BACKGROUND/OBJECTIVES: The aim of this study was to examine the validity and reproducibility of a food frequency questionnaire (FFQ) developed in Korea for breast cancer survivors. SUBJECTS/METHODS: Ninety-nine breast cancer survivors who completed an FFQ twice and three 3-day dietary records (DRs) between 2016-2017 were included. Energy and 14 nutrient intakes were calculated from FFQs and DRs. To determine the validity of the FFQ, energy-adjusted de-attenuated Pearson correlations between two FFQ assessments and the average of the three 3-day DRs were calculated, and to determine reproducibility, energy-adjusted Pearson correlations and degrees of agreement were calculated between the first and second FFQ assessments. RESULTS: Correlation coefficients of validity ranged from 0.29 (protein) to 0.47 (fat) (median value = 0.36) for the FFQ assessment and from 0.20 (riboflavin) to 0.53 (calcium) (median value = 0.37) for the second. Correlation coefficients of reproducibility ranged from 0.22 (sodium) to 0.62 (carbohydrate) (median value = 0.36). Regarding FFQ reproducibilities, percentage classifications of exact agreements for energy-adjusted nutrients ranged from 27.3% (sodium) and 45.5% (fat). A median 76.8% of participants were classified into the same or adjacent quartiles, while a median of 5.6% of participants were classified in extreme quartiles. Bland-Atman plots for the majority of data points of three macronutrients, calcium and vitamins A and C fell within limits of agreement. CONCLUSIONS: These results indicated that the newly developed FFQ for Korean breast cancer survivors has acceptable validity and reproducibility as compared with three 3-day DRs collected over a one-year period.
This study describes the application of the stages of change construct to fat intake by examining the associations of the stages of change with nutritional status and beliefs on health behavior. Data were obtained from apparently healthy 596 adults(326 females and 270 males) residing in large cities. Stages of change assessed by an algorithms based on 6 items were designed each subject into one of the 5 stages: precontemplation(PC), contemplation(CO), preparation(PR), action(AC) and maintenance(MA). Beliefs on health behavior were assessed by self efficacy as well as 4 belief scales from the Locus of Illness Control(LIC) developed using factor analysis such as internal disease cure and prevention and external disease cure and prevention. Energy and fat intakes were measured by a 39 item short form food frequency questionnaire. Regarding the 5 stages of change, MA stage comprised the largest group(37.9%), followed by Ac(30.7%), PC(11.4%), CO(10.4%) and PR(9.6%). Subjects who were females, older or healthier were more likely to belong to either AC or MA. Stage assignment of individuals was corroborated by their nutritional variables. Those in PC had the most energy and fat and those in MA ate the least for females. BMI was higher in PR than any other stages for both males and females. Those in PC were distinctive in that they were more externally oriented in terms of health control showing higher scores on external disease prevention(for males) and external disease cure(for females), and lower score on internal disease cure. On the other hand, those in MA received the highest scores on internal disease prevention and self efficacy, which suggested that they were more internally oriented. Canonical discriminant function analysis indicated that the 5 stages were importantly discriminated by BMI, self efficacy, internal disease prevention and external disease prevention for males and by fat intake, self efficacy and external disease cure variables for females. The results of our study confirm differences in stages of change in fat intake in terms of nutritional status and beliefs on heath behavior and indicate the need for taking these phases of change into account in nutrition advice. Four young swamp buffalo cows of similar age ranging in body weight (W) between 280 to 380 kg and trained for doing physical exercise were used in two consecutive experiments, each using a latin square design, to determine energy expenditure for draught. The experiments consisted of field trials using 4 levels of work load, i.e. no work as control and loads amounting 450 to 500 Newton (N) continuous traction for respectively 1, 2 and 3 h daily for 14 consecutive days for experiment 1, and no work, traction loads equaling 5, 10 and 15% of W for 3 h daily for 14 days for experiment 2. Heart rate during rest and exercise was monitored using PE-3000 HR monitor. Cows were fed only king grass (Penisetum purpuroides) ad libitum and were subjected to balance trials. Body composition was estimated in vivo by the body density method and daily energy expenditure (EE) was calculated from ME minus RE. RE was calculated from the changes in body-protein and -fat measured before and immediately after the 14 d experimental period assuming an energy equivalent of 39.32 MJ/kg fat and 20.07 MJ/kg protein. $E_{exercise}$ ($EE_{work}\;-\;EE_{resting}$), which was the energy spent for doing the traction during 1, 2 and 3 h was 7.13, 15.45 and 19.90 MJ, respectively. $EE_{work}$ for the 1 h treatment group was 39.75 MJ/d equivalent to 1.30 times $EE_{resting}$. The values for the 2 and 3 h treatment groups were 1.75 and 1.86 times resting energy requirement, respectively. Absolute efficiency of work in all exercise trials of experiment 2 was around 27.28%. The increases of daily $E_{exercise}$ values were correlated to elevation of heart rate (HR) according to the equation $E_{exercise}=(0.270HR^{0.363}\;-\;1)$ MJ, while draught force related to heart rate according to the equation DF (N)=6.66 HR - 361.62. Blood glucose and triglyceride levels were gradually elevated with time during the course of exercise. Mean values of blood glucose were 91.7, 115.0 and 116.2 mg/dl for cows after 1, 2 and 3 h pulling loads at 15% W respectively as compared to 88.2 mg/dl prior to work. In the same order and treatment, mean blood triglyceride concentrations were 13.5, 13.3 and 14.8 mg/dl, and 11.5 mg/dl for control. For blood lactate, the values were 1.68, 1.63 and 1.66 mM, and 0.80 mM for control. Glucose was used as the major source of energy during the initial phase of exercise, but for prolonged work, fat will replace carbohydrate as the main substrate. Accumulation of lactate persisted for some time at the end of the exercise trials.
