식사 Pattern의 차이가 단백질 영양상태에 미치는 영향 (The Effect of Different dietary Patterns (between Non-Vegetarian and Vegetarian) on Protein Nutritional Status during Short-term)

  • The purpose of this study was to describe the protein nutritional status of female collegians between nonvegetarian diet groups(14) and vegetarian diet groups(19). Daily intake, protein were calculated from food direct measurement. Urea/creatinine, muscle mass, fatique conditions and hematological parameter were calculated. Blood samples were analyzed for total protein, albumin ammonia, urea, uric acid, creatinine, BUN contents. The results obtained are summarized as following : 1) On total dietary intake, especially Fe, vitamin C, niacin intake, vegetarian groups were higher than non vegetarian groups. 2) On composition of EAA(essential amino acids), vegetarians were highter than non vegetarian of leucine contents, but were lower lysine and threonine contents. 3) On urea / creatinine excretion, vegetarians were higher than non begetarians. Muscle mass were non signicant, fatique condition, vegetarians were normal state. 4) Non vegetarians were increased serum albumin total protein, uric acid, ammonia but vegetarians were decreased BUN, ammonia after experimental diet intake. 5) In process of time after meal, non vegetarians were increased serum albumin total protein, BUN, but vegetarians were decreased ammonia.

유해환경에 노출되기 쉬운 공장근로자의 건강관련 행동과 돼지고기 급여에 의한 영양소섭취 상태의 변화 (Health-Related Behaviors of Industry Workers Exposed to Unclean Work Environments and Changes in Nutritional Status in Response to Usual Pork Consumption)

  • This study was conducted to evaluate the health status, life style, dietary habits and nutritional status of 44 industry workers that were routinely exposed to unclean environments while consuming 3 major pork dishes 2 times a week for 6 weeks. The health status, life style and dietary habits of the workers were investigated by a survey questionnaire, and the nutritional status was evaluated using the 24-hour recall method. Overall, the subjects reported that their health status was fairly good throughout the year, but that they felt dizziness and fatigue often. In general, the subjects did not exercise regularly and drank alcohol very often. The average daily energy intake increased from 1,708.3 kcal to 1,859.5 kcal without a change in the BMI or WHR when the respondents were fed pork dishes. However, the mineral intake did not differ significantly in response to the consumption of pork, although the Zn intake tended to increase. Moreover, the vitamin $B_1$, niacin, and E intakes increased after consuming pork(p<0.05), while the cholesterol intake decreased from 425.2 mg to 356.7 mg after eating pork(p<0.05). Additionally, both the fat intake and the PUFA intake increased after the consumption of pork with the intake of oleic, linoleic and linolenic acids increasing significantly(p<0.001). Finally, the intake of essential amino acids also increased significantly in response to the consumption of pork(p<0.01). Based on the results, regular consumption of pork dishes improved the nutritional status of industry workers without any adverse effect in terms of the intake of relative fat and cholesterol.

대체육의 아미노산 조성 및 아연 생체 이용률의 영양학적 분석 (Nutritional analysis of amino acid composition and zinc bioavailability in plant-based meats)

  • 본 연구는 비건 인구의 증가 및 비건 문화의 확대에 발맞추어 대체육 제품에 대한 시장의 요구가 커짐에 따라, 대체육의 영양학적인 부적합의 가능성이 제시된 아미노산 조성과 아연 생체 이용률의 측면에서 대체육 제품이 동물성 육류 제품을 영양학적으로 대체할 수 있는지 평가하고자 수행되었다. 텐더 형태의 동물성 계육 제품 1종과 대체육 제품 2종을 선정하여 HPLC를 통한 아미노산 함량 및 조성측정, ICP-AES를 이용한 아연, 칼슘 등의 미량 원소 함량 측정, 아연 생체 이용률 저해 화학종인 피트산의 침전 추출 및 UV-Vis 분석을 통한 정량을 수행하고, 측정 결과를 실제 제품 섭취의 맥락에 맞추어 적용, 분석하였다. 연구 결과, 대체육 제품에서 valine, lysine 등 일부 필수 아미노산 함량이 동물성 육류 제품에 비해 부족하고, 제품을 통해 권장 섭취량을 달성하기 어려운 것으로 나타났다. 아연 생체 이용률의 경우, 칼슘에 의한 아연 생체 이용률 저해는 유의미하지 않을 것으로 분석되었으며, 같은 대체육이라 하더라도 제품 원재료의 아연 함량, 피트산 함량에 따라 낮은 단계에서부터 높은 단계까지 다양한 아연 이용률을 보였다. 따라서 아연 함량이 높고 피트산 함량이 낮은 식물성 원재료를 선정, 적절히 가공함으로 적절한 아연 생체 이용률을 달성하는 대체육 제품을 생산할 수 있을 것으로 보인다.

