisted of 1.0% garlic essential oil, 10.5% garlic extract, 10.0% poly sorbate, 0.01% KM-72, 18.0% lecithin, 0.05% TBHQ, 0.15% of phosphoric acid solution and 60.0% water. Judging from thiosulfinate and pyruvate content, and sensory evaluation, quality damage of garlic oleoresin hardly occurred at $5^{\circ}C$ but occurred considerable level at $25^{\circ}C$ during storage for 60 days.