According to economical status, under-nutrition and over-nutrition coexist in preschool children in Korea. Subjects consumed more than RDA in most nutrients, and children in of the upper income class tended to have more nutrients than those of the low income class. Especially in case of energy, protein, fat, vitamin $B_2$, and P there were significant differences among the different classes. The mean calorie compositions of carbohydrates, protein and fat were $57{\sim}59:\;16{\sim}17:\;26{\sim}27$ and fat calorie percentage was higher than quantity recommended for Korean adults. Energy, protein, Fe, vitamin A, $B_1$ and C intakes were taken mostly from plant food sources. In the upper income class group, intakes of protein and vitamin $B_2$ from animal food sources were higher than in any other income classes. Intakes of iron, vitamin A, $B_1$ and C were largely provided by plant food group. Especially 44-45% of vitamin A were taken from vegetable and fruits group, which indicated that about 50% of vitamin A intake was the form of ${\beta}-carotene$. Also compared with other groups, in the upper income class group, the intakes of energy, protein, Ca, p, vitamin $B_1$ and vitamin $B_2$ from cereal and potatoes were significantly lower, and those of Ca and P from milks and meats, fishes & eggs were significantly higher(p<0.05). The mean fat intake in all subjects was $38{\sim}43g/day$. Regardless of income class, oleic acid($6.6{\sim}8.4g$) and linoleic acid($6.7{\sim}8.1g$) were the most abundant fatty acids contained in the diet. The upper class group consumed significantly more total saturated fatty acids and total monounsaturated fatty acids(p<0.05). In polyunsaturated fatty acids, there were no differences between 3 different income classes, but intakes of total ${\omega}6$ fatty acids in the upper class tended to be higher and those of total o3 fatty acids in low class tended to be higher. Therefore, ${\omega}6/{\omega}3$ tended to be higher in the upper class group. Regardless of income classes, P/M/S and ${\omega}6/{\omega}3$ ratios in all subjects were $0.9{\sim}l.3/1.0{\sim}1.1/1.0$ and $5.2{\sim}7.4/1.0$, respectively and were in a desirable range. Cholesterol intake of subject was 184-218 mg/day, which was comparable to the value of Korean adult intake.

The brown rice drying is effective for energy saving and cost reduction. However, deterioration after drying is one problem, because the skin damage occurs during the drying. So, the measures to preserve the quality has been investigated. One of major quality deteriorations is the oxidation of fat which is contained in the bran layer. So, milling should be carried out to remove the fat as soon as possible after brown rice drying. And the low temperature storage is also worth to be examined for prevention of oxidation. The effect of skin damage on the increase of fat oxidation was clarified. For the grain of skin damage, the increased of fatty acid vaule was remarkable after 70 days elapsed from occurrence of skin damage even in $15\;^{\circ}C$ condition. Therefore it is impossible to keep grain as brown rice form after brown rice drying. For the clean rice and excessively milled rice, the quality can be preserved even in high temperature of $30\;^{\circ}C$. Therefore the brown rice drying can b applied practically using the clean rice technique.
This study evaluated the effects of dietary fiber extracted from rice bran (rice bran fiber) on the quality of low-fat tteokgalbi. The controls were formulated with 20% added fat. Test samples of tteokgalbi were produced with 5 different formulations containing 1, 2, 3, 4, and 5% rice bran fiber as a fat replacer, in addition to 10% fat. The control had the highest fat content, energy value, cooking loss, reduction in diameter, reduction in thickness, CIE $L^*$-value (lighness), and color of sensory properties. The tteokgalbi containing rice bran fiber had higher moisture, protein, ash, and carbohydrate contents than the controls. Tteokgalbi with 3% rice bran fiber had the lowest cooking loss, reduction in diameter, and reduction in thickness. Meat products containing 2 and 3% rice bran fiber had a higher overall acceptability similar to the high fat control.