The Effect of Feeding Processed Soy Protein on the Growth Performance and Apparent Ileal Digestibility in Weanling Pigs

  • For Exp. 1, one hundred twenty Duroc${\times}$ Yorkshire${\times}$Landrace pigs (6.34${\pm}$ 0.70 kg average initial BW) were used in a 35 d growth assay. There were six pigs per pen and four pens per treatment. Dietary treatments included 1) NC (negative control; basal diet), 2) PC (positive control; added 5% HP $300^{(R)}$, HAMLET PROTEIN A/S, as protein source), 3) PSP 2.5 (added 2.5% $Pepsoygen^{(R)}$, Genebiotech Co. Ltd., as protein source), 4) PSP 5.0 (added 5% $Pepsoygen^{(R)}$ as protein source), and 5) PSP 7.5 (added 7.5% $Pepsoygen^{(R)}$ as protein source). For d 21, ADFI was increased in pigs fed PSP diets compared with PC diet (p<0.05). ADG was tended to improve as concentration of PSP in the diets was increased. For d 21-35 and entire experimental period, pigs fed PSP diets had more feed intake than pigs fed NC or PC diets (p<0.05). For the whole period, ADG was improved in PSP treatments compared with NC treatment (Linear effect, p=0.05). On d 21 and d 35, digestibilities of DM and N were higher (p<0.05) for pigs fed PSP diets than pigs fed NC diet and PSP 2.5 treatment was the highest among the treatments. On d 21, digestibility of N was significantly improved in PSP treatments compared with PC treatment (p<0.05). For Exp. 2, five Duroc${\times}$Yorkshire${\times}$Landrace barrows (8.74${\pm}$0.22 kg average initial BW) were surgically fitted with a simple T-cannulas approximately 15 cm prior to the ileo-cecal junction. The experimental designs were 5${\times}$5 latin squares with pigs and periods as blocking criteria. Dietary treatments were same as Exp.1. Generally, apparent ileal digestibilities of DM and N were higher for pigs fed PSP diets than pigs fed NC or PC diets (p<0.05) and PSP 5.0 and 2.5 treatments were the highest among the treatments, respectively. Apparent ileal digestibilities of the whole amino acids were increased in PSP treatments compared with NC treatment (Quadratic effect, p${\leq}$0.05). Also, histidine, lysine and threonine digestibilities in essential amino acids and alanine, asparatic acid and glycine digestibilities in non essential amino acids were significantly higher for pigs fed PSP diets than pigs fed PC diets (p${\leq}$0.05). In conclusion, feeding processed soy protein to weanling pigs increased growth performance, nutrient digestibility and apparent ileal digestibilities of DM, N and most amino acids.

새로운 식품원료로 등록된 식용곤충의 영양성분 비교 분석 (Comparative Analysis of Nutritional Components of Edible Insects Registered as Novel Foods)

  • 본 연구에서는 갈색거저리, 흰점박이꽃무지 및 장수풍뎅이 유충의 영양성분을 비교분석하였고, 이를 통해 식용곤충 이용 시 곤충 선택 기준확립에 기초 자료로 활용될 수 있을 것으로 사료된다. 3종 식용곤충의 영양성분 비교결과, 조단백질, 조지방, 탄수화물은 각각 흰점박이꽃무지, 갈색거저리 및 장수풍뎅이 유충에서 가장 높았다. 아미노산 함량 비교 분석 결과, 총 아미노산 함량과 필수 아미노산의 함량은 갈색거저리 유충에서 가장 높았다. 지방산의 조성은 갈색거저리와 흰점박이꽃무지 유충이 유사하였으며, 이들은 장수풍뎅이 유충에 비해 불포화 지방산 함량이 높았다. 또한, 무기질 함량의 비교 분석 결과, 칼슘과 철은 장수풍뎅이 유충에서 가장 높은 반면 인과 칼륨은 흰점박이꽃무지 유충에 가장 많이 함유되어 있었다. 위와 같은 결과를 통해 각각의 곤충이 함유하는 영양성분에 따라 노인, 어린이 및 임산부 등 다양한 영양 요구를 가지는 대상에 따라 필요한 곤충을 선택하여 섭취가 가능할 것이며 식용곤충을 다양하게 조합하는 경우 보다 풍부한 영양분을 섭취할 수 있을 것으로 사료된다.

Very low protein diet plus ketoacid analogs of essential amino acids supplement to retard chronic kidney disease progression

  • Background: A very low protein diet (VLPD) with ketoacid analogs of essential amino acids (KA/EAA) administration can remarkably influence protein synthesis and metabolic disturbances of patients with advanced chronic kidney disease (CKD), and may also slow the decline in renal function. Methods: A retrospective cohort study was carried out to monitor renal progression and metabolic and nutritional status among 140 patients with CKD stage III or IV. One group (n = 70) was on a low protein diet (LPD) with 0.6 g of protein intake, and another group (n = 70) was on a VLPD with 0.3 g of protein and KA/EAA supplementation of 100 mg/kg/day for 12 months. Results: At 12-month follow-up, estimated glomerular filtration rate (GFR) significantly decreased from $41.6{\pm}10.2$ to $36.4{\pm}8.8mL/min/1.73m^2$ (P < 0.001) and urine protein increased from $0.6{\pm}0.5$ to $0.9{\pm}1.1g/day$ (P = 0.017) in the LPD group, but no significant changes in estimated GFR and urine protein were found in the VLPD plus KA/EAA group. A significant mean difference in rate of change in estimated GFR ($-5.2{\pm}3.6mL/min/1.73m^2$ per year; P < 0.001) was observed between the two groups. After Cox regression analysis, treatment with VLPD plus KA/EAA significantly protected against the incidence of declining GFR > 10% annually (adjusted hazard ratio, 0.42; 95% confidence interval, 0.23-0.79; P = 0.006) and significant correlations were found between using VLPD plus KA/EEA and increased GFR. Conclusion: VLPD supplementation with KA/EAA is associated with delayed renal progression while preserving the nutritional status in the patients with CKD. Co-administration of VLPD and KA/EAA may prove an effective alternative to conservative management of CKD.

Optimizing hormonal and amino acid combinations for enhanced cell proliferation and cell cycle progression in bovine mammary epithelial cells

  • Objective: The number of bovine mammary epithelial cells (BMECs) is closely associated with the quantity of milk production in dairy cows; however, the optimal levels and the combined effects of hormones and essential amino acids (EAAs) on cell proliferation are not completely understood. Thus, the purpose of this study was to determine the optimal combination of individual hormones and EAAs for cell proliferation and related signaling pathways in BMECs. Methods: Immortalized BMECs (MAC-T) were treated with six hormones (insulin, cortisol, progesterone, estrone, 17β-estradiol, and epidermal growth factor) and ten EAAs (arginine, histidine, leucine, isoleucine, threonine, tryptophan, lysine, methionine, phenylalanine, and valine) for 24 h. Results: Cells were cultured in a medium containing 10% fetal bovine serum (FBS) as FBS supplemented at a concentration of 10% to 50% showed a comparable increase in cell proliferation rate. The optimized combination of four hormones (insulin, cortisol, progesterone, and 17β-estradiol) and 20% of a mixture of ten EAAs led to the highest cell proliferation rate, which led to a significant increase in cell cycle progression at the S and G2/M phases, in the protein levels of proliferating cell nuclear antigen and cyclin B1, cell nucleus staining, and in cell numbers. Conclusion: The optimal combination of hormones and EAAs increased BMEC proliferation by enhancing cell cycle progression in the S and G/2M phases. Our findings indicate that optimizing hormone and amino acid levels has the potential to enhance milk production, both in cell culture settings by promoting increased cell numbers, and in dairy cows by regulating feed intake.

Optimal Threonine:Lysine Ratio for Growing Pigs of Different Sexes

  • This study was conducted to investigate the effects of threonine:lysine ratios on growth performance, apparent nutrient digestibility and blood urea nitrogen (BUN) concentration, and to estimate the optimal threonine:lysine ratios for growing barrows and gilts. A total of 150 pigs (Landrace${\times}$Yorkshire${\times}$Duroc, $16.75{\pm}0.42kg$ average body weight, 75 barrows and 75 gilts) was randomly allotted into six treatments in a $2{\times}3$ factorial design. Six diets were formulated to contain 1.12% lysine for barrows and 1.33% lysine for gilts with three threonine:lysine ratios (50, 60 and 70%) for both barrows and gilts. Throughout the whole experimental period (16 to 56 kg body weight), there was no interaction between sex and dietary threonine:lysine ratio in average daily gain (ADG), average daily feed intake (ADFI) and feed conversion rate (FCR). Between sexes, there was a clear sex-effect showing better growth performance of barrows. Barrows consumed more feed (p<0.01) and grew faster (p<0.01) than gilts. For barrows, there was a trend to improved ADG and FCR with increasing threonine:lysine ratio. For gilts, there was a trend to improved ADG and FCR up to threonine:lysine ratio of 60%, but not significant. There was no interaction between sex and threonine:lysine ratio in nutrient digestibilities of growing pigs except for crude ash (CA). Between sexes, there were differences in nutrient digestibilities, except for calcium for which gilts showed higher a digestibility (p<0.01). Among dietary threonine:lysine ratios, there were no differences in nutrient digestibilities. Mean values of essential amino acids (EAA), non-essential amino acids (NEAA) and total amino acids (TAA) digestibilities were not affected by sex and dietary threonine:lysine ratio. There was no evidence of an interaction between sexes and dietary threonine:lysine ratio. Between sexes, total BUN concentration was lower in gilts than barrows (p<0.05). It was concluded that a 70 and 60% dietary threonine:lysine ratio for barrows (1.12% lysine) and gilts (1.33% lysine) tended to result in better growth performances and nutrient utilization and lower BUN concentration than other threonine:lysine ratios.