Objectives : This cross-sectional study aimed to quantify the relationship between the bone mineral density at the os calcis and the body mass composition in healthy children. Methods : The areal bone mineral density was measured at the os calcis with peripheral dual energy X-ray absorptiometry. The fat free mass, fat mass and percentage fat mass were measured using bioelectric impedance, in 237 Korean children, aged 9 to 12 years. The sexual maturity was determined by self assessment, using standardized series of the 5 Tanner stage drawings, accompanied by explanatory text. Results : From multiple linear regression models, adjusted for age, sexual maturity and height, the fat free mass was found to be the best predictor of the calcaneal bone mineral density in both sexes. About 15 and 20% variabilities were found in the calcaneal bone mineral densities of the boys and girls, respectively, which can be explained by the fat free mass. After weight adjustment, the percentage fat mass was negatively associated with the calcaneal bone mineral density in both sexes. Conclusions : The findings of this study suggest that the fat free mass, among the body compositions, is the major determinant of bone mineral density at the os calcis in Korean children aged 9 to 12 years. Obesity, defined as the percentage fat mass, is assumed to have a negative effect on the calcaneal bone density in children of the same weight.
Obesity was characterized in Korean elementary students using different obesity assessment tests on 103 overweight elementary students from three schools of Jeonbuk Province. The body mass index (BMI) and obesity index (OI) were compared, and the data using DEXA and CT were compared with the data using BIA and a tape measure. The results of this study are as follows: first, 27 students who were classified as obese by OI were classified as overweight by BMI, and 3 students who were classified as standard weight by BMI were classified as overweight by OI. Secondly, by DEXA and BIA measurements, there was 1.51% difference in body fat percentage (boys 1.66%, girls 1.17%) and the difference in body fat mass between boys and girls was 0.77 kg (boys 0.85 kg, girls 0.59 kg), but those differences in body fat percentage and mass were not statistically significant. Thirdly, the average total abdominal fat (TAF) measured by CT scans of obese children was more significantly related with subcutaneous fat (r = 0.983, P < 0.01) than visceral fat (r = 0.640, P < 0.01). Also, TAF were highest significant with waist circumference by a tape measure (r = 0.744, P < 0.01). In summary, as there are some differences of assessment results between two obesity test methods (BMI, OI), we need more definite standards to determine the degree of obesity. The BIA seems to be the most simple and effective way to measure body fat mass, whereas waist/hip ratio (WHR) using a tape measurer is considered to be the most effective method for assessing abdominal fat in elementary students.
Objectives: The purpose of this study was to evaluate the consumption pattern of sugar-sweetened beverages (SSB) and compare body composition changes by SSB consumption based on 28 days of dietary records from a four-week time-restricted eating intervention among young adults in Korea. Methods: A total of 33 participants completed the four-week dietary intervention with 8-hour time-restricted eating (TRE). The body composition was measured by bioelectrical impedance analysis at baseline, and daily dietary records were collected for 28 days during the intervention after 4 weeks. Results: Based on 924 days of dietary records, the average eating occasion of SSB was 0.9 times per day, and the average amount of SSB was 205.8 g/times. Based on an individual's usual intake of 28 days, the average eating frequency of SSB was 16.6 times out of 28 days, and the average amount of SSB was 184.0 g/day. The average energy intake from SSB was 131.0 kcal /day (8.7% of energy), and sugar intake from SSB was 18.2 g/day (4.9% of energy). The sugar intake was 2.6% of energy from sweetened dairy products, followed by 2.0% from coffee drinks, 0.5% from soda and juice and 0.2% from others. When subjects were divided into high (14 days or more) and low (less than 14 days) SSB groups based on eating frequency, the weight change in the low SSB group was -2.0 kg over 4 weeks, which was significantly lower than -0.7 kg in the high SSB group. However, no significant difference was found in muscle mass, fat mass and body fat percent between the two groups. Conclusions: This study suggests that low consumption of sugar-sweetened beverages is more desirable in weight management despite having the dietary intervention of time-restricted eating without counting calories. Thus, further longitudinal studies on the association between SSB and obesity in Korean adults are necessary.
To provide approprate nutrition informatios and guidelines for the healthy school lunch program(SLP) menus, the nutritional quality of the SLP and the nutrients that affect the food cost of SLP were evaluated after analysis of recipes and food price lists of 776 menus collected from 10 elementary SLP schools in Seoul and Kyunggi province in Korea in the year of 1995. Index of nutritional quality of SLP menus were good enough, showing over 1.0 in all nutrients except vitamin A(0.86) in kyunggi province. The percent of calories from carbohydrates, protein and fat was 52%, 16% and 32%, while the polyunsaturated fatty acid/monousaturate fatty acid/saturated fatty acid(P/M/S) ratio was 1.0/0.95/1.15. On the other hand, the nutrient-cost evaluation showed that the most expersive nutrient for the RDA(Recommended Dietary Allowance) standard of SLP was origined from the cost of energy and vitamin A. In Pertary correlation analyses, the cost of SLP meals was positively asociated with energy(r=0.244, p<0.001), protein(r=0.306, p<0.001) and carbohydrate(r=0.159, p<0.001) in diet, while the most important predictor of the cost of SLP meal provides sufficient nutrients with enough calories, but fat level is somewhat higher than the suggested value from Dietary Guidelines for Koreans. These data also suggest that meals which could offer enough vitamin A might be included in SLP menus and the cost of a SLP meal can be reduced when choosing the cheap protein source food.