Evaluation of Fishmeal Supplement with Net Nitrogen Flux by the Portal-drained Viscera and the Liver in Mature Sheep

  • The objective of this study was to evaluate the net flux response of nitrogen compounds (alpha-amino N, ammonia N, urea N, essential amino acids) across the portal-drained viscera (PDV), liver and total splanchnic tissues of mature wethers to increasing level of dietary fishmeal (FM) supplementation. Four wethers (average body weight, 64 kg) with chronic indwelling catheters into the portal, hepatic and mesenteric veins and the abdominal aorta were used in a 4${\times}$4 Latin square design. A basal diet consisting of 0.7 hay and 0.3 concentrate was fed twice daily with a fixed amount at 1.4 times maintenance energy (1.3 kg/day on a dry matter basis). The supplementation proportion of FM as treatment was 0, 0.03, 0.06 and 0.09 to the amount of the basal diet to contain 119, 137, 154 and 170 g crude protein per kg dietary dry matter, respectively. Blood flows through PDV and liver did not differ (p>0.05) among the treatments. Both net PDV release and hepatic uptake of alpha amino acid N increased linearly (p<0.05) in response to increased dietary FM, which resulted in similar total splanchnic release of alpha-amino N among the treatments. Similarly, increased dietary FM increased net PDV absorption and hepatic removal of ammonia N linearly (p<0.05). Hepatic synthesis and total splanchnic release of urea N increased linearly (p<0.01) with increased dietary FM, but PDV uptake of urea N did not respond to increased dietary FM. Linear regression equations between the increases in FM N intake and PDV net flux indicated that 0.34 and 0.30 of FM N was absorbed in the form of alpha-amino N and ammonia N, respectively. The results demonstrated that FM supplementation provides more alpha-amino N than ammonia N to the liver, but the alpha-amino acid N absorption is less than the expected metabolizable protein N from FM supplementation.

Effects of Intra-duodenal Infusion of Limiting Amino Acids on Plasma Insulin-like Growth Factor I, Growth Hormone, Insulin and Liver Insulin-like Growth Factor I mRNA in Growing Goat Fed a Maize Stover-based Diet

  • The effects of intra-duodenal infusion of methionine (Met), lysine (Lys) and leucine (Leu) on dry matter intake (DMI), the concentrations of insulin-like growth factor I (IGF-I), growth hormone (GH) and insulin in plasma, and liver IGF-I mRNA level were investigated in two experiments for Liuyang Black growing wether goats. In Experiment 1, three goats ($10.0{\pm}0.1$ kg) were fitted with ruminal, proximal duodenal and terminal ileal fistulaes to determine the infusion amounts of Met, Lys and Leu at the duodenum according to essential amino acid flows into the duodenum and their apparent digestibility. The infusion amounts were 0.77 g/d, 0.91 g/d and 0.58 g/d respectively. In Experiment 2, 4 groups of goats (($10.0{\pm}0.2$ kg) for each group, were cannulated at the duodenum, and were infused with a mixture of Met, Lys and Leu (Control), or mixtures with 21% Met, Lys or Leu replaced with glutamate respectively on a nitrogenous basis. The replacement of 21% Met, Lys or Leu with glutamate did not affect intakes of maize stover, concentrate or both (p>0.05) when compared with the control. The replacement of 21% Met or Lys significantly (p<0.05) reduced plasma GH, insulin and IGF-I concentrations and liver IGF-I mRNA level. The replacement of 21% Leu with glutamate reduced (p<0.05) plasma IGF-I concentration only, but not plasma insulin and GH, as well as liver IGF-I mRNA level (p>0.05). The close relationships between supplying Met and Lys in the lumen of the duodenum and plasma IGF-I, GH and insulin concentrations, as well as liver IGF-I mRNA level in this study indicate that the effects of the limiting amino acids on nutrition of animals are likely intermediated via their effects on these hormones, and these hormone profiles could be used as intermediate markers for the limiting order of amino acids.
